The next generation of culinary artisans are changing up the industry. These artisans have a whole new approach to reaching and satisfying the next generation consumer. In this podcast we will explore chefs and artisans from around the world diving into their story and passion. In this episode of Chef AF, I chat with Tim Griffin, director of culinary at SPB Hospitality about his path to becoming a chef, finding his inspiration, and driving menu innovation for several brands. Since October 2020 Griffin has been leading SPB Hospitality Brands culinary team with over twenty years experience in fine dining, catering and hospitality. Prior to joining the SPB team he has worked for Kona Grill, Ignite Restaurant Group's Joe's Crab Shack and Brick House Tavern & Tap. Griffin also served as a founding Board Member of the Global Culinary Innovators Association. He attended Texas Tech University and earned a bachelor's degree in restaurant and management finishing his education at The Culinary Institute of America. Griffin says, while at CIA in Napa Valley, he would speak to chefs that would come through, and would have great conversations about being a multi-unit corporate chef. Ultimately those discussions helped him identify what he wanted to do with his culinary education. He was drawn to the scope and scale of managing multiple things and entities across cities, states, and the world. I ask Griffin if he has been feeling the challenges of supply chain shortages. He says, “Yes, there's been a lot of react and adapt to current menu items as well as products, it changes daily, weekly but we have a great supply chain and I work very closely with them.” Adding, “it's a tighter relationship now than it has been in the past.” Some of the SPB brands include Logan's Roadhouse, Rock Bottom, Gordon Biersch, Old Chicago, and more. Griffin also shares the different virtual brands that are in development with SPB. Griffin talks about food trends and says he is seeing a lot more from Korea. But he looks for up and coming food trends by taking advantage when he travels, by visiting small restaurants and seeing what ingredients and presentations they are doing. To hear more about the creative process in the test kitchen, get Griffin's take on developing menus, and the story behind the Roasted Cauliflower Recipe, check out this episode of Chef AF “It's All Food” or you can listen on Spotify!

Ep 208 | Aired 9/2/2020 What an upheaval this year has been to everyone’s routine, including ours at Up In Your Business with Kerry McCoy. Though we have really enjoyed hearing replays of some of our past interviews, it is exciting to get back into the studio with our newest guest, Mr. John Burkhalter. Mr. Burkhalter is an inventor. After one of his patents (and he has many) became monetarily successful, he parlayed his newfound wealth and civil engineering background into becoming a real estate investor in some of the largest developments around Arkansas. His current project, Rock City Yacht Club, is located on the Arkansas River in downtown Little Rock and has a minimum price tag of $100 million dollars to develop. In Rock City Yacht Club’s site plan, you see Burkhalter’s plan for a what looks like a small village; complete with apartments, marina, outdoor dining, entertainment areas, restaurant, mechanics shop, storefront, and boat docks that are already housing ocean-going yachts and party barges for day rental. You may also recognize Burkhalter's name from when he opposed Tim Griffin in the race for Lieutenant Governor, from when he served on the Arkansas State Highway Commission, or from being an avid supporter of the nonprofit Pathfinders, Inc. Listen to hear Burkhalter’s rags-to-riches story, how he has overcome setbacks, what his secret to success is, and to find out if the rumors are true- was he really once a Chippendale dancer?!

