Antonia Wien - Antonia ist eine vielseitige Journalistin, Gastronomie-Kritikerin, Autorin und Unternehmerin. Sie schreibt regelmäßig für renommierte Publikationen wie Der Feinschmecker, Foodie und Gourmet Traveller. Als Geschäftsführerin der The Chefs' Stories GmbH und Mitgründerin der Textagentur Langenegger & Wien ist sie eine der führenden Stimmen im Bereich kulinarisches Storytelling und Gastronomie-Marketing. Privat ist sie ein Morgenmensch mit einer Vorliebe für Filterkaffee, liebt Sachertorte und schätzt Weine mit Blauschiefer-Terroir. Sie beschreibt sich als farbenfrohe, leidenschaftliche Genießerin, die Wein am liebsten in Gesellschaft trinkt – am besten auf einem Bänkchen auf der Düne. Eine enge Verbindung hat sie zu Madeira, wo sie geheiratet hat – ausgelöst durch ihre Faszination für Portwein. Doch was ist eigentlich der Unterschied zwischen Portwein und Madeira? Welche Insel ist die bessere – Sylt oder Madeira?
 Wie frappiert man einen Wein?
 Diese Folge lüftet einige Geheimnisse der Genusswelt und räumt gleichzeitig mit bestehenden Vorurteilen auf. This is the weekly columnHappy New Year. We survived another sun circumnavigation. Sunlight grows slowly longer. Spring rebirth looms over the sere, cold-swept horizon. Endure these last temperature-challenging months, and we emerge into warm, bright shining mornings. Two wine types provide solace during this frost-dusted interlude: Porto and sherry.Porto and sherry are fortified wines produced on the Iberian peninsula. Porto in Portugal in the Douro Valley region and sherry in the Jerez region of Andalusia, Spain. Both are sweet wines with compensating acidity. Considered among the greatest fortified wines, both deliver succor when shivery winds swirl.Porto typically has an ABV of 19-22%. Sherry is similar at 15-22%. Higher alcohol delivers comforting warming sensations. And, admit it, a pleasuring slight buzz.Sherry pairs well with nuts, olives, cured meats—common winter appetizers. Porto pairs with chocolate desserts and blue cheese, notable conclusions to winter repasts. The two can bracket a memorable winter feast. And what better time to fatten up and escape than when frigid flurries fly?Production of Porto wine dates to Roman times. The Porto we enjoy today developed in the 17th century when British merchants sought alternatives to French wine. Portugal's fecund Douro Valley—a UNESCO World Heritage Site today—beckoned. Grapes grew from headwaters in Spain to the port city of Porto—thus the name. Most of the wine is made in Vila Nova de Gaia directly across the Douro. You can walk across a bridge to get there. Wine ships from the port of Porto.Sherry has similar back story. Viticulture dates to BC Roman times. Even under Moorish conquest (711-1264 AD), sherry production continued in spite of Islamic alcohol prohibitions. In the Spanish age of exploration (think Columbus and conquistadores), ships sailed around the world with sherry in their holds. Sherry production involves a “solera system” where wines from succeeding vintages are blended and exposed to air. This oxidation is the reason the wine became better, not worse, on long sea voyages.Both Porto and sherry are delicious with unique flavors. Certainly they are comforting in the depth of winter. This is the weekly columnPorto (port wine) often is mistaken to be a depth-of-winter libation sipped while gazing at a roaring fire, the finale to a robust meal. Porto certainly works in that scenario, but you miss out if you so limit your porto possibilities.Port can be enjoyed any time, including chilled in summer. In fact, tawny port is best appreciated slightly chilled. Ruby port and vintage port are best around 60-64 degrees. More about port designations in a bit.Here are the basics. Port/porto is a sweet, fortified dessert wine made in Portugal and identified by the word “Porto” on the label. The name comes from the city of Porto, the second-largest city in Portugal after Lisbon. It has been a UNESCO World Heritage Site since 1996.Porto, Portugal — Creative Commons 2.0Porto and its sister city, Vila Nova de Gaia, are on opposite banks of the Douro River in western Portugal. Grapes for making porto come down the Douro from vineyards in eastern Portugal. Grape-laden barges arrive in Gaia and go to “lodges,” where porto is made. The wine is made in Gaia, then shipped out of Porto.Some 80 different grape varieties are permitted in porto making. Five are the most common: touriga nancional, touriga francesa, tinta roriz (aka tempranillo), tinta barroca, and tinta cão. Fermentation starts, but when it reaches six-to-nine percent alcohol fermentation is stopped by adding brandy. That brings the final ABV to some 20 percent. Porto is sweet, but tannins and racy acidity balance things out. Then the defining element of porto commences—aging.The aging regimen prescribes categories of porto:• Vintage Porto. Sits atop porto hierarchy. Made from best grapes in quality vintages. Very age worthy—coming into their own in decades rather than years. Oak influence is somewhat muted because they only spend two years in barrel, but then they spend years in bottle before release.