2-11-25 Tonight we're talking with Kirubell Araya, owner of The Heritage Winery, in New Jersey. Kirubell has taken over the making of t'ej from his father, and is now located in the old location for Melovino Meadery. The Heritage Winery has been open since 1978, making it one of the oldest honey wineries in the US. Araya Yibrehu, Kirubell's father, is a pioneer in bringing Ethiopian cuisine and Tej to the United States. He opened Sheba in 1978, argueably the first Ethiopian restaurant in the US. Over the years he opened several more restaurants, with the most renowned being the Blue Nile in NYC, which became an icon for Ethiopian food lovers. Beyond this, Araya was also a trailblazer in crafting and commercializing Tej n the US, helping to preserve and share this ancient tradition with a wider audience. This would later become the Heritage Winery. Kirubell followed in his father's entrepreneurial footsteps, and grew up immersed in the family business. He graduated from Morehouse College in 2010, and went into commodities brokering, but came back to his roots. He joined the family venture in 2013, bringing a fresh vision and new identity to the Heritage Winery. In 2018 he left his job in finance to dedicate himself to expanding the company. The Heritage Winery meads are made with organic, single-source honey from sustainable farms. Each batch is carefully fermented to highlight the rich floral complexity of the honey, balanced with the earthy bitterness of hops, a key ingredient in traditional Tej. Currently they offer Axum Tej, made with wildflower honey, and Saba Tej, crafted from orange blossom honey. They plan to expand into meads that include fruit, coffee and sparkling Tej, moving an ancient drink into the 21st century. In this episode we interviewed Katie Kain and Ethan Tapper to discuss the effects of invasive species on riparian areas, and strategies landowners and ecosystem managers can use to control them. Katie is a Fish and Wildlife Biologist with the U.S. Fish and Wildlife Service's Partners Program in Essex Junction, VT. She works with watershed organizations, conservation districts, and state and federal partners to restore riparian habitat with private landowners. The Partners Program provides financial and technical assistance to design and implement restoration projects. Ethan is the Chittenden County Forester for the Vermont Department of Forests, Parks and Recreation. He advises private landowners, municipalities, conservation organizations, foresters and loggers on the responsible stewardship of forestland, and administers Vermont's Use Value Appraisal program.Invasive species pose a serious challenge to the management of riparian forests by out-competing native plants. They erode stream banks and damage habitats and ecosystem services, to name a few of the negative effects. Invasive species are incredibly difficult to control and eliminate, pushing practitioners to get creative and make difficult decisions on how to manage invasives. Listen to this episode to learn about how climate change is exacerbating the effects of invasives, strategies to control them, the challenging but essential role of herbicides, and how the process of managing invasive species has shifted how ecologists view forests. To learn more about Vermont's invasive plants, please go to Vermont Invasives' Gallery of Land Invasives. Fox & Raven Mead is Savannah and Bryce, a husband and wife team, creating Meads inspired by the stories that enchant them. They met at a movie theater eighteen years ago where they worked (mainly for the perk of free movies). They are self proclaimed Bibliophies, cinephiles and just all around big nerds. Bryce initially began homebrewing beer as a hobby but switched to Mead making due to a lack of availability of mead in his area. He's been making Mead for about 9 years now. Savannah is a graphic design school dropout and artist. She mostly handles marketing and design but also has a hand in helping craft flavor profiles as well. Bryce and Savannah are committed to never releasing a mead that they would not be happy to drink themselves. With a focus on balanced flavors, their mead tends to stay on the dry to semi-sweet side. On this week's episode of True Crime New England, Katie and Liz talk about the tragic attacks of two 12-year-old besties out of Essex Junction, Vermont in May of 1981. Melissa Walbridge and Meghan O'Rourke were leaving school a little late and opted to take a shortcut through the woods, only to be met by the malicious 16-year-old Louis Hamlin III and his evil little sidekick, 15-year-old Jamie Savage. The teenage boys ambushed the girls, forcing them to remove their clothes before they choked them, raped them, stabbed them, and shot them with pellet guns. Miraculously, Meghan survived the attack, while Melissa passed from her injuries. She gained additional expertise as the Catering Chef at Drake University in Des Moines, Iowa. Terrie dreamed of starting her own business, and she established Country Club Market in 2003. From there, Country Club Market has filled a unique niche in central Iowa, offering culinary arts classes, customized catering, and a bakery that produces some of the tastiest treats in town. A new survey finds that 66 percent admit to having unofficial assigned seating throughout