Noten met de kerstKunnen mensen niet anders? Zijn wij altijd vleeseters geweest? Nou zeker niet, in sommige tijden en landstreken at er zelfs niemand vlees, zoals in India rond het begin van onze jaartelling. En nu is de trend ook eerder weg van vlees, vooral vanwege het milieu en dierenleed. De helft van de bevolking is inmiddels flexitarier en eet minstens de helft van de week geen vlees. De strikte vegetariërs blijven bij ons zoals over de hele wereld beperkt tot zo'n vijf procent, alleen in India is dat percentage nog boven de dertig procent. Nog een stuk kleiner is de groep van veganers, die gaan nog een stapje verder en willen ook geen zuivelproducten of eieren. Zij moeten wel oppassen dat ze met name wel voldoende vitaminen en mineralen binnen krijgen. Op zich is vlees eten in het geheel geen must, en peulen maar vooral ook noten zijn prima en lekkere vervangers. Zie het, trouwens niet vegane, recept voor een heerlijke notentaart tijdens het kerstdiner, dat we bij deze podcast voegen.Wat zijn noten? Dat hangt er maar vanaf met wie je praat. Plantkundig zijn noten enkele vruchten met een verhoute wand. Tot deze “echte noten” behoren eikels, hazel- en beukennoten en kastanjes. Wat we in het dagelijks spraakgebruik noten noemen zijn voor de botanicus soms steenvrucht-zaden (zoals amandelen, kokosnoten en walnoten), of zaadkernen (para- en pecannoten, pistaches, cashewnoten en macadamia's) en zelfs peulen (zoals de pinda). In de keuken wordt dat onderscheid niet gemaakt en horen de bovengenoemde “onechte noten” er ook bij. De grootste gemene deler van alle eetbare noten is het hoge gehalte aan eiwit, onverzadigde vet en vitaminen. Kortom, een ideaal bestanddeel van ons voedsel. En samen met peulen en bonen (zoals kapucijners, sojabonen, kikkererwten en linzen) een perfect alternatief voor vlees.Qua gezondheid steken noten gunstig af tegen vleesproducten en zuivel, vooral door een verlaagd risico op hart en vaat ziekten. Alleen zijn sommigen allergisch tegen eiwitten in noten. Die mensen kunnen dan vaak wel pinda's eten, want die zijn als peulen niet verwant aan de andere noten en hebben hun eigen allergenen. Men moet vanwege schimmelgevaar wel oppassen bij het bewaren van noten (droog, koel en goed afgesloten), vooral bij kastanjes en walnoten. De ecologische footprint van noten valt vergeleken met vlees positief uit. De CO2 uitstoot ligt 90% lager per kilo. Pinda's en kastanjes, wal- en hazelnoten scoren hier het best. Het kweken van noten kost per kilo wel veel land, maar dat is vaak wel voor meerdere doeleinden te gebruiken. Het minst gunstig ligt het waterverbruik, dat is per kilo vergelijkbaar met dat van vlees. En dat is vooral een probleem omdat veel noten groeien in gebieden met waterschaarste, dat geldt zeker voor amandelen, pistaches en cashewnoten. Ook hier komen kastanjes, pinda's en walnoten weer gunstiger uit. Wat men bij al die vergelijkingen wel moet bedenken is dat de dagelijkse aanbevolen consumptie van noten een kwart lager ligt dan die van vlees! Waar men nog wel op moeten letten bij de aankoop van noten zijn de arbeidsomstandigheden waaronder ze geoogst worden, met name in India en Turkije, een goede raadgever is het fairtrade keurmerk. Ook al zijn peulen, met afgeleide producten als humus, tempé en tofu nog net iets duurzamer, toch doen noten het goed, en dat ook vanwege hun excellente smaak. De vorm met aluminiumfolie afdichten, op een diep bakblik zetten en op de middelste rail 30 minuten bakken.Tussentijds de groenten wassen en zo nodig schillen. De wortels in de lengte in kwarten snijden, dunne wortels in de helft, de andere groenten klein snijden, de uien in een cm stukken snijden.Knoflook persen en met de olijfolie mengen.Groenten – behalve spinazie en/of spitskool - in de knoflookolie wentelen en op een bakblik leggen, met zout en peper bestrooien.De aluminium folie van de notentaart nemen en er vlokjes boter over verdelen. Terug in de oven plaatsen. Het blik met de groenten op de 2e rail van beneden plaatsen.Vanaf hier kan men ook een dag later verder gaan. Dan de zaak over nacht wel koel zetten.Groenten en notentaart nog samen 20 minuten bakken.Nu evt. spinazie en spitskool onder roeren. Nog 15 minuten bakken.Tussentijds de citroen heet wassen, drogen en schil fijn afraspen, sap uitpersen.Notentaart uit de oven halen en 5 minuten laten rusten.Groenten in een voorverwarmde schaal, met