• Late-bottled. Wines spend four-to-six years in oak. Oak aging smooths things out, but the wine is less sophisticated—and less expensive—than vintage.• Tawny. Experiences long aging in wood—10 to 40 years. The number of years usually is prominent on the label. Mellow, nutty, woody, dried fruit. Features oak more than quality grapes, although there are many examples that feature both.• Ruby. Entry level porto. Usually ages two-three years in oak. Zoals tweewekelijks krijgen de liefhebbers van The Souidi Sessions ook vanavond de kans om in avant-première de spiksplinternieuwe Session te bekijken. Verser van de pers krijg je ze niet voorgeschoteld. En omdat we in tijden van warmste weken leven, hebben we een uitermate hartverwarmende aflevering voor jullie in petto. Het is - om verschillende redenen - een heel speciale aflevering. Voor het eerst heeft Omar niet één, maar twee toppers te gast. Een van hen is meteen ook de allerjongste gast ooit uit de geschiedenis van onze podcast voor het goede doel. Warre Thomas is amper 10 jaar, maar charmeert iedereen met zijn boeiende persoonlijkheid en eloquente talenten. Omar ontmoette Warre in december 2022 voor het eerst wanneer hij met de vzw Stisa speelgoed ging uitdelen in het kinderziekenhuis in Gent. Warre had kort voordien te horen gekregen dat hij Ewing-sarcoom heeft, een zeldzame maar zeer kwaadaardige vorm van botkanker. Warre maakte ontzettend veel indruk op Omar met zijn strijdvaardige houding en de ronduit impressionante manier waarop hij de strijd tegen dit monster sterk kon verwoorden. Ze hielden contact en Warre bleek ook zeer geïnteresseerd in podcast. Inmiddels heeft hij zelf z'n eigen podcastkanaal opgericht (Hope - de podcast, aanrader!) en komt hij bij ons samen met zijn prachtige mama Veerle vertellen over wat hij allemaal heeft meegemaakt en hoe hij hiermee omgaat. Endometriosis Awareness takes place across the globe during the month of March with a mission to raise awareness of a condition that affects an estimated 200 million people, about 1 in 10 women, worldwide. Endometriosis is an inflammatory condition where tissue, similar to the endometrial tissue that lines of the uterus, grows outside of the uterus.On average, endometriosis can take anywhere from 4–11 years before diagnosis occurs. Compared with white women, Black women are less likely to be diagnosed with endometriosis. Between misdiagnoses, assumptions that we're  hypochondriacs/drama queens/drug seekers, and additional erroneous assumptions that can go as far as suggesting that symptoms must be from an untreated sexually transmitted infection (or a 'botched abortion gone wrong')— often times, medical professionals don't demonstrate real interest in determining what was causes the symptoms of someone living with an endometriosis diagnosis.Some providers STILL  hold on to antiquated views about endometriosis mainly affecting people of European descent and racist tropes that Black people don't experience pain the same way white people do. We MUST check our providers' racial, gender, and cultural biases to ensure health access and equity for ALL PEOPLE. Equally crucial? Follow through. Hold physicians accountable by reporting their prejudices and racism as it can very well cost someone her life.The pain of endometriosis can be devastatingly debilitating and it is the leading cause of fertility challenges in women as it carries a huge personal and societal burden.  This week, we continue the conversation about "endo" and pain perception FROM THE PERSPECTIVE OF A PERSON LIVING WITH AN ENDOMETRIOSIS DIAGNOSIS.About our guest:Tiffany Davis Nazaire, MSN, RN-BC is from Birmingham, AL and has lived in Baltimore, MD for thirteen years.  