Spice, creaminess, zing and freshness all in one. Love it. What you'll need 3 tablespoons sesame seeds 3 tablespoons salted peanuts 2 tablespoons extra-virgin olive oil 1 onion, diced 4 garlic cloves, finely chopped 2.5 cm piece of ginger, grated 190 g green curry paste 400 ml can coconut milk 1 tablespoon fish sauce 2 teaspoons brown sugar 2 heads of broccoli, chopped into florets (approximately 3 cups) 1 large zucchini, cut into rounds 400 g can chickpeas, rinsed and drained zest and juice of 1 lime TO SERVE 1 handful of coriander leaves 1 handful of Thai basil leaves 60 g (½ cup) finely sliced spring onion finely sliced green chilli Spiced Coconut Rice (page 226) or steamed rice lime wedges Combine the sesame seeds and peanuts in a large frying pan over medium heat. Toast until they turn golden brown and release their fragrance. Remove and set aside. Heat the olive oil in the same pan over medium heat. Add the onion and sauté for 3-4 minutes until softened. Stir in the garlic and ginger and cook for another minute until fragrant. Add the sesame seeds and peanuts. Stir in the curry paste and cook for 1 minute to release its flavours. Add the coconut milk, fish sauce and brown sugar. Stir well and let the mixture come to a gentle simmer. Time for some greens. Add the broccoli and zucchini and cook, stirring occasionally, for 6-8 minutes until the vegetables are tender-crisp. Tip in the chickpeas and cook, stirring, until they are heated through. Squeeze on the lime juice, sprinkle on the lime zest and stir well. The finishing touches. Scatter the coriander leaves, Thai basil leaves, spring onion and chilli over the green curry and serve with the coconut rice and lime wedges for squeezing over. DID YOU SEE THAT? Johnny Depp is a quiet supporting player along with Dame Judy Dench, Alfred Molina, and Carrie-Anne Moss. Ba da, DA DA! If you know that sound, then you know what movie we are recasting this week. On this episode, we discuss all things Bond. We debate what makes a good Bond and whether or not Pierce Brosnan effectively carries the torch. GoldenEye has some ups and downs. It suffers from a really mediocre script. Had that been better, I think that more could have been done with Famke Janssen and Sean Bean's performances. Alan Cumming also does a lot with a little in his hacker nerd role. They were all willing to throw everything into these roles, and they were given less than nothing to work with. I also think that's what dooms Pierce throughout his entire Bond experience. Give him just one decent script and let him work. GoldenEye was clearly the best story of the Brosnan Bond movies, but the dialogue was still awful. Thankfully we have the introduction of Dame Judy Dench as M for the first time, and the Daniel Craig Bond movies wisely continued to use her for the same role. If you have a spare moment, we would really appreciate a rating on iTunes or whatever service you use to listen to podcasts, because it helps spread the word and refers more people to listen to the pod. The headline which attracted my attention more than any other is the fact the world has lost sixty percent of its wildlife over the past forty years. It is mind blowing and part of the fake news Trump suggests everything is that is not spouted from his own tweeter feed, but having recently visited Madagascar where I witnessed first-hand the devastation to the rainforests there, I believe the statistic is underestimated. Lemurs will soon be extinct, certain species are on the verge of it already and having had the privilege of visiting the Galapagos some years ago, I feel this is also a place not only visitors should not be allowed, but no one should be allowed. Domestic animals have no place in an area where they are killing off those species such as the giant tortoises, rare geckos and chameleons. As we learn of the plastic polluting our waters (information has been abounding about this for decades, newspaper editors have simply chosen to ignore it), efforts are finally being made to reduce the use of plastic, but it is slow. I recently visited Tesco, where fruit bought loose was far more expensive (20 – 30p which adds up) than if you bought it in plastic containers. The Royals are bringing attention to the issue, because we have no faith in politicians and journalists any more, they are the only ones left whom we are still able to collude in the illusion we ‘know’ them and they are to be trusted. Truth is we don’t ‘know’ them, but Princes William and Harry’s efforts high lighting the plight of wildlife is a good one. As a traveller, how are you able to help the wildlife? There are numerous websites out there which will highlight issues which need addressing. When you start to look what you will see will in turn depress, anger and inspire you. [http://www.explorersagainstextinction.co.uk/](http://www.explorersagainstextinction.co.uk/) is a company which funds patrols and the training of dogs who track animal poachers. They are passionate about what they do and affiliated to the Real World Conservation Trust. A recent initiative asked celebrities from around the world to draw or paint an animal of their choice which would form part of an auction. With images from Dame Judy Dench, Helen Mirren, Rachel Riley (very good) Mary Berry (not so good, but who cares), the images are auctioned to the highest bidder. The organisation high lights how an elephant is killed every 26 minutes for their ivory. Bid for the images and the funds will go to protecting the wildlife but catching those trying to kill it. In Madagascar, an organisation called Valbio, supports local communities, helping them to understand why they must not kill the lemurs or take their land from them. Land taken to make homes (the Madagascans have very large families – think ten children plus), need to be educated into valuing their unique wildlife and preserving it. Dr Patricia Wright invited Sir David Attenborough many years ago, and the result of his visit is the excellent series he produced for the BBC. The overall structure of the retrospective is that we're gonna FEUD over our two favorite FILMS in this category. Get it? Annnnyway, Part One reviews the other three nominees, including Robert Altman's Gosford Park, the winner in Ron Howard's A Beautiful Mind, and Ridley Scott's Black Hawk Down. We do this without spoilers, but with all the biographical information, gossip, and fake news you never knew you always wanted. You're welcome. In our discussion of Gosford Park, we try to reconcile how a director with such an exciting life could make a movie so boring. We mispronounce the word “quips,” and Also Mike finally takes a stand in what is perhaps the most polarizing debate ever litigated inside of an anecdote inside of a podcast: Maggie Smith vs DAME Judy Dench. Ron Howard's work in A Beautiful Mind strikes up some heated discussion on how the story could have been improved by yours truly. (Again, you're welcome.) We also fantasize about punching Russell Crowe and make some serious fun of Mike 1's history of DVD blind buys. We conclude with a Radio Rahim styled Love/Hate review of Ridley Scott's Black Hawk Down, where we rejoice in Tom Sizemore being Tom Sizemore, but not so much with Josh Hartnett. Before I was a Dream Girl, I was proud to be a Minnie Minx. However, as Kim decided to step back from the show, we decided to stop producing the Minnie Minxes and it would be no more. Matthew Sweet looks at music inspired by the theme of lost children prompted by this week's new release, Stephen Frears's "Philomena", with music by Alexandre Desplat. "Philomena" won Steve Coogan and Jeff Pope the Best Screenplay award at the 70th Venice Film Festival, and Dame Judy Dench's central performance has been widely tipped for a best-actress award. The film is a moving account of a mother's loss of a child, sold for adoption. The film score is by the enormously succesful French composer, Alexandre Desplat, who also wrote the music for "The King's Speech", "The Girl with a Pearl Earring" and "Harry Potter and the Deathly Hallows". Philomena is Radio 3's Sound of Cinema's featured new release of the week, and as well as offering a chance to hear music from the film, plus other scores by Desplat, Matthew takes the subject of the lost child to reflect other film scores inspired by this subject, including music by Angelo Badalamenti, Rachel Portman, Max Richter and Franz Waxman #soundofcinema.
