Today we're joined by arguably the most iconic female chef in the country in the legendary Sally Clarke, who's been the owner and chef patron at Clarke's in Kensington for over 41 years. Sally ironically failed her O level in cookery and yet has gone on to become one of the most successful chef and restaurant owners in the country. Clarke's is a London institution and the restaurant is the favourite of everyone from Mick Jagger to Bono - David Hockney to Paul Smith and all in between. In only her 2nd ever audio interview, Sally reveals how she fell in love with food through the books of Elizabeth David and her travels across France as a child. However it was when she headed to study at Le Cordon Bleu in Paris in the early 70s when she knew that this was going to be her life. Having worked at 3 of the most famous restaurants in the City she came back to London to work alongside Pru Leith at her cookery school, but within a year found herself moving to live in California to work at some of the greatest new age restaurants. It was here she met and fell in love with Alice Waters and Chez Panisse, and was inspired 5 years later in 1983 to return to London and set up Clarke's following in the same farm to table ethos and daily changing set menu as her culinary hero and friend. However, setting up a restaurant as a female head chef and owner wasn't easy in the early 1980s and we hear about; the disastrous problems she encountered, and rude sexist male customers and suppliers she had to deal with. We also hear about her friendship with Lucian Freud who used to eat breakfast and lunch at the restaurant everyday and how she had the privilege of being the last person ever to sit for him. Also, alongside the restaurant Sally runs an incredibly successful commercial bakery that sells over 90,000 handmade Mince Pies each year and beat all her Parisian competition to provide the pastries for the Eurostar. Sally very kindly also shares her secrets to success including; how to create the ultimate menu, the 'Art Of The Table, how to treat your customers and why she never ever gives her customers the bill. ------------------Please leave us a great rating and a comment and share it with your friends - it really helps us grow as a show.If you're in the industry and are looking for the greatest POS system in the world than look no further as Blinq are tearing up the rulebook—no long-term contracts, no hidden fees, and no per-device charges. ABOUT THE EPISODE:After years of producing feature films and TV shows about family life like Cinderella Story, Perfect Man, Lizzy McGuire, and many others, Mark Rosman was forced to face the reality of problems in his own family.Mark and his wife spent some time in denial about their daughter's substance use. Even after two trips to the emergency room, they decided against professional advice to get her into treatment immediately. They chalked everything up to ordinary teen rebellion and experimentation, sending her to a traditional boarding school instead. Less than one month later, she was in the emergency room again after downing a bottle of Listerine. Thus began the roller coaster we're all familiar with: periods of hope and sobriety, followed by lapses into chaos and returns to use.Like many parents, Mark instinctively rejected the notion of "self care", or any form of detachment from his daughter's behavior and state of mind at any given time. Finally, in what seemed like his 100th parent group meeting, he admitted to himself (and everyone else there) the utter hopelessness he was feeling. This was the beginning of the entire family's recovery. In this episode, Mark talks about how this realization helped him to learn to set boundaries and how – now five years into his daughter's recovery – he's making his own story into a feature film which, for the first time, focuses on the experiences of parents.EPISODE RESOURCES:Keep Coming Back FilmKeep Coming Back Instagram accountThis podcast is part of a nonprofit called Hopestream CommunityLearn about The Stream, our private online community for momsLearn about The Woods, our private online community for dadsFind us on Instagram: @hopestreamcommunityDownload a free e-book, Worried Sick: A Compassionate Guide For Parents When Your Teen or Young Adult Child Misuses Drugs and AlcoholHopestream Community is a registered 501(c)3 nonprofit organization and an Amazon Associate. The men worked together on Jack Reacher: Never Go Back (2016). Ed was also executive producer of the TV series Nashville from 2016-2018. As a producer of the 1999 Best Picture winner Shakespeare in Love, Zwick won an Academy Award®. He is also the recipient of the American Film Institute's Franklin J. Schaffner Award, a Lone Star Film & Television Award Best Director award, the Humanitas Award and a Writers Guild of America award. ABOUT ED ZWICK AND HITS, FLOPS AND OTHER ILLUSIONS: My Fortysomething Years in Hollywood This heartfelt and wry career memoir from the director of Blood Diamond, The Last Samurai, Legends of the Fall, About Last Night, and Glory, creator of the show thirtysomething, and executive producer of My So-Called Life, gives a dishy, behind-the-scenes look at working with some of the biggest names in Hollywood. "I'll be dropping a few names," Ed Zwick confesses in the introduction to his book. "Over the years I have worked with self-proclaimed masters-of-the-universe, unheralded geniuses, hacks, sociopaths, savants, and saints." He has encountered these Hollywood types during four decades of directing, producing, and writing projects that have collectively received eighteen Academy Award nominations (seven wins) and sixty-seven Emmy nominations (twenty-two wins). Though there are many factors behind such success, including luck and the contributions of his creative partner Marshall Herskovitz, he's known to have a special talent for bringing out the best in the people he's worked with, especially the actors. In those intense collaborations, he's sought to discover the small pieces of connective tissue, vulnerability, and fellowship that can help an actor realize their character in full. Talents whom he spotted early include Brad Pitt, Matt Damon, Denzel Washington, Claire Danes, and Jared Leto. Established stars he worked closely with include Leonardo DiCaprio, Anthony Hopkins, Tom Cruise, Julia Roberts, Anne Hathaway, Daniel Craig, Jake Gyllenhaal, Bruce Willis, Demi Moore, and Jennifer Connelly. He also sued Harvey Weinstein over the production of Shakespeare in Love-and won. He shares personal stories about all these people, and more. Written mostly with love, sometimes with rue, this memoir is also a meditation on working, sprinkled throughout with tips for anyone who has ever imagined writing, directing, or producing for the screen. Fans with an appreciation for the beautiful mysteries-as well as the unsightly, often comic truths-of crafting film and television won't want to miss it. Seg 3 & 4 Did Sci Fi Movies predict the Future? Talking AI, Internet and Choice Guest: Eric Almassy LinkedIn: HERE Eric is a regional sales director, & also a part time Actor Eric joins the show to discuss sci-fi movies, and what predictions about the future have come true. Seg 3 - Internet & Choice The Internet has created a connected world through cyberspace. Now virtual reality and relationships online exist through dating websites and social media. The irony is people may be less social, as they still have trouble connecting despite more access to technology. An example is people text more than they talk. The Internet has added new types of addictions, like just staying home and being online all the time, pornography & gaming addictions, where people get lost in virtual world. The Matrix - virtual reality & the internet People in the movie choose a fantasy ‘comfortable' world (blue pill) vs a harsh and tough reality world. They would rather just plug into the Matrix and be in denial. The problem of choice, as there are consequences with choices in the real world. The Matrix world provides all of your needs. Matrix in the current modern world, a world where people would not leave their house and just build an entire alternate life online. You can work from home, and get anything you need delivered. Another movie about tech and internet connection is Minority Report. This is government surveillance to extremes. It also discusses the choices we make, and control of our lives. Freedom vs danger is another theme. All themes that apply in a dangerous modern world. Totalitarian governments like China are literally spying on their people, through what they search for on the Internet, their social media, and surveillance of cameras Many western governments use surveillance through drone, satellites, and cameras. Also, sometimes protecting people, and sometimes intruding on their rights. Seg 4 - AI Man vs. Machine Blade Runner - staying human in AI & tech dependent world. Blade Runner is a movie about androids and what constitutes being a human. The android characters seem to have more soul than the humans, as the world of Blade Runner is cold and depressing. Androids or AI life forms have been created to do the dirty work, mining, prostitution and fighting wars, then, when not needed they are terminated. The Terminator - AI and drones Terminator movie came out in the 1980s and was an allegory about the fear of nuclear war. Will advanced weapons kill everybody? Cyberdyne Systems uses sentient AI machines who take over and build robots who try to exterminate the human race. The irony is the humans initially created the AI to have more technology and better weapons, and it winds up wiping them out. Raises questions about - just because we can, should we be building the weapons. With the same themes, as Jurassic Park, Wargames, or any biological type movie, basically science run amok. Modern armies, have drown and surveillance equipment, and can hunt down people and kill them from a great distance. An operator of a drone could literally be on the other side of the world. The morality of these weapons is an issue today. People choose technology out of laziness, and often give little thought to how it affects their lives. They do not want to do the task, make it easier. Stephen joins us from his home in the Los Angeles area. Stephen is the founder of The Identity Development Institute and an acclaimed Hollywood Director, and a published poet. He is a father of 3 children, two of whom are Jake and Maggie Gyllenhaal, who are artists in their own right. He grew up with parents (and grandparents) who suffered trauma and addiction. His father, as a young American soldier during World War II, lived the reality of opening and freeing concentration camps in Germany. He also grew up in a Christian cult-like community in Pennsylvania and when he reached college age he saw doors and pathways open ahead of him that he otherwise wouldn't have seen. And one of those paths was film directing. And he never looked back. Kind of. He also went back to school to do a Masters in Therapy. And boy do we discuss some themes that are important to Stephen. We talk about being “sane” in an insane world, the “engine in me”, lack of connection, the love of art, the curiosity in death – and being drawn to skid row. “Art is there to comfort the disturbed and to disturb the comfort”.
