We are now in Autumn and that means some wonderful vegetables are needing to be sown or planted asap. Here in Canterbury, I germinated a row of seeds of French beans – a few weeks ago. They came up pretty quickly and hopefully our late summer will be better than our “summer summer” (which was pretty awful with lower temps and less sunshine than “average”). In the North Island Your final call for these beans is now. Well-drained soil, nice and moist and in a sunny warm spot, 10 cm separation and keep the weeds under control. Late summer is also great for peas. Honestly, these are going a lot better when it gets cooler, but seeing we have a longer day-length compared to the early winter situation, you'll be able to harvest them in large numbers. Mind you, Peas can be planted through autumn and early spring. Their seeds contain a lot of “reserves” to grow in the cooler months; well-drained soils, friable and with compost. Chuck some pea-straw over the soil to help them along. But I am trying to get ahead of schedule to get some early peas. Broad beans, similar gig! Plenty of growth potential and they might ripen quite early too These are good greens for the winter (if you like them) Broad beans with pretty crimson flowers Carrot seedlings will also germinate at lower temperatures; Remember to create a soil that is free of lumps and stones, so that the carrots keep straight and do not “fork”. An extra handful of Phosphate will give them the impetus to grow nice roots. I start early so we'll have carrots continuously for the next few months. Using the carrot “seed-tape” makes sense: they are nicely spaced and can be thinned when they take off, Julie seems to prefer the thinner, young carrots, whereas I cook the bigger ones as vegie strips in my Nasi Goreng. Broccoli is another suitable winter vegetable that can be planted now – in fact while there's still some temperature in the soil they'll grow well in the next few months – even if they slow down afterwards, you've got more than a month's worth of advance before they start taking it easy – slow ripening means that they don't all ripen at once, so pick the biggest ones as they mature. Most other cabbage varieties will also grow from now onSee omnystudio.com/listener for privacy information.

In this exciting episode of Global Communicator, I sit down with Rendika from the old Indonesian capital, Jakarta (which just changed in August), to discuss the ins and outs of this incredible Southeast Asian country. With 275 million people and one of the most diverse cultural landscapes in the world, Indonesia has a lot to offer! Recorded in the beautiful Hofgarten in Innsbruck, where tourists often encounter this charming Austrian city, we dive into fascinating topics like the capital's shift to Nusantara, the chaos of Jakarta's traffic, and the importance of Gojek and Grab to get around. We also explore the major islands—Java, Sumatra, Bali, and Lombok—along with the best insider tips on what to do, where to go, and how to avoid the usual tourist traps. Whether you're interested in the price levels, Indonesia's famous volcanoes like Merapi and Bromo, or the drama of sunrise tours, this episode has it all! We even switch roles for a bit, and Rendika interviews me as we discuss the differences between Europe and Indonesia. Plus, we tackle some tough subjects like Indonesia's pollution problem, offer food suggestions (spoiler: rice isn't great for breakfast), and highlight the three most important dishes: Nasi Goreng, Rendang, and Bakso. Ever wondered why eating street food in Indonesia can feel like visiting a hairdresser? You'll find out in this episode! Stay tuned until the end as we learn some local language phrases like "Sama Sama," and don't miss Rendika's secret tips for Bali and Lombok. Calvin Klein, Beats by Dre, UNIQLO og ADOBE. Tasting the Future: How to Add Heat and Flavor with Sambal

