Simplicity, focus, community, and legacy. These are some words that I feel apply to the steady and excellent service of Hyperion Espresso these last 30 years of operation. When you can measure your business in decades and look back with pride and a full heart, you now you have crafted something lasting and valuable. Today we are going to explore the story of Hyperion Espresso in Fredricksburg, VA w/ co-founder Ana Brugos Born in Madrid, Spain Ana got a degree in Advertising at Universidad Complutense. Moved to Seattle, WA to study art in 1992. She met Dan Peterson and, with his friend Steve Sollien, decided to move to Fredericksburg, VA to open a coffee shop, Hyperion Espresso, in 1994. Dan and Ana married that fall. After 5 years, Steve moved west while Dan and Ana continued and grew with the business. Over the years they expanded the seating and serving area, tried a satellite location that didn't work, increased revenue as the area developed. In the last 20 years they were able to detach somewhat from the business thanks to GM, Amanda Jones.  In 2024, after successfully overcoming set backs like lack of employees and economic downturns, particularly COVID 19, they sold Hyperion Espresso to Jack Scholl owner of Roadmap Coffee.  I am thrilled to get to look back in time with Ana and Amanda and learn what great things can be accomplished when you have clear focus and a simple goal to serve you community well! The Floresville Tigers varsity soccer team faced off with the Fredericksburg Billies Jan. 24 in a preseason matchup at home. The Billies got loose and scored first and then kept the Tigers scoreless until the last 13 seconds in the first half. Floresville's much-needed goal came after an infraction by the visiting Billies, just in front of their net. What an incredible piece of art that was created first by James Goldcrown from Los Angeles, originally from London and then finished by the incredible Travis, NOT Travis McCann. Once Buddy and Travis met they were brainstorming and they knew they would create some sort of magic together and Buddy told Travis about The Museum Of Ice Cream that was made famous by the Kardashians. Buddy had the vision that they could do something like that only way cooler with an artist driven vision. They put on their very first show in 2018 with 20 world class artists and bigger than life sculptures and paintings and the show was super successful right out of the gates. With the team they have now they have been able to bring this concept back with the amazing 17.000 sq ft building in an incredible location in West Dallas, that is being developed and made beautiful. The City Of Dallas itself is putting 60 to 70 million Dollars into developing the infostructure. Travis McCann the artist who has a very iconic "2 hearts" signature is behind the incredible art in a lot of famous landmark restaurants and nightclubs in DFW and Austin, TX, for example the most Instagramable building in Dallas the XOXO restaurant. He tells us how he went from Travis to becoming NOT Travis. Fascinating story. Kyle Sauter is the operations guy and manager of the team and keeps everything together and running. Buddy says that without operations you can be the most creative and you can have a million concepts but to successfully deliver the mission and the product you have to have a director of operations and that is what Kyle does best. He is the glue that holds it all together. Kyle tells us how he started and ended up in this position at this time. So interesting and it even involves a zoom call with the Pope. He also talks about how challenging it can be to work with artists. Trey Swofford is the real estate genius and financial backer of this project and he says that as a long time friend of Travis he would always go to his shows and was so impressedby his friends work. He always knew they would work together in some form - they had talked about a clothing line before. As a group they now own another piece of property which will become the House of Defi.We found out a little secret that the real reason Trey wanted to get involved with all this, is because very beautiful women love art. :) Kyle says that Trey is also a General Contractor in this whole project and that is helping him a lot. They have such good vibes and they believe in each other and will do special things for sure. They are still awaiting one permit from the City of Dallas and then they can finish and open to the public. 2-15-22 Tonight we're hanging out with TJ Cline, past President of the Savannah Brewers League and Organizer of the Domras Cup Mead Competition, which was held two weekends ago. TJ describes himself as a 'novice mead maker', with 18 batches under his belt over the last six years. He says he's always learning, and his current favorite styles are braggots, bochets and black currant fruit meads. He has been involved with the Domras Cup for the last six years, and worked his way up, starting with steward, and progressing to judging and registrar. Along the way he also became Secretary and is now President of the Savannah Brewers League, and is now the Organizer for the competition. TJ managed to keep the Domras cup going through the pandemic (no easy task), and has learned a few things that he thinks are crucial to planning a successful regional competition. The Domras Cup just completed it's 24th year of competition, and and the 25th year will be on 2/1/23, making it one of the longest running competitions out there. The competition is named in honor of Chuck Domras, who was instrumental in bringing mead to the Savannah