Stephanie took over cooking duties for her family when she was just 10 years old after her mother became mentally ill and as her father was suffering from alcoholism. She went on to study at the Culinary Institute of America (CIA) to become a Chef, worked for 20+ years in the restaurant industry, 10 of which she owned her own restaurant. In 2010, her life and purpose intersected when she met a few executives from Lackawanna College that tasked her with starting the College's School of Hospitality program. She built it from scratch with borrowed kitchens, Bunsen burners, and pots and pans out of the trunk of her car. The program now boasts 4 degrees and an 85 seat restaurant and bar at their main campus in Scranton, PA. Now, as the College's AVP of Social and Economic Impact, she uses her scrappy, make-it-happen mindset to help people live better lives through education, entrepreneurship, and community connection. We also discuss a book that she is co-authoring along with Lackawanna College President Dr. Jill Murray, and Provost Dr. Erica Barone Pricci. The venture, Applied VR has attracted investment from top-tier investors like Jazz Venture Partners, F-Prime Capital, SVB Capital, and Sway Ventures.
For our latest episode, we sat down with President and Chief Innovation Officer Dr. Jill Murray and Provost Dr. Erica Barone Pricci of Lackawanna College. Lackawanna is a premier, private, college serving the people of Northeastern Pennsylvania. However, the school is focused on taking a different approach to education, and last year it was included in Fast Company's list of the World's Most Innovative Companies for its “Level Up” Program, which we talk about in this episode. Lackawanna puts a strong focus on keeping higher education affordable and accessible to anyone in our immediate community. We discuss the evolution of Lackawanna in recent years, and why it views itself as a “disrupter” in the higher education space. Jill and Erica explain why the college's mission is to educate students not only to be prepared for their professions upon graduation, but to be well-rounded citizens who are stakeholders in their community. They also tell the stories behind their own unique career paths, how they think about team building, and why having a strong culture is essential to any successful organization.This past semester, I joined Lackawanna as an adjunct professor. For me it was a way to spend time doing something I am passionate about, which is improving financial literacy and providing investor education to more people. One of the core tenants of our firm is providing people with tools to make better decisions in a complex financial world, and I was excited to be able to do that in a classroom setting for the first time. Lackawanna was a natural fit given the school's mission. We discussed why financial literacy isn't taught more effectively within the education system, how they approach decision-making themselves, and why education must shift to being viewed as an ongoing pursuit rather than a short-term goal in today's economy. I also asked Jill and Erica, and what the future looks like for the higher education system in the years to come and what role Lackawanna plays in it. It was an incredible conversation that highlights a great institution helping to make our region better in so many ways. The food supply chain has many challenges including poor customer experience, disconnected cold storage networks, and a lack of system integration resulting in limited visibility. About Eric Ristow Eric Ristow serves as Vice President of Product and Application Management at Lineage Logistics. In this role, he ensures custom-built software, as well as SaaS applications, meet the needs of Lineage's customers. This includes identifying discrete business problems within the temperature-controlled logistics space and developing the requisite applications to enable the safe and efficient storage and transportation of food. Key Takeaways: Reimagining the Food Supply Chain Food producers, especially those that require temperature control have traditionally depended on a hodge-podge collection of 3PLs to store and transport their product. Since no one 3PL had the service footprint (warehousing locations) adequate to service the entire country, food producers used multiple cold storage suppliers, which resulted in disparate systems and processes. Predictably, using multiple cold storage facilities led to inefficiency and waste, specifically wasted food. Meanwhile, the bar has raised for food producers. Due to customer demand for faster transit times, food inventory must be stored closer to customers. Additionally, everyone in the food supply chain wants fast, accurate, actionable data. Lastly, food waste has become recognized as a problem. Dumping food into a landfill when there may be hungry people in the community is a problem that must be addressed.
