Today on Consuming the Craft, I welcomed Adam Bachman, the head production distiller and manager at The Chemist. We dove deep into the craft of distilling, from Adam's 11+ years of commercial experience in the industry to the evolution of American single malt whiskey. Adam shared stories from his early days building stills (legally for essential oils!), his academic path through biochemistry at Clemson, and how he transitioned through South Carolina's changing landscape of craft distilleries. We tasted some truly unique spirits and beers, including a locally smoked single malt and an oat whiskey, while discussing the challenges and creative opportunities in the world of craft distillation. Adam Bachman is recognized for his hands-on expertise in distilling whiskey, gin, and liqueurs, with a strong background in biochemistry and a minor in chemistry. He spent six years at 6 and 20 Distillery before moving to Asheville to join The Chemist, where he's helped ramp up whiskey programs, develop new recipes like the limited-edition rye, and recently barrel a small batch peated whiskey. Adam approaches distilling as both art and science, with a passion for experimenting with malts, grains, and local ingredients, and a deep appreciation for how changing techniques shape the identity of each spirit. "Getting second opinions is huge. On this episode of Taste Buds with Deb, host Debra Eckerling speaks with Hilary Sheinbaum, a journalist and the founder of GoingDry.co, a non-alcoholic (N.A.) events and menu curation company. She is also the author of "Going Dry: A Workbook: A Practical Guide to Drinking Less and Living More" and "The Dry Challenge: How to Lose the Booze for Dry January, Sober October, and Any Other Alcohol-Free Month."    Ten years ago, Sheinbaum participated in Dry January for the first time. She had no idea it would change her life!   "I made a very spontaneous, silly bet with one of my guy friends on New Year's Eve," Sheinbaum, who was working as a red carpet entertainment journalist at the time - and also wrote articles on beer, wine and spirits, explains.    The first one to take a sip of alcohol in January lost. Her friend lasted around three weeks, Sheinbaum made it through the entire month.    "That was New Year's Eve 2016, and here we are 10 years later, 10 dry Januarys later," she says. "I won a very expensive dinner at a Michelin star restaurant, but honestly the impact that it has had on my life for the past 10 years is worth so much more."   Hilary Sheinbaum talks about going dry: the reason, the trend, and the community aspects. The witching hour, or usually hours for most of us, are the time of day where you typically drink and want to drink the most when you're sober. This could be morning for some people, it could be 4-7pm, 6-8pm, it varies. This time block is when your biology, habits, and old reward wiring collide: cortisol is dropping, your prefrontal cortex has less decision bandwidth, and your brain is scanning for the routine that used to deliver relief. The evening cue your brain fires isn't proof you need alcohol, it's proof you drank often enough and long enough that your brain automated it. Today, we're digging into why 5–9 PM feels like the danger zone, what's happening under the surface in the brain and nervous system, and how understanding those mechanisms helps you respond differently this time. My guest this week is James Swanwick, an Australian-American investor and entrepreneur He is the creator of the Alcohol Free Lifestyle, which helps people change their relationship with alcohol In this episode:- James was a moderate drinker, but after 20 years of consistent drinking, he realized the negative effect on his health and stopped for what was supposed to be a 30-day experiment. That was 13 years ago and he's been alcohol free ever since! Like many of us James hesitated to quit due to societal conditioning – he associated alcohol with socializing and fun and feared being perceived as dull or boring without alcohol. And indeed… There was some Social Awkwardness for a while - navigating social situations without alcohol felt awkward and he shared a story of pretending to drink alcohol when on a date – this strategy proved to be a mistake when his date discovered he had lied!   In spite of the tricky start James was soon embracing his alcohol-free lifestyle openly. We discussed the strong influence of peer pressure and the need for a supportive tribe when quitting alcohol. We are both seeing a societal shift as people acknowledge the health risks of drinking alcohol – which is heading for a cigarette moment. Although drinking alcohol before bedtime may help initially with falling asleep but compromises the quality of sleep, leading to irritability, fatigue, and other negative effects on health. Alcohol's Effects on Sleep and Health:  Alcohol consumption can compromise sleep quality, metabolism, and overall health. It can disrupt the body's natural processes, leading to weight gain, reduced productivity, and increased cravings for unhealthy foods. James shared some Benefits of his alcohol-free lifestyle which included improved physical health, mental clarity, productivity, and financial success. I I asked him for his advice for anyone who is struggling to get started on this journey: He suggested starting with a commitment to at least 30 days of sobriety as an experiment, but most importantly be open to extending it to 90 days or longer. We agreed on the importance of Avoiding the stop-and-start cycle and focussing on the long-term benefits of sobriety.
