Aqueix cicle, que arriba enguany a la seva 45èna edició, fora havia tingut lloc al Principat. Pau Riuró, ex-president de l'ACO, ens explica la importància d'incloure l'orgue de l'església de Santes Justa i Rufina al cicle de l'ACO, com també la trajectòria de l'organista triat per aqueixa ocasió.

He began his life in the cruelest of circumstances: both of his parents were imprisoned for their faith in Christ. First his father, Theodotus, died in prison, then his mother, Rufina, died shortly after his birth, so the infant was left alone in prison beside the bodies of his parents. But an angel appeared to the widow Ammia, telling her to go to the prison and rescue the child. Ammia obtained the city governor's permission to bury the parents and bring the child home. He was called Mamas because he was mute until the age of five and his first word was `Mama'. Despite his late beginning, he showed unusual intelligence and, having been brought up in piety, soon openly proclaimed his Christian faith. When he was only fifteen years old he was arrested and brought before the Emperor Aurelian. The Emperor, perhaps seeking to spare the boy, told him to deny Christ only with his lips, and the State would not concern itself with his heart. Mamas replied `I shall not deny my God and King Jesus Christ either in my heart or with my lips.' He was sent to be tortured, but miraculously escaped and lived in the mountains near Caesarea. There he lived in solitude and prayer and befriended many wild beasts. In time, he was discovered by the persecutors and stabbed to death with a trident by a pagan priest.

Rufina [me contó] que tu vivienda es un cubil, una inmundicia hecha con adobes, tablas viejas y planchas de hierro, el techo de paja y tierra; me dijo que ni tú ni tus nietos tenéis cama y dormís sobre un montón de trapos.... Yo debí tenerte lástima y no te la tuve. Debí regalarte una cama, pues nos has servido bien; querías mucho a mi mujer, quieres a mis hijos, y en tantos años que [trabajas] aquí jamás nos has robado ni el valor de un triste clavo. Pues bien; si entonces no se me pasó por la cabeza socorrerte, ahora sí. »Diciendo esto, [Torquemada] se aproximó al lecho y... [dijo]: —Tía Roma, ven acá, toca aquí. Mira qué blandura. ¿Ves este colchón de lana encima de un colchón de muelles? Pues es para ti, para ti, para que descanses tus huesos duros y te despatarres a tus anchas. »Esperaba el tacaño una explosión de gratitud por dádiva tan espléndida, y ya le parecía estar oyendo las bendiciones de la tía Roma, cuando ésta salió por un registro muy diferente.... —... Que quiero morirme en paz... pero con la conciencia [limpia] .... Guárdese sus colchones, que yo tengo un camastro hecho de sacos de trapo, con una manta por encima, que es la gloria divina... Ya lo quisiera usted... Aquello sí que es rico para dormir a pierna suelta... —Pues dámelo, dámelo, tía Roma —dijo el avaro con aflicción—. Si mi hijo [Valentín] se salva, me comprometo a dormir en él lo que me queda de vida y a no comer más que las [porquerías] que tú comes. —... ¡Ay, señor, a cada paje su ropaje! A usted le sienta eso como a las burras [los aretes]. Y todo ello es porque está afligido; pero si se pone bueno el niño, volverá usted a ser más malo que Holofernes.1 Tiene razón la tía Roma en este pasaje de la novela Torquemada en la hoguera, escrita por el autor español Benito Pérez Galdós. Es infinitamente mejor dormir en un colchón duro y morir en paz y con la conciencia tranquila, que dormir en un colchón suave y morir en conflicto y con la conciencia atormentada. Y aunque el niño se salve, Torquemada en realidad no tiene la menor intención de enmendar su conducta malvada. Pero si eso lo sabe la tía Roma, claro que lo sabe Dios. Y sin embargo da lo mismo que cumpla o no semejante penitencia, ya que a Dios no lo podemos comprar con ningún sacrificio que hagamos. He began his life in the cruelest of circumstances: both of his parents were imprisoned for their faith in Christ. First his father, Theodotus, died in prison, then his mother, Rufina, died shortly after his birth, so the infant was left alone in prison beside the bodies of his parents. But an angel appeared to the widow Ammia, telling her to go to the prison and rescue the child. Ammia obtained the city governor's permission to bury the parents and bring the child home. He was called Mamas because he was mute until the age of five and his first word was `Mama'. Despite his late beginning, he showed unusual intelligence and, having been brought up in piety, soon openly proclaimed his Christian faith. When he was only fifteen years old he was arrested and brought before the Emperor Aurelian. The Emperor, perhaps seeking to spare the boy, told him to deny Christ only with his lips, and the State would not concern itself with his heart. Mamas replied `I shall not deny my God and King Jesus Christ either in my heart or with my lips.' He was sent to be tortured, but miraculously escaped and lived in the mountains near Caesarea. There he lived in solitude and prayer and befriended many wild beasts. In time, he was discovered by the persecutors and stabbed to death with a trident by a pagan priest.