their homes. Americans are so loyal to their favorite spots, that they'll argue with another family member about sitting in their “spot” twice a month. Whether it's at the kitchen table, dad's recliner, or the family couch — 68 percent of respondents say they're very passionate about their “spot.” Did you know your brain boots up in the morning just like a computer? The fire department in Essex Junction, Vermont, responded to that situation last week. According to a Facebook post, a medium-sized dog got trapped under a couch and its leg was being wedged by a metal part. The couch could not be moved without further hurting the pup, so firefighters got to work. For about 30 minutes, they used many tools to disassemble the metal parts of the couch. Finally, they were able to get the dog's leg free. It was taken to the vet for a cut. Through her business—Zymology Labs, based in Essex Junction, Vermont—Amy offers analytical testing, training, and consulting for the fermented beverage industry. And she's working to expand the conversation on beer quality in both producer and consumer circles. Although Amy spends much of her time in her own lab space, she's no stranger to brewery environments. She was a keen homebrewer in college, and the “What's Brewing?” and food science courses she took during her chemistry degree led to her lightbulb moment: that she wanted to pursue a career in beer quality. After a course and apprenticeship with the American Brewers Guild, she got her start in the cellar at Burlington, Vermont's Magic Hat Brewing Company before ultimately running their lab. It was there she started wondering what smaller breweries did without the same access to equipment that she had, and the idea for Zymology Labs was born. Despite the name of her business, Amy is quick to remind us that quality isn't just about the lab. She actually prefers the term “quality program,” as it indicates that there are many processes breweries can have in place to help monitor their product without requiring their own lab setup. Passionate about demystifying what a quality program entails and how to set one up, Amy talks us through some of the basic steps any brewery can take to get started. We also discuss the difference between a quality program and a sensory program, and how they complement each other. We then turn our attention to some of the quality issues that have hit industry headlines of late, ranging from ABV mislabeling to exploding cans. Amy helps to shed some light on what causes these issues, how they can be prevented, and how prevalent they actually are. You'll hear Amy stress that quality isn't just about preventing things from going wrong. It's about making sure as many elements of the brewing process as possible go right, so brewers can provide a consistent product for their customers. And if quality's not a priority for your brewery? This month on VT Untapped we hear spooky stories told by Kim Chase of Essex Junction. Kim is a second-generation, bilingual Franco-American and the stories she shares were passed down through generations of her family members. Kim’s maternal grandmother moved from Cap-Santé, Québec to Winooski, VT sometime between 1905-1910. Her mother, Claire Bouffard Chase was born in Winooski. Kim grew up in Massachusetts but spent every summer with her grandparents in Winooski until her family moved back to Vermont in 1970. As well as being a storyteller, Kim has been singing French-Canadian folk songs all her life, which she learned at home as well as through friends and extended family. She has been a French teacher for over 30 years and has taught every age from preschool through college—always incorporating music into her teaching. Kim is also a writer and translator and has published essays, short fiction, articles, poetry and translations for many years. She worked closely with Martha Pellerin as a partner and grant writer, and has received several grants for her own work in gathering oral histories, songs and stories. Recently VT Folklife was lucky enough to collaborate with Kim on a project aimed at revitalizing Franco-American song in Vermont. Selections from her family’s repertoire are part of “A Vermont Franco-American Songbook: Volume 1.” Kim and Carmen Beaudoin Bombardier co-hosted a singing school in Burlington in the fall of 2018 to teach the repertoire to a new group of singers. About the stories: There’s a good chance Kim’s first tale will be familiar to you. Kim and her family call it Abraham et le velours jusqu’au genoux (“Abraham and the velvet up to the knees”), and folklorists generally refer to it using the standard title: Bluebeard. Bluebeard is one of the most widely distributed folk tales in the world. The Aarne-Thompson Uther Types of International Folktales: A Classification and Bibliography identifies it in their numbering system as ATU Tale Type 312: Maiden-Killer (Bluebeard). The version Kim tells is an unusual one—all the more so because it is tied to locations in Quebec and came down to her through an oral tradition traced back through her family’s origins in France. Kim learned the second story from her mother—who learned it from Kim’s great grandmother, Meme Beaudoin. When asked about the title, Kim simply said, “we always called it ‘Meme Beaudoin’s Story’.” In 1995 VT Folklife Center founder, Jane Beck recorded Claire Bouffard Chase telling it, and in 2003 VT Folklife published Claire’s version as an illustrated children’s book under the title, The Ghost on the Hearth.   