Midwest Fresh started as a restaurant consulting company by Chef Kevin Grider. Armed with his arsenal of signature sauces and exquisite dish recipes, he was able to achieve several successful restaurant openings and revitalizations'. During his tenure as a consultant, Chef Kevin realized his signature recipes had the potential to be household brand names. He immediately began bottling sauces using real ingredients from Indiana,and selling them to retailers across the state of Indiana. Within six months, his dream of building his company into a legitimate brand had come to fruition as orders began surge. The story begins in the summer of 2017 on a beach in Bali. The place where I (YES, that’s me Amy*) discovered the magic of matcha. An energy boost much like coffee but without the jitters and crash. Cooking is a way of life in the South and nobody knows that better than NFL Pro Reggie Kelly, owner of KYVAN® Foods. Reggie grew up in Aberdeen, MS and played football at Mississippi State University. He also excelled at the Pro level by playing 13 years in the NFL with the Cincinnati Bengals and the Atlanta Falcons. About Back to the Basics 101: Our family headed back to the basics over 20 years ago when our children had health issues. God healed our children of asthma, and ADHD tendencies, by giving us wisdom to treat them nutritionally. That made us realize that when we get back to the basics of eating God's "manna," His Creation, we will experience health and healing. Because of that experience, we slowly transitioned to "real" food. One of our main sources of "real" food was grain-rich foods. As a family, we would grind grains into flour for baking purposes. An opportunity in 2012, started our business milling the wheat we grow into flour for school systems. In addition to schools, we also used the fresh-milled flour to make homemade baking mixes which began our wholesale business. This first step in our business, provides living flour that helps others get as close to a wheat field when eating baked goods from our fresh-milled flour products in our homemade baking mixes. Forerunner Foods was born when owner Eric Velji got tired of the large corporate world in which he worked. He was tired of the bureaucracy, the red tape, the chain of command, but most importantly the way large companies have procedures that don’t make sense but they aren’t changed because it is “how we’ve always done it” Motivated by burnout and ready for a change, Eric went back to a personal passion: growing, sourcing, prepping, and cooking local food. With the goal of running his own farm, Eric conducted a lot of research around how a small farm can be financially stable. It is one of the toughest situations local farmers face. Most only have sales outlets at local farmers markets, which is great on a nice day and crippling on a rainy day. Eric realized wholesale was the way to go, but one farmer couldn’t meet the demand of local chefs. Thus Forerunner Foods was born. Forerunner Foods began exclusively to source local produce from small family owned farms directly for chefs and has grown into a full service restaurant supplier, specialty purveyor, importer of exotics, and coming soon the logistics behind a farm to table home produce subscription. Our Tradition White Oak Pastures is Radically Traditional Farming. Every day, we butcher meat from animals raised in a regenerative manner using humane animal management practices. This is no easy task, but it is our passion. To operate our vertically integrated, zero-waste model, it takes 155+ caring people working together to accomplish a common goal: taking care of our land and our livestock Our Transition Starting in 1995, we transitioned away from industrial agriculture techniques and began operating our farm as a living ecosystem. We now raise 10 species of humanely treated animals living in symbiotic relationships with each other. Our lands are holistically managed to become increasingly a living organic medium that is teeming with life. Our Commitment White Oak Pastures is a Zero-Waste farm. We sell the meats and poultry we butcher on our farm to passionate consumers who care about the animals, land and the community. The hides from the cattle we slaughter are dried for pet chew rawhides or tanned and crafted into leather goods. The fat from our cattle is rendered down to create some of the purest tallow products available. The inedible viscera is composted to later be spread on our farm as rich organic matter to fertilize our soil. You really ought to love what you do. Plenty of people have hobbies that add meaning or value to their lives. Baking was once a hobby for Jonny before it became a profession. “I’ve always been drawn to the mad scientist element of it," Jonny explains. "Like, when I tell someone I have a Peach Cobbler Cookie, I’ve had them say, ‘a Peach Cobbler Cookie? You can’t do that!’” But Jonny does. He also makes a special Pistachio Cookie seasonally around St. Patrick’s Day. And to some, bacon in a cookie doesn’t make sense, though the only reasonable reaction to the concept of a Bacon Maple Bourbon Cookie is, “Yes, please.” For Jonny, creating new cookie recipes is part science experiment and part social experiment. He spent more than a year perfecting his Caramel Apple Cookie. For his Caramel Brownie Cookie, he experimented with the science behind what makes a moist brownie, because no one loves a dry brownie. And let’s face it. The last brownie you ate was probably dry. So why does he do it? Because he loves doing it. He is a self professed flavor junkie, and he wants to let you in on his experiments. So why are they called Big Boy Cookies? “Growing up," Jonny says, "I’ve always been big. And to my brother, I was always Big Boy. So that’s where the name comes from.” Sometimes people are confused: the cookies themselves aren’t particularly big. Given the name, they expect a big cookie. What they find instead is a big boy baking cookies with big flavors. About Back to the Basics 101: Our family headed back to the basics over 20 years ago when our children had health issues. God healed our children of asthma, and ADHD tendencies, by giving us wisdom to treat them nutritionally. That made us realize that when we get back to the basics of eating God's "manna," His Creation, we will experience health and healing. Because of that experience, we slowly transitioned to "real" food. One of our main sources of "real" food was grain-rich foods. As a family, we would grind grains into flour for baking purposes. An opportunity in 2012, started our business milling the wheat we grow into flour for school systems. In addition to schools, we also used the fresh-milled flour to make homemade baking mixes which began our wholesale business. This first step in our business, provides living flour that helps others get as close to a wheat field when eating baked goods from our fresh-milled flour products in our homemade baking mixes. Pickles and Bones Barbecue - We started Pickles and Bones Barbecue with the dream of bringing a high-quality dining experience into our community and the desire to operate our own business. Using our experience in fine dining we set out to source the finest ingredients possible and utilize traditional cooking techniques to create food that set us apart from the crowd. We have a love for great food and great service and were confident we could deliver both even if we started serving out of a tiny trailer in 2015. We opened our brick and mortar carryout in 2017: we have picnic tables out side and offer catering for businesses and families. Over the past four years we have grown Pickles and Bones Barbecue into a neighborhood favorite with the intention of always looking for ways to give back to the community that has supported us since day one. Katie Kuznacic, a.k.a The Booch Witch, started making kombucha in her kitchen in the spring of 2017. She’s enjoyed the ritual ever since and saved thousands of dollars in the process. She enjoys bringing new DIY self-care techniques to those who seek that balance. She launched The Booch Witch in 2020 for the love of kombucha and the benefits the drink has provided her. Her unique home-brewing procedure affords a creative and natural flair. The Booch Witch’s instructional classes provide a unique new hobby that’s good for you and completely customizable to your personal tastes. “My techniques for the home-brewing process result in a light, effervescent, and naturally-sweet taste,” she says. “While retail brands are delicious, making my own booch at home has let me adapt each brew to my personal, seasonal tastes — or special requests from friends!” A Wisconsin native, Katie and her husband, Eric, live in Janesville. She works in higher education and is pursuing her MBA. She enjoys traveling, cheese, gardening, and being in the kitchen.
