Episode #149 In this Fasting Q&A episode, hosted by Coach Lisa Chance, Dr. Jason Fung answers questions from the TFM Community: I've heard you've written an amazing book called, “The Cancer Code.” I haven't read it yet, but wanted to hear your thoughts on broccolini being an anti-cancer food. I understand it contains Sulforaphane, Indole-3-carbinol (I3C), Glucosinolates, Vitamin C, and fiber. Should I concentrate on cruciferous vegetables, like broccolini, or just work on getting a balanced diet? What are your thoughts? [02:14] I have a little confusion about the difference between taking metformin and injecting insulin. From what I've read in your books it's that insulin is going to make type 2 diabetes worse in the long run. I already know that that's not the answer to reverse type two diabetes and I'm not taking either one. Like insulin, will metformin also be detrimental to treat T2D or is there a difference between one and the other - and why, please? [05:27] What do they mean by 'immunoreactive insulin'? [12:06] Does the liver respond negatively to the ingestion of supplements? In other words, do the supplements cause any changes in my insulin? [14:52] I started TRE (beginning Jan this year) at about 135 pounds and am now doing 24-hour fasts with OMAD and 2MAD. I have completed a 42-hour fast and will probably try another one this week. I am eating whole foods. Avocados are my miracle!!! I do not snack between meals. My body is still releasing weight with what I am doing now and I feel I have another 5 pounds to go. How will I know when to stop shedding the weight? [18:13] Can you clarify the role of physical activity and exercise in weight loss? In The Obesity Code, you shared that a number of rigorous clinical trials demonstrate that exercise contributes minimally, if at all, to weight loss. However, zone 2 exercise is promoted for its'fat burnin' benefits. I plan to continue exercising for its health-promoting benefits but I would really like to hear your take on the extent to which it can assist with weight loss, and what exercise types you recommend for weight loss. Episode Summary: According to Cancer Research UK, this works because, “as the blood circulates around the body, fluid leaks out from the blood vessels unto the body tissues. This fluid carries food to the cells and bathes the body tissues to form tissue fluid. The fluid then collects waste products, bacteria, and damaged cells, as well as any cancer cells if present. This fluid then drains into the lymph system. The lymph then flows through the lymph vessels into the lymph glands, which filter out any bacteria and damaged cells.” Once filtered, the lymph leaves the glands and moves into larger lymphatic vessels to the thoracic duct at the base of the neck. Lymph is then released back into the bloodstream, free of any harmful infection or bacteria. Visit their website HERE at www.cobramestate.com.au BEEF SHORT RIBS Ask your butcher for beef short ribs but if possible keep them long on the big rack. Long and slow is Damo's preference. He cooks at 120 degree C for 6-8 hours (or even longer). Damo loves using his BBQ, but you can also slow cook in your standard oven in a covered baking dish or oven bag. Make your own rub or buy a pre packaged rub. Damo likes the Webber rubs. Home Made Rub Can be as simple as Garlic powder, paprika, onion powder and course sea salt. Method Massage the rub into the beef short ribs (use gloves or you'll get stained hands). Can apply the rub ahead of the cook and let it sit for up to 24 hours in the fridge before cooking. Put it on a rack in a roasting dish and cover and cook for as longs as you can. Broccolini side dish. Spilt your broccolini and sprinkle over parmesan, fresh chilli, salt, then slather with Cobram Estate Olive Oil. Roast at 220 degrees C for 10 minutes or so. You're aiming for a nice char on the broccolini. Serve with twice cooked potatoes. Par boil spuds then cover in Cobram Estate olive oil. Roast for around 2 hours in an oven bag. This week we are pretty excited as we have just started to harvest our Brassica's from the gardens. Which is amazing as last year we just fed the possums! There are so many uses for Broccoli, cauliflower and Baby broccoli or Broccolini and are fantastic buys right now. The recipe today focuses on Broccolini, which is a hybrid of Broccoli and Gai lan or chinese kale. With its long stems and smaller florets it's a super crispy green. This recipe calls for you to blanch and refresh in iced water. This does two things, brings out the amazing green colour and also sets the crunch! I would recommend doing this when cooking not only broccolini but all brassica's. Enjoy the recipe. Broccolini, mushroom and roasted garlic rigatoni Cook time: 25 minutes Prep time: 20 mins