Kelley focuses on facilitating cooking classes, offering personal chef services and sharing food information, recipes and ideas through all of the classes that she teaches. https://www.meetup.com/Denver-Healthy-Plant-Based-Cooking-Classes/ YouTube: https://www.youtube.com/channel/UCJE8ZL6Yr1tpVaZL-v2uxIw - Plant Based Kitchenista Plant Based Kitchenista www.plantbasedkitchen.com Email: kelley@plantbasedkitchen.com BimBimBap Bowl (makes 3 to 4 Servings) Ingredients 1 red bell pepper, thinly sliced 1 small zucchini, long, thin slices 1 yellow squash, round thin slices 1 red onion, thinly sliced 8 ounces mushrooms, thinly sliced 1 ear of corn, grilled and then sliced from the cob 2 tablespoons vegetable broth, divided Sea salt and black pepper to taste 4 cups brown rice, cooked 1/3 cup of vegan kimchi 1 tomato, sliced 1 scallion, thinly sliced 3 to 4 radishes, thinly sliced Sauce: 4 tablespoons gochujang 1 tablespoon date paste 1 tablespoon rice vinegar 1 to 2 tablespoons water Directions: Heat a grill pan over medium-high heat. Toss the pepper, zucchini, red onion, and corn in vegetable broth and then sprinkle with sea salt and black pepper (optional). Grill, flipping from time to time, until soft and with grill marks. After the corn has cooled, slices the corn off the cob and set aside. Divide the warm rice between 4 bowls and top with the grilled veggies (make it pretty), kimchi, tomatoes, green onions, and sesame seeds. Serve with the sauce. Spicy Sriracha Green Beans (Makes 3 to 4 servings) Ingredients: 1-pound green beans, washed + trimmed Sauce 2 tablespoons low sodium soy sauce (gluten-free or regular) 2 tablespoons sweet chili sauce 1 tablespoon Sriracha plus extra to taste 1 teaspoon minced garlic 1-2 teaspoons toasted sesame seeds (optional) Vegetable broth, as needed. Directions: Fill a large pan with 1 inch of water and bring to a boil. Add green beans and blanch for 3 minutes. While the green beans cook, fill a large bowl with ice water and set aside. Next whisk together your sauce by combining soy sauce, sweet chili sauce and Sriracha. Drain your green beans and then add them to an ice water bath to halt the cooking process, then drain once cool. This takes about a minute. Reduce burner to medium heat and sauté minced garlic and a tablespoon of the vegetable broth for 30 seconds, or until fragrant and simmering, then return your green beans to the pan. Mix well to coat the green beans with the garlic. Add your sauce ingredients and allow to simmer for a couple minutes, uncovered, to thicken the sauce. One desired tenderness is reached they're ready to eat!

Cut the tofu into cubes and place on parchment paper with sea salt (optional) and pepper and bake in oven at 350 degrees for about 15 minutes. Set aside. Skewer all the vegetables and the tofu in any arrangement that you would like. You can brush the sweet and sour sauce on but with the sugar it tends to burn so I brushed it on after the vegetables were grilled. Rotate skewers with tongs until browned on all sides. Remove kebabs from the grill and serve over rice. Drizzle more sauce if needed. Cilantro Rice (Makes 3 to 4 servings) Ingredients: 1 cup long grain Brown Rice 2 cups Water ½ teaspoon sea salt (optional) 1 tablespoon lemon juice 2 tablespoons finely chopped fresh cilantro 2 scallions, trimmed and thinly sliced ½ cup slivered almonds, toasted Directions: In a medium saucepan, combine rice, water, sea salt and bring to a boil. Reduce heat to low and simmer, covered, until rice is cooked, and water is absorbed. Remove from heat, and let sit, covered, for 15 minutes. Add lemon juice, cilantro, scallions and almonds to the rice and fluff with a fork. You can also cook the rice in your Instant Pot and then add in the other ingredients after opening the lid.

In this podcast, I share the assessment method I use as a SAIL (Stay Active & Independent for Life) Instructor. As you listen, imagine yourself taking these three assessments. Featured are: TUG (Timed 8' Up & Go), Bicep Curls in 30 seconds, and Sit-to-Stands in 30 seconds. For bicep curls, 5# for women; 8# dumbbells for men. These three assessments give us a fair evaluation of a participant's agility/balance, upper body strength, and lower body strength. Each participant will see how he/she compares to other seniors his/her age across the US. Having administered these assessments to hundreds of seniors at this point, I believe it is a fair method and provides a valid baseline for future assessments in 6-month intervals.