flavors unknown podcast

Play Episode Listen Later Jan 10, 2023 6:32

Sambal is a spicy condiment or sauce that has gained popularity in the United States in recent years, thanks to its versatility and bold flavor. Originally from Southeast Asia, sambal sauce is made with chili peppers, shallots, garlic, and salt, and may also include other ingredients such as vinegar, sugar, and shrimp paste. It is commonly used in Indonesian, Malaysian, and Singaporean cuisine, but has also found its way into the menus of many non-Asian restaurants and bars in the United States. It is a great addition to many different types of dishes, including grilled meats, fried rice and noodles, steamed or stir-fried vegetables, sandwiches, burgers, soups, stews, grilled cheese sandwiches, roasted or baked potatoes, tofu, tempeh, and avocado toast. I'd like to share a potential educational resource, "Conversations Behind the Kitchen Door", my new book that features dialogues with accomplished culinary leaders from various backgrounds and cultures. It delves into the future of culinary creativity and the hospitality industry, drawing from insights of a restaurant-industry-focused podcast, ‘flavors unknown”. It includes perspectives from renowned chefs and local professionals, making it a valuable resource for those interested in building a career in the culinary industry.Get the book here! The taste of the Sambal sauce In terms of flavor, sambal is generally quite spicy, thanks to the chili peppers that are used in its production. The heat level can vary depending on the specific type of chili peppers used and the amount of sambal that is added to a dish. In addition to the heat, sambal also has a bold, complex flavor that is a result of the combination of ingredients used in its production. The shallots and garlic provide a mild sweetness and a hint of pungency, while the vinegar and sugar add a touch of acidity and sweetness to balance out the heat of the chili peppers. The shrimp paste, if included, adds an additional layer of savory, umami flavor to the sauce. Overall, sambal is a flavorful and spicy condiment that adds a lot of character to the dishes it is used in. Sambal recipe Here is a recipe for making sambal at home (recipe created by A.I.)Ingredients:1 cup chili peppers, seeds removed (you can use bird's eye chili peppers, jalapeno peppers, serrano peppers, or a combination)1/2 cup shallots, peeled and roughly chopped4 cloves garlic, peeled and roughly chopped1 teaspoon salt2 tablespoons vinegar (you can use white vinegar, rice vinegar, or apple cider vinegar)2 tablespoons sugar (you can use white sugar, brown sugar, or palm sugar)2 tablespoons shrimp paste (optional)Instructions:In a blender or food processor, combine the chili peppers, shallots, garlic, and salt. Pulse until the mixture is finely chopped.Transfer the mixture to a small saucepan and add the vinegar, sugar, and shrimp paste (if using). Bring the mixture to a boil over medium heat, stirring frequently.Reduce the heat to low and simmer for 5-10 minutes, or until the mixture has thickened slightly.Remove the saucepan from the heat and let the sambal cool to room temperature. Transfer the sambal to a clean jar or container and store in the refrigerator until ready to use. This recipe makes about 1 cup of sambal, and it will keep in the refrigerator for up to 2 weeks. You can adjust the heat level by using different types of chili peppers or adjusting the amount of chili peppers used. You can also adjust the flavor by using different types of vinegar or sugar. Enjoy! Nasi Goreng recipe featuring Sambal sauce One savory dish that uses sambal as an ingredient is Nasi Goreng, a popular Indonesian fried rice dish. To make Nasi Goreng, you will need the following ingredients:2 cups cooked rice1 tablespoon vegetable oil2 cloves garlic, minced1 small onion, diced1 cup diced chicken, beef, or shrimp2 tablespoons sambal2 tablespoons soy sauce1/2 cup frozen peas and carrots2 green onions,

Hope we have had a great week, needless to say we have been flat! Exciting as we hosted our very first wedding at the school. We have had so many booked in the past but the Covid has taken care of them!   But this week I want to talk about something a bit different. Rubbish! More so, food packaging rubbish! I am always on the clean-up down the beach, mainly general rubbish like beer bottles etc. But this week I dropped Hazel off at school on Friday, which is her tuck shop day and I asked her what the most popular tuck shop item was.  Instant Noodles! Which is something we all know. They are fast, super tasty and in trend. But the downside is they are high in salt and the packaging is a terrible waste! So this week let's look after our kids, the environment and do a small part in keeping NZ beautiful! By making a simple rice recipe, then you can package them up in your own reusable plastic boxes.    Kids lunch box Nasi Goreng  Cook time: 5 minutes  Prep time: 15 minutes  400 gm cooked rice, cooled   100 gm frozen peas   1 medium carrot, peeled and diced   1 onion, peeled and diced   3 cloves garlic, peeled and smashed   1 thai chili if you wish   2 tbsp grapeseed oil   2 tbsp sweet soya sauce or kecap manis   2 tbsp soya sauce   1 tsp shrimp paste (optional)   2 fresh eggs spring onion for garnish   salt  Heat a large cast iron, wok or fry pan over a high heat.   Add a touch of oil and fry your two eggs, sunny side up turn if you want and set aside.   Clean out the pan and crank it up the heat! adding 1 tbsp of grapeseed oil then the garlic, onions, carrots tossing for a couple of minutes. Then add in the cold rice, peas, shrimp paste, sweet soya and soya sauce.   Cook, stirring or tossing constantly for 2 minutes until the sauce reduces and the rice start to caramelise. This is key to the flavour.   Serve or store garnished with some chopped egg and chopped spring onions.   Easy! LISTEN ABOVESee omnystudio.com/listener for privacy information.

