Another short week to start 2024…we were off on Monday to recover from NYE, and on Tuesday we got started right away with a list of things to look forward to in January. In one of the most remarkable feats ever performed by a frozen dessert, Halo Top ice cream became the best-selling pint in America just six years after launch. Its founder Justin Woolverton was a frustrated lawyer who developed the recipe in his Cuisinart, mixing Stevia, egg whites and fruit into a low-calorie treat that tasted good enough to sell. Many recipes later—some runny, some rock-hard—Justin got the ice cream into stores; and soon, social media was flooded with images of people polishing off the 300-calorie pints. After outselling Häagen-Dazs and Ben & Jerry's in 2017, Halo Top's charisma faded, and a slew of new competitors entered the field. In 2019, Justin sold the company for an undisclosed amount, and now enjoys his ice cream at a less frenetic pace. Labeling food as “good” and “bad” sets us up to judge ourselves as good and bad when we eat those foods. And if you're tired of feeling like food has power over you, letting go of these food judgments is one of the most helpful things you can do. It's a tall order though, because we live in a world that constantly sends us messages about how certain foods are “healthy” and other foods are “unhealthy.” It's even built into the marketing of food products. We've got Halo Top ice cream, which is supposed to be seen as a holier-than-thou alternative to regular ice cream, and Skinny Pop popcorn which is marketed as healthier than regular popcorn because it's lower in calories. It can feel impossible to escape this stuff. Don't worry though, because by the end of this episode you're going to understand how to neutralize your food judgments so that you can truly have peace and freedom with food. Different foods have different nutrients - and that's a wonderful thing, not something to be afraid of! Elaine graduated from the University of San Francisco and received a B.S. in Business Administration - International Business. After college Elaine joined the international sales, operations and client relations division of her family's food products business. Elaine then joined VC-backed Juicero and later Halo Top Creamery. While at Halo Top, she helped manage international sales and operations. Doug Bouton is the CEO of Gatsby Chocolate, a low on sugar, high on taste, chocolate brand (now that's Doug's claim – I haven't tasted it yet, and when I do, I'm sure it will be amazing, but if it's not high on taste, I'll be sure to lie about it. Nah, Doug has a good track record). He's also the CEO of Halo Top International, a low calorie, high quality ice cream brand. Doug went to the University of Virginia for Law School and aced their famous ice cream making class. I'm kidding. There's no freaking ice cream making class at the Virginia Law School, nor in any law school in the country. Now here's the scoop folks (get it, the scoop?!) – while Doug didn't take a course in law school on ice cream making, I actually did. And no I'm not kidding this time. When I was in law school, I audited an undergrad course at Harvard called the Science of Cooking. (And you can take actually take that course on edX.) It was an unbelievable class, each week one of the best chefs in the world would visit. Now one of the classes was dedicated to, you guessed it, the science of making ice cream. Doug graduated law school in 2010 and did corporate work at Proskauer for two years before leaving to start Halo Top ice cream with fellow lawyer Justin Woolverton out of Justin's kitchen. The two of them grew the brand to more than $300 million in sales and turned it into the #1 selling ice cream in the United States, outselling the likes of Ben & Jerry's, Haagen-Dazs, and Breyers. (And that's before Ben & Jerry's stupid boycotting Israel decision.) Halo Top's US operations were sold in 2019, and Doug now serves as the CEO of Halo Top's international operations. In 2021, Doug founded Gatsby Chocolate, the first-ever low-calorie chocolate brand with the goal of doing to chocolate what Halo Top did to ice cream. In 2017, Halo Top became the #1 selling pint of ice cream in the United States and was even named one of the top inventions of the year by TIME Magazine. The ice cream was one of its kind, igniting an entire category of low-calorie and high protein products where top companies even launched copycat competitors to get in on the craze. Halo Top was co-founded by former lawyers, Justin Woolverton and Doug Bouton, and the brand had one of the most dramatic growth stories within the CPG industry—going from $2 million in sales in 2015 and skyrocketing to over $300 million in just two years. Today, Bouton is starting his next brand as he takes aim at a category that is double the size of ice cream: chocolate. In 2021, Bouton founded GATSBY Chocolate, the lowest calorie chocolate on the market, and already released nearly 10 products with ambitious plans to introduce more innovations this year, including unique products like Peanut Butter Cups (for only 50 calories per cup!) and an upcoming Oat Milk-based line that is vegan and plant-based. I sat down with him to talk more about the lessons he learned in Halo Top and how he is applying those experiences as CEO of GATSBY Chocolate.