VT Untapped is produced by the Vermont Folklife Center. Nancy first began to feel chest pain when skiing in Colorado. When she returned to Florida three weeks later, she became short of breath. Nancy went to an urgent care center, where doctors thought that her pain was related to a heart issue. After testing, the doctor diagnosed her with stress. Nancy, knowing better, insisted on further tests and was sent in for a chest x-ray. The x-ray showed an 8 cm tumor in her lung. After rounds of chemotherapy and radiation failed, Nancy opted to participate in a clinical trial at Dana-Farber Cancer Institute under the care of Dr.  Geoffrey Oxnard of the Lowe Center for Thoracic Oncology. She received biweekly infusions of Keytruda, an immunotherapy drug that uses the immune system to attack cancer. Nancy is not currently on any treatment but continues to go in for yearly checkups with her oncologist. She chose Dana-Farber for treatment after a recommendation from her oncologist at a hospital in Vermont. She is supported by her husband, Dave, two sons, Brent and Travis, granddaughter, Kaylee, and two step grandsons, Steven and Bryan. Nancy loves spending time with her family, skiing, biking, snowshoeing, and traveling. Nancy is also an American Lung Association Executive Board Member in Vermont, a hospice volunteer, and a member of Kindred Connection, a Vermont-based organization affiliated with the Vermont Cancer Support Network. She has also started a lung cancer support group to speak with patients and talk them through their journey.

Brand names, children's games, and the etiquette of phone conversations. Those clever plastic PEZ dispensers come in all shapes and sizes -- but where did the word PEZ come from? The popular candy's name is the product of wordplay involving the German word for "peppermint." Also, the story behind that sing-songy playground taunt: "Neener, neener, NEEEEEEEEEEner!" Listen closely, and you'll hear the same melody as other familiar children's songs. Finally, the process of ending a phone conversation is much more complex than you might think. Linguists call this verbal choreography "leave-taking." It's less about the literal meaning of the words and more about finding a way to agree it's time to hang up. Also, Hold 'er Newt, copacetic, drupelet, pluggers, pantywaist, this little piggy, and the word with the bark on it. FULL DETAILS When an Austrian candy maker needed a name for his new line of mints, he took the first, middle, and last letters of the German word Pfefferminz, or "peppermint, "to form the brand name PEZ. He later marketed the candies as an alternative for smokers, and packaged them plastic dispensers in the shape of cigarette lighters. The candy proved so popular that now PEZ dispensers come in all shapes and sizes. A Georgia caller says when her grandfather had to make a sudden stop while driving, he'd yell Hold 'er Newt, she smells alfalfa! This phrase, and variations like Hold 'er Newt, she's a-headin' for the pea patch, and Hold 'er Newt, she's headin' for the barn, alludes to controlling a horse that's starting to bolt for a favorite destination. Occasionally, the name is spelled Knute instead of Newt. The name Newt has long been a synonym for "dolt" or "bumpkin." Lord Byron continues to make readers think with these words about language: But words are things, and a small drop of ink, falling like dew, upon a thought, produces that which make thousands, perhaps millions, think. Why does the playground taunt Neener, neener, neener have that familiar singsongy melody? Jeffrey Salzber, a theater lighting designer and college instructor from Essex Junction, Vermont, says that when explaining to students the need to be prepared for any and all possibilities, he invokes Salzberg's Theory of Pizza: It is better to have pizza you don't want, than to want pizza you don't have. Quiz Guy John Chaneski's latest puzzle involves changing a movie plot by adding a single letter to the original title. For example, the movie in which Melissa McCarthy plays a deskbound CIA analyst becomes a story about the same character, who's now become very old, but still lively and energetic. Don't let anyone tell you otherwise. Although there are many proposed etymologies for the word copacetic, the truth is no one knows the origin of this word meaning "fine" or "extremely satisfactory." A drupe is a fleshy fruit with a pit, such as a cherry or peach. A drupelet is a smaller version, such as the little seeded parts that make up a raspberry or blackberry. It was the similarity of druplets to a smartphone's keyboard that helped professional namers come up with the now-familiar smartphone name, Blackberry. A caller from University Park, Maryland, wonders what's really going on when someone says That's a great question. As it turns out, that is a great question. This little piggy went to market, this little piggy stayed home, this little piggy had corned beef and cabbage, this little piggy had none. At least, that's the way a caller from Sebastian, Florida, remembers the children's rhyme. Most people remember the fourth little piggy eating roast