She holds a Bachelors degree in Nursing from Auburn University (War Eagle!), a Masters degree in Nursing Informatics, and holds three additional board certifications. Onze eerste podcast over port. Eindelijk! En dat combineren we ook nog eens met kaas én slobberpost. Vorige week hebben we de flesjes gestuurd, dus als het goed is, hebben jullie ze geproefd. Op instagram hadden we de line-up al gedeeld. In deze podcast vertellen we meer over port, de streek en proeven we gezellig mee, dus de ports uit slobberpost komen hier ook weer voorbij. Jarenlang vond Jan Jaap port een kaas een ouderwetse combinatie. Iedereen doet het, dus waarom zou ik het dan doen? Maar nu ga ik toch op de bres voor deze wijn die zoveel historie kent. Welke port en kaas combinaties mag je niet missen deze feestdagen? We gaan op onderzoek uit. Wat je in ieder geval nodig hebt, zijn kazen met een grote smaakintensiteit. Dat moet, als je naast zo'n krachtpatser van een wijn wil staan. Let daar op, maar verder zeggen wij: experimenteer er op los met je kaasplank. Warre Borgmans mocht de stem van Woody inspreken in de eerste tekenfilm met een Vlaamse dub. Sindsdien is hij de vaste cowboy in de Toy Story-franchise. Grappig detail: ‘Toy Story 3' had hij nog nooit in z'n geheel bekeken. Onbegrijpelijk, vindt Julian De Backer. Voor hem is dit derde deel de beste Pixar-film aller tijden. Voor de bijzondere ontmoeting haalde hij Toy Story-koekjes van de Aldi en Buzz Lightyear raketijsjes in huis, maar ook een Woody action-figure die Warre heeft gesigneerd en ik mag weggeven aan het einde van de podcast. Het gesprek ontspoort even snel als de trein in de beginscène van de film. Zo hebben we het ook over Mary Poppins, Dick Van Dyke en Dirk Van Dijck, The Godfather, Kulderzipken, Robert De Niro, Het Geluidshuis, Shrek 2, Wallace Shawn, Damiaan De Schrijver, The Shining, Shelley Duvall, Jurassic Park, Popeye, de Kuifje-, Jommeke- en Kiekeboefilms, Randy Newman, Steve Martin, Eddy Smets, Jimmy Frey, Het Eiland, Het Peulengaleis, Hitler en het liedjes ‘Welk oog en hoeveel tranen' van Jelle Cleymans. Warre onthult ook welke Vlaamse zanger er nog in de running was om de titelsong ‘You've Got a Friend in Me' in te zingen. Uiteindelijk werd dat Arno. Na twee uur opname trekt Warre zijn hemd weer aan voor de foto. Zo, dat weet je dan ook weer.

PODCAST EPISODE 63: Ronnie Voigt, natural beekeeper and educator, Natural Beekeeping Tasmania, Hobart, Tasmania One form of heaven involves two of my greatest loves: natural beekeeping and Tasmania. Most of you would know that Tasmania is an exquisite island situated off the mainland of Australia, home to diverse and pristine landscapes, and unique flora and fauna; also, from my experience, it is also home to many environmentally conscious humans, with huge hearts, doing what they can to spread the word about the vitality of bees. However, for those new to beekeeping, natural beekeeping may be a fresh concept. This form of keeping respects the needs of the colony over those of the beekeeper. This holistic approach comes from an environmentalist perspective that honours these miraculous insects and seeks to provide the most positive domesticated life cycle. In turn, this “api-centric” approach should be encouraged for all beekeepers who want to keep bees for reasons other than intensive honey production. This is often done through the replication of the nest structure that would usually be found in the wild. By doing this, the colony is made to feel as comfortable as possible, and the intricate and sophisticated processes carried out by bees can continue. This encourages the superorganism to communicate as effectively and adapt to external conditions as they arise. For my love of Tasmania, natural beekeeping and the passion of my next guest, I am delighted to introduce you to Ronnie Voigt— natural beekeeper extraordinaire and founder of Natural Beekeeping Tasmania. Ronnie has been beekeeping using natural methods for almost 15 years, and she does so through the use of some specifical hives and processes. Favouring the Layens Hive—an uncommon choice of hive that originated from France, horizontal in orientation, with extra deep frames— and the Warre hive—a vertical top-bar hive that uses bars instead of frames, also originating from France—Ronnie has honed a unique skill set that keeps bees at the forefront of her practice. She is also interested in Housel positioning—a method of positioning comb in the hive that works with the direction of the hive floor and seeks to approximate the order that comb is arranged in the wild. For me, meeting keepers like Ronnie is an utter treat; I love nothing more than yarning about the intricacies of natural beekeeping— it fills my heart with joy and inspires me to keep finding new ways and means, thrilled to know that there are beekeepers tucked away in the most gorgeous pockets of the planet doing what they can to marry their passion for beekeeping with their genuine love for bees as creatures. I also know that their ethics transfers over to their businesses, which is