How to shock a badass woman chef In our fourth episode, Nancy talks about winning the James Beard Award for Best Pastry Chef in 1991, and how aghast the presenter, French chef and cookbook author Madeleine Kamman, was that an upstart from California had beat out two famous men with French and Swiss training. The predicted winner was the legendary Albert Kumin, the original pastry chef of The Four Seasons who went on to work in Jimmy Carter's White House kitchen and founded the now-closed International Pastry Arts Center in in Elmsford, N.Y.“He is one of the only people I know who can labor relentlessly in the kitchen, covering the work of three, while remaining totally calm, good-humored and friendly,” Jacques Pépin once told Nation's Restaurant News about Kumin, who died in 2016 at the age of 94.Happily the other nominee is still with us. At the time, Jacques Torres was working at Le Cirque where he was famous for, among other things, his miniature edible stove. The youngest person to ever become a Meilleur Ouvrier de France, Torres was Dean of Pastry at The Culinary Institute for 30 years. Today he runs his own chocolate empire. As for Madeleine Kamman … she was a complete badass. She was an outspoken chef, a champion of women and a legendary teacher. Paul Bocuse once called her restaurants “the best in America,” and she was the author of many books, the most notable being “When French Women Cook.” Laurie keeps a copy of “The New Making of a Cook,” the 1997 revision of Kamman's first cookbook, on her shelf of encyclopedic cookbooks between Shirley Corriher's “CookWise” and Marion Cunningham's “The Fannie Farmer Cookbook,” with Julia Child's “The Way to Cook” a respectful few books away since it's likely neither of them would have liked to be beside each other. Kamman had a famous rivalry with Julia Child. She pointed out that Julia was neither French nor a chef, but simply an American cooking teacher. Madeleine, on the other hand, was a trained chef with a successful restaurant who also wrote cookbooks and had a television show. “I am not for comparing people, any more than you can compare Picasso to anyone,” she opined with typical modestly. A few years ago Mayukh Sen wrote this article about her in the New Yorker. What we like best about Madeleine? In 1990, she told the L.A. Times writer Rose Dosti that the next generation of great chefs would be American rather than French, and would consist of a 50-50 ratio of women and men. The 50-50 ratio hasn't quite worked out yet, but Nancy's win the following year at the James Beard Awards showed that the change Madeleine predicted was already underway. That 1991 ceremony, by the way, was the first time the James Beard Awards as we know them were presented. Nancy had to remind Ruth that she had written about the ceremony — and about Kamman's reaction to Nancy's win — in the L.A. Times, not to mention at least one chef's complaint about a young Wolfgang Puck winning Outstanding Chef of the Year. Here's an excerpt:“Like every awards ceremony, this one had its moments of controversy. Madeleine Kamman, who was sitting in the front row, shuddered visibly when Nancy Silverton was awarded the prize for best pastry chef over Albert Kumin, the dean of American pastry. ‘Albert Kumin changed pastry in this country,' Larry Forgione of New York's An American Place, said later. ‘His achievement should have been recognized. And if Chef of the Year was for career achievement,' he went on, ‘why wasn't Andre Soltner (the legendary chef/owner of Lutece) nominated?' The answer seems to be that … the Beard Awards are centered on the food revolution that has swept America. … So it should come as no surprise that Chef of the Year went to America's highest-profile young chef, Wolfgang Puck.”It was actually a call Ruth received from New York Times reporter Julia Moskin that got our conversation started about the James Beard Awards. She asked if Ruth would comment on the organization after chef Timothy Hontzas of Johnny's Restaurant in Homewood, Alabama, was disqualified as a best chef in the South nominee following an allegation that he habitually yelled at his staff and customers. (Hontzas told The Times that the incidents “were not as severe as the accusers described.” He also said that none of the incidents rose to the level of an ethics violation.) The disqualification, an action taken without consulting all of the restaurant awards committee members — who oversee the annual nominee selections on a volunteer basis — led one committee member and a separate judge to resign in protest.Ruth declined the request for comment by Moskin, who teamed with Brett Anderson for an extensive story on the messy process of trying to make the James Beard Awards more equitable and diverse. The article opened with the organization's investigation into an anonymous complaint about Kentucky-raised chef Sam Fore, whose TukTuk pop-up draws on her Sri Lankan family roots. Fore, who was surprised to discover that her social media posts advocating for victims of domestic violence were the subject of the investigation, said the process was “an interrogation.” Ultimately, she was able to remain a nominee in the Best Chef: Southeast category, although the award went to Terry Koval of The Deer and the Dove