At the age of 38, Cindy became an adult-onset athlete, competing and medaling in marathons, triathlons, open water swim races, and endurance events! Best of all, she's been able to maintain this without dieting or feeling deprived! Her fire department was so impressed by her transformation that they put her in charge of the newly formed Wellness Fitness Initiative, a collaborative program between the International Association of Firefighters and International Association of Fire Chiefs. Cindy is a decorated Fire Captain and paramedic, awarded Firefighter of the Year and Oregon State Paramedic of the Year. As part of the prestigious Executive Fire Officer Program at the U.S. Fire Academy, Cindy published original research on firefighter and public safety. Definition of a Healthy Food Relationship While the meaning of a healthy relationship with food will be different for each person, it's really important that we strive towards having one. According to Dr. Yami, her healthy relationship with food is defined as: One the supports health and well-being and fuels the body but also fits into ones lifestyle, culture, brings pleasure and is never associated with judgement, guilt or shame. The journey and end result may morph and change as we go through life, but the main thing to focus on is that you are moving forward and not falling into traps that diet culture can bring. Why a Healthy Food Relationship is Important In the US, 70% of children's calories come from ultra processed foods. Let that sink in a bit. Offering a diet rich in all the nutrients is so important for a child's growing body. And doing so in a way that helps guide them into a healthy food relationship is just as important. By the age of 5 children have already unlearned tuning into their bodies. This is due to many things, but parents trying to get their children to eat more, finish their meal, clean their plates, etc is a big contributer. If we don't give our children opportunities to be in tune with their own body cues with relation to food is very damaging. They won't be able to tell when they are hungry, full, or even honor their body's cravings (which can be a signal they need a certain nutrient). If children don't have these self help skills when they become adults, it can lead to a range of disordered eating. Which then moves from generation to generation. However, if we help guide our children when it comes to food, we allow them to become adults with a positive relationship to food. What Causes a Bad Relationship with Food? There are many reasons why one would create a negative relationship with food. It generally stems from the past and their experiences. One reason could be family environment, meaning how their family growing up viewed food and handled eating. It could be comments about appearance, weight, eating habits, etc. For example, telling our kids that we can't eat birthday cake, ice cream or candy can trigger a false fear surrounding that food. This restricting of certain foods can affect the brain and trigger binging when they come into contact with that food again.

How does one go from a high performing Marine to a morbidly obese Type II diabetic to being mistaken for a sumo wrestler by a young boy to losing 180 pounds, finding their life's work as a Diabetes Lifestyle Coach & Food for Life Instructor? Dennis Jones has done this and more. Growing up in rural America, Dennis saw a concerning part of America that some people overlooked. When his family moved into the city and provided him with a private school education, he still saw the ravages of poor health across the economic and social spectrum. He started his career as a Health & Life Insurance broker, working with individuals and organizations to develop health insurance solutions with cost containment strategies. Over time, he realized that cost containment was more than just financial. After leaving the US Marines, Dennis' health began to decline. His weight jumped to nearly 350 pounds, and he developed high blood pressure and cholesterol and Type 2 diabetes. Despite becoming vegetarian and losing weight for about a year, the lack of structure and guidance led him back to his old ways. A few years later, he nearly suffered a heart attack and was told he needed a double stent or bypass surgery. Neither option was ideal, and Dennis faced taking medications and making a significant lifestyle change. One day, while looking for a healthy plant-based restaurant, he discovered GreenFare, an educational restaurant offering organic, whole food, plant-based meals. There, he saw a flyer for the Barnard Medical Center and the Physicians Committee for Responsible Medicine (PCRM), and on the spot, he signed up for the 21-day challenge to improve his health outcomes. Having faced his own mortality, Dennis woke up to making drastic changes. Under the guidance of Dr. James Loomis and Nutritionist Susan Levin, his life changed. He explored lifestyle management strategies built on evidence-based medical research and studied as a Health Coach through the Institute for Integrative Nutrition (IIN). From there, he became a certified Food & Lifestyle Coach and Food for Life (FFL) Instructor through the PCRM, and he has not looked back since. He got his numbers in check and eliminated his diabetes medications. Today, he teaches, coaches, and speaks about food because of a deep desire to improve people's health and quality of life. As a FFL Instructor, he teaches whole food plant[1]based cooking, and shows people how they can eat healthy for $50 per week. He provides both one-on-one and group coaching. Because of his own health journey, his practice focus is on diabetes & heart disease food and lifestyle management.
