Thom King is the Founder and CEO of Steviva and natural sugar alternatives, Thom King, a self-proclaimed foodie and health nut, he founded Steviva as a way to effectively help combat metabolic disease and the “diabesity” (his self-coined term to refer to obesity + diabetes) epidemic in this country by offering clean-label sweetening systems to replace sucrose and high-fructose corn syrup. Steviva Brands Inc. is one of the largest importers, manufacturers and distributors of clean-label sweetening systems and natural sweeteners. As a serial entrepreneur, he says, “you aren’t doing well unless you’re also doing some good”. Thom is a food scientist and formulator who figured out that sucralose smells like chlorine and was amazed that humans are putting this into their body and it may disrupt your body’s biodome. Taking care of your gut health can help your whole body so this was important to Thom and his team to develop a natural sweetener that would work well with your body and not cause disruption or neurological effects to your body. Thom talks about the “liquid” sugar (corn syrup) that is used in many of our products and its effect on fat storage in the body. When you eat too much fructose, it automatically gets stored as lipids around your organs and stomach which hinders our health. We also discuss the difference between the Keto and Paleo diets and the benefits of each. Thom explains the importance of the liver which is able to metabolize fats into ketones, and the body makes a more energy source in the metabolic process. There’s nothing better than keto for brain function, focus, concentration, etc. Keto is not a diet, it’s a lifestyle. Overall, Thom believes it is the responsibility of individuals to make these substitutions as big business and the government won’t do it for us. Our discussion tonight will be on natural sweeteners. We are delighted to welcome Joseph and Margaret-Ann Burkholder, who are the owner/farmers of Compass Winds Sorghum, based in Dayton, Virginia, outside of Harrisonberg. Sorghum can be grown either for grain or for crushing into molasses. “Sorghum moved west over the Blue Ridge with the pioneers,” says Joseph. “It was more adaptable to our climate than sugar cane, and it became the first sustainable sweetener of the frontier.”   Our other panelist is Chris Krantz who is the owner of the HT Krantz Honey Company in Frederick, Maryland.  Chris started his company with 2 hives and now has close to 400. His focus is mainly on bulk honey, package bees and honeybee queens. Their queen bee mating program is at the heart of their success. You’ll also hear from Alex Weiss from Caledonia Spirits who provided us with our punch this evening. Alex started his journey into distilled spirits via a degree in Botany and a fierce love and respect for agriculture and the relationships humans forge with their environment. After a two year stint studying this subject in China, Alex moved to New York City and began managing sales for a grass-fed beef producer in Central NY. Eventually, Alex was approached by the founder and master beekeeper for Caledonia Spirits to come on board as a Brand Ambassador, becoming the Sales Director a year later and helping to grow the distribution footprint to 29 States and five countries.  Currently, Caledonia Spirits employs more than 40 people in Vermont and up and down the East Coast, while making a positive impact on our community and agricultural landscape.