What role can bars and mixologists play in protecting Earth's fragile environment? It's a question that Juan Torres Master Distillers, the maker of Torres Brandy, has attempted to answer via an innovative competition. A highly regarded spirits brand based in the Penedès region of Spain, Torres Brandy is the creator of Zero Challenge, an annual international competition whose aim is to promote, identify and reward environmentally friendly solutions in the management of bars and crafting of cocktails. The 2024 Zero Challenge finals were held last month in Barcelona and featured 10 bartenders based in countries from around the world, including Finland, Estonia, Spain, Mexico, Italy, Canada, the United States and the United Arab Emirates. Each presented a project intended to improve sustainability and reduce environmental impact within their bars and included solutions often specific to the impact that climate change is having in their respective regions. They were also challenged to develop a cocktail using Torres Brandy, one that reflected their commitment to a sustainable future. The event spanned the course of three days and included educational tours of the Torres Brandy solera and Familia Torres winery, the latter of which has for decades emphasized the importance of addressing climate change through the use of innovative growing methods and production processes. It culminated in the crowning of Beto del Toro of Mexico's Rufina Mezcalería as the winner of the Zero Challenge competition, a title that came with a grand prize of €30,000. This episode features interviews with four of the key participants in the competition, including Beto Del Toro along with Christian Visalli, the Global Spirits Director for Juan Torres Master Distillers; Loni Lewis, a finalist representing Okan, a restaurant in South Carolina; and Giacomo Giannotti, the owner of the World's 50 Best number one bar Paradiso, and the winner of the inaugural edition of Zero Challenge. Welcome to Episode 1415 in which Marc Millon interviews Federico Giuntini of Fattoria Selvapiana in today's episode of Wine, Food & Travel More about today's guests: Selvapiana was created in the Middle Ages as a watchtower and defense of the city of Florence to the north, along the valley of the river Sieve. Transformed into a villa, during the Renaissance it was the summer residence of noble Florentine families and the bishops of Florence. It was purchased in 1826 by Michele Giuntini, a successful Florentine banker and ancestor of the current owner Francesco Giuntini, who led the company from 1957 to 1997. Having always understood the value of the Chianti Rufina area, with stubborn passion he has lavished great energy in its valorisation. Francesco was among the first in Tuscany to produce wine from Sangiovese grapes alone and to link the company's flagship wine to a specific single vineyard: Bucerchiale. In 1979 he produced the first vintage of Chianti Rufina Riserva Vigneto Bucerchiale. In 1978, he was the first to place his trust in Franco Bernabei, an internationally renowned wine consultant, realizing his great abilities. Today the property is managed by Silvia and Federico, children of Franco Masseti, farmer in Selvapiana from 1953 to 1990. Silvia and Federico were adopted by Francesco in 1994 to give continuity to their work. Selvapiana currently has an extension of about 250 hectares of which 58 hectares of vineyards, 36 hectares of olive groves and 140 of woods. The land owned is spread over three municipalities, Rufina, Pelago and Pontassieve.