Brewers League and furthering the mead making craft. Brian O'Neill's foray into the restaurant business began as a teenager working in his parents' diners in Manhattan. This led to positions at well-known New York concepts including the venerable Russian Tea Room and the original Hard Rock Cafe. Brian later moved to Boston where he managed the Bull and Finch Pub, the setting for the television sitcom “Cheers”. The story didn't end there. In this episode, Brian explains what brought him to the Lone Star state and his purchase of the historic Alamo Springs Cafe in Fredricksburg, TX. He shares the old-school secrets of his success in this restaurant venture: “Core values based on a commitment to quality and service work no matter what the concept.” Brian takes pride in preserving the special history of Alamo Springs Cafe while improving the menu, the entertainment offered, and its operations. “There is always room for improvement,” says Brian. 1-18-22 Tonight we're talking with Mike and Cathy Rape, owners of The Ferm Meadery in Conroe, TX. They're making great mead and having a good time spreading mead, music and food around to their customers. Cathy and Mike are native Texans, and grew up in Conroe, TX. They've been married 26yrs and have 3 grown kids and a grandchild. They also own and operate a company that provides temporary power and temperature control mostly for live events. Around the time their kids became teenagers (Because "teenagers") they started home winemaking as a hobby that they could both enjoy together. They were introduced to mead on a business trip to Georgia at the Savannah Bee Co. After that, they were hooked and started focusing almost exclusively on mead making and dreaming of starting a meadery someday. They visited as many meaderies as they could find and attended classes on mead making at UC Davis and the Winemaker Magazine Conference. They also apprenticed ourselves under local meadmakers Bruce and Bridget Leslie of Griffin Meadery (now Punkin Vinyards) as well as Jon Odom of Enchanted Manor Meadery. Once it became apparent that "14 days to slow the spread" was looking more like the end of live events for the foreseeable future & their event business came to a halt they started talking about moving "someday" to now. With lots of time to spare during the lockdowns, they signed a lease on a 1940's building on the Downtown Conroe square and began renovation. They were thrilled to discover they were part of a movement to revitalize the Downtown Conroe food and beverage, nightlife, and live music scene. They opened their tasting room in March of 2021 offering a variety of still meads, sessions, charcuterie boards, and live entertainment. 11-23-21 Tonight we're venturing back into the world of mead sensory analysis. Stephen from experimeads.com will be joining us again to talk about the latest mead experiments he's been conducting. Stephen is a home mead maker, three time Canadian mead maker of the year, and BJCP certified beer and mead judge. In the process of honing his craft, he has been testing the parameters of mead fermentation and conducts formal sensory analysis to compare methods. Given the lack of scientific evaluation of meads relative to wine and beer, he has been sharing his findings with other mead makers via experimeads.com to try and push mead quality to the next level. We will be talking to him on how and why to design experiments on sensory analysis. Whether conducting triangle tests or bench trials, why is formal evaluation needed to take your mead consistently to the next level? He will cover recent findings from experiments on water chemistry, nutrient off-flavor thresholds, acidity, nutrient levels for ale yeasts, and the effect of kieselsol and chitosan. We find out why he has been focused on session meads, and how the experiments on nutrient timing, pitch rates, nutrient types, dried vs wet yeasts, and alternative ale yeasts inform his recently published recipe? Also, we chat with him about evidence that online calculators can lead to off-flavors. Why does he suggest that the next generation of calculators should formalize the risk from Go-ferm and vary the YAN recommendations by pitch rates, oxygenation regimes, acidity, and temperature? In August 2020, Jarrett and Linda talk about their trip to Old Tunnel State Park, located in Fredericksburg, Texas. They got to see some cool Mexican free-tailed bats come out of the tunnel and fly out into the Texas skyline. Old Tunnel is an old railroad tunnel built from private funding so that locals could make quick trips from Comfort, TX to Fredricksburg, TX. The rail line went out of business in 1942 and the land was purchased by Texas Parks and Wildlife Department in 1991. Alex Lee - Assistant Wine Maker talks about the 2018 White Zinfandel and Vit ep 22 | Kiperersol Texas Podcast Today we are joined by Alex Lee, the Assistant Wine Maker at Kiepersol. Alex has worked within the company for over 6 years now, starting off in the Restaurant at Kiepersol, then the Tasting Room Manager for the Winery and has been in the winery production facility for the last couple of years. White Zinfandel is considered a "blush wine", which comes from the Red Zinfandel grapes, but is made like it's a rosé. "Blush" will almost always refer to a sweeter wine, while "Rosé" can actually be sweet or dry. This 2018 Kiepersol White Zinfandel has some strawberry-kiwi notes to it and is very juicy! This will be perfect for summer and nice lighter meals will be enhanced by pairing this wine with it. 2018 Kiepersol Vit (meaning "white" in Afrikaans) is a proprietary