in Decatur, Georgia.It's not the first time the organization has come under scrutiny. In 2005, the president of the James Beard Foundation, Leonard F. Pickell was convicted of stealing more than fifty thousand dollars from the foundation. He was sentenced to one to three years and served about 9 months. He passed away two years later. At this year's awards ceremony in June, the restaurant awards committee chair Tanya Holland — who is also an acclaimed cookbook author and chef of the late great Brown Sugar Kitchen in Oakland (fantastic cornmeal waffles) — said from the podium that New Orleans legend Leah Chase once gave her some advice that seemed to apply to the stresses the organization is undergoing as it tries to find the best way to ensure the awards are fair and equitable: “‘Be prepared to get a lot of criticism in this industry, and work with it; you will make mistakes. The important thing is where your heart is and how you move on.' The universe knows I've made numerous mistakes.”L.A. Times journalist Stephanie Breijo, reporting on the ceremony, wrote that Holland told the audience “she has become comfortable being uncomfortable, adding that she is motivated to make the industry better. The efforts of the foundation have made a difference in the diversity of the awards' nominees and winners, she said, and should be commended.“We're learning as we go,” Holland said. “It's not always smooth, but that doesn't mean we're not on the right path.”Three Ingredients is a reader-supported publication. Laurie talks about the closing in May of Los Angeles' Nickel Diner, which wasn't technically a 20th century restaurant (it opened in 2008) but had a 20th century soul. Laurie wrote about her last meal at the Nickel, run by Monica May and Kristen Trattner, for the L.A. Times Tasting Notes newsletter. The table was loaded with scrambles, biscuits, homemade pop tarts and of course a maple bacon doughnut, plus marmalade made from blood oranges grown by the artist Ed Ruscha. Here's an excerpt of the story:All around us customers are giving hugs to May and Trattner as well as Nickel Diner's servers, many of whom have worked at the Main Street spot for years and have become familiar faces. The customers also hug each other because it's a kind of reunion for many who are part of the L.A. tribe in love with the diner and the tattooed punk-rock aesthetic that came with the place.“We're a 20th century restaurant,” May tells us by way of explanation of why she and Trattner think it's the right time to close. Would they have stayed open if they had gotten one of their grants renewed to feed their neighbors living in the surrounding SROs or if inflation hadn't raised their operating costs or if the pandemic hadn't happened? Maybe.But they also feel a change in the city. A few blocks away Suehiro Cafe, another 20th century restaurant that has been on Little Tokyo's 1st Street for decades and may be the closest thing we have to a “Midnight Diner,” is being forced to move to a new location on Main Street, not far from the Nickel Diner. What difference will a move make? When I walked by the space Suehiro will inhabit later this summer I saw a now-hiring sign and noticed that one of the new jobs listed is “barista.”Old-school Suehiro doesn't have a barista. Apparently, 21st century Suehiro will have barista-made drinks. If it helps the place stick around for a few more decades, I won't mind, as long as they still serve the okonomi plate with broiled mackerel and cold tofu. Because as Zen monk and teacher Shunryu Suzuki once told writer David Chadwick after he asked the master to summarize Buddhism “in a nutshell,” the answer came down to two words: “Everything changes.” Thank you for reading Three Ingredients. Baseado no mangá "Saboriman Ametani Kantarou" de Tensei Hagiwara (roteiro) e Abidi Inoue (arte), publicado de 2015 a 2016 na revista japonesa Morning Two, Kantaro: the sweet tooth salaryman (que em uma tradução livre seria Kantaro: o trabalhador viciado em doces) é uma das séries mais nonsense da Netflix. (adsbygoogle = window.adsbygoogle || []).push({}); Eu fiquei viciado nessas séries japonesas que a Netflix soltou depois de Samurai Gourmet e do estupendo Midnight Diner, então quando apareceu essa série como sugestão comecei a assistir. A história é sobre Kantarou Ametani, um funcionário de uma editora japonesa que pediu para ser transferido para o departamento de vendas para poder fazer visitas às livrarias e aproveitar para conhecer novas docerias durante o expediente. Na empresa, Kantaro é o melhor vendedor do departamento e mantém uma postura extremamente séria e formal, não deixando ninguém descobrir seu vício em doces e seu blog onde resenha as docerias com o pseudônimo Cavaleiro dos Doces. A série é um misto de ficção e documentário,tanto que se diz ser uma história baseada em doces reais. A parte onde Kantaro fala dos doces, do preparo deles e da história da doceria que ele está visitando, tem-se aquela produção mais séria, filmada com câmeras de alta definição e tudo mais. Agora, quando se trata do Kantaro em si, aí começa a bizarrice. O ator Matsuya Onoe, que interpreta o protagonista é simplesmente perfeito para o papel. Ele encarna muito bem tanto o vendedor certinho quanto o o viciado que, ao comer