Salt has long been used to add flavor to people's favorite foods. In fact, the use of salt as a means to preserving foods and adding flavor to recipes dates back to ancient times and has led to countless conflicts ever since. According to History.com, wars over access to salt reserves in China are believed to have been fought as early as 6,000 B.C. Though that shows just how valuable salt has been throughout much of human history, it doesn't indicate the negative effects that can result from diets that feature excessive amounts of sodium. There are so many ways to preserve herbs aside from your typical "hanging to dry" method. While I love drying my herbs by hanging them (There is something so pretty and simple about hanging herbs), this is not the only effective method for preserving the fresh taste and quality of homegrown herbs. Did you know you could also freeze them? In this episode, I talk about a few methods of freezing herbs so that you can enjoy them all year long!

If you get to the market this weekend please do yourself a favor a pick up some fresh herbs (better yet, grow some yourself!) Parsley makes any dish look "finished" and cilantro is a must in every Mexican fiesta! Fresh thyme on chicken is out of this world as is oregano as in Alison Roman's whole roasted chicken recipe here: https://bit.ly/GuudChicken Also a good time to test the freshness of your dried herbs and spices. Most have a shelf life of 2-3 years. I always buy the smallest amount offered of a spice I need especially if it's something new to me. In the podcast I also mention Ina Garten who has magical recipes that have yet to disappoint. You might know her as The Barefoot Contessa https://barefootcontessa.com/and if she is new to you please try this mustard roasted chicken recipe....it does require planning because you need buttermilk as well as we as stale bread to make breadcrumbs but it was so worth it... the recipe is here https://bit.ly/InaChicken

Beyond culinary herbs, fresh medicinal herbs can be difficult to find. Why bother with fresh herbs? We can feel the vitality of plants through the energetic qualities of fresh herbs. There are many herb farms working extremely hard to supply high quality fresh and dried herbs and it is so good to support them. Zinc Linked with the production of white blood cells According to The American Cancer Society, studies have shown that zinc levels in blood and inside white blood cells are often lower in patients with certain types of cancer. Selenium The University of Maryland Medical Center states that selenium can help build up white blood cells and move them around. Some studies also indicate that selenium may help prevent some infections. Another study indicated that when the elderly takes both zinc and selenium supplements, their immune systems responded better to the flu vaccine than those who took placebo. Vitamin B9 (Folate) The body needs folate to make white blood cells. A deficiency of folate can also lead to anemia, which is a low level of red blood cells. Vitamin C an immune enhancer that helps white blood cells perform at their peak and quickens the immune system's response. Omega 3 Fatty Acids Help combat inflammation and helps make white blood cells. Adaptogens boost Immune Function and modulate white blood cell count. Astragalus Root Helps boost white blood cells University of Texas found that Astragalus Root enhanced the immune system’s ability to identify bacteria, viruses, and even cancer cells. Cat's Claw Modulates the white blood cell count - if the white blood cell count is too low, it will increase it, and if it’s too high, it will decrease it. According to herbalist Maya Cointreau, "cat’s claw increased the ability of white blood cells to find and eradicate foreign micro-organisms. It also increases the body’s production of T-cells, helping to fight infection more effectively.” Reishi Mushroom Source of polysaccharides that have been shown to better activate Natural Killer cells reducing cancer metastasis. Julie Chai, associate garden editor of Sunset magazine, warns gardeners that they should keep mint plants in containers or pots, lest the herb take over the entire garden. Once your mint starts to overwhelm your container, you'll need to take it out, divide it, and replant it. Share the extra mint with your cocktail-drinking friends.
Julie Chai, associate garden editor of Sunset magazine, suggests that you plant herbs, especially basil, in a pot that is at least 12 inches wide and 12 inches deep to avoid the horror of root-bound plants.
Julie Chai, associate garden editor of Sunset magazine, picks herbs, not flowers, for her table's centerpiece. They look great, and their scent complements food nicely. Sunset also shares this set of one-pot garden ideas, which can be lovely centerpieces as well.
Julie Chai, associate garden editor of Sunset magazine, suggests that you harvest your garden's herbs in the morning, when they are at their most flavorful. And be sure to leave enough in the ground to repopulate the plant.
Julie Chai, associate garden editor of Sunset magazine, suggests that home gardeners remove the flowers from basil plants as they appear. By plucking the flowers you are keeping the herb in a prepubescent state, which will taste a lot better, and less bitter, than "older" basil.
Kathy FitzHenry, founder of Juliet Mae Fine Spices & Herbs, suggests that you consider the method of preparation when deciding whether to use fresh or dried herbs. Fresh herbs are best in a fresh setting, like a caprese salad, whereas dried herbs are best in a long, slow cook like a stew. Of course, there are exceptions to every rule.
Iceberg lettuce, baby carrots, waxy cucumbers, and tasteless cherry tomatoes are for the fast-food salad bar. CHOW Senior Editor Lessley Anderson identifies ways that you can improvise. Hint: texture and fruit.