blend, which stylistically achieves the same goal in flavor, based on what the grapes taste like in that vintage. So it's not really possible to give the exact grape blend, as it changes from vintage to vintage, to achieve a Riesling style, semi-sweet wine. This 2018 Kiepersol Vit is very fresh, crisp, semi-sweet and pairs well with spicy food or even fatty meat cuts or can be enjoyed all by itself! Alex recently spent some time in Napa Valley, California doing some research and was able to compare Texas Wine to Napa Valley. Alex's takeaway from his visit is that Texas Wine, specifically Kiepersol Wine, has a lot more "comfort" compared to Napa Valley Wines, while still highlighting the Texas terroir. Napa wines typically are very bold and beefy, but very different. Texas is one of the fasted grape growing and winemaking regions in the nation. Kiepersol has been in business since 1999, making this our 20th year and we were the 34th bonded winery (since prohibition). There are now over 350 active wineries in Texas! Texas wine not only offers that comfort, but we have wine unlike any other region in the world. Alex recommends anyone interested in wine tasting really needs to experience Texas Wines. Alex is a big fan of Port Wine and has been trying different Texas Port wines, other than Kiepersol's. He really likes Haak Vineyards & Winery Port. Alex likes Messina Hof Winery, William Chris Vineyards and a lot of other great wineries set up in Fredricksburg, Texas. Today’s thought is exactly that: How we think when we garden. Emerson wrote: Blame me not, laborious band, For the idle flowers I brought; Every aster in my hand Comes back laden with a thought. How wonderful our gardens are for thinking. Creatively. Therapeutically. Soulfully. Every bloom can be a vessel for an idea, a hurt, a solution. I had a fight with my daughter the other day. We were getting no where. Exasperated and just plain tired, I had her help me with the houseplants. In case you’re wondering, we were spring cleaning all the greens - even the fake ones! There was no talk. No more disagreement. Just the plants and water and a little soap... and our thoughts. Before we knew it, we were ready to come together. Our welfare and happiness restored by the thoughts knit together in the company of plants. Brevities #OTD British botanist, author, pragmatist and survivor Phebe Lankester (Books By This Author) died today in 1900 and was born tomorrow in 1825.   Born Phebe Pope, she married the naturalist Edwin Lankester who was a coroner and medical reformer. They had eleven children. When Phebe was 49, Edwin died; she had to keep producing work to take care of herself and her family.    Phebe Lankaster wrote under a number of pseudonyms. Her books were published under the name Mrs. Lankester.  She wrote a syndicated column under the signature “Penelope” for 20 years.  Her energy and work brought friendships with the celebrities of her day: painters, actors, intellectuals, and writers.  In 1895, the painter Herman Herkomer painted a wonderful portrait of Phoebe Lankester - her warmth and wit captured on the canvas.   Her work appealed to the masses; she wrote in a friendly and conversational voice.   And, she wrote about what she knew: plants, educating children about health, and being financially smart.  Her books range from A Plain and Easy Account of the British Ferns (1859) to The National Thrift Reader (1880) It was the widowed Phebe Lankester who said, “Often the most thrifty persons are the most generous, because they can afford to be so.”   Phebe  often partnered with illustrator James Sowerby and other members of the Sowerby family for illustrations in her books.   She worked with James on her sweet, little book Wild Flowers Worth Notice; with 108 coloured figures from drawings by James E. Sowerby    An advertisement for the book in 1861 noted that Mrs. Lankester herself says in her charming pre-face, "what flowers are not worth notice?” Reviewers were happy with Mrs. Lankester’s selections calling them "the special delight of flower-gatherers, as for example, the sun-dew, the mistletoe, the bog pimpernel, the grass of Parnassus, flax, white water-lily, fly orchis, milk-wort, and germauder speedwell, etc. Lankester's pays sweet tributes to her favorite plants, incorporating brevities: folklore, quotes, poems and general Information.   For example, in her preface, Lankester quotes Longfellow: Wondrous truths, and manifold as wondrous,   God hath written in those stars above; But not less in the bright flowerets under us   Stands the revelation of his love. She also quoted Wordsworth: Knowing that Nature never did betray The heart that loved her; 'tis her privilege, Through all the years of this our life, to lead From joy to joy. One review said ”Mrs. Lankaster writes so easily and naturally, that no deliberate effort seems to have been made. It is a little book, but teaches a great deal, and in so pleasant a way that to be wearied is impossible.”  This is in line with the last page of her book where Lancaster confesses she had thought about writing a book like this many times, but lacked the courage because she didn’t want to offend.  She wrote “Having now gone over the … collection of Wild Flowers, endeavoring to chronicle the chief attractions and virtues of each, I can but feel how little has been said when compared with all that remains unsaid, but felt.” #OTD Happy Birthday today Joseph Trimble Rothrock (Books By This Author) born today in 1839. Plagued by sickness as a child, Rothrock felt the call of the great outdoors, “I just had to go to the woods. Throughout my entire life, I have sought the ‘out of doors’ as a refuge against impending physical ills." Rothrock went to Harvard and worked every day in the private herbarium of Asa Graywho visited Rothrock’s hometown to collect botanical specimens.  