However you define it, for many of us, it's simply what your mama used to make that made you feel loved. On this week's show, we meet three Louisiana authors whose cookbooks help tell the authentic story of our state's distinctive cuisine. First, we hear from Eric Cook, the executive chef and owner of two distinguished New Orleans restaurants: Gris-Gris and St. John. Eric talks about the evolution of our traditional local fare – many examples of which can be found in his cookbook, Modern Creole: A Taste of New Orleans Culture and Cuisine. Eric shares his secrets to success with dishes such as crab and shrimp stew, wild duck cassoulet, and even his mama's chicken and dumplings. Next, we welcome food writer and culinary historian Marcelle Bienvenu, who has reported on Cajun and Creole cooking for half a century. Today we shine a spotlight on Louisiana Grass Roots, a compelling new documentary produced by Dr. Phyllis Baudoin Griffard and directed by Jillian Godshall. This film captures the voices of everyday Louisianians working to preserve our state's environmental and cultural heritage, highlighting powerful grassroots movements shaping our future. Jillian and Phyllis join us to share the inspiration behind the documentary, the stories that moved them most, and why community-driven action matters now more than ever. This episode is also special on a personal note—Jan Swift's daughter, Kelly, who works in the film industry at the Manship Theater, made this introduction. Even though we all live and work in the same region, this documentary brought us together in a way that highlights what community truly means in South Louisiana. About the Filmmakers – In Their Own Words Director Jillian Godshall began by expressing gratitude for the local connection that made this collaboration possible. “I am a filmmaker. I'm also an educator. I've been doing both for over 15 years at this point. It's taken me all over the world. I'm really glad to be here in Lafayette doing that work as well.” Her background is deeply rooted in documentary storytelling: “My background in filmmaking is mostly in documentary filmmaking. I've worked on big budget, large scale reality TV show stuff—don't tell anyone—and all the way down to where I feel most comfortable now, which is working on smaller-scale independent projects, having more of the creative leadership role, directing and being super involved in every aspect of production.” Jillian also teaches video editing to incarcerated students through an organization called The Last Mile: “I currently teach video editing to incarcerated students… and work with Phyllis, hang out with Phyllis, plant plants with Phyllis.” Producer Dr. Phyllis Baudoin Griffard shared her deep Louisiana roots and her global experience in science education: “I'm from Lafayette originally, grew up all over the South… I got a degree from USL in zoology and then went off to graduate school in biochemistry. I came back to Louisiana and started teaching at Xavier University, and I knew then that's what I wanted to do.” Phyllis' work has always focused on connecting people to the land and ecology around them: “Even as a biologist and teaching university students, I always was looking for local examples and to reconnect students outside the textbook to the biology that's in their own backyard.” She emphasized the importance of place in identity: “When I came home, I heard French, I heard the music—you can really connect to this place.” The Origin of Louisiana Grass Roots: A Story Rooted in Place, Memory, and Rediscovery Jillian and Phyllis did not come together through a traditional film industry channel; they were united through a local experience that awakened something deeper. Phyllis explains that after returning to Lafayette and connecting with the Acadiana Master Naturalist Program, she began to understand the importance of the Cajun Prairie through firsthand fieldwork. “One of the topics is about the Cajun prairie… I had learned about the prairie, and I knew about it more from when we lived in Texas, because the people in and around Houston just ooh and ah about the prairie scientists we have over here: Larry Allen, Charles Allen and Malcolm Vidrine, who discovered what they have since called the Cajun Prairie. 2.5 million acres. Most of Southwest Louisiana was part of this prairie, which only less than 1% exists today.” It was during a field trip with the Master Naturalists that she crossed paths with Jillian: “I led one of the field trips and found out that Jill was a filmmaker, and I happened to say, ‘Oh, I just finished doing a film, The Quiet Cajuns, with Conni Castille.' And her ears perked up and she said, ‘Well, I think we should make a film about the prairie.'”

Some people discover their calling by accident. Literally. An injury or an illness or divine providence can lead to a vocation. You might call each of my guests today healers. But neither started out with the idea of becoming one. They were patients first — searching for relief when the medical system didn’t always have the answers. That journey led them to very different paths. One through modern medicine and physical therapy. The other through the centuries-old practice of faith healing. Becca Begnaud is a traiteur, a Cajun faith healer. She grew up in Scott, Louisiana, in a family and community where traiteurs were part of everyday life. If you had warts, a sprained ankle, or a headache, you went to see someone with the prayer. But it wasn’t until Becca was diagnosed with breast cancer in 1989 that she began to take up the practice. A nun suggested she look into healing work. She studied Reiki, trauma first aid and worked in hospice care. Eventually she embraced her role as a healer in Acadiana. For Becca, healing is community, it’s connection, it’s laughter and prayer. She’s practiced for decades as a volunteer, never charging for her services, and today she continues her work from her office in Lafayette. Philip Thibodeaux is the founder of Restore Physical Therapy and Wellness in Lafayette. Philip grew up in Monroe and followed in the footsteps of his mother, who was a physical therapist. But his own story as a patient shaped how he thinks about care. At 14, Philip suffered a severe shoulder injury that went undiagnosed for months. By the time doctors discovered a torn labrum, the damage was done. He suffered through three surgeries and countless hours of physical therapy before he turned 30. The experience made him determined to treat patients differently than he had been treated. After working for a major healthcare agency, Philip became frustrated with the corporate approach — overbooking, inconsistent and inconsiderate care. In 2025, after the birth of his son, he struck out on his own. He launched Restore, a boutique clinic that emphasizes personalized care and new techniques like SoftWave therapy. The weather is cooling down here in Louisiana, which means outdoor events are heating up across our state. Out on the Cajun Prairie, Le Grand Hoorah, a festival dedicated to the music, food, and culture of the people of Acadiana, is coming up November 1st. The annual event turns 10 this year – and to celebrate, Louisiana Eats brings you highlights from our road trip to attend Le Grand Hoorah in 2017. We begin in downtown Mamou, where our gracious host Valerie Cahill gives us a grand welcome at the historic Hotel Cazan. After grabbing breakfast down the road at the charming Krazy Cajun Cafe, we cross the street to visit Mamou's world-famous dancing and drinking destination, Fred's Lounge. Over spicy Bloody Marys and cheap beer, Camille Fonteneau talks to us about the important role the local AM radio station KVPI has played in the community and in her life. On our way to La Grand Hoorah, we learn why Ville Platte holds the title of "Smoked Meat Capital of the World." We make a pit stop at Paul's Meat Market and Grocery, where many locals and out-of-towners purchase their meat. We then meet Kermit Miller, the man behind "the barbecue sauce with a Cajun accent," Jack Miller's Barbecue Sauce. Continuing a family tradition begun by his father Jack in 1955, Kermit's family recipe has found a following across the country. Finally, we arrive at Chicot State Park, where hundreds of people from around Louisiana, and the world, were gathered for Le Grand Hoorah. We hear music performances by Cajun youngsters and meet the brains behind the festival, Gilbert "Winkie" Aucoin. Winkie explains why he is dedicated to the preservation of his culture. We also eat our weight in cracklins and boudin, thanks to the tireless efforts of individuals like Toby Ryder, an expert in the art of traditional Cajun boucherie. We end our show by learning about NOLA Nite Market, another outdoor Louisiana event happening in Westwego on November 14th and 15th. The evening bazaar features a plethora of authentic Asian street foods created by local mom and pop restaurants – complete with live music and artisan wares.