Michelle chats with Tim Griffin, Lt. Gov. of Arkansas; Jeff Weld, Iowa State Director of STEM, STEM Education Policy Consultant for the White House Office of Science and Technology Policy, and author of the just released Federal STEM Strategic Plan; and Sheila Boyington, CEO of Learning Blade and national states chair for Million Women Mentors, about STEM education for girls. Only 24 percent of STEM jobs are currently held by women, Michelle notes. Boyington talks about being a token woman engineer and how to make girls and women more aware of STEM career opportunities and the importance of mentoring, including virtual mentoring in rural areas. Weld notes that, in Iowa, there are a variety of programs, including Scale Up, promoting diversity that are data-driven and whose impact is continually being assessed. These programs include teacher externships and initiatives that connect STEM students with professionals in hospitals and other businesses in rural and other communities. Lt. Gov. Griffin points out that coding is taught in every high school in Arkansas, producing a cultural and educational change in the lower grades as well. We’re underperforming in involving girls in STEM, according to Lt. Gov. Griffin, and there’s where the opportunities to meet national shortages in this area lie. Schools should take students on field trips to local businesses, concludes Boyington..and we need to use multiple resources to promote STEM education in general, and to girls specifically. Today we share Sam Smith’s story. Sam came to our first Charlotte Angel Connection event last February (where we first met) and has been back to each one since. She has a thirst to be part of and leading the Charlotte entrepreneurial scene. It’s led her to start Vishion, Collective Hustle and put on the 1st Seed the South event in January 2019. All three are great getting great traction and we're excited to see them grow and the impact they will have on Charlotte! Vishion is her startup. It’s the only mobile app that uses a product’s true color data, fashion trend and user preferences to help shoppers find the ideal color. The concept came to her after her own frustrating experience after falling in love with the blackspash in the bar at Kindred on a date night with her husband. Sam’s the type of person who once she latched onto her idea, she just never let go. Collective Hustle is a Charlotte investor and startup coalition looking to improve the Queen City’s entrepreneurial ecosystem. She started it last year with Aru from botSplash. They host invitation only events with a focus on inclusion and ways to assist female and minority entrepreneurs in Charlotte. Seed the South was last month. It took a huge effort from Sam and her team to get it off the ground and served as Charlotte’s first non-Fintech Demo Day. Check out our podcast with Sam today to hear more about how the last couple of years have shaped who she is. It’s a great podcast as we sat down and had a couple of Triple C beers one Friday afternoon. Local Note and Thoughts: Stay tuned for Emir and James – co-founders of Rabbu – on the podcast next week. Rabbu recently wrapped up a $1.5 million funding round and they are ready for the next stage of growth. Listen in next week to learn how they got here and where they plan to go. Finsiders had their annual awards earlier this week. Sam Smith won the Dan Roselli Community Organizer award. Derek Wang, CEO and Founder of Stratifyd won for Best Innovation. Tim Griffin, CEO and Founder of Cloosiv, won for Risk Taker/Fail Fast. Mark Mahoney, CEO and Founder of Jack Rabbit Technologies won the 2019 Change Champion. Congrats to all the winners. The Charlotte Angel Connection next quarterly event is in the works – though the date may be changing to accommodate the company. John Cambier and Lister Delgado from IDEA Fund Partners will be in Charlotte to do an on-stage Partner Pitch (the pitch will be from 6:30 to 7:30pm) – which means they are going to go into detail with an entrepreneur about their company as though they are interested in investing – and they may even be. I hope to have the company named by the podcast for next week. Stay tune and come see a professional team in due diligence. Also SeedSpark – a technology and digital solutions company – is going to sponsor our first ever Entrepreneur Date Night Award. We will have the startups in attendance (demo tables) vote on the entrepreneur they think is most worthy of a $100 gift certificate to a Charlotte area restaurant. It’s a small token to the countless spousal/significant dinners founders must give up as they bring their projects to life. QC Fintech is also in the process of interviewing for their spring class and after speaking with Dan recently they are seeing some really good companies. Be on the lookout for announcements for the spring class and the opportunities you will have to meet them and ultimately support them as they come to Charlotte for 12 weeks to incubate their ideas and companies. In 2004, BBC TV exposed Brett Doster, now Judge Moore’s campaign chief, for illegally "caging" Black, Hispanic and Jewish voters, a crime explained by Bobby Kennedy Jr. in our film, The Best Democracy Money Can Buy. In 2004, the Palast team got our hands on highly confidential memos from inside the George W. Bush campaign giving "BDoster@GeorgeWBush.org," its Florida Political Director, one of several secret lists of voters to challenge. Karl Rove’s Research Director, Tim Griffin, sent letters, for example, to soldiers in Iraq, "Do Not Forward." When the letters came back as "undeliverable" the "caged" letters were used as evidence the soldier didn’t exist. Note: A US soldier on duty overseas, may legally vote for President, of course. "Caging" is a crime—but those who committed the crime, the Bush campaign, were also in charge of prosecuting themselves. They didn’t. So Doster is running Moore’s Senate campaign instead of breaking rocks on a chain gang. During my filming for BBC, Doster literally ran away from me, though I chased him around Tallahassee. Doster’s press flak told me Doster told her the lists were of GOP donors. Then I showed her the list included hundreds of men registered to vote at a homeless shelter. The new edition of film with RFK's explanation of Doster’s criminal acts of vote suppression is out today. (The segment with RFK on caging begins at 41:25 when I say, "I’ve been investigating Rove since 2004…." to 43:16: "Mission accomplished.")