Serves 4 Ingredients: 500g rigatoni pasta 500g field mushrooms 2 garlic bulbs 4 Tbsp grapeseed oil 300g broccolini stems 100g Smoked cheddar cheese flaky salt freshly ground black pepper Hot sauce if you want Instructions: Preheat the oven to 180*C. Cook the pasta as per packet instructions. Peel the field mushrooms and put in a roasting tray along with the whole garlic bulbs. Drizzle with grapeseed oil and season with salt and pepper. Place into the oven and cook for 30 minutes. Allow the garlic to cool slightly then squeeze out the flesh. Put half of the garlic in a food processor with all of the mushrooms, a little oil, salt and pepper. Blitz until combined. Bring a pot of salted water to the boil. Remove the outer leaves of the broccolini, when ready drop them into the water. Removing after 1 minute. Heat a frying pan, add the mushroom puree and cooked pasta and toss to coat the pasta evenly. Finally add the broccolini and remaining garlic cloves until just heated through. Serve in small bowls with some finely grated smoked cheddar. You can just eat the broccoli on its own, but here I show how to turn it into a quick pasta dish that great hot or cold. I use farro pasta here, because of all the whole grain pastas I think its the best. Its also the most traditional, because in Puglia, farro is often used to make pasta. Ingredients About 4 quarts Water 2 T Salt 1/2 Bunch Broccoli, Broccoli Rabe, or Broccolini (or more if you love Broccoli like I do) 2T Extra Virgin Olive Oil 1 Clove Garlic ½-1t Chili Flakes (depending on how hot you like it) 1 Cup of whole grain penne (farro is the best if you can find it) Salt and Pepper to taste Directions Fill 4-quart pot with water, leaving about 1 inch of space at the top, and put on stove to boil on high. While the water is coming to a boil prepare the broccoli. Wash broccoli and cut off tough bottom part of stem. Using a peeler, peel the outer layer of the stalk (this will make sure you don't have any tough stringy broccoli). Cut the florets from the stalk, trying to get a consistent size. Cut the stalk into quarters and dice. disks and cut the disks into quarters. When the water is boiling, add the salt. When the water returns to a boil add all of the broccoli pieces. You want to cook the broccoli until the water just starts to come back to a boil again, which should be around 2 minutes. Be careful not to overcook, you want the broccoli to still be crisp. When done, remove the broccoli to a colander using a spider or slotted spoon to drain. Shake colander to remove excess water and let the broccoli sit for a few minutes. The drier it is, the better your sauté will be. While the broccoli is resting peel and then halve, slice, or shop the garlic, depending on how much garlic flavor you want in the final product. If you want a subtle infusion half the cloves and add them to the oil before the broccoli. If you want a little more garlic flavor add the chopped pieces or slivers almost at the end, so they can still cook but won't brown. Now Cook the pasta and sauté the broccoli. With water boiling again, add pasta. Set time for 1 or 2 minutes less than package instructions. When you have seven minutes left on the timer, heat a sauté pan with the olive oil over medium high heat. If your using the chili flakes add them into too. When the oil is shimmering, and flows easily or when you see the chili flakes starting to wobble around, your oil is hot enough for the sauté. If its starts smoking it's too hot. You should have about 5 minutes left. Add the broccoli and allow it to remain undisturbed in the pan for about a minute or more. Next add your slivered or chopped garlic now. Cook for another two minutes or so, flipping the broccoli one more times if necessary to reach the desired level of doneness--we like ours to still be toothsome. At this point the pasta should be done. Using the spider, transfer the pasta from the water to the pan with the broccoli over medium heat. Toss, season with salt and pepper to taste and serve. They need a full sensory upbringing, not doing too much of any one thing." -Jenifer Joy Madden In Episode 71, I'm chatting with Jenifer Joy Madden about the latest research on brain development and ways we can help our children grow healthy and "durable" brains. Jenifer Joy Madden is an award-winning health communicator, author, and educator. She founded DurableHuman.com to encourage all people to cherish and maximize the curiosity, creativity, compassion, and so much else they alone possess as human beings. Big Ideas Jenifer defines durable as being "effective and strong in body, mind, and spirit for as long as possible." The "Bushy Broccoli Brain" -- Jenifer uses the Broccoli vs. Broccolini metaphor to show how the brain develops more interconnected, as