On this special partner episode of Scran we are talking about all things Angus. A region often associated with smoked fish and soft fruit - Rosalind found both when she visited but also a lot more.  First stop was to meet with Helen and Wouter Margaroli of Rae's of Montrose. Rosalind went along to their beautiful rural cottage for a cookery lesson and to chat about their private catering business as well as the innovative experiences they offer like foraging tours and location dining.  After some hard work it was time for a drink and so on to Arbikie Distillery. This distillery is unlike any we've featured before, they produce Gin, Vodka and Rye Whisky but do it in the most sustainable way possible. They have really gone to extreme lengths to ensure what they are doing is streets ahead of many distilleries when it comes to saving the planet. Brand Ambassador, Gilbert Ionescu gave Rosalind a tour of the distillery and she sat down with John Stirling, one of the founders, to find out how it all came about. Finally, Rosalind paid a visit to Charleton Farm. This is an amazing destination attraction which was taken over by Graeme and Lisa McColl four years ago. They have transformed the business and expanded it dramatically whilst still operating a fully functioning farm. Graeme outlined their vision and the hard work that's going into achieving it. Max hat uns von seinen Anfängen als Bartender, immer neuen Chancen, die genutzt werden wollten und natürlich jede Menge zur Kyrö Distillery erzählt. Heute haben wir noch einmal eine ganz besondere Folge für Euch. Zum einen, weil diese Folge mal nicht wie gewohnt in deutscher Sprache sondern in Englisch aufgenommen wurde. Zum anderen, weil wir so ziemlich die ersten sein dürften, die die Macher von Thy Whisky einem Deutschen Publikum vorstellen können. Die Geschichte ist schnell erzählt. Olli war mit der Family im Urlaub im dänischen Nationalpark Thy und konnte sich durch Zufall die damals noch in den Kinderschuhen steckende Farmdestille ansehen. Er kaufte kurzerhand einen Fassanteil und konnte sich vor ein paar Wochen über die Lieferung freuen. Dazu packten die lieben Leute von Thy Whisky ein paar Samples, die Olli eigentlich als Caskowner in einem Online-Tasting mit verkostet hätte. Nun spricht Olli eher schlechtes Dänisch, sodass die Idee entstand, warum nicht als Poddi aufnehmen, wenn er schon eine extra Session auf Englisch bekommt. Gesagt, getan. Vorab noch ein paar Worte zu Thy Whisky. Die Brennerei liegt im Nord-Westen Dänemarks im gleichnamigen Nationalpark. Aufgrund der geografischen Lage und des Klimas, kann man die Gegend dort leicht mit Schottland vergleichen. Die Farm gehört seit über 150 Jahren der gleichen Familie und hat sich ganz der biologischen Landwirtschaft verschrieben. So sind nicht nur die tierischen und pflanzlichen Produkte der Farm, sondern ebenso der Whisky Bio zertifiziert. Doch das schein fast belanglos für die beiden Andreas und Jakob, denn für Sie ist das die einzige sinnvolle Art der Landwirtschaft. Und es wäre auch nicht für die von Belang, wenn das Endprodukt nicht ihren eigenen Ansprüchen genügen würde. Die Herangehensweise an die Whiskyproduktion ist bei Thy Whisky durch Experimente, Gefühl und manchmal auch durch Zufall geprägt. Oft sind es die kleinen Fehler, die die Produkte besonders machen. So investiert man bei Thy viel Zeit und Geduld in die Rekultivierung alter Getreidesorten, die teilweise 8 Jahre in Anspruch nimmt. Aus einer Handvoll Körner wird dann nach und nach ein ganzes Feld. Das Korn steht bei Thy absolut im Mittelpunkt. International hat die Brennerei zuletzt für aufsehen gesorgt, da Jim Murray (man mag von ihm halten, was man will) den Whisky aus dem Hause Thy zum European Whisky of the Year gewählt hat. Und auch uns haben die beiden, Andreas und Jakob, mit ihren Destillaten ganz schön geflasht. Doch nun viel Spaß beim Hören! Olli & Tim

Rye whisky has made, and continues to make, a huge come back in the US. One of America's first spirits, rye whisky is made throughout the country. Few, however, produce a 100% rye whisky, and that's where Catoctin Creek comes in. Listen in as Becky and Scott Harris discuss their processes, the wood experiments (that sounds naughty), and as they talk, too, about the ongoing tariffs and trade war that may or may not affect, not just American whisk(e)y sales into the EU (a burgeoning business for many American whisk(e)y producers), but the distilleries and families that work at these distilleries. Bartender Journey Podcast # 136   ·      Guest this week is Andy Watts Master Distiller of Bain’s Cape Mountain Whisky from South Africa. ·      Bains is made from 100% corn (or maize as it is called it in South Africa).  It is double matured in first fill Bourbon barrels. ·      In South Africa, Whisky is spelled without the “e”, as it is in Scotland, Canada and many other countries.  