On a recent Harvesting Nature Field to Fork wild pig camp in Texas, butcher extraordinaire Adam Steele and I were driving from the Dallas-Fort Worth airport to Jacksboro where the camp was being held. We were both feeling quite peckish, so I had Adam look up a potential spot to stop for lunch along the way. “How about a Texas roadhouse?” he asked. Bingo. We grabbed a table under the watchful eyes of mounted deer and longhorn cattle heads and looked around at walls festooned with Lone Star flags and Texas memorabilia. We decided to get a Texan kind of meal, so we ordered some sweet teas, a big bowl of queso, and some chicken fried steaks. I intimated to the waitress that I'd never had chicken fried steak before, and she let out a big whoop, drawing the attention of the rest of the staff. The thought of a Canadian who had never even tried the dish before tickled them pink, and they all stood there and watched me take my first bite – delicious! The dish I made here is a nod to that lunch and to Texas as a whole. I combined both parts of our meal, the steak, and the queso, and made it wild-based with elk bottom round steaks. I turned the queso into a gravy, which gets poured over the chicken fried elk, replacing the traditional white gravy usually served with it. Feel free to swap the elk out with any lean red meat. It is most often served in the aforementioned white gravy, with mashed potatoes on the side. For those listeners unfamiliar with what a cube steak is, it is generally a thin piece of top round or sirloin that has been pounded and tenderized in a process called cubing - so called due to the square indentations left on the meat. This is usually done by a mechanical tenderizer these days. Cube steak is also sometimes known as bucket steak, named for the cardboard buckets in which the steaks are sometimes sold, or minute steaks, named for the amount of time needed to cook them. Northerners and Canadians like me might be most familiar with the minute steak moniker. The reason it is called chicken fried steak is due to the way in which it is prepared and cooked - much like southern fried chicken. You can actually even find chicken fried chicken in the South as well. What could that possibly be??? Chicken fried chicken points to chicken prepared like chicken fried steak, which in turn points to steak prepared like fried chicken. Confused yet? Where normal fried chicken will usually be bone-in pieces of chicken, chicken fried chicken will be a flattened tenderized piece of boneless chicken that was dredged in flour, dunked in egg wash, dredged again, then fried… just like chicken fried steak. Don't worry, it took a while for me to wrap my head around it too. Reinhard Denke grew up in Texas and is a graduate of USC Film School. He got his start as a writer in 2009 with his spec script “Sex, Greed, Money, Murder and Chicken Fried Steak” about the Cullen Davis murders in Fort Worth, Texas. The script was chosen for the prestigious Hollywood Blacklist. The film is currently in pre-production with Amicus Pictures and Mercury Media. In 2013, he wrote “Far Below” for David Oyelowo, and was hired to rewrite 2015's “Captive," starring Oyelowo, Kate Mara, and Michael K. Williams. He also wrote a TV pilot and series entitled “Golden Gate” about 1960's era San Francisco that has been optioned by Demarest Films, and wrote the limited TV series “Vanished” for Straight Up Films and Truly Original Entertainment. Reinhard adapted “The Lives of Beryl Markham” for Rock Island Films; it is now entitled “Undaunted." He wrote the screenplay “Ackia” for the Chickasaw Nation and award-winning director Nathan Frankowski. Also for the Chickasaw Nation, Reinhard wrote “Montford; Chickasaw Rancher," which currently plays on Netflix. He adapted “The Madman of Music”," a bio of composer George Anthiel and movie actress Hedy Lamar. A native of Los Angeles, Marilee studied philosophy at Yale before moving to Rome where she started her career in the film business as Francis Ford Coppola's philosophy tutor. She then worked in Italian TV as a director and development executive before returning to the US. Back in LA, Marilee started her career as a writer in commercials, writing treatments for many well-known directors, before turning to screenwriting. She has written primarily for film but has also developed several TV pilots both alone and with her writing partner, Reinhard Denke. They have optioned and/or sold over a dozen screenplays and pilots through their company, Mercury Media. Marilee is presently producing Reinhard's Blacklisted script, "Sex, Greed Money, Murder, and Chicken Fried Steak," in a co-production with Amicus Films in Dallas. The film is scheduled to begin production in early 2023. Marilee has also turned to fiction. Her first novel, "The Tutor" (loosely based on her experience as Coppola's philosophy tutor in Rome) was published by Rare Bird Books in the fall of 2019. Her lit agent is presently shopping her new novel, a psychological crime thriller, "He's Gotta Go." Marilee is the founder of the nonprofit, One Village Green, which promotes mental health and wellness in American kids and communities through content, community building and grants to families in need. Through One Village Green, Marilee has a recently launched a podcast, Wake Up! where she discusses the youth mental health crisis with a wide assortment of experts across the mental health sphere. She is also developing a documentary, "Good Little Dead Robots," exploring the same. Her other careers? Today in conversation with multi-talented musician, filmmaker and producer Doug Stebleton. He came to Hollywood at age 19 and has lived and worked in southern California since then. His expertise is music publishing for #film and #television. His company owns a catalog of songs that are licensed to film and television studios and to independent productions. Some of the company's credits include #BloodDiamond, Borat, Little Miss Sunshine, #Zoolander, Big Bang Theory, Blue Bloods, Brooklyn Nine-Nine, #TheSopranos, Ugly Betty, #CSI, Scrubs, and ER. Doug is also a film producer. His first film was a documentary titled Mother of Normandy: The Story of Simone Renaud. His next film, I Want Your Money, was released in over 500 theaters across the nation in 2010. In 2014, Doug produced and directed Reagan at Normandy, a short film for the Airborne Museum in Normandy, France, and in 2017, he produced Heroes of WWII: The European Campaign. Other projects he is producing include a cable TV show on film and TV cars called Kars & Stars and a feature film, Big Life. Doug has a love for history and hopes to keep making films and documentaries that are inspiring, informative and educational. His passion for Hollywood films and time travel inspired him to create The #HollywoodTimeTravelSeries. It's a Wonderful Time is his debut novel, which he coauthored with Reinhard Denke. Reinhard adapted The Lives of Beryl Markham for Rock Island Films; it is now entitled Undaunted. He wrote the screenplay Ackia for the Chickasaw Nation and award-winning director Nathan Frankowski. Also for the Chickasaw Nation, Reinhard wrote The Chickasaw Rancher, which is to be released in 2021. He adapted The Madman of Music, a bio of composer George Anthiel and movie actress Hedy Lamar. He wrote Moonchild, the story of Linda Kasabian and her ordeal with the Manson Family, for director Marcus Nispel and producer Adam Krentzmann. Reinhard also co-wrote Mizmoon, about the Patty Hearst kidnapping, for director David Brown and Clear Horizon. The Hollywood Time Travel Series is a compendium of novels that revolve around a young time traveler named Evan West. Evan lives in present-day Hollywood, California, a typical millennial working in the entertainment industry as a #filmtrailer editor, a job he does not particularly relish. Evan dreams of one day becoming a successful screenwriter and Hollywood film director, climbing to the top of the very slippery pole called success. He has the typical problems in his life – never can find a girlfriend who appreciates him and always at odds financially. But he lives, breathes and exists for everything film, his heart beats at 24 frames per second. He's an expert in film #history as well and a stickler for detail.
