The COVID-19 pandemic brought many challenges to the restaurant industry, especially at its peak in early 2020 when indoor dining in much of the country was shut down. A shining light seemed to come in the form of food delivery services, which enabled restaurants to reopen and safely provide food to patrons even though their dining rooms remained closed, or open at a reduced capacity. But is the relationship between restaurants and food delivery services really a healthy one, especially with indoor dining allowed once again? A new study selected for publication in the INFORMS journal Management Science titled “Food Delivery Service and Restaurant: Friend or Foe?” explores this relationship and in particular its impact on restaurants and the restaurant industry as a whole. Joining me to discuss this work is Manlu Chen with Renmin University of China's School of Business.

We all know of MR D, Uber Eats and OrderIN - but now there's a new kid on the block, Mr Yum launched in South Africa last weeky offering restaurants a new alternative. Gary Harrod, co-founder of Mr Yum South Africa say this service is very different to what's out there at the moment.

Amazon plans to begin a food delivery service in India. The E-commerce giant will compete with other food delivery giants such as Swiggy & Zomato. Subscribers of Amazon Prime — the e-commerce giant’s membership service for discounted shipping rates and streaming video content — will now receive free membership to the company’s on-demand grocery service, AmazonFresh. According to Corby Kummer, a senior lecturer at the Tufts Friedman School of Nutrition Science and Policy, Amazon’s move is the latest part of its growing effort to expand into the grocery business. Kummer said the key to Amazon’s strategy is cutting down on staff at Whole Foods, which the company acquired in 2017, to reduce operating costs and fund the delivery service. “While they chop local jobs of people who are at cash registers or people who smile at you when you go to Whole Foods ... they can lose money hand over fist,” Kummer said. “All of your friends who are smiling at you at Whole Foods are going to be gone, because you’re buying into meal delivery.” According to a February report from Bain & Company done in partnership with Google, 3 percent of US grocery shopping occurs online, but analysts expect the amount of online sales to triple within the next decade. Kummer is executive director of the Food and Society policy program at the Aspen Institute and a senior editor at The Atlantic.

Soa Davies leads menu development and drives the culinary vision for Maple, the delivery-only food service with rotating daily menus prepared by New York’s best chefs. Soa, as executive chef, brings almost two decades of culinary experience to the company. Previously, she spent over six years working alongside Eric Ripert as the head of menu research and development for his three-Michelin-starred Le Bernardin restaurant. Davies was the founder of Salt Hospitality, which focused on helping emerging fine dining concepts with menu development. She authored the Short Stack edition titled Vol. 2: Tomatoes. Nina Clemente, who was born in Italy and raised in New York City, realized the possibilities of transforming pure ingredients into Southern Italian feasts by watching her mother make vibrant local and seasonal cuisine. It was these experiences that led her to understand a desire to make food her career. After a successful stint as a private chef, she began working at the Curious Palate and then Osteria Mozza, learning from the incomparable Chef Nancy Silverton. She then worked at Maya’s Restaurant in St. Barths followed by a stint with Chef Enrico Crippa at his three Michelin star restaurant Piazza Duomo in Alba, Italy. Today, Chef Nina strives to bridge both cultures from her childhood by taking a democratic approach to food. She cooks cuisine that is clean, beautiful, nourishing, and accessible.
On this episode, host Jenna Liut and associate producer Taylor Lanzet discuss the USDA’s proposed changes for retailers participating in the Supplemental Nutrition Assistance Program (or, SNAP). This program is the largest in the domestic hunger safety net and over 44 million Americans rely on it. According to the USDA, as of September 2015 over 250,000 firms were authorized to participate in SNAP. Recently, the USDA released its proposal to require retailers to supply a wider variety of healthy and whole foods for SNAP recipients, which has been met with a great deal of resistance. Joining us on the line today to dig into the details of the USDA’s proposal, what the response to it has been and what it means for the people relying on the program is Chuck Abbott, editor of Ag Insider published by the Food and Environment Reporting Network, who has covered food and agriculture policy in Washington for three decades.