American Whiskey is always spelled with the “e”. ·      Cocktail of the Week - Cape Mountain Boulevardier: o   1 ½ oz Bain’s Cape Mountain Whisky o   1 oz Sweet Vermouth o   1 oz Campari o   6 drops Sea Salt Saline Solution: (1 teaspoon Sea Salt - Himalayan Sea Salt preferred) dissolved in 1 oz very hot water) o   Stir in mixing cup with ice.  Strain into Old Fashioned glass with one large ice cube o   Express oil from a lemon twist into glass o   Add twist as garnish ·      A Boulevardier is a Negroni but made with Whiskey (traditionally, Rye Whisky), instead of Gin.  I used the Bain’s Whisky and changed the ratio from the 1:1:1 used in a classic Negroni, and did 1.5 oz Whisky, 1oz sweet vermouth and 1oz Campri. ·      If you are not able to acquire Bain’s Whisky try a high-wheat Bourbon such as Larcany (a great bargain), or W.L. Weller, (more expensive, but still a great bargain for such a high quality Bourbon). The Bains is a very soft, mellow whisky, not spicy like a Bourbon that has a lot of rye (like Bulleit, or Basil Hayden). Even though I personally love high rye Bourbons, these have a much different flavor profile than Bain’s. ·      There are very few Bourbons made with 100% corn. There's a great article about this subject in the New York Times. ·      Book of the week:  Discovering The New York Craft Spirits Boom by Heather Dolland. You don’t have to be from NY to appreciate this book.  Its all about Craft Distilleries of course and there is a lot of knowledge about how spirits are produced in the book.  Heather traveled all throughout NY interviewing distillers.    ·      Bartender Journey will be traveling to Tampa in December 2015! The Tampa chapter of the US Bartenders Guild has a 4 day Repeal Day party.   Maybe it is the nature of the business in BC or maybe it’s just that there are millions and millions of choices for you to spend your Whisky dollar on and the law of averages eventually takes over. What I mean by this is if there are 600 choices of Canadian Whiskys, the chances are not good that the best bang for the buck will necessarily be the leading, heavily advertised brands. I think this plays out beautifully in the most recent edition of Jim Murray’s Whisky Bible. In the Bible there are 371 pages of reviews of whisky’s from around the world. In the forward the author notes that he tasted over 4500 whisky’s over the year, although I’m certain this is how many he reviewed in this years bible. Of the presumably 4500 whiskys reviewed a mere 250 are scored 94 out of 100 or higher. I was very surprised to see a number of the luminary whisky’s getting an average to under no circumstances let this pass your lips. But what really gets me going are the whiskys that are wall flowers in our consciousness but are highly rated by Mr. Murray. A perfect example of this is the Alberta Premium Rye. Sits on the shelf for $23.99, which is lowest price for a bottle 750ml spirit in BC, which is a whole bunch cheaper than items like Crown Royal, Wiser’s Deluxe, Forty Barrel Creek, etc. It is Canada’s only Rye that is 100% Rye but it is entombed in a bottle and package that screams beige.  I remember being at a tasting with Jim Murray when exclaimed that the Alberta Premium Rye is a true statement not just about whisky but about Canadians as well. We love to understate ourselves. We apologize for being outstanding (except when it comes to hockey). It seems very difficult for us to believe that our own products are superior to those that are imported. With all this in mind here is an excerpt of what Mr. Murray, heck let’s call him Jim as he seems to like us Canadians... “throbbing pulsing rye on a variety of levels: full and juicy, dull and dusty,  firm and flinty. Unique and unmistakeable.” He goes on to describe his encounter, here on Vancouver Island, with the whisky, a robin some finches, an Arbutus Tree and the “chilly spring air”. Then he gets into the essence of his review “...like the robin and finches from the Arbutus, true to nature: it is a true rye whisky, not a misnomer like the rest. The 100% Rye grain used, fortified in its mouth watering  delivery by the usage of a degree  of malted rye offers flavours unlimited. Alberta Premium is no longer  just a great Canadian Whisky. It has become a national treasure.” SCORE: 95.5 out of 100 WOW – high praise indeed. I have to say that this is my Canadian Whisky of choice as well. First because of the price and that means I can make more people happier at a lower price- an economist will tell you that this is the definition of true wealth.  You can be a hipster and create a funky cocktail or just have it with a dash of water, or you can mix with with 7Up, Coke or Ginger Ale. Our job in the stores is to help people find the best product for their needs for the best price. We are often suggesting lower price items if people are simply going to mix with a glass full of Coke or Juice, and will suggest something else if the spirit needs to stand on its own merits. When it comes to Canadian Whisky the products are one and the same. My recommendation is buy and share.
