Happy New Year!!! Welcome to 2025, and thanks for listening to our first podcast of the year, we appreciate you being here! I know that there are folks out there that are kicking off the year with a dry January, and we wish you all the success... However, here at the Flavors of Northwest Arkansas, we toast to the New Year with Sassafras Springs Vineyard and Winery... we'll talk with them in a minute. But first- Food News! Wanted to start with the Yankabilly Smokehouse- the former food truck at the Boardwalk in Springdale is now open inside Mothership on Emma. They've been up and going for 3 weeks and co-owner Aaron Kemper told me that they have some big plans for the spring, and it might involve their outdoor stage. 2025 will also be bringing some new restaurants and concepts to our area, and there are plenty that we're excited about: We kick it off with the Handshake coming to South College in Fayetteville. It's one of the 2 concepts coming from the Conifer team this year.. Former Conifer GM Hope Ray is a Fayetteville native and will be at the helm for this one. Just like Conifer, the menu will be gluten-free and have a heavy emphasis on being locally sourced. It will also have a market with locally sourced meat, veggies and more. The building is taking on a significant remodel, so it will take some time. The other concept from Conifer was announced a month ago, RYN. It'll be in Bentonville, and will be a farm-to-table tasting menu restaurant in a renovated farmhouse right next to their farm. They also plan to have events on their surrounding land. Yeyo's Executive Chef and Owner Rafael Rios got busier in 2024 as he became part-owner in downtown Springdale's Bauhaus Biergarten... He'll get even busier this year, as he'll be opening Casa Magnolia directly across Allen Street from Bauhaus. According to their website, outside of the café, they'll have a Two Friends Community Book kiosk, art, coffee, clubs, ice cream and more... We'll let you know when we hear about a grand opening date. Bentonville Chinese Restaurant Wu Zhao is projected to open later this month. It'll be owned by Blu Fresh Fish Marketplace's Barry Furuseth, Vincent Yao Lim, who's executive chef and known as the Wolf of WOK Street in Australia with millions of social media followers, and former champion of Netflix's Zumbo's Just Desserts, Catherine Zhang. We talked with them on November 13th, if you want to hear that episode. They'll be opening next door to Mezzaluna in downtown Bentonville. Sadly, yesterday was the final day of service for Mermaids in their current location in Fayetteville. I did receive confirmation yesterday that they're still targeting April for their opening date at their new location... still no confirmation yet on the location but will let you know once it's set. Sassafras Springs Vineyard and Winery is many things... a winery, a wedding venue, a retail space, a restaurant, a place to stay and more, but it certainly didn't start out that way. Co-owner Cheryl Long and GM Drew Gorton detail for us the journey to what it is today. They're mother and son of a family-run business, and that cast continues to grow. They have some wines that have won impressive awards in some of the biggest competitions in the US. How did they learn to make wine? You'll hear that story. Equally as important, how do they bottle it? They started off bottling by hand. It's been an evolution for sure, and they recently made a huge investment in it. More on that in a second. But first, what a road it's been for the Mellow Moose Burger food truck of Siloam Springs! They won the Miracle League's Northwest Arkansas Burger Competition in September, giving them a Golden ticket to World Food Championships in Indianapolis. That happened this past weekend. We'll hear how it ended and hear from Adrian Lem of Mellow Moose Burgers. Now onto some somber news. Smoke and Barrel in Fayetteville is now closed. They decided to sell to someone else and announced it on social media this past weekend. We'll hear from them. If you're online and follow the top influencers in the Chinese food world, you've no doubt heard of Vincent Yeow Lim, or @DimSimLim, as his millions of social media followers know him. If you don't follow him, you might want to check out his TikTok or Instagram feeds to see what kind of food will be coming to our area. And oh, by the way, Catherine Zhang is one of his partners in this. She's a pastry chef that won Zumbo's Just Desserts on Netflix and was the youngest to do it. They'll be partnering with our guy Barry Furuseth of Blu in Bentonville. So, what is it? Where will this restaurant be? What's the meaning behind the name? Why did they decide on Northwest Arkansas and when will it open? So many questions and we'll get the answers next, right here on the Flavors of Northwest Arkansas.