synapsis fire from rich stimuli, whereas the broccolini is a stalky, more truncated structure, showing a lack of development. New research on the brain supports the idea that in order to be more durable, our children need 3D, multi-sensory, 360° experiences. The rich sensory environment at camp is a perfect example. Being outdoors and interacting socially stimulates the interconnections in the brain. If a kid is limited in their activity and they do one thing for a long period of time (such as playing a game online) it crowds out some of the other things they need to be doing during their day to promote full brain development. The brain develops over time so there are windows of opportunity throughout childhood to develop certain skills. Missing these windows can have detrimental effects, such as "Virtual Autism". In France and Romania, doctors have identified "Virtual Autism" in kids under age four who have free reign all day to be on a tablet. After days and days of being on the screen, they stop responding to their names and adults can’t catch their eye. When kids return to a regular kid lifestyle and they’re playing with physical objects and playing outside, that "virtual autism" goes away. After a visit to a treatment center for internet addiction, Jenifer determined that one of the primary causes of this kind addiction is a lack of attachment. Attachment starts a little before birth that the child starts attaching to the primary caregiver -- the mother. Kids who don’t securely attach to a caregiver become agitated and insecure and have trouble coping. We need to feed their love mechanisms early on in life, otherwise, they’ll be kind of shaky their whole lives. We need to make sure that babies’ first images are not obscured by a device. Jenifer describes her course for new parents called New Parent's Confidence Kickstart. Recommendations for parents to help kids overcome addiction to their devices: Give them chores. They must have a purpose and be responsible contributors to the household. Physical activity is key. Help them develop skills, genuine relationships, curiosity ("The Triple Crown of Durability".) Quotes Audrey: "There are all these basic needs that our kids have and to get this really bushy broccoli brain; a big part of it is the social connection. Talking face to face and making eye contact--all that great stuff--I think of that as making a bushier brain.” Jenifer: "A lot of our functions are being taken over by robots and AI, so we have to do what we do best as human beings. That is to be thoughtful, curious, and skilled. We need to use the senses we have and they don't. Compassion and intuition are special human functions." Jenifer: "Human beings that are young need to have that attachment. They need continuous eye contact with others and to have others listen to them." Audrey: "Giving kids chores is such a simple thing yet many people don't realize just how important. We know that while kids are contributing and having a purpose in your home or at camp, they are also learning really important skills." Audrey: "When you think about kids growing up and their brains, whether it's language development, or curiosity and those skills automatic it has all happened from practice. So you need that 3D experience that you describe for those neurons to fire together and create all that great, bushy, full brainpower. Jenifer: "I tell parents: Guilt be gone! Start to realize how attachment and developing boundaries around your technology can make a difference going forward." Audrey: “I think parents are so worried about what they’re doing wrong. No one is going to get everything right but you can make little course corrections along the way. If you’re noticing something with your family its never too late to do a reset. If you need to do more chores or have less screen time, those are all doable things. We all go through phases when we need to sometimes reset." Jenifer: "Numbers of autism diagnoses have skyrocketed in the last 25 years: 1 in 40 kids. The implication is that some of those kids have been affected by environmental factors. If can identify and at least try to mitigate them, we could at least see how the child responds. Having them not watch TV and removing them from screens is healthy for them so why not?" Audrey: "Instead of focusing on what not to do, let's think of things that we can do: going outside for an evening walk, going to the park, reading books together, playing cards or games. Try to find fun things to do instead of being on screens. That's an easier way to introduce more time away from the screens that kids can get excited about." Jenifer: "You've got to slow down, keep your eyes open and keep observing your children so you don't miss those vital cues from your kids."