doces, tem reações constrangedoras, que só podem ser descritas como uma simulação de orgasmo feita por Jim Carrey. Mas o orgasmo aos comer os doces não é a única bizarrice da série. Além disso, Kantaro tem uma série de alucinações onde ele e os colegas de trabalho se transformam nos ingredientes dos doces e fazem alguma coisa surreal. Fora a frase dele "só o deus dos doces sabe". Um lance que eu acho engraçado no mangá, que por consequência repercute na série, é essa crença de que o esforço puro e simples resolve tudo. Então Kantaro se esforça ao máximo e pronto, é o melhor vendedor e ainda tem tempo para visitar as docerias. Outra questão interessante é a habilidade de criar ação onde não existe ação nenhuma. No fundo é uma série boba, mal produzida (com exceção da fotografia nas cenas do preparo dos doces) mas é engraçada pelo jeito completamente nonsense, é divertida e vale, principalmente, por mostrar os cenários lindos do japão e os doces que pra gente são bem exóticos. President Xi Jinping has urged development of the country's forestry while attending a voluntary tree planting in Beijing recently. Xi visited an afforestation site in Beijing's Daxing District and planted saplings of different varieties at the site. Xi noted that the next five years marks an important stage in China's ecological protection drive, and forestry development is a significant measure to fulfill the goals. President Xi has called on officials at all levels to take the lead in voluntary tree planting campaigns to promote new development concepts with their own practices. He has stressed proper management of planted trees to make people's living environment greener and more beautiful. The president has called for an altruistic and down-to-earth spirit for such activities, citing the Chinese proverb "people plant trees so their offspring can enjoy the shade". Situated in Xihongmen Township in Beijing's southern Daxing District, the greens where the top leaders planted trees used to be a venue for logistic inventory and other low-end industries. The strategy of coordinated development of Beijing, Tianjin and Hebei area requires the capital city to eschew its non-capital functions. Thanks to the policy, the area has been reshaped into a park following economic restructuring. This is NEWS Plus Special English. More than 400 Chinese police officers died while they were on duty in 2015. The Ministry of Public Security says another 4,600 police officers were injured or disabled at work. The ministry published an article on its official website to mark the traditional Tomb-Sweeping Day when people honor the deceased. The article says since China started the reform and opening up policy in 1978, almost 13,000 police have died, adding that police officers are a group that sacrifices the most in peacetime. During the three-day holiday for the Tomb-Sweeping Day, the ministry held a publicity campaign to commemorate the police officers who sacrificed their lives while on duty. The ministry asked police departments at all levels to visit the families of the martyrs and help them address difficulties in their lives and work. A special operation launched in February to fight human trafficking has crashed down almost 3,000 illegal immigrants, mostly from Southeast Asian countries. These illegal immigrants were smuggled to Hong Kong by local traffickers. Many of the almost 3,000 foreigners arrived in the Guangxi Zhuang autonomous region and were transported to Guangdong province before being taken to Hong Kong. Of those, almost 2,900 were from Southeast Asia and the rest were from South Asia. Police also said they had detained 142 smugglers from China and other countries, including 29 from Southeast Asia and South Asia. One of the largest criminal groups, a well-organized team led by a Hong Kong resident from South Asia known as "Little Tiger", attracted immigrants with promises of jobs. They were smuggled into the country through Guangzhou Baiyun International Airport and then taken by train to Shenzhen. The Ministry of Public Security says the activities were well organized by professional traffickers, who had clear and specific responsibilities. They formed a human smuggling chain. Some criminal groups also routed the illegal immigrants from the Guangxi Zhuang autonomous region to Guangdong province after crossing the border with Vietnam. This is NEWS Plus Special English. Chinese organ donors have been on the rise since voluntary donation was introduced in the country in 2010. As of March 20, China has recorded more than 66,000 voluntary organ donors, 6,600 of whom donated their organs, saving about 18,000 lives. China began a voluntary organ donation trial in 2010 and promoted the practice across the country in 2013. Now, it tops Asia in the number of organ donations per year. According to the National Health and Family Planning Commission, 2,800 volunteers donated organs last year, with 7,800 large organs acquired. The number of organ donations exceeded 2013 and 2014 combined. Last year, doctors nationwide performed more than 10,000 transplants, with 74 percent of the organs transplanted from volunteers and 26 percent from relatives. Despite the growing number of organ donors, China still faces a great challenge in promoting organ donation as traditional belief holds that organ removal after death desecrates a corpse. Education authorities in an eastern Chinese city plans to reduce its oversized classrooms, promising to build and expand 150 schools in the following two years. More than half of the city's classes in primary and middle schools have student numbers far beyond national standard. One school in Heze city in Shandong Province has more than 5,000 students, while an average class has around 80 students, almost double the national standard of no more than 45 for an urban primary school class and 50 for an urban middle school class. A provincial survey last year showed that more than 40 percent of classes in primary and middle schools were oversized in Shandong Province. Ten percent of them had more than 66 students in one class. East China's Anhui Province faces similar problems. In other regions, the overcrowding problem is even more striking. At a middle school of China's most populated province of Henan, an average class has more than 100 people. Three or four students commonly share one desk. Students at the back rows have to stand up in order to see their teacher, and the teachers have to use a loudspeaker. This is NEWS Plus Special English. Shanghai has around 4.4 million registered population aged over 60 by the end of last year, a year-on-year increase of 5 percent. The elderly people account for 30 percent of the city's total population. Those aged 80 and above reached 780,500 last year, up 27,000 from the previous year. Shanghai's life expectancy was almost 83 years last year. The city's life expectancy has kept above 82 for 6 consecutive years. Moreover, Shanghai has a total of 1,750 centenarians, including 420 males and 1,330 females. It is estimated that the registered population aged 60 and older in Shanghai will surpass 5 million by 2018, and exceed 5.4 million by 2020. You're listening to NEWS Plus Special English. China has issued a guideline for deepened reform of law enforcement in cultural market in a bid to safeguard the national cultural and ideological security. The State Council guideline says harmful cultural products and services are sometimes spreading in cultural market. The constantly emerging harmful information are undermining the cultural rights of the minors and the intellectual property rights, and causing a public outcry. The guideline says those major problems should be addressed by capable law enforcers in cultural market. As for cultural products, social benefits must be given priority over economic gains. The guideline is calling for further improving law enforcement. The reform aimed to build a law enforcement force in cultural market that conforms to the socialist core values and meet the needs of the modern cultural market system. The guideline says the reform will stick to the leadership of the Communist Party of China, spread the socialist core values, promote the rule of law and clearly define the power of different departments. This is NEWS Plus Special English. China will increase the allowance given to practitioners of intangible heritage, as many such items are in danger of dying out. According to the Ministry of Culture, allowances have been given to iconic figures of national-level intangible heritage items since 2008. The allowance will be raised to 20,000 yuan, roughly 3,100 U.S. dollars, per person per year from the current 10,000 yuan. It started at 8,000 yuan in 2008. The ministry says the money is not a living allowance, but is designed to support pedagogic activities. The increase aims to encourage leading figures to pass on their skills to the younger generation. The move has been taken under a five-year plan for the funeral service sector in the city. In Chinese tradition, many people believe that souls rest in peace with the bodies covered by soil. A traditional tomb involves ground burial and occupies several square meters of land. Large tombstones were once considered a symbol of high social status and were thought to symbolize the degree of filial piety of offspring. However, due to issues including land scarcity and pollution, people are urged to use new methods, including tree, flower and sea burials. Smaller tombs and replacing gravestones with trees are encouraged. Beijing offers 4,000 yuan, roughly 610 U.S. dollars, to each family who chooses sea burial for the deceased. Last year, 46 percent of burials in Beijing were eco-friendly. The local government wants to further increase the ratio to 50 percent by 2020. Another goal is to increase the cremation rate. A giant postcard created by local authorities and students earned a place in the Guinness Book of World Records when it was unveiled in Jinan, the capital city of east China's Shandong Province. Stretching almost 1,400 meters, the giant postcard contains 10,000 regular-sized postcards, all filled out by high school students in the city. The postcard has been certified for the world record. Chinese actor Huang Lei is playing the lead character in the Chinese adaptation of hit Japanese manga series "Midnight Diner". The TV series' official weibo account has released a set of photos showing Huang's portrait, playing the protagonist in the drama. Shooting of the 34-episode TV series began in mid-January.
