Molly and Kristin speak with Saeng Douangdara, a personal chef and academic counselor turned online content creator and now, cookbook author and food photographer. Saeng shares what motivated him ten years ago to get into the online food space, why he wanted to show off Lao cuisine and how he's built up an audience and community during that time. His refreshing approach means he doesn't dilute or censor his interests and instead continues to challenge himself to learn and grow. This mindset came into play when he 'manifested' his cookbook, took on the daunting prospect of learning professional food photography on the job and collaborated with the writing and typography elements of the book. Saeng discusses why he wanted to create a book that acts as a Lao food primer and a way to share personal stories along with the recipes and leaves us with some sage advice and a look at how this book accomplishes some of his earliest goals. #133Josh sits down with chef Greg Baxtrom fora a conversation about his newly released book, Nothing Matters but Delicious: A Radically Honest Cookbook released this week.  Greg dives into his thoughts on ambition, addiction, mental health, and what success actually looks like after the accolades arrive. Greg reflects on his rise through some of the world's most influential kitchens including Alinea, Per Se, Blue Hill at Stone Barns, and his breakout success with Olmsted in Brooklyn. He opens up about how achieving the dream of critical acclaim and industry recognition did not bring the fulfillment he expected, and how sobriety, therapy, and years of self-work forced him to reevaluate his relationship with restaurants, creativity, and himself. Along the way, the two discuss restaurant economics, burnout, ego, jealousy, friendship in the industry, and why so many chefs quietly wonder how they'll ever afford to grow old in this business.Greg shares some deeply personal experiences that shaped the cookbook, including cooking through rehab and recovery, navigating bipolar diagnoses, and rediscovering joy through simpler food. Greg explains why he wanted the book to feel practical rather than precious, shares stories from his days working for Grant Achatz and Dan Barber, and reflects on the pressure of opening acclaimed restaurants in Brooklyn.Links and resources

Scaling Services with Avatars: Creating an AI avatar allows specialized service providers to offer their expertise at a more accessible price point for clients. The Power of Human Grit: AI lacks the lived human experience, meaning it cannot truly replicate the authentic emotion, trials, and grit found in personal storytelling. Streamlining Business Proposals: Utilizing AI templates can dramatically reduce the time required to write complex, customized client proposals from ten hours to just two hours. I'm sharing what I've seen over and over again about what actually gets a cookbook written and published and why the difference is often not talent, timing, or opportunity, but willingness. If you've been thinking about writing a cookbook but keep waiting for more time, more clarity, or the "right" moment, this episode is for you. I talk about the difference between feeling ready and deciding to begin, the quiet ways we stay in preparation mode, and how repetition and consistency are what truly move projects forward. In this episode, I share: Why willingness matters more than readiness What 400 episodes taught me about consistency and follow-through The subtle ways we delay the projects we care about most The story of finally submitting my first cookbook proposal Why creating space and structure matters if you want your cookbook to happen If you've been thinking about writing a cookbook, collecting recipes, organizing ideas, or waiting for the right time to begin, I invite you to join my free masterclass happening now: Stop Dreaming About Writing a Cookbook, Start with a Clear Plan. Stop just running your business and start leading it—discover how to reclaim your joy and scale with intention Host Iris Goldfeder welcomes long-time friend Dr. Erin Burgoon—an executive business coach, social psychologist, and author of Joyful AF—to discuss the "real recipes" behind sustainable entrepreneurship. In this episode, they dive deep into the difficult transition from being a "mush ball" manager to a decisive leader, the importance of maintaining integrity over decades, and why human "grit" is the one thing AI will never be able to replicate. Whether you are a tech founder or a spiritual entrepreneur, this conversation offers a roadmap for taking that first "step of faith" toward your next level of growth. Key Takeaways: Managing vs. Leading: Stepping into leadership requires setting firm boundaries and providing clear direction rather than merely overseeing tasks. Origin vs. Story: Your "origin" is your foundation and never changes, while your "story" and "why" evolve as you and your business grow. Human Grit Over AI: AI is an enhancement for efficiency, but it lacks the lived experience and emotional "panache" that only a human creator can provide. Writing a compelling book proposal, demystifying the financial reality of cookbook publishing, and sharing what publishers are looking for in a cookbook author with Sally Ekus from The Ekus Group. ----- Welcome to episode 567 of The Food Blogger Pro Podcast! This week on the podcast, Bjork interviews Sally Ekus. How to Write a Cookbook Proposal and Land a Book Deal with Sally Ekus Have you ever wondered what it actually takes to get a cookbook deal — and whether your platform is big enough to make it happen? Sally Ekus, a literary agent specializing in the cookbook space, is here to pull back the curtain on the entire process. In this episode, Sally shares exactly what she looks for when evaluating potential cookbook authors, how to build a proposal that stands out, and what a realistic book deal might look like depending on the size of your audience. Whether you're dreaming of a cookbook or just starting to explore the idea, this episode will give you a clear and honest roadmap for what the path forward actually looks like. Three episode takeaways: What publishers are really looking for in a cookbook author — Sally breaks down the four pillars she evaluates in every potential author: platform, concept, voice, and personality. She explains why your social media following matters (and which platforms publishers care most about), why a consistent email newsletter can set you apart, and how to demonstrate that you can actually convert your audience into book buyers. How to write a compelling cookbook proposal — A great proposal goes far beyond a list of recipes. Sally walks through what to include, how to articulate your unique concept, and why aligning your book idea with the stories you already tell in your content is so important. She also shares how a standout proposal can help offset a smaller following — because showing how you reach your audience is just as important as how many people you reach. The financial reality of cookbook publishing — From the structure of a book advance to earning it out, royalties, and what a deal might realistically look like based on your platform size, Sally demystifies the money side of cookbook publishing. She also makes the case for why many creators write cookbooks even knowing most won't earn beyond the advance — brand extension, legacy, and sharing a meaningful message are all powerful reasons to pursue it.
