This week, Louisiana Eats takes you to the Williams Research Center for the Historic New Orleans Collection's 2024 Food Forum, where host Poppy Tooker moderated a panel discussion that delved into the fascinating stories of three of the city's most enduring restaurants – all family-owned and -operated for generations. On the panel was Lisa Blount, representing Antoine's, the longest continuously operating family-owned restaurant in the nation. Lisa is marketing and menu development director of the 185-year-old eatery, as well as the wife of fifth-generation proprietor, Rick Blount. She tells us about the women and men who kept the business in operation through several generations and what she is doing now to preserve their legacy. Also part of the discussion was Ralph Brennan, third-generation owner of the French Quarter institution, Brennan's, as well as four other restaurants. Ralph explains what inspired him to keep Brennan's in business when it was on the verge of closing. He also describes the circumstances that led him to take over The Napoleon House, an even older restaurant institution in the Vieux Carré. While he made some necessary updates to the building, they were designed not to be seen by a customer base who would have balked at the idea of the restaurant changing in the slightest. Rounding out the panel was Executive Chef Edgar "Dook" Chase, IV, who carries on the legacy of his grandmother Chef Leah Chase, as the fourth-generation proprietor of the over 80-year-old Dooky Chase Restaurant. He tells us about how he's keeping his family's legacy alive while giving newer generations an opportunity to move forward. Starting February 4th, guests with the ability to park hop will be able to switch parks at 11am, instead of the current 1pm time. More dates have been added to the calendar at the $104 ticket level, bringing it up to nearly two months of days at the lowest ticket price. Throughout the Disney100 celebration, digital attraction photos will be complimentary starting February 4th. This is limited to digital attraction photos only. Also announced were more opportunities to join the Magic Key program throughout 2023 as pass inventory becomes available. New Orleans restaurateur Ralph Brennan grew up in restaurants. Part of a storied New Orleans family, the restaurant group he helms today owns multiple spots -- including Ralph Brennan's Jazz Kitchen located at the Disneyland Resort -- but to me, the crowning jewel of this group is Brennan's, a restaurant in the French quarter opened in 1946 that still celebrates the pageantry of eating out in its breathtaking and iconic spaces, from a pink and green dining room to elegant private rooms to a courtyard plucked out of a tropical dream. Mr. Ralph, as he is affectionately known in the restaurant, is past president and chairman of the National Restaurant Association and has presided locally over both the Louisiana and the New Orleans associations as well. He's a people person who excels at staying curious while still keeping New Orleans restaurant traditions alive. There's a New DVC Lounge Coming to DisneylandDisney Vacation Club announced the first Member Lounge coming to Disneyland Resort in California and it is expected to open in the first half of 2023. Between 1880 and 1920 over four million Italians immigrated to the U.S., with the majority of Sicilians coming through the port of New Orleans. Their influence here can be found in the food and in the language where special words like niespuli and cucuzza proliferate. On this week's show, we survey those Sicilian connections to learn new things about this place we call home. We begin with Elisa Speranza, author of "The Italian Prisoner." Elisa was inspired to write her debut novel after hearing stories of Italian POWs housed in New Orleans during World War II. After Italy switched sides in 1943, these former enemies became part of the American war effort and the city's make up. Then, Liz Williams joins us with memories of her Sicilian grandmother, Nana Elisabetta, who arrived in the Crescent City at the age of 18. Her new book, "Nana's Creole Italian Table," is filled with recipes and family lore. Then, we hear from New Orleans food historian Laura Guccione, whose family hails from Alia, Sicily. With her background in botany, Laura has long been fascinated by a local fruit tree, often referred to as the Japanese plum, which proliferates wildly on the island of Sicily. Her linguistic look at the fruit can be found on New Orleans Historical. Finally, we sit down with Sal Impastato of the renowned Napoleon House clan. Sal tells us the story of the business that was family-owned and -operated for almost a century, before he handed over the keys to Ralph Brennan in 2015. The Finding Nemo Submarine Voyage has set sail again, taking guests on the voyage under the seas to find Nemo. Almost 80 years ago, Owen Brennan got the party started at the Old Absinthe House. Since that time, the family has grown and prospered, giving us all a wonderful time along the way. On this week's show, we sit down for the first time with the fourth generation of one of America's premier food families. We hear from Ralph Brennan's kids Kathryn Brennan McLeod and her brother Patrick, Dickie Brennan's daughter Sarah and his nephew (Lauren Brennan's son) Geordie Brower, and the cousin who is guaranteed to spice things up, president of Baumer Foods, Inc., Pepper Baumer. This crew of cousins behaves much more like siblings. They are all very close in age, share much of the same interests, and are now raising a fifth generation – with Sarah, Geordie, and Pepper all adding to that growing number in just the last few months. We also meet father-son chef duo Gus Martin and Gustar Martin. Gus and Dickie Brennan worked at Commander's Palace when they were both in high school. Gus' mom, Gustar's grandmother, was the first female floor captain there. The Brennans treat their employees like family, which explains a bit about Gus and Gustar's career with them. Disneyland Resort President Ken Potrock met with community leaders recently talking about exciting changes coming to the resort, and this was one of the previously unannounced updates. News In an interview with the Orange County Register, Disneyland Resort President Ken Potrock made the shocking comment that the phased reopening of the resort is just now at the halfway point. He said that the phased reopening will take at least another year. The resort has rehired or hired 28,000 cast members to bring the current staff to 30,000, 2,000 shy of pre-pandemic levels. Guests that