We are in the midst of American greatness on the International pizza stage. First, we recently had Caputo Cup champion Siler Chapman on with us. Now, his compatriot and fellow member of the US Pizza Champions team, Audrey Kelly, is here to tell us about her own championship gold medal in the pan pizza category at the Caputo Cup. Audrey has been on Pizza Quest in the past, showing us how she makes her signature Grandma Pizza at Audrey Jane's Pizza Garage in Boulder, CO, which she calls "The Patty." Nous allons parler aujourd'hui des pizzas américaines. Non pas que les pizzas américaines occupent la deuxième place dans mon cœur, loin s'en faut, mais il faut avouer qu'elles sont bien présentes. En fait, en termes d'unités produites, elles sont les plus consommées dans le monde. Il y a certainement un pizza hut ou un dominoes dans votre région. Par contre, au niveau du nombre mangé par an et par habitant, sachez que ce sont les Français qui sont les plus grands consommateurs de pizza au monde. Les pizza américaines sont un héritage direct de l'immigration italienne aux Etats-Unis. Quand je le dis comme ça, ça parait une évidence mais c'est bien de le rappeler. On commence avec la pizza New-Yorkaise qui est certainement le premier style historique de pizza américaine et c'est logique, les bateaux accostaient là en premier. La pizza new-yorkaise ressemble à la innovativa mais avec une pâte un peu plus fine et un disque plus large. Entre 45 et 60cm en moyenne. Les parts sont énormes et vous devez les plier en deux pour savoir la tenir en main sans qu'elle s'effondre sur elle-même. Les garnitures sont classiques avec une mozzarella toujours rapée. Le best seller est la pepperoni, une saucisse piquante typique du continent. La chicago deep dish pizza, littéralement la pizza assiette creuse est un style vraiment à part. Il s'agit d'une pizza cuite dans un plat en fonte assez profond. On y place une première couche de pâte, on remplit ensuite d'une quantité déraisonnable de mozzarella, on recouvre de pâte et on nappe de tomate. A la sortie vous avez une sorte de tarte épaisse remplie de fromage fondu. Et enfin dans les grands style américain, vous avez la pizza de Détroit. Elle est très similaire à la teglia. Carrée, cuite en plaque, pâte épaisse et garniture jusqu'aux bords. C'est ce style qui, combiné au Style de Turin donnera la fameuse Pan Pizza, donc des pizzas rondes à pâte épaisse cuites en plat rond en fonte et mozzarella rapée qui est sans doute le style de pizza le plus emblématique n'en déplaise aux new-yorkais.
