Kabobs are like the pizza of the grill. Simple to put together, and you can also get as creative as you want with what you put on the skewer. The first kind of “kebab” dates all the way back to 17th century BC in Greece. Excavations carried out in the area found what is called firedogs (dog barking). No, not those kind of dogs…these were stones carved to look like long dog-like animals that would have slots for skewers to lay in. So, whether you're enjoying kebabs in the comforts of your backyard or on the streets of a bustling city, there is no denying that this is a favorite shared by cultures all around the globe. Food with Mark Bittman is coming May 24. In the meantime, enjoy some outdoor grilling this weekend with Mark's easy recipe for chicken kabobs. Cut boneless chicken breasts or thighs into chunks. Combine a teaspoon of paprika, a teaspoon of cinnamon, a dash of nutmeg, salt, and pepper together in a small bowl. Toss the chicken with a few tablespoons of olive oil and some fresh lemon juice. Sprinkle well with the spice mixture. Thread the chicken onto skewers and grill until done. Then serve with lemon wedges. It takes just a couple of minutes more to slice up some eggplant and zucchini and throw them onto the grill with the kebabs. Asian Steak Kabobs Ingredients 2 lbs steak cut into 1 in. cubes 2 Tbsp honey 1/4 c. soy sauce 1/4 tsp ground ginger 1/2 tsp garlic powder Instructions In a large bowl whisk together all ingredients except steak. Marinate steak in marinade, tossing to coat for at least 2 hours. Thread steak on eight metal or soaked wood skewers. Using a long-handled tongs rub a paper towel that's been moistened with cooking oil over grill grates to lightly coat them. Place skewers on grill over medium heat, cover grill and grill until beef reaches desired doneness. Or broil about 4 inches from heat for 6-9 minutes. Turn occasionally while grilling. Perfect when served with fried rice and broccoli.