citroenschil en sap op smaak brengen.Notentaart uit de vorm halen en op een voorverwarmde plaat zetten met een deel van de cranberry-saus decoreren, met groenten en de rest cranberries serveren.Uiensaus: uien schillen en fijn hakken, in de boter met het tomatenmerg licht aanbraden. Bloem er over heen strooien en 2-3 min al roerend mee laten braden.Zijn tomatenmerg en uien licht bruin, dan in een keer al roerend groenten-bouillon en slagroom bijvoegen. Ever fancied making your own vegan hot dogs? Well you can with this easy to make vegan hot dogs with roasted vegetables recipes using seitan. Seitan, also known as vegan meat, wheat meat, or gluten meat, is a perfect vegan meat-alternative. With vital wheat gluten and a few pantry staples, it's incredibly easy to make! Once you make a dough, it should be poached to get a chewy meat texture that can be used for so many dishes. It can be flavoured in a variety of ways. For instance, you can simmer the dough with fresh or dried herbs, soy sauce, ginger, or seaweed. Due to its neutral flavour and great texture, you can experiment with the flavours and shapes of your seitan. You can use vegan poultry seasoning to make a “chicken” flavoured seitan, or vegan BBQ sauce, mustard powder, and cayenne pepper for a “sausage” flavour. Boom, vegan sausage! Seitan Hot Dogs with Roasted Veggies If you want to make your vegan seitan sausages from scratch, fancy-schmancy items aren't required – you will need just a few staple ingredients. With this in mind, let's get into it! 5 from 2 votes Print Recipe Pin Recipe Prep Time 10 mins Cook Time 50 mins Course Lunch Cuisine American Servings 6 Calories 375 kcal Equipment steamer basket grill pan air fryer Food processor Knife Large pot Ingredients Seitan Sausage 3/4 cup canned white beans drained and rinsed 3/4 cup vegetable broth 2 tablespoons roasted pepper paste 1 teaspoon olive oil 3 tablespoons vegan BBQ sauce 1/2 teaspoon ground cumin 1 teaspoon mustard powder 1 teaspoon onion powder 2 teaspoons garlic powder 1/2 teaspoon cayenne pepper 1 teaspoon sea salt 1 teaspoon ground black pepper 250 grams vital wheat gluten A few drizzles of liquid smoke optional Hot Dogs 6 hot dog buns 2 large carrots sliced into sticks 1 large leek halved and sliced lettuce optional Instructions In a bowl of your food processor, place white beans, broth, pepper paste, olive oil, BBQ sauce, and spices. Pulse until well combined. Then, add the vital wheat gluten and liquid smoke, (if using) then pulse until it comes together in a ball. Divide the mixture into 6 equal balls. Roll and press them into a sausage shape. Wrap each sausage in parchment paper and aluminium foil, twisting the ends, so they are completely closed off. Bring a large pot of water to a rolling boil. Place the steamer basket on the pot and lower the seitan sausages into the steaming basket; let them steam for about 20 minutes; turn them over and cook for a further 20 minutes. Meanwhile, roast your veggies in the Air Fryer at 180 degrees C for about 10 minutes (You can grill them in a grill pan, too). Let the sausages cool before removing the parchment paper and foil. Grill the sausages in a grill pan and add them to the hot dog buns, top with roasted veggies, and enjoy! Notes You can use carbonated water instead of broth. Here are a few LUNCH examples: CHARBROILED EGGPLANT: Charbroiled, thick sliced eggplant grilled with crushed red pepper over spring mix with tomatoes, kalamata olives, red onions, halloumi cheese & cucumber. Served with oven toasted pita strips and pomegranate vinaigrette. Tell your waiter “NO” pita strips! & put the dressing on the side! KARPATHOS CHICKEN Seasoned grilled chicken breast, sun-dried tomatoes, red onions, cucumbers, red peppers, dolmades, tomatoes, pepperoncini and halloumi cheese over spring greens. They have soups, more salad, vegetarian “MOUSAKA” as we say in NY or Mooosakaa in the rest of the U.S. Delicious Hummus…..They also have What I call …..Babaloo! but is actually called….. Baba Ganouj…..which is Roasted eggplant spread….. topped with extra virgin olive oil. The menu is Filled with healthy options! Just Leave the Pita off your plate and chow down on all these healthy vegetables, fish and meats! Here’s what I ordered the night of the review…. I asked for the best item on the menu……and w/o hesitation, I was told to order…… OCTOPUS!!!!! Now…I’ve had “Calamari” before. That makes me think of the movie “Moon Stuck” where Nicholas Cage’s plays “Ronny Cammareri” and the part in the movie, where the lady who works in the bakery says……”Stop it Ronnie, you’re scaring me” In NY…..the Italians say “Cala maaaa” Us NYers barely finish a word. Regular NYers….who are not Italian….say “Calamari” Getting back on track…..what’s the difference between “Cala Maaa” AND Octopus? Calamari is the Italian word for “Squid.” Squid has an elongated body with tentacles. The meat is white and firmer than Octopus. When cooked right, it should taste firm but NOT rubbery. Octopus has a round head and body with tentacles. The meat is sweet and not firm. You learn a lot when you research things! Never had Octopus before. I said…..bring OUT the OCTOPUS! And….I have to tell you….it was the “most TENDER” Octopus I have EVER had! Grilled octopus marinated in lemon and olive oil vinaigrette with fresh garlic, capers, zucchini and diced tomato . Delicious! For dinner……. I ordered the Grilled FRESH Red Snapper. Now….this comes out as a “Whole” red snapper …..the entire fish….head, EYES, tail….FISH on a plate! It is marinated in rosemary, garlic, extra virgin olive oil and fresh lemons charbroiled and topped with the house lemon herb marinade. You get a choice of two sides. I ordered the Roasted Vegetables and Artichoke Quinoa! I don’t particularly like looking at a FISH Head on my plate, and I certainly don’t like all the bones, but RED SNAPPER is a nice sized fish, where I was able to eatmost of the body meat, w/o biting into any bones. The RED SNAPPER was cooked Perfectly! The meat was falling off of the fish. Made it easy to eat & not get any bones. The Roasted Vegetables were carrots and squash. VERY Good. Seasoned well and tender. The QUINOA was FANTASTIC! Lot’s of YUMMS…..coming out of my mouth! Overall, the meal was absolutely DELICIOUS! Acropolis ….of course…..is known for it’s Delicious and Authentic Greek food…..but Acropolis….also has…….ENTERTAINMENT! A Belly Dancer starts the Entertainment! A beautiful woman dressed for “Belly Dancing” dancing around the entire restaurant, entertaining you while you’re eating. Then……the BIG entertainment begins! Every Hour there is……. Bouzouki Plate Breaking! What the heck is Bouzouki Plate Breaking you ask? It is a Greek custom of breaking plates during celebratory occasions (weddings) When the music is played from the Bouzouki…(like a mandolin) The manager or owner of Acropolis starts the clapping and moves towards the barrel or bucket. He picks up a stack of plates and then as fast as he can………he starts flinging the plates into the bucket, breaking the plates, with pure passion….until the stack in his hand is gone! This is like done in around 5-10 seconds! FAST! Then ……..the crowd reacts to the demonstration with a HUGE “OOPA” if they are satisfied! OOPA literally translates into “Ooops” but in Greek…..it has taken on the “emotional response” and admiration for Breaking the plates in excellent fashion. So the owner of Acropolis wants to hear “OPA” And that’s NOT ALL! The waiters & waitresses line up to do “Zorba Dancing” For all you Millenials out there….look up the 1964 film… “Zorba the Greek.” In the movie…..Alexis Zorbas (played by the famous Anthony Quinn) dances to not only relieve his stress, but to be the “inspirational force” that guides him to confront and finally ……. Overcome the challenges he was facing in life and work. Great movie! It’s a moving, uplifting moment at Acropolis! Patrons are waving napkins and throwing them on the floor as a final gesture of their excitement and admiration for the Bouzouki plate breaker. Lots of fun and great food at Acropolis! The food was fresh, and delicious. The staff were engaging, polite and brought out each dish at the appropriate times. The manager was seen going from table to table making sure the guests were happy. The owner, Sam was fantastic! Not only was a hell of a “plate breaker” I watched him speaking with staff as well as customers, to ensure everyone was having a great evening. How did Acropolis Rate …… Acropolis gets a BIG 2 Thumbs up for it’s fresh and healthy food choices. Don’t look at or touch the Pita’s and you will enjoy your meal at Acropolis. Acropolis also gets a HUGE 2 thumbs up for it’s Entertainment! Really breaks up the evening and gets everyone in the place involved and uplifted!
