Jordon's Facebook page is now close to 4k followers and all of them are REAL potential customers (versus other flower farmers) 3) In less than 6 months, Buttercup has exceeded sales expectations and outperformed the farmers market as a sales outlet. We are going to dedicate about 50% of our time talking high level about spring lessons learned including how Jordon accelerated Buttercup's success and then spend the other 50% talking about lessons learned with spring flowers. In this episode of GoGreenfields, River and Terran talk indoor gardening with an expert on the subject. Gardening: Did you Know? Did you know that more than 50% of the food grown in this country goes to waste? It feeds the bottom of trash cans, instead of feeding the millions of Americans that rarely get to taste freshly grown foods. LettuceGrow saw the problem and set out to help the average American - even city dwellers - start their own mini farms. It is all done simply, conveniently, and takes up very little space, thanks to the Farmstand. Meeting an Indoor Gardening Guru For this episode, River and Terran met with LettuceGrow's co-founder, Jacob Pechenik, so we can learn more about LettuceGrow's take on sustainable food. Jacob is a graduate of Massachusetts Institute of Technology and a longtime farming and gardening enthusiast. He's founded or co-founded multiple brands devoted to solving problems related to food, addressing issues such as logistics, waste, chemical use, and more. After growing all of these fantastic veggies, we had to prepare something for the family. The following is the recipe we used. Feed the Family: Garden Fresh Lettuce Wraps Ingredients 2lbs ground chicken 2T avocado oil 1 small onion, minced 2 cups bell pepper 1 can water chestnuts, minced 4-6T soy sauce 6T hoisin sauce 2T sesame oil 2T rice vinegar 2T peanut butter 2T honey 2 cloves garlic, minced ¼ tsp ginger Directions In a small bowl, combine soy sauce, hoisin sauce, sesame oil, rice vinegar, peanut butter, honey, garlic, and ginger. Set aside. In a frying pan, heat the avocado oil and add ground chicken. Cook until browned. Add onion to the pan and stir over medium heat until onions are translucent. Add peppers and minced water chestnuts and cook until peppers soften. Reduce heat to low, and add sauce mixture. Stir for 2 minutes, then remove from heat. Serve on bib lettuce. So I think the fundamental thing is like, when we started Farmstand, I think that the foundation of everything is our values, behaviors, and ultimately what you stand for as a business. In any business you start or you join, I think you have to be very values-driven. And so for us at Farmstand, that's been a real big driver. And so one of our big values that we really centered around, especially in the environment we're in, is making sure that what we're doing has zero food waste, zero packaging waste. We're a B Corp certified business, just like Patagonia or Ben and Jerry's. So these are kind of some of the things that are really important. I think that if you don't have the right foundation when you start a business, you can't grow from that. I started my business fairly young and didn't have that foundation fleshed out. But it's definitely been a core focus of mine, and something I communicate to my team and even clients – when we're talking about their marketing and their messaging – is that it comes down to what is it that you believe, that's going to help attract the type of people that align with your thinking and your philosophy? Yeah, I think that's right, and ultimately your customers are going to follow you and get excited based on what you do. So we ultimately want people to take a stand – and take a Farmstand for that matter. So it's on affordability; you know, healthy meals shouldn't just be for the wealthy. And you ultimately want these meals to be healthy. So no added sugar is a really important thing. I mean, 73% of the US population now is overweight or obese, if you eliminate sugar, that helps a lot. And then ultimately, we all are short on time. And so you can pop our food in the microwave, and you have to be ready in three minutes, or boil some hot water and you can make that happen. In that way we kind of describe our business as a build-your-own-salad bar meets Uncle Ben's Ready Rice, because our pouches, which are our meals, are basically a base, a main, and a side, they all come separate, so you just put them in boiling hot water, and that's a really great solution. And then now with the environmental problems that we're having, and the increasing temperatures, making sure you have zero waste. So what's great about us is we have no food waste, we have no packaging waste, and after three deliveries, customers can return all the packaging to us. And we reuse that. So we effectively make a profit on the return which is great for us, for growing our business. So I hear you've been writing a book for about five years now. It's something that I wanted to do for a while. You read books like Shoe Dog, written by Phil Knight about Nike, and other books out there about your experience. Our business effectively started as a dark kitchen, and we were mostly a B2B play pre-COVID. So we had 12 Farmstand branded concessions inside large corporations like JP Morgan, Barclays, BlackRock, and KPMG, when COVID hit, we had to shut that entire business down. And we started completely from scratch. So the book is called Keep going. So the five things you do when things get difficult, and this is not only in work, but in life. The first thing is that you write down the list of the problems when things