This episode brings together physical chemistry, history, and food studies in search of the origins of a colonial Mexican fudge. In conversation with Gastronomica's Jaclyn Rohel, Patrick Charbonneau, Jeffrey Pilcher, and Kelsey Kilgore discuss their unique collaboration and share the story of how they re-created the dish in the teaching kitchen of the University of Toronto's Culinaria Research Centre. Drawing on manuscripts and published cookbooks from the 18th to 20th centuries, in combination with hands-on culinary experimentation, they trace the recipe to Mexican vernacular traditions of candy making.Photo Courtesy of Kelsey Kilgore.Gastronomica is Powered by Simplecast.

After his stand out performance at Just for Laughs (JFL) in 2015, Vlad entered into a put pilot development deal to co-write, and star in a pilot based off of his comedy for NBC with Bill Lawrence and WB supervising. Vlad co-wrote the script with UNDATEABLE writer, Adam Styzikiel and recently shot the pilot directed by Phill Lewis. Vlad was the only one of his New Faces class to be chosen to perform as part of the CW Gala hosted by Howie Mandel. In 2016, Vlad was named one of the Top 10 Comics to Watch by Variety and was honored at JFL. In 2017 Vlad made his late-night standup debut on Jimmy Kimmel Live! and performed again at the prestigious Just for Laughs Gala hosted by Lilly Singh. Vlad has been seen on Brooklyn Nine-Nine, Marvel's Runaways, and NBC's Superstore. He is currently developing television shows with top comedy producers and networks. The Maine’s John O'Callaghan and Jared Monaco stopped by Billboard’s New York office and chatted with Chris Payne about new album “American Candy,” the Arizona rock scene, the Arizona Diamondbacks, and outgrowing MySpace and the pop-punk tag. See acast.com/privacy for privacy and opt-out information.
Photo credit: Alex Liscio (Twitter | Instagram) On Episode 029, John O'Callaghan, frontman for Arizona-based rock band The Maine, stops by. The Maine formed in 2007 and quickly became one of the hottest young acts in the late-00s pop-punk/emo scene thanks to a mix of unbridled energy and sugary hooks. That formula landed them a major-label record deal, which, as you'll hear, forced the band into some uncomfortable collaboration situations. Undeterred, The Maine have been a fearless DIY force since leaving Warner Bros. in 2011. They've released three albums under their own 8123 collective – the newest of which, American Candy, was released this past week and finds the band melding the spunk of their early days with mature, socially aware lyricism to create their best work. I called John to chat about his songwriting evolution through the years, how a very unlikely source inspired the sound of American Candy, his reaction to Zayn leaving One Direction, and much more. Plus, stick around until the end of the show to find out how you can win a signed copy of American Candy! Thanks for listening.
