Australia is known for its unusual animal life, from koalas to kangaroos. But once upon a time, the Australian landscape had even weirder fauna, like Palorchestes azael, a marsupial with immense claws and a small trunk. There was Protemnodon mamkurra, a massive, slow-moving, kangaroo-like creature. And Zygomaturus trilobus, a wombat the size of a hippo. They're all extinct now, and researchers are trying to figure out why. Host Flora Lichtman talks with researcher Carli Peters about ZooMS, a technique that allows researchers to use collagen from ancient bone fragments to identify species, offering clues to those ancient extinction events. Peters recently described using the technique in the journal Frontiers in Mammal Science.And, a recent study in the journal Nature Astronomy hints that our own Milky Way galaxy may not be doomed to collide with Andromeda after all. Unlike the sometimes overwhelming Typhoon Lagoon, Blizzard Beach proved more navigable and family-friendly, setting the perfect tone for our vacation. Afterward, we checked into the elegant Grand Destino Tower at Coronado Springs, where Spanish-inspired design and relaxing ambiance created an upscale retreat from park excitement.The game-changer for our trip? Lightning Lane Multi-Passes. Yes, we spent an additional $725, but the freedom this investment provided transformed our experience completely. Without constantly checking our phones for return times or standing in lengthy queues, we discovered a more relaxed approach to Disney that we didn't know was possible.Each day brought new delights as we explored the parks at our own pace. At EPCOT, we walked right onto Soarin' while others rushed to Guardians of the Galaxy, savoring the often-overlooked attraction without crowds. Hollywood Studios surprised us with impressive new shows featuring The Little Mermaid and Disney Villains, both showcasing technology and storytelling that exceeded our expectations. And Animal Kingdom delivered perhaps the best safari experience we've ever had, with nearly every animal visible and active.One unexpected revelation: taking occasional breaks from each other made our family time more meaningful. Those 30-45 minutes of "me time" – whether wandering Galaxy's Edge with a Gold Squadron Lager or people-watching from a bench near Cinderella Castle – prevented friction and recharged everyone's spirits.From watching fireworks at the Polynesian beach to discovering what might be Disney property's best burger at D-Luxe Burger, our unhurried approach uncovered magic we'd previously rushed past. Before he took the leap and started his own, BreWskey (https://www.brewskey.ca) cofounder Derrick Robertson was a process engineer who helped design breweries. That background was invaluable when building out a brewhouse and cellar in a building that's a historic landmark in Vieux-Montréal. With multiple spaces and sprawling patios, BreWskey is popular among travelers who drink plenty of pale lager in warmer months—with many who also appreciate BreWskey's creative and contemporary approach to hazy IPA. Robertson has an unquenchable thirst for experimentation, treating each batch on their two- and 10-barrel systems as an opportunity to tweak variables, test ingredients, and dial in processes. He's not afraid to brew beer with a point of view informed by his own tastes—witbier without phenolic Belgian yeast, for example—and he's always up for experiments, such as pushing 34/70 to see just how much heat it can endure. When it comes to hazy IPA, however, he can't bear the astringent burn that certain hops exacerbate, so he's dialed in processes to turn beers at brewpub speed with robust body and just enough haze—because, as he says, there is such a thing as too much haze. In this episode, Robertson discusses: balancing brewpub and taproom beer menus with an on-the-fly creative process adjusting the beer program week to week, based on tourism trends brewing white beer with London Ale III while replacing certain yeast-driven flavors with targeted ingredient additions using New Zealand hops strategically for light color without the burn the fungibility of many hazy IPA grain bills selecting hop varieties, such as Rakau, that improve the expression of others why Riwaka is like smoked malt avoiding “Galaxy paste” when brewing with the Australian hop accepting inefficient extraction techniques when using certain hops, to avoid picking up off-flavors dialing in his hop palette to eight to 10 hops, while expanding the number of lots of each dry-hop bench-testing for lot selection, to understand how the rub connects to the actual flavors and aromas in finished beer And more.