Tim Griffin, Ph.D., is Director of the Agriculture, Food and Environment program at the Friedman School of Nutrition Science and Policy at Tufts University in Boston, Mass. In this episode he discusses his interest and expertise at the intersection of agriculture and the environment as well as the development and implementation of sustainable production systems. Dr. Griffin has lived and worked with rural communities and regions throughout his career before landing in Boston, but what makes him fascinating is his ability to cross various boundaries and silos to explore solutions that result in a win-win for everyone involved. He doesn't deny the difficulty of this, especially within the food system, but he explains how he does this personally and how he purposefully incorporates this abundance mindset with the graduates students he works with.
Dr. Timothy Griffin, an associate member of the Oklahoma Medical Research Foundation and Adjunct Associate Professor at the University of Oklahoma, discusses metabolism and inflammation in osteoarthritis, animal models of obesity, and what it’s like to work at a private, non-profit research foundation. This Friedman Seminar features Tim Griffin, associate professor, Friedman School of Nutrition Science and Policy, presenting “Genetically-Engineered Crops: Where we have been and where we might be going” Bio Tim Griffin is an Associate Professor at the Friedman School of Nutrition Science and Policy, Tufts University. At Friedman, he has directed the interdisciplinary graduate program, Agriculture, Food and the Environment since 2009, and teaches classes on U.S. agriculture, and agricultural science and policy. His current research focuses on regional food system and climate change impacts on agriculture, and he supervises doctoral students conducting research on topics ranging from precision agriculture to food access. Dr. Griffin served on the National Academy of Sciences study committee that published Genetically Engineered Crops: Experiences and Prospects. He also served as an Advisor to the 2015 Dietary Guidelines Advisory Committee, focusing on Sustainability. Before coming to the Friedman School in 2008, he was Research Agronomist and Lead Scientist with the USDA-Agriculture Research Service in Orono, ME, from 2000 to 2008. From 1992 to 2000, he was the Extension Sustainable Agriculture Specialist at the University of Maine, the first such position in the U.S. Abstract Genetically-engineered crops (“GE crops”) have been used by farmers for just two decades. In the short span since the mid-1990s, GE crops have been rapidly adopted by farmers producing a short list of crops in some countries, and are banned outright in others. There have been myriad claims regarding GE crops, from feeding the world to ecosystem disruption to human health impacts. This stimulated the National Academy of Sciences, in 2014, to undertake a very broad assessment of purported benefits and risks of GE crops that are already being used by farmers around the world. The report from this effort was released in May, 2016, and also assessed potential uses of GE techniques in the future and suggested changes in the regulatory framework for these products. The past and current uses and impacts of GE crops, along with prospects for the future, will all be addressed in this seminar. About the Friedman School of Nutrition Science and Policy: The Gerald J. and Dorothy R. Friedman School of Nutrition Science and Policy at Tufts University is the only independent school of nutrition in the United States. The school's eight degree programs – which focus on questions relating to nutrition and chronic diseases, molecular nutrition, agriculture and sustainability, food security, humanitarian assistance, public health nutrition, and food policy and economics – are renowned for the application of scientific research to national and international policy.