beef. Did you say it a different way? Tell us about it. The Japanese developers of an early camera named it Kwannon, in honor of the Buddhist goddess of mercy. Later, the company changed the name to Canon. A Zionsville, Indiana, man recalls that when his mother issued a warning to her kids, she would add for emphasis: And that's the word with the bark on it. The bark in this case refers to rough-hewn wood that still has bark on it--in other words, it's the pure, unadorned truth. A customer-service representative from Seattle, Washington, is curious about the phrases people use as a part of leave-taking when they're finishing a telephone conversation. Linguists who conduct discourse analysis on such conversations say these exchanges are less about the statements' literal meaning and more about ways of coming to a mutual agreement that it's time to hang up. Incidentally, physicians whose patients ask the most important questions or disclose key information just as the doctor is leaving refer to this as doorknobbing or getting doorknobbed. Tokuji Hayakawa was an early-20th-century entrepreneur whose inventions included a mechanical pencil he called the Ever-Ready Sharp Pencil, and later renamed the Ever-Sharp Pencil. Over time his company branched into other types of inventions, and its name was eventually shortened to Sharp. A rock or particle of debris out in space is called a meteoroid. If it enters the earth's atmosphere, it's a called meteor. So why is it called a meteorite when it falls to earth? If someone's called a pantywaist, they're being disparaged as weak or timid. The term refers to a baby garment popular in the early 20th century that snapped at the waist. Some people misunderstand the term as pantywaste or panty waste, but that's what linguists jokingly call an eggcorn. A pair of Australian men interrupted their night of partying to foil a robbery, and captured much of it on video. They went on to give a hilarious interview about it all, in which one mentioned that he "tripped over a sign and busted my plugger." The word plugger is an Aussie name for the type of rubber footwear also known as a flip-flop. The Fight of Her LifeBy Sean CooleyEssex Reporter StaffPeggy Mattes could have fallen apart back in 1995 when her 12-year-old daughter Caitlin was diagnosed with neuroblastoma, a rare cancer found mostly in children that attacks the nervous system. Caitlin’s cancer had advanced to stage four and she was given less than six months to live with a 95% mortality rate.Peggy could have fallen apart after nine chemotherapy treatments and two stem cell transplants over the next year and a half couldn’t send Caitlin’s cancer into remission.Peggy could have also fallen apart when Caitlin eventually lost her battle with cancer on Dec. 20, 1996 with a funeral on Christmas Eve.“When she died, I just lost it and didn’t know what to do, I had difficulty even getting up in the morning or taking a breath because I felt like my heart was going to break,” Peggy said.But 12 years later on June 20th,Caitlin’s birthday, Peggy wasn’t mourning another year not seeing both of her daughters growing up. She was instead celebrating Caitlin’s life, walking in the Relay for Life in Essex Junction and speaking to thousands during the opening ceremony to share her memory.Peggy makes sure no one forgets the friendly and energetic 13-year-old girl who aspired to be a lawyer and one day live in Montana amongst her horses and dogs and is now the shining symbol for the Mattes relay team Caitlin’s Crew. The team including Peggy, Caitlin’s father Keith and sister Kristin, has walked each year since Caitlin’s death with members competing to fundraise, raising $33,254.00 for the 2008 relay.“When she died, I just lost it and didn’t know what to do, I had difficulty even getting up in the morning or taking a breath because I felt like my heart was going to break,” Peggy Mattes.As this year’s relay coincides with Caitlin’s 25th birthday, it’s a time for the Mattes family to reflect, laugh, cry and move through another stage in the healing process. The event is another opportunity to continue Caitlin’s fight by promoting cancer awareness and challenging others to give to the cause.Peggy is now a co-chair for the American Cancer Society educational committee and makes it her mission to keep the rest of us informed of the simple ways we can help others – by donating blood or bone marrow, volunteering for events like the Relay for Life – and help ourselves – by quitting smoking, getting routine checkups.After being diagnosed Caitlin sought two promises from her mother – to never leave her alone and not to cry. While Peggy can’t help but tear up when traveling back to the days she lost her daughter, the Mattes family still holds to that second promise, never leaving Caitlin out of their thoughts and hearts.“I know that she’s there,” said Kristin Mattes, 23, of her sister Caitlin. “Whenever I’m scared or I don’t know what to do, I think about the pain that she went through and how much she did and its just amazing.”On Friday the Mattes’s once again set up camp alongside a community that knows all-too-well the heartbreak that cancer brings. Campsites are lined with thousands of luminaries, each representing a story just like Caitlin’s, another unextinguished glimmer of hope.