what we need in the fight of mass and blind consumerism. On this day in Tudor history, 12th December 1595, Protestant Welsh soldier and author, Sir Roger Williams, died from a fever with his patron, Robert Devereux, Earl of Essex, at his side. He was buried at St Paul's Cathedral. Williams served as a soldier in the Low Countries and France, and was second in command of the cavalry under Essex at Tilbury Fort in 1588. He also wrote the 1590 “A Briefe Discourse of Warre”.At one point he incurred Queen ELizabeth I's wrath and had to go into hiding for a time. Find out all about Sir Roger Williams' life, career and works in today's talk from Claire Ridgway, author of several Tudor history books. Hi, I’m Stewart Spinks and welcome to Episode 91 of my podcast, Beekeeping Short and Sweet.Here it is, as promised, Well, I’ve finally started my Top Bar Hive Project by getting into the workshop and watching Pete do all the woodwork! This week I’m discussing what the Top Bar Hive is all about, why I’ve chosen to give them a try and how we’re getting on building our very first hive.So the Top Bar Hive or TBH as I’m going likely abbreviate it to, is not totally new to me as I’ll explain but I’ve never used one myself to keep bees in and have always wondered what the fuss was all about.The TBH seems to generate a lot of heated and passionate debate wherever it is used and that in itself is quite interesting to me because as most of you know I’m very much about letting beekeepers keep bees the way they want to keep bees. Whether it be in Langstroth’s or Nationals, Warre hives or Plastic Beehaus constructions, surely it’s down to the individual beekeeper to decide how he or she wants to keep bees and get the maximum amount of pleasure out of it they can.Now, I’m a beekeeper with a small commercial outfit, barely commercial with around 80 colonies going into the Winter but even so I can’t see myself continuing to be a commercially productive beekeeper if I were just using a Top Bar Hive as my main hive type. I could, of course, be totally wrong and find it works out perfectly so I’m not going to close my mind to any outcome at the outset but I do have reservations about the practicalities of moving bees in a TBH.Before I get stuck into the nitty-gritty of the Top Bar Hives, In today’s podcast I want to talk about what they are, how they work and think about some of the practical pro’s and con’s of using one. Back at the workshop Pete and I have started to construct our very first hive and it seems to be going quite well. I’ve posted some pictures and there’ll be videos to follow in the next few weeks.On the subject of videos, I made one of those terrible cock-ups this week, I went over to the workshop at the weekend and we started to prepare the wood for the Top Bar Hive and I shot some very lengthy videos showing, in details, the steps we’d taken thus far.I got home, had dinner, a glass of wine and started watching the Eagles playing football and while I was watching decided I could catch up a little by uploading the photographs to my google photos account. I didn’t need to upload the videos as I was going to download those to my computer to edit. It looked like I uploaded all the pictures and videos at the same time so, wait for it, I deleted all of the videos from my google photos app. The next morning I sat at my computer ready to download the videos anatomy computer and they were nowhere to be seen!Yep, I’d deleted the lot! About twenty minutes of HD video. It was one of those, NO, I haven’t, moments. A brief but pointless attempt at trying to recover them and then the realisation that I’m going to have to do it all again!On the bright side, at least we have another pallet and plenty of wood to be able to recreate the shoot!Anyway, Top Bar Hives. without trying to sound too patronising, these are beehives, which have top bars for the bees instead of frames. It really is as simple as that. There are a variety of types, which I really don’t want to get into, the internet is awash with claims of who is supposed to have invented them, well, the one me and Pete have created is a version of the Kenyan Top Bar Hive and plans are freely available on the internet and I’ll be posting a blog showing our TBH journey over the coming months and no doubt we’ll post a plan and cutting list there for anyone who wants to follow us.I’ve been considering why a Top Bar Hive would be so good? Beekeeping supports community pollination, food supplies, and fosters bee populations outside of the commercial beekeeping industry.Pollination:  Bees can help make your plants healthy as they pollinate, as well as fruit trees in nearby orchards which helps the local economy! Low maintenance. Bees work hard without much effort from you.Honeybee Decline:  Some of the main causes are pesticides both agricultural and home & garden used chemicals.Pests; Varroa mites, Hive BeetlesDiseases, Nosema and American Foulbrood (will discuss in Part three of this series.)Predators: Wasps, Racoons and BearsClimate changes: Rapid climate changes disrupt the timing between bees and blooming. Directly impacts the hives brood and bee rearing cycles.Monoculture: Huge scale single crop plantings deprive the honeybees of the diversity of vegetation key to healthy bee habitats virtually creating food deserts.          