On today's episode of TV Reload I am joined by Adriano Zumbo who was is the 3rd eliminated contestants from Dessert Masters Australia on Network Ten. Adriano is an Australian dessert king come television presenter. He opened his first patisserie in 2007 before rising to prominence as a frequent guest on Masterchef Australia. Many have described him as Australia's own Willy Wonka and to be honest I whole hearty agree and will suggest probably suggest opening his own chocolate factory in this chat. This year Network Ten have treated audiences to this new series Dessert Masters which is a spin-off cooking show from MasterChef Australia with hosts Melissa Leong and Amoury Guechn Endemol Shine has recruited the best dessert chefs in the country to compete for the bragging rights. While the idea to take on the Grease theme looked perfect for Zumbo - the wheels did come off for Adriano a few time while that Milkshake.. which by the looks better than anything I have ever made… yet sadly it was the reason we saw him packing. I will find out if the producers approached him just to compete or if they asked him to hosts the new series Adriano will share what exactly went through his mind as he was shockingly eliminated 3rd and if he regrets signing onto the series? I will also find out if he is looking forward to seeing the new Willy Wokka film about to be released in December and if he grew up reading that book by Rohal Dahl. Jim Zumbo, outdoor hunter/fisherman/ outdoor writer/forester/biologist/book author/tv show host/speaker was long hunting editor for Outdoor Life magazine and writer for many other outdoor publications. Jim has lost count of the feature articles he's written and of the TV shows he hosted on the Outdoor Channel. A native of New York, Jim headed West shortly after college. These days is known as the consummate “westerner”. His moustache, black hat and ready smile have long been his trademark. For many years Jim has been one of my personal heroes, mentors but more importantly a best friend. I recorded this interview recorded in Oklahoma, on the property previously owned by Miranda Lambert, entertainer extraordinaire. Jim, Rick Lambert (Miranda's dad) and I were there fishing for bluegills, one of Jim's favorite fish. Rick Lambert truly is as man of many talents including songwriting, playing guitar, entrepreneur who owns Red 55 Winery and the Pourhouse in Lindale Texas, outdoor chef who loves cooking in cast iron, fisherman, a consummate turkey hunter and hunter of many other things in North America and in Africa. He also happens to be the father of Miranda Lambert. However, to me more importantly, he is “Rick” a dear friend for numerous years. I caught up with my old friend while he, Jim Zumbo and I were in Oklahoma on the ranch that Miranda used to own. Our goal was to catch several “messes” of bluegills to send back to Wyoming with Zumbo, eat good, tell a few hunting yarns, and simply enjoy each other's company while kicking back and relaxing. Abstract: The immune system coordinates the response to cardiac injury and is known to control regenerative and fibrotic scar outcomes in the heart and subsequent chronic low-grade inflammation associated with heart failure. Here we profiled the inflammatory response to heart injury using single cell transcriptomics to compare and contrast two experimental models with disparate outcomes. We used adult mice, which like humans lack the ability to fully recover and zebrafish which spontaneously regenerate after heart injury. The extracardiac reaction to cardiomyocyte necrosis was also interrogated to assess the specific peripheral tissue and immune cell reaction to chronic stress. Cardiac macrophages are known to play a critical role in determining tissue homeostasis by healing versus scarring. We identified distinct transcriptional clusters of monocytes/macrophages in each species and found analogous pairs in zebrafish and mice. However, the reaction to myocardial injury was largely disparate between mice and zebrafish. The dichotomous response to heart damage between the mammalian and zebrafish monocytes/macrophages may underlie the impaired regenerative process in mice, representing a future therapeutic target. EXCEPT WHEN THEY ARE TALKING TO THEMSELVES! That's why StoryPower is an inside job.” J Loren Norris STORYPOWER IS AN INSIDE JOB The encouragement we tend to offer others seems to be missing many times in our internal conversations. I know this for certain, I am my own five decade case study. For as long as I have been able to think, reason and talk, I have vacillated back and forth between verbose pride and self destructive self-talk. I have been halted in relationships by arrogance and an overblown ego and I have struggled with self hatred and low self esteem. I am sure no one else has experienced this journey... RIGHT?? STORYPOWER IS A LEADERSHIP TOOL The number of times I have encountered people in leadership roles, parenting roles and other positions of management or influence who are careless about how they speak to and about those they lead is truly mind boggling. I have witnessed parents, teachers, managers, even ministry and government leaders belittle those who are counting on them. From name calling to public humiliation it seems as if they believe the more they can crush the will of those they lead, the more power they have to exert. Nothing could be further from the truth! If leadership is about influence, then the positive influence which builds trust and safety goes a long way in the direction of loyalty, service and sacrifice. Words, stories, illustrations and examples which encourage, empower and embolden your team members will expand your influence and strengthen your team. In fact, IF THE STORY YOU TELL to make a point involves your team, IT BETTER BE POSITIVE! STORYPOWER IS A COMMUNICATION TOOL The most common request I receive as a Public Speaking Coach is “help me write the speech that sells!” Ironically, this is an alarm bell in my mind. Immediately our relationship has shifted. Because I know the previous two points to be profoundly true and profoundly critical in the survival of the species, I am hesitant and proceed with caution. I also know that training someone to utilize the power of story selection, story crafting and storytelling when they are still dealing with unbridled ego and emotional wounds is tantamount to handing a sharpened broad sword to an angry five year old and expecting no negative consequences. Public speaking, leadership and influence all go hand in hand. The marketer who promises to “make you famous”, “get you on stages”, or “create your celebrity brand” without concern for the condition, maturity, responsibility and mental well being of the speaker they are selling a program to simply doesn't grasp the gravity of the situation. In my opinion, they are sales mercenaries. They will TAKE ANYONE'S MONEY. Many are fine with a “money back guarantee” because by the time the person realizes A. It didn't work for them or B. We sat down with the star of Zumbo Just Desserts, King of desserts and Prince of patisserie Adriano Zumbo. Adriano shared his life story, from his earliest childhood passion for football, to how he discovered his love and passion for cooking sweets. Having been inspired by his parent's hard work, Adriano's success had been driven by his parents. Following the values of their hard work and passion, which gives him and his family a better life. Leaving his hometown for Sydney to complete his apprenticeship for four years, he learned the ins and outs of becoming a successful chef. Adriano admits that having been thrown in the deep in more than once was the best way for this celebrity chef to learn. By getting his hands dirty and just getting in there… and it paid off.

