L'abeille a-t-elle choisi ce design optimal grâce à une intelligence de géomètre, capable de calculer des longueurs et des angles, ou cette structure s'est-elle imposée par de simples lois physiques ?Après des siècles de débats acharnés, le mystère a été résolu depuis peu. _______Il y a 1000 espèces d'abeilles en France, 2000 en Europe et … 20.000 dans le monde. L'Abeille à miel (Apis mellifera) est de loin la plus connue et la plus surveillée, car elle est essentielle à nos cultures, car elle pollinise les plantes.Près de 75% de la production agricole mondiale de fruits et de graines destinée à la consommation humaine dépend, au moins en partie, des pollinisateurs.Ses populations sont en déclin à cause des pesticides, de la destruction des habitats, du changement climatique, des parasites involontairement introduits par l'homme (Varroa destructor, Frelon asiatique mais aussi des champignons et virus).On constate une (sur)mortalité anormale de l'ordre de 30% dans la plupart des 1,4 millions de colonies françaises (à 99% des ruches d'apiculteurs non sauvages). Chaque colonie est constituée de 20 à 60.000 abeilles. Il y a autour de 70.000 apiculteurs en France. L'immense majorité sont amateurs.Plus de la moitié du miel consommé en France vient d'autres pays. Ce miel est souvent coupé au glucose (30% des miels testés)._______Notre Abeille native d'Europe, l'Abeille noire (Apis mellifera mellifera), une sous-espèce de l'Abeille à miel, a survécu aux dernières glaciations. Cette vénérable est la mieux adaptée à nos milieux. Mais elle est menacée par la pollution génétique : Beaucoup d'apiculteurs ont introduit des Abeilles hybrides (notamment la célèbre Buckfast). Elles produisent plus de miel, sont plus “douces”, mais “polluent” le patrimoine génétique des abeilles noires sauvages natives.L'Abeille à miel ne doit pas faire oublier les autres abeilles sauvages : Bourdons, Andrènes, Anthidies, Collettes, Dasypodes, Halictes, Lasioglosses, Mélittes, Mégachiles, Osmies, … La plupart sont solitaires, vivent dans un trou du sol. Following on from a deeply insightful interview with Ingrid Bates last time out, this time we tackle the winemaking behemoth that is Tommy Grimshaw. This week's episode of the Bees with Ben podcast features a question-and-answer session between Ben and his special studio guest, Brent Nixon, who has driven down from Ballarat South for the occasion. Naturally, Ben's first question for Brent is how he started out with bees? Brent explains that he grew up in a family of cattle breeders and wanted to breed something for himself. He studied genetics at university, including the pioneering work of Gregor Mendel, the father of modern genetics. Many people don't realize that Mendel, who was a monk, also conducted research with bees, which were often kept at monasteries to produce beeswax candles, in addition to honey. Mendel was attempting to breed bees using a cage, which wasn't really effective, but his early work was taken up by Brother Adam of Buckfast Abbey in the UK - the creator of the ‘Buckfast bee'. Brent became fascinated with breeding bees, but although he had the theoretical knowledge, he had never been inside a hive. Then about 8 years ago, his wife's uncle, who was a beekeeper, found him a swarm - located about 10 metres up a tree. Brent was given a half suit and positioned under the swarm, with instructions to catch the bees in a box, while the uncle clambered up the tree to dislodge the insects. Somehow, Brent managed to catch the queen, and the beekeeper told him to put the box down, and that the rest of the swarm would soon follow, which they did. Today, Brent has his own podcast called ‘Breeding the Honey Bee', which is named after the famous book written by Brother Adam. He has recorded 11 episodes to date, including an interview with the head beekeeper at Buckfast Abbey. Ben is quizzed about the development of his business and the transition from part-time to his main source of income. He says he started off slowly and built his business on diversification; he vividly remembers making beeswax candles in his kitchen and struggling to clean the wax off the lino floor (Brent interjects that he thinks he ruined the plumbing in his first house as some beeswax went down the sink). Ben goes on to say that one of the main problems is that the business is so seasonal, and that he struggled to get through the winter in the early years. Cette vénérable est la mieux adaptée à nos milieux. Mais elle est menacée par la pollution génétique : Beaucoup d'apiculteurs ont introduit des Abeilles hybrides (notamment la célèbre Buckfast). Elles produisent plus de miel, sont plus “douces”, mais “polluent” le patrimoine génétique des abeilles noires sauvages natives. Tim Hayward looks at the tradition of monastic food production, with stories from Sicily, New York as well as from closer to home.Ever since the 6th century rule of St Benedict said that monastic orders should be self- sufficient, monks and nuns have taken to the land and to the kitchens to produce food and drink for sale. Tim introduces us to some specific examples of how that tradition is thriving today. Giorgio Locatelli and food historian Mary Taylor Simeti explain how an array of recipes for sublime biscuits and pastries made by Sicilian nuns have survived for centuries, due in no small way to a woman called Maria Grammatico who went to live in a convent where Nuns would live out their final days. She would collect their recipes and she went on to become one of the most famous makers of Sicilian pastries. Giorgio Locatelli lovingly recreates some of those sumptuous treats in his Locanda restaurant today. We visit the New Skete Nuns in New York who have featured in the New York Times and Vanity Fair with their famous cheesecakes. Tim talks to food historian Annie Gray who reminds him of the overall impact of the monastic orders on food production but who also cautions us not to get too carried away with the idea of continuity. We hear from the writer, Madeline Scherb, who went on her own pilgrimage around the world to cook and pray with some monks and nuns; recalling the chanting of the Hail Mary on a caramel production line. She explains how St Benedict himself was not able to persuade his own monks to abstain completely from alcohol, and so the tradition of producing liquors of all sorts is one of the longest surviving strands of monastic production. In the UK, that includes the famous Ampleforth abbey ciders and beers. And there's Buckfast tonic wine from Devon; a drink that has attracted controversy in some areas.