were able to snag a place in the queue can bypass the line to enter Avengers Campus and head in to board the attraction. Reviews are mixed and described the ride as a different version of Toy Story: Midway Mania. Mobile ordering is the primary way to get food at this, and all the other dining locations in Avengers Campus, and has been less than ideal. On opening day, guests could order food when not in the land and could sometimes be allowed in to get their food, while other times being denied access. Over the weekend, they changed the notification so guests had to order in the land only, in addition to adding the order windows throughout the day, instead of only in the morning. The food itself is getting good reviews. The Pym-ini sandwich is reported to taste like a meat-lovers pizza in a sandwich. The Not So Little Chicken Sandwich also got good reviews. The daytime options include the New York's Tastiest, which is a chicken shawarma wrap, with garlic spread, and a coconut yogurt-tahini sauce and pickled vegetables, and then there is the Impossible Victory Falafel, which is a plant based falafel and cauliflower wrap, garlic spread, hummus, and coconut yogurt-tahini sauce, with pickled vegetables. News: With June 15th quickly approaching, there are a lot of changes to be aware of with California Theme Parks with the expiration of the Blueprint for a Safer Economy. On June 15th, out of state guests will be allowed at theme parks, vaccine verification will be required, park capacity will not be restricted by the state, this includes shops and restaurants, physical distancing will not be required, indoor shows and queuing can return, masks will still be required indoors and outdoors for theme parks. News: Today Disneyland announced how ticket sales and reservations will work for the reopening on April 30th. To enter the parks, guests will need a park reservation plus a valid theme park admission ticket. Reservations are currently limited to California residents, and groups of no more than three households. Reservations will launch on April 12th for guests that currently have valid theme park tickets (not annual passes), no earlier than 8am Pacific time. April 15th guests will be able to purchase new theme park tickets. Reservations will be made available on a rolling basis for greatest access to the most guests. Starting April 9th, guests will a valid ticket can check and see what dates they can request reservations for. Disneyland recommends that guests login to their Disneyland account and add the park tickets to the account before attempting to get reservations for the best chance at success. Park Hopping will be allowed, but only after 1pm on the reservation date. Guests with multi-day tickets will have to make separate reservations for each day they wish to attend. News: The California Attractions and Parks Association, an organization that represents amusement parks and attractions througout California, streamed reactions from the big theme park operators last week. Ken Potrock, President of the Disneyland Resort, Kurt Stocks, President of Legoland California, Karen Irwin, President and COO of Universal Studios Hollywood, and Raffi Kaprelyan, Regional Vice President for Cedar Fair, which operates Knott’s Berry Farm were on the stream. Good points were made by each of them, such as local residents might be traveling out of state to go to theme parks since the local ones aren’t open, helping with the COVID-19 spread. Guests wanting to dine in at the main Jazz Kitchen could get on the waitlist by talking to the host, or scanning the QR code to be added to the list with a smartphone. The tables are distanced well, with seating upstairs on the balconies, as well as in the courtyard on the main level. Since Ralph Brennan and Terry White reopened the venerable Brennan's Restaurant in 2014, they've initiated some new traditions, like champagne sabering in the patio and an annual turtle parade. Boasting its iconic pink fa ade in the French Quarter, Brennan s Restaurant has been a New Orleans landmark since 1946. On this week s show, we celebrate the venerable establishment, beginning with a conversation with co owner Ralph Brennan. Ralph Brennan had five restaurants in his portfolio when he learned the flagship Royal Street Brennan s was in danger of passing outside of the family. Ralph tells the inside story of the steps he took to ensure that didn t happen, and shares some personal tales of first dates that included champagne fueled carriage rides through the French Quarter. Then, we hear about Brennan s tiniest courtyard residents a bevy of tranquil turtles. Simone Rathe s tricentennial take on these legendary terrapins is now immortalized in a new children s book, A Topsy Turvy History of New Orleans and Ten Tiny Turtles. Next, hospitality tech entrepreneur Damian Mogavero explains the importance of raw data in managing a Brennan s enterprise. Damian has been able to use his dual passions for dining and data to create a system for "new garde restaurateurs," a story now chronicled in his book, The Underground Culinary Tour. Lastly, we put Damian s system to the test by checking in with one of his New Orleans case studies, the Ralph Brennan Restaurant Group. NOLA Chefs’ Aid for the Philippines brings together – here in our great city of New Orleans – our love of good food and our equally strong love of family and community. We know what it is like to suffer. After eight years parts of our city are still recovering from Hurricane Katrina. Our suffering helps us to keep focused on what is most important in life, and it urges us to reach out with a helping hand to those who also suffer. In response to the devastation wrought on the Philippines by Super Typhoon Haiyan, New Orleans chefs are banding together for an evening of food and fun, with all proceeds going directly to the Philippines where it is most needed. Nina Camacho has assembled a fantastic team to help make this event a reality. Susan Ford, Publisher of Louisiana Kitchen & Culture Magazine, Ewell Smith, former Executive Director of the Louisiana Seafood Promotion and Marketing Board, and Wendy Waren, VP Communications for the Louisiana Restaurant Association are working tirelessly to make this event a success. In addition, the Executive Board of the American Culinary Federation of New Orleans (ACFNO), Philippine American United Council of Louisiana (PAUCLA), Filipino American Lions Club of LA, and Vice District Governor, 8-S, Lions Clubs International, Robert Romero and more will be volunteering their time, talent, and treasure for this event.