MDF Podcast - Talking Mule Deer with Steve Belinda and Jodi Stemler S2 E27 - Outdoor Writer -Jim Zumbo On this episode of Talking Mule Deer we are honored to talk to renowned outdoor writer, Jim Zumbo. Jim tells us about how he began his career working on forestry in Utah and as a forester/game warden at West Point, NY, before heading back to Utah as a wildlife biologist for the Bureau of Land Management. Jim wrote his first article for Outdoor Life in 1966 and he received an offer from the magazine to go full time as an editor in 1978. He reminisces about the banner days of mule deer hunting in the Book Cliffs and tells us a classic Zumbo story about his most memorable hunt with his daughters out there. We talk a little bit about his favorite places to hunt and also about wildlife behavior and mule deer migrations. Jim gives us a few tips on how he’s found big bucks and how you can too. My guest today is the lovely Rachel Khoo - chef, food writer, broadcaster and founder of Khoollect which she describes as "a creative studio based in London and online community celebrating inspiration found in unlikely places".At 26, Rachel left her London job working in PR to move to Paris and learn to bake and follow her gut (and heart). According to The Times, she contacted Penguin with the idea for the Little Paris Kitchen cookbook in 2012, which has since gone on to be translated into 12 languages, which also led to a BBC Two series, pulling in almost 2million viewers. She's just released her sixth cookbook, called The Little Swedish Kitchen and Rachel is currently filming her eighth television series. She co-hosts Zumbo’s Just Desserts which aired in during summer 2016 and is now screening around the world on Netflix.In this episode we talk about her interesting career path, why she loves living in Sweden, her newest cook book The Little Swedish Kitchen and why it's OK to be proud of your work and be different. Kate shares the story of how her grandmother taught her to bake and then fast forward to how she was chosen to be on the Australian baking competition. Is there too much Ricky on the podcast? Perhaps, but Zumbo don't care. The new, upstart streaming service, Holo needs the fellas to provide some of their trademark mediocre content. Elia Kazan gets spontaneously ushered into the quote corner. This episode goes out to Brad “the rad” Lohaus. How would George fare selling insurance? Ricky forgets for a moment that Williamson is a shit-head. Matt is not friends with any hit-men, to his knowledge. It's really up to all of us to decide what exactly Mitch and Murray are going to shit. Williamson seems overly concerned with Ricky going out just hours after a robbery. Ricky might have an impulse to choke out George. The boys get overly emotional at altitude. Matt likes to prep for his fun but don't ever ask to borrow his Sharpie. Bill tries to zero in on a James Mason impression. Romaville ideas continue to flow like Cutty. Liev Shcrieber joins Elia Kazan in the quote corner. The boys hit for the cycle and get to all 4 jingles this week, which makes award-winning songwriter Bill very happy.

Bill and Matt are making substantial upgrades to the audio rig this week. Matt is looking for a way to mute Bill, who has offered up a first draft of a housekeeping jingle. Zumbo judges it harshly but Hemingway and Paul Shaffer hate it too. Matt loves the word cunt. The boys crack open significant problems in the medical industry. Bill and Matt finally recognize that they are nothing more than developmentally arrested children, incessantly quoting their favorite movie. Is Moss the most morally corrupt of the group? Bill had some big, Mamet-family doin's this week and he tells us he thinks Dave is back! Matt asserts that he was merely blinded by a Pidgeon. The boys discuss Dave's propensity for writing great interrogation scenes. If the jacket is puffy, it better be fucking warm. Mo Cheeks leaves Matt hangin'. It seems as though the boys can't get through one episode without talking about a butt. Matt would have taken Moss up on his offer to rip the joint off, immediately, despite Moss' sociopathic tendencies. Matt sees Bill's new intervention attempt as an attack. In lieu of an extended housekeeping Matt just chooses to re-hash every on-going argument he and Bill have ever had. Bill had no fun in this episode... none.
