We'll start the New Year off with an anniversary...the 1oth anniversary for the New York Distilling Co. in Brooklyn's North Williamsburg neighborhood. Allen Katz and his partners opened their distillery in what was at the time a fairly run-down neighborhood, only to see gentrification take shape around them. As Allen discloses on WhiskyCast In-Depth for the first time, that's forcing them to make plans to move to a new location in the very near future both to expand production and comply with the city's pending changes to fire safety codes for distilleries. He'll also explain why they decided to focus almost exclusively on making rye whiskies, including a special 10th anniversary single barrel edition of Ragtime Rye selected by legendary bartender Dale DeGroff. In the news, Europe's tariffs on American whiskies are now officially suspended with the arrival of 2022, and U.S. distillers are jumping back into the European market. We'll get an update on construction plans for Penderyn's third distillery in Wales, and noted chef David Burke tells us about next week's Beef and Bourbon Dinners at nine of his restaurants to raise money for Western Kentucky tornado victims.

Episode 11! Today, we're going across the pond to the North of England and Spirit of Yorkshire Distillery. I'm joined by founder and Managing Director, David Thompson. Dave is a farmer at heart, and Yorkshire is his garden. Yorkshire is the largest county in England by far and has ample space to grow grain and everything you need for distilling. And yet, like much of the rest of England, distilleries are few and far between compared to its Northern and Western neighbors. I ask Dave why this is, what constitutes a “Yorkshire” style of whisky, if there is one, and what he and Spirit of Yorkshire bring to the table. The core answer and the most fascinating one is that they are, again, farmers at heart. Spirit of Yorkshire isn't meant to be a global, shelf-filling enterprise – it's meant to showcase what can be made with the local product and share it with those who will enjoy it. As their acreage grows, so will they, and not a second sooner. Spirit of Yorkshire is a field-to-bottle operation, distilling their own home-grown barley. Keep in mind that this is the same barley that could be going to Scottish or Irish distillers – much of what's distilled to the North and West is barley grown in mainland England, and yet there are conspicuously few distilleries where the barley is actually grown. I love talking to distillers and producers right on the cusp of something big, and that's exactly where Spirit of Yorkshire is. As we speak, new agreements with distributors in the US are being signed for their Filey Bay line to get to the US. I'd also be remiss in not mentioning that Spirit of Yorkshire is a Jim Swan-connected project. The late Dr. Jim Swan, who passed away in 2017, was prolific. If you're an American whiskey drinker, the most apt comparison might be Dave Pickerell, but with all due respect to the late Mr. Pickerell, Jim Swan's influence reached as far as one possibly could in whiskey. Dr. Swan's fingerprints remain on some of the most exciting distilleries around the world, from Yorkshire to Kavalan in Taiwan to Penderyn in Wales, India's Amrut, and Kilchoman on Islay. He had influence in every major whiskey-producing country and many of the up-and-comers, too, with a signature style that was less about him and more about what the local style was or could be like. So, does it make a difference to distill where the barley is grown? Well…to be honest, I'll have to wait to find out. Not a long time, but just a little until distribution hits New York. I am very excited to do so and will be posting my tasting notes as soon as I can grab a bottle (or three). Weekly Gin RecommendationThis weeks recommendation is from the https://www.instagram.com/penderyn.distillery/ (Penderyn Distillery) and is Brecon Gin. In 1990s friends in a pub were talking about creating a whiskey distillery and they 'dreamt of creating a whisky as pure and precious as Welsh gold, represented today by Penderyn's ‘gold seam'. They did that. I loved the whiskey and so had to try the gin They use the base grain spirit that they use for the whiskey and create a gin with botanicals from the four corners of the world The nose is very much London Dry Gin i.e. heavily juniper based The flavour profile begins with an initial sweet taste followed by a citrus and then with the dry juniper taste at the back of the profile. This is a very smooth gin and 43% and goes nicely with a light tonic such as standard, Mediterranean or Elderflower. It could easily lend itself to a cocktail and is smooth enough to work as a dry martini although would not be my first choice. It has a proud place on my gin shelf and for anyone who loves a London Dry Gin with something a little bit special I can thoroughly recommend. There's a long tradition of fathers and sons in whisky distilling, but Kentucky's Jeptha Creed Distillery is one of the few distilleries where mother and daughter run the show. Joyce Nethery is the head distiller at the family-owned distillery east of Louisville, while Autumn Nethery is both co-owner and in charge of marketing. Joyce's husband Bruce grows all of the grain for their whiskies and other spirits on the family's 1,000 acres of farmland, including the heirloom Bloody Butcher corn that plays a key role in their soon-to-be-released straight Bourbon. Pat Dunlop, Adam Bradshaw, Dan Rampling, and Emily de Korte tasted the Bernheim 7-year-old Straight Wheat Whiskey from Kentucky, Penderyn's Madeira Finish Welsh single malt, the Glenglassaugh Revival single malt from Scotland, and Nikka's Coffey Malt from Japan.