Sambil makan nasi goreng saya berbincang santai dengan Pak Mauli, kurang lebih begini ceritanya. . . Saya sebenarnya penasaran kenapa aspirasi kebanyakan pemuda di daerah ingin jadi PNS ya? saya sempat bertanya apakah memang sedikit piihan pekerjaan yang ada di kampung. beliau menjawab "banyak kok" malah sebenarnya pak Mauli ingin sekali punya toko material, namun tabungan beliau masih jauh untuk mencapai itu. tiba-tiba ada pelanggan datang sambil ngedumel karena tukang nasi goreng di sebrang jalan harganya mahal. . . #yashamoment #ceritapinggirjalan #sambilnunggugojek #ceritanunggugojek #podcast #streetpodcast #podcastindonesia #indonesiapodcast #podcasterindonesia

Ire Evans is the Chef / Owner of Green Cuisine Personal Chef Service in Denver, Colorado. She recounts being told she could not enter a culinary program because...she was too short. That fueled her fire as Ire is a self-proclaimed rebel and from her youth to today, she is surrounded by strong women. She gives us insights into some of the iconic dishes of Indonesian cuisine, such as Satay, Rendang and Nasi Goreng. We chat with one of her #UnsungHospitalityHeroes, Maggie Kates, who teases us with what it takes to be a Chef in Antarctica. Website - greencuisinechef.com Where are you from originally? Jakarta, Indonesia First job in the industry? Waitress, in 1983, at the Mandarin Oriental in Jakarta, Indonesia at 19 years old. Proudest moment of your career? When I was voted as a Top 15 personal chef in Denver. Two things most people don't know about you? I used to sing in a vocal group in high school and I used to be a gymnast. Food and/or drinks staples in your house? Rice, tofu and chili sauce. Words to live by? “Do not pray for an easy life, pray for the strength to endure a difficult one.” - Bruce Lee My name is Ire Evans and I am a personal chef as well as the owner of Green Cuisine Personal Chef Service. My love of cooking flourished at the age of eight when my grandmother and I would spend time together cooking for our family. Because of this, the act of cooking has always felt connected to sentiments of love, family, and community. I decided to pursue my passion in the hospitality industry by moving from Indonesia to Denver to seek a degree in hotel management. I worked at the Marriott in Denver as well as the Mandarin Oriental Hotel in Jakarta, a diamond star hotel. My culinary dreams were temporarily put on hold when my children were born since I elected to stay at home and take care of them. When my children were old enough, I decided to pursue my personal chef certification from the Culinary Business Academy and start my own business. I always preferred to work behind the scenes. Owning my own business allowed me to build my vision of a service which prioritizes delicious, healthy, and fresh food that nourishes the body and soul. My Indonesian background coupled with my experiences in the restaurant business in the United States inspired me to offer a culturally diverse portfolio of dishes. I am versatile and able to adjust my services for a wide variety of diets and preferences. My experience as a mother of two wonderful children motivates me to create food that is fun and enjoyable for the whole family! I am an avid member of the United States Personal Chef Association. I have dedicated my career to promoting the importance of healthy and fresh food for our children. I was highly involved in the creation of the school garden at the Challenge School, and have spent ample time teaching healthy cooking to kids in many Colorado schools. My efforts in this arena earned me the Winning Parent Hero Award from Action for Healthy Kids Colorado.

Indonesian food is previously under appreciated, underestimated, and uncool, but now fortunately a lot of Indonesian young chefs are starting to 'care' about it. The demand for restaurants serving elegant food with familiar flavours, has made restaurants turned to serving modern indonesian food. See acast.com/privacy for privacy and opt-out information.

And it is a fantastic deal, as the brunch is unlimited. For kids there is a special program with a dino jump, face painting and a trampoline! The activities start at 11 a.m. and will continue until 3. Parents can sip their drinks in a relaxed mode as their children are enjoying the Easter-themed fun.   The Sunday Brunch is an extravagant buffet, with a Breakfast Station with omelets, French toast and pancakes, a Cold Station with an Asian noodle salad, bruscetta, a shrimp cocktail, a salmon wrap and a goat cheese salad. There are three soups: onion, seafood chowder and sweet potato and then there is the Main Course buffet, which includes a beef stew Burgundy style, grouper with a Creole sauce or a grilled chicken breast in a mushroom-truffle sauce. Dessert deserves lots of room in your tummy, so leave some for the chocolate brownie or home-made apple-cinnamon pie; ice creams are either banana, chocolate or vanilla or a raspberry or lemon sherbet.   The unlimited brunch is a treat which should be savored with ice-cold glasses of Mimosa or Sangria; these are on special as well (not included in the price).   Although it is still early days, it would be a good idea to make your reservations at MooMba as soon as possible, especially when you are coming with a large group of family members and friends.