Honey:  Bees produce honey from the sugary secretions of plants known as nectar. Mead is composed of honey, water and yeast. It is a fermented drink growing in popularity at a rapid rate. It’s an ancient drink that is making a great comeback.Community Education, Entomology, Ecosystems, all help us to better  understand our modern food system and the importance of it’s sustainability.Health and Well Being: Coming from Beeswax and propolis, a hive byproduct.Household items: candles, soaps, salves, lotions, shampoos, creams, deodorants, tonics, tinctures, wood polish and beeswax wraps to name a few.Types of Bees:Not all pollinators are honey bees. The honey bee is exceptional because it  also provides food for human consumption. Our focus will be mainly on the honey bee but we must remember we need all of our pollinators to survive.Apis Mellifera is the Western honey bee. Apis is Latin for “Bee” and Mellifera is “honey bearing”. It is the most commonly recognized bee when we think of pollination but we do have other species as well.Mason Bees also known as Blue orchard Bees don’t live in big hives but live in tubular cavities. They do not produce honey but are some of the best pollinators out there and in light of the honey bees’ decline these are a great addition to pollinating your trees and gardens. Seven mason Bees pollinate at the same level as 500 Honey Bees. to you can see how we can utilize this little group as well.Bumble Bees are similar to the Honey Bee when it comes to the structure of the colony. They have a single Queen and colonies are marginally smaller than the Honey Bees.They also feed on nectar but do not produce honey. The Queens invade other Bumblebee nests, kill the resident Queens and lay their eggs.This species is also in decline caused by habitat loss along with the mechanization of agriculture and the use of pesticides.CapenterBee, Leafcutter Bee, Sweat Bees, and so on! I suggest a google search for types of bees. You will be astounded at the diversity in the Bee  families.The Beehive:  Understand various types of beehives are perfectly fine. Each is user preference when it comes to keeping their bees.Beehive: an enclosed man made structure where honeybees live and raise their young.Bees nest: an the location bee colonies chose to house themselves in, walls, roofs, cavities in trees, old sheds, etc. In warmer climates you can find them hanging and exposed.So, the nest is the bees way and the hive is the man made way to house the nest.If you were to look into the inside of the nest you would see densely packed hexagon shaped cells make of wax for food storage, honey, pollen, and most importantly to house their brood which is composed of eggs, larvae and pupae up to the day they emerge from the cell as  a honeybee.Both natural and man made bee hives or nests require bee space. Bees do this naturally, modern hives use frames with bee space integrated into their design.Three most common types: Langstroth, Warre and Tob bar.Diagrams and pictures available in the DIY section online at honeybeemyteacher.comLangstroth: Bottom board with a porch for the bees entrance,  boxes with frames.Inner cover and telescoping cover for protection from weather.  Standard for many of the worlds beekeepers both professional and amateur.  Simple structure and fairly easy to work with.I prefer the 8 frame hive because of weight.  Honey is heavy!  Good beginner hiveWarre hive very similar to the Langstroth.Difference: Bars only, no frames. Bees build themselves.  It takes a little more skill to manage but is becoming more popular among sustainable practice beekeepers.  New empty box is placed on the bottom as opposed to the Langstroth where we place the new box on the top.  Purpose of this replacement is warmth retention within the brood nest of the hive which is considered to be the heartbeat of the hive.Top bar Hive: Horizontal design. Also referred to and the Kenya hive. Uses bars no frames.
