Paul Shapiro, the CEO of The Better Meat Co, is revolutionizing the way we think about meat and protein by using a modern twist on the age-old art of fermentation. The company uses a controlled, indoor farming process that maximizes efficiency while allowing nature to unfold. The process, called Rhiza fermentation, takes less than one day and uses far less land and water than animal proteins do, and requires even less processing than other plant protein isolates typically used in plant-based meat. The process uses Rhiza mycelium, which is a type of fungi, and the mycelium is processed differently than the fruit. The company's products include Rhiza-Enhanced Crab, which is made with a percentage of Rhiza and other ingredients. The products are vegan-friendly, and the company's best-selling product is Rhiza for cheaper than traditional beef, protein. Paul Shapiro compared Rhiza to other plant and alt proteins, stating that it is objectively superior to textured plant protein isolates commonly used to make plant-based meat today. We discussed the challenges and advantages of the approach, as well as how it will change the livestock industry and the roles of traditional farmers.

Saying there is a thing called “better meat” suggests that there is something that is of lesser quality or worse, right? Or even that there might be a “best” meat. Of course, this is all subjective. But what makes meat good or bad? We all have preferences and price expectations, monetary constraints and values that govern our decision making. We often try to choose what is in our best interest, but we also have to choose trade offs, which are based on some of these microeconomic factors. We could argue all day every day about what is better, but there will always be tradeoffs that produce different outcomes. Then the question becomes…what outcomes do we desire? In our personal lives and in society. What percentage of those outcomes can we really control? And no matter what we decide…we must always consider, cui bono? Who benefits? We can assume the answer to that, but we still have to eat. Many of us want to eat better food and what "better" means to each of us might be different, but maybe we can find common ground and quit lumping all meat into a good or bad category. Nestled along a levee, in the back of a large business park in West Sacramento is a company that is developing new technology and striving to mitigate the devastating effects of factory farming and provide a new protein source for a population set to hit 10 billion people over the next few decades.  The Better Meat Co. is using a proprietary microflora organism to create fermentation and quickly grow a product that can be dried into a shelf stable, protein rich and non-allergenic product, which can be added to meat products or created into plant protein products meant to mimic meat.  I talked with Doni Curkendall, executive vice president of the Better Meat Co. and she gave me the full rundown of this new plant-based protein. His business-to-business startup has pioneered a fungi-based alternative to animal meat that is much more sustainably produced, healthier, more affordable, and arguably even better tasting. ❗ What PROBLEMS are The Better Meat Co. solving? Our modern-day methods for feeding our growing population are unsustainable. The main culprit? Raising livestock to satisfy the increasing demand for meat as nations become more developed (and hungrier for meat). Despite the boom of interest in plant-based meat consumption, traditional meat consumption is on an upward trajectory. Unfortunately, this involves major environmental, animal cruelty, and health implications. Additionally, the UN recently projected that increasing demand for animal protein will likely trigger the next pandemic.
