As I was saying recently to a friend, after five years of being a healthy vegan, it makes sense to me that what we eat affects our health, that the animals deserve not to be eaten and not to suffer in any way, and that we all need to be concerned about the planet. Despite my decades of conditioning (some would say brainwashing), going to a healthy plant-based diet opened my eyes and changed my life. I initially went to a healthy vegan diet because of a health condition (the results have been remarkable) and then went through a consciousness-raising about the animals and the environment, which inspired my novel Cinnamon: a dairy cow's (and her farmer's) path to freedom published just recently by Adelaide Books. So, I am also a vegan for ethical reasons. But when it comes to old friends, I am concerned about the human animal. Recently, when an old friend suffered a very serious heart attack, which rendered her unconscious for two weeks, I ordered UnDo It! written by Dean Ornish, M.D., and his wife, Anne Ornish. I was impressed with the explanations of the science and the proof supporting healthy plant-based eating. The book also talks about the importance of having a gratitude practice, something that I've recently incorporated into my life.  After telling us that a gratitude practice has been proven to lower blood pressure, and reduce stress, along with offering other health benefits, the authors write: “Gratitude often naturally bubbles up when you're feeling upbeat, happy, and well. Yet when you consciously practice gratitude—especially during hardship—it can actually improve your health while breeding deeper contentment and love in your life. … Letting your heart open to acknowledge the grace around you and to savor the preciousness of your life is the first step. This means shifting your awareness so that you can begin to notice the small, subtle things that spark joy and nourish your heart, such as your warm cup of morning tea, the splendor of the sunrise, or simply feeling blessed when you wake up and get to greet a new day.” When I read UnDo It by Dr. Dean Ornish and Anne Ornish (published in 2019 by Ballentine Books), my life was greatly enriched, and I knew it was the right book to send to an old friend who needs it. He tells his story of how he struggled with depression and how he overcame. Lecture SummaryThis 2 part series will discuss what to eat for weight loss, wellness, as well as improving and sometimes even curing chronic medical conditions. The ideas around diet are simple! Staying on a diet long term is the difficult part.Key Points- Avoid eating or try to severly limit consumption of fast food, sugar, unhealthy fats, fried foods, and simple carbohydrates like white bread and white rice.- Eat a diet rich in raw vegetables and fruits. Shoot for a rainbow of different colors. Add in nuts and seeds for additional nutrients. This should be the cornerstone of any healthy diet.- Try and get most of your protein from plant based sources like beans, legumes, nuts, seeds, and soy.- Limit meat intake. Shoot for 2 to 5 meals a week with meat or avoid entirely. Enjoy high fat steaks or processed meats like bacon, only on rare-special occasions.- Very strict diets like the Ornish diet can improve and sometimes even cure chronic medical conditions like morbid obesity, type 2 diabetes, heart disease, depression, Alzheimers, and low grade prostate cancer.- Lifestyle changes like those utilized in the Undo It program (Ornish.com) should be the cornerstone of chronic disease treatment. In this episode of The Plant Trainers Podcast, we talk with Dr. Shane Williams about how heart disease impacts us all, even your cardiologist. That’s because the #1 killer of cardiologists or any doctor is actually heart disease. This is cause for alarm but we know many cardiologists who have it all figured out. We love how Dr. Williams found a plant-based diet. It’s actually quite unique from any other story we have heard before. We guess you can say it was pure chance. We take some time to talk about cholesterol, hypertension, sugars, salt, and oils on some pretty easy to understand terms. He also walks us through his system for helping his patients get on board for compliance with a plant-based diet. This is definitely something you can share with your health care provider as they may be able to relate to his personal story or even duplicate his system. Born and raised in Newfoundland, Dr. W. Shane Williams attended Memorial University of Newfoundland (MUN) in St. John’s where he obtained his Bachelor of Science in Pharmacy [BSc (Pharm)] being selected as class valedictorian in 1995. He then completed his 4 year Doctor of Medicine (MD) and 3-year post-graduate fellowship program in Internal Medicine at Memorial as well. He went on complete a 3-year Cardiology Subspecialty Fellowship at McMaster University in Hamilton, Ontario and in 2008 moved to Muskoka, Ontario to open his private practice in Cardiology and Internal Medicine. He’s lectured at plant-based conferences, hosted many week-long immersion programs locally as well as a 10 day ‘Plant-based Immersion Summit’ in the Caribbean with Drs. Campbell and Esselstyn along with other leaders in the field.