This episode highlights the bills that passed the House of Representatives in April including a bill that makes it tougher for wage slaves to get health insurance, a bill that gives away weapons to other countries, a bill written for the banks that lets them gamble with risky financial products, and more. Bills Highlighted in This Episode Passed on April 8, 2014 by 230-185 Changes the way the budget baseline is calculated by not factoring inflation. Congressional committees will be able to do the report on how much new programs will cost. Representatives Quoted in This Segment Rep. Rob Woodall of Georgia Rep. Alcee Hastings of Florida Passed on April 7, 2014 by 230-165. Starting in 2017, the President's budget must include the costs of direct loan and loan guarantee programs. Starting in 2017, no new loans may be issued or existing loans increased unless the money is provided in advance by a Congressional appropriations Act. Exemptions include entitlement loans such as student loan programs and veteran's home loan guaranty programs, loans for farmers giving by the Commodity Credit Corporation, or loans provided by Fannie Mae or Freddie Mac. All loans, including those made by Fannie Mae and Freddie Mac, will count against the budget. Representatives Quoted in This Segment Rep. Scott Garrett of New Jersey Rep. Bill Pascrell of New Jersey Passed on April 4 by 224-182. Requires the Congressional Budget Office to analyze the economic impact of each bill or resolution for forty years on the gross domestic product, businesses, stocks, employment, interest rates, and labor supply using "a variety of economic models." The Congressional Budget Office will have to do a follow up report for every new law on the accuracy of their original economic impact analysis. Office of Oceanic and Atmospheric Research would give money to the private sector, universities, and nongovernmental organizations. 30% of the research money authorized has to be given to these non-governmental groups. Directs the Office of Oceanic and Atmospheric Research to make plans for improving hurricane warnings, data collection, and tornadoes. Gives a specific goal of increasing tornado warning times to one hour. Requires experiments to be done with new private sector produced technologies and data before the government buys it, if it costs more than $500,000,000. Current law: "Neither the President nor any other official of the Government shall make any effort to lease, sell, or transfer to the private sector, or commercialize, any portion of the weather satellite systems operated by the Department of Commerce or any successor agency." Changes the current law above to allow the government to buy weather data from private researchers and to pay to put satellites on private land. Tells the Dept. of Commerce to create a strategy for buying weather data from the private sector. The strategy needs to evaluate financial benefits and risks with buying private weather data, figure out what to do about private cancellation fees, determine how to set standards, and guarantee public access to weather information. Allows the Office of Oceanic and Atmospheric Research and the National Weather Service to swap up to ten staff members for a year. Passed on April 3, 2014 by 248-179. Makes it easier for the Department of State to authorize weapons exports. Passed on April 29, 2014 without a recorded vote. Current law limits the types of investments that banks can make in order to protect the money that customers deposit. This bill allows banks to keep risky investments called collateralized loan obligations if they had them before January 31, 2014. Collateralized loan obligations are from middle-sized and large business loans that are bunched together and then gambled with. Because they are structured so similarly to the mortgage backed securities that destroyed our economy, almost no one was gambling with collateralized loan obligations in 2008 and 2009. In the last few years, however, the practice has made a big comeback. In April, the month this bill passed the House, $11.8 billion of these high risk gambling bundles were created. It was the highest amount since the financial meltdown. This is a bill to help the biggest of the big banks. Almost 75% of all bank-owned collateralized loan obligation are owned by just three banks: Citigroup, WellsFargo, and JP Morgan. This is not the only bill that Rep. Andy Barr of Kentucky has written for the big banks. As the New York Times reported in August 2013, he introduced a bill to eliminate a new federal rule intended to prevent banks from issuing mortgages to customers who could not afford to repay the debt — a measure pushed by bank lobbyists who had visited his office. Rep. Andy Barr has taken over $230,000 from the financial services and investment industry. Additional Information House Financial Services Committee hearing about HR 4167.