Hello again! Welcome to episode 3 of Beer N Biceps. In this week's podcast Todd and I talk about choosing a gym. We briefly mention Todd's new goals, and we discuss measurements. For about 45 seconds at the end of the podcast because we completely forgot! We also discuss our beer of the week. And have an unscheduled talk on our whiskey of the week (after Todd's dad dropped off a whiskey mid-podcast). Choosing a Gym When we had planned out the week's podcast we had agreed that we should talk about why choosing a gym is an important step in your fitness journey. Without planning anything out I went into describing what you should and shouldn't look for in your new gym. Before I realised that I was basically describing most gyms! Gyms should be expensive but not too expensive, they should be near your work or near your home, or somewhere between the two. They should have decent equipment, but not be too fancy. A good gym should have a young demographic, but an old demographic can also be good. You get the idea .... Just pick a fucking gym! I guess my complete uselessness at choosing a gym is centred around the fact that I have worked in 4 completely different gyms, and had a good experience in all of them. To get good results all you really need is friendly staff, access to some good weights, and your own motivation. Nothing else really matters. Finding a Gym Partner This was a really interesting discussion point, because I have actually had many training partners in the past, some of them had trained with me for months on end, while others had trained with me for as little as one session. As with anything, the right gym partner for you will be different from the right gym partner for me. But from personal experience I can say that the worst gym partners have been The reluctant gym partner - someone who will cancel at the drop of a hat, is always late, and would much rather be talking than lifting. The Bro gym partner - Gives you completely unqualified advice, has no idea what they're doing, works at 200% intensity The Drill Sergeant - Keeps yelling "Just one more" even when your form has diminished to a caricature of what a bench press should look like The Girlfriend - Spends 5 minutes on a leg curl then asks if we can go home and get some chips. Still love her though Todd's New Running Shoes We also had a brief look at Todd's needs for some new running shoes. In it I talked about the similarities in terms of benefits that most trainers offer. Whether it is a £400 set of Nikes or a £25 set of trainers from Sports Direct. So long as the shoes are comfortable you will run well in them. I mentioned a study by the US Army that found similarities in regular shoes and more fancy ones, which you can check out here. Todd is a true Beer N Bicep Legend Beer Review: Longboard Island Lager - Kona Brewing Co. After my controversial dislike of last week's beers, it was refreshing to discover some new beer that I actually really liked. Longboard Island Lager is a smooth lager that reminded me of a french lager. It was a little plain tasting, but still very nice. The brewery itself is situated in Hawaii and is called Kona Brewery. After the podcast we tried their Golden Ale called "Big Wave" and it was gorgeous, a real high quality beer. Both beers are perfect for drinking outside, and it was nice to finally have a taste of a beer that my friends have been raving about for quite a while. The whisky we tried afterwards was a Welsh whisky from a company called Penderyn, neither of us are massive whisky fans but this was something special. Quite sweet and not too harsh. Reminded me a bit of a couple Irish whiskeys that I've had. But as I am even less of a whisky expert than I am a beer one, I'll try to avoid comparisons. In case people give me a horrified look and say that it tastes nothing like an Irish whiskey. Next Week This is where things get interesting.

Penderyn is the only whisky distillery in Wales, but may soon spin off a second distillery under its name in nearby Swansea. Local leaders want a second Penderyn Distillery as part of their revitalization plan for a former copper works along the River Tawe, and the idea fits with Penderyn's plans for future expansion. We'll discuss the project with Welsh Whisky Company managing director Stephen Davies and look at Penderyn's long-term future on WhiskyCast In-Depth. In the news, BenRiach's sale to Brown-Forman is complete - and that leaves just one of every four Scotch Whisky distilleries in Scottish hands. Dr. Jim Swan's client list includes Penderyn, Kilchoman, and Taiwan's King Car Distillery, which took the top two spots in this year's Malt Maniacs Awards with Kavalan Solist single malts.