Of Dr. Gray, Rothrock said,  “[He] was kindness personified, though a strict disciplinarian and a most merciless critic of a student's work. I owe more to him than to any other man, and I never think of him without veneration." He also studied geology under Louis Agassizwho became his friend. (Agassi’s motto was, “study nature, not books”)   Rothrock suspended his studies at Harvard to fight in the Civil War.  His right thigh and hand was wounded at Fredricksburg in 1862 (Burnside's fight), he shook hands with President Lincoln at an army hospital.  Later in his life, in a photograph of Rothrock called “The old white pine and the Father of Forestry”, he stands in front of the trunk of a huge white pine.  With his signature long white beard and kind affect, the gentle expert's right hand is grasping a walking stick. The photo notes say that his right little finger was amputated at Fredricksburg.   Rothrock attempted to return to Harvard, but discovered that his professors - including Asa Gray - had formed a military company and wanted to serve in the war.  Rothrock insisted that Dr. Gray was too old to serve, took his place in the company, and served for another three months.   Rothrock taught botany and went on to become a surgeon. He went on a number of important expeditions and wrote the Flora of Alaska.    His passion for forestry ignited when he was named a Michaux Lecturer on Forestry and he took a nine-month sabbatical to study under renowned botanist Anton Debaryat the University of Strasbourg in Germany.     In 1893, Rothrock began an expedition to investigate the challenges affecting Pennsylvania’s forests or "Penn's woods” as he called them. For two years, Rothrock and his associate engineer, William Shunk, investigated the condition of forests in Pennsylvania.   Destructive forest fires were all too common during the logging era, and long before “Smokey the Bear”, Rothrock lead the effort to prevent forest fires.  Rothrock said that “almost every forest fire is the result of ignorance, carelessness, or crime, and that there is some one to punish for it.” Rothrock reported the problems of deforestation; he also educated the public on tree propagation and forest restoration.  Facing opposition from farmers and timber barons, Rothrock’s relentless focus on forestry aimed at making policy change.  In 1901, he wrote, “Twenty years ago I began agitation upon the forestry question, I have kept at it ever since; […] you have no idea of the amount of work it requires to change a generation from tree destroyers to tree restorers; it is something akin to a second birth.” In 1909, Rothrock, at age seventy, sold his vast herbarium and library to the Field Museum of Natural History in Chicago. The collection reportedly contained 22,207 specimens including specimens named in his honor:  Artemisia Rothrockia, Halenia Rothrockii, Nama Rothrockii, Pentstemon Rothrockii, Stachys Rothrockii, Toivnsendia Rothrockii and from Lower California a genus Rothrockia which belongs to the family Asclepiadaceae.   Rothrock State Forest in Pennsylvania is also named in his honor and Joseph Trimble Rothrock’s birthday - April 9th - is commemorated annually in Pennsylvania schools as Arbor Day. #OTDThe first episode of Gardeners Question Time was broadcast from the Broadoak Hotel in the 'singing room' on April 9th, 1947.Originally named "How Does Your Garden Grow?", it was an offshoot of the war time Dig for Victory campaign. ESV22 For he who was called in the Lord as a bondservant is a freedman of the Lord. Likewise he who was free when called is a bondservant of Christ. 23 You were bought with a price; do not become bondservants of men. 24 So, brothers, in whatever condition each was called, there let him remain with God. Notice the similarities and differences in the translations presented.  What does this scripture mean to you?Has it had a different effect this reading as compared to times past?How does this scripture make you feel? Continue breathing deeply as you ponder this meaning. Meditation on scripture / bible verse meditation: Today I was on the battlefield of Fredricksburg, a Civil War of the United States. I stood at the top of a ridge where there is an old wooden building that still has civil war bullets lodged in it from over 150 years ago. The scars of war are still visible. These scars can still afflict us as humans also through tradition or culture. As humans we think we're have more power than we do. Even the worst that we can do cannot control the ultimate destiny of another person. Here Paul recognizes a profound truth. Regardless of our circumstances in this life, through Christ we have freedom of we become His bondservants.Now as we're consider how to apply these concepts we can consider our reliance on God, as well to use all of our earthly power to help each other and to serve God. I think of the battle hymn of the republic which was popular during the civil war In the beauty of the lilies Christ was born across the sea,With a glory in His bosom that transfigures you and me.As He died to make men holy, let us die* to make men free,While God is marching on.Glory, glory, hallelujah!  Meditation of Prayer:Pray as directed by the Spirit.Dedicate these moments to the patient waiting, when you feel ready ask God for understanding you desire from Him.