get difficult. The second thing is you come up with, hopefully, a set of potential solutions to those problems. The third thing you do is you, you know, ask for help. And then the fourth thing is you start executing on those things. And then the fifth thing, ideally, is that when you fix your problems you try to help other people. That's the general idea around the five things. And, you know, I think in life, it's the same thing, when you have a, you know, you have something, it's difficult, you have to really think about what the problem is and, and be rational about it and try to come up with solutions. So I think whether it's work or life, you really want to rally around, just keeping things as simple as possible, trying to be as rational as you can about it, whether it's a relationship with your partner, or with a work colleague, or it's work in general, you have to be solution-oriented. It's one of the things that we believe at Farmstand, one of our behaviors, people can talk about anything they want with us, or complain about anything they want. But ultimately, you need to find solutions to problems, not just simply complain about them. What's the timeline to get the book wrapped up? Well, with restarting the business from scratch in February, and the business growing, you know, more than 20% a month, you know, since we started, you know, folks right now are raising a bit more venture capital, which we just started doing. We're part of an accelerator in Milwaukee, which is how we met called generator, which is, you know, top 10 nationwide business accelerator. So we're focusing on raising capital right now, you know, and if we're here at the end of January now, it would be nice to get something out probably by next year is kind of the idea, maybe to coincide with us launching our business in the US. I think every opportunity we have, when we're walking down the street or in the park, or in a grocery store, or wherever we have an opportunity to meet people, I don't actually like the word "networking". Connecting with people is how I view it. I'm actually much more of an introvert. People have a hard time believing that because I can get up in front of large groups of people and talk, but my natural inclination is to be more of an internal person. So I think on the networking side, I think the best thing to do whenever you're reaching out to people, LinkedIn is probably the most helpful platform that's out there to help you build a business. And I think if you're genuine in your approach, and you're honest about things, I think people generally respond very well to that if you open up by trying to sell something, or super aggressive or send repeated emails, it's not going to work. So I think you're always putting yourself in the other person's shoes. So whether it's, for us in the case of trying to contact people or food service providers, or corporates, or people looking to help us, you know, that's, that's kind of how I've gone about, I guess, you know, networking or connecting with people. I think a lot of times what is super helpful, whether you're trying to raise capital, or you're trying to build your business, is getting introductions through other people. And the easiest way of getting your introductions to other people is preparing an email that's very simple, very short. And to the point, asking someone to make that introduction, it's clear what you want the reduction for, and then they can just forward that email on to other people. So I think, you know, one, you know, example of a relationship that helped get our B2B business started as we went to our first office catering relationship was with JP Morgan, and a friend of mine, Stefan happened to work there, run a division. We had a pop-up restaurant in my house before we started the business. He came over like we were doing when we had a gathering, you know, to kind of launch the business, his daughter came along, and most of our food is gluten-free. And she was like, hey, you know, Dad, wouldn't it be great if you had this at JP Morgan? So Stefan was able to make an introduction to Aramark, which was the food service provider. And then the person that worked at JP Morgan oversaw the relationship with Aramark and effectively headed food services for JP Morgan. So there's a good example of using effectively a friend and obviously the help from his daughter who liked the food, you know, proposing the idea that progressed with us, that was our first relationship with an office caterer. And that led to our second with Compass. And then the third is with ISS, which is based in Copenhagen in a very large relationship for us now. Yeah, I love that. And then just letting being clear on what type of connections you're looking for makes it so much easier for someone to make that connection actually turn into reality. But there's like three ways to describe people, either you're a giver or a taker, or you're kind of a bit of both, I'm definitely a giver, I don't expect anything in return. So if I happen to be talking to someone or having a chat with someone a couple days ago, looking to invest in our business, he works in a sector that's not really similar to ours. And I happen to know someone that knows a lot about his sector, that also runs an investment fund. And I said, Hey, you know, you're looking at potentially moving into this investment field, you can probably talk to my friend, he didn't ask me to do this. But I think just volunteering and, and willing to help other people out, usually, that comes back and helps you as well. So I think being a giver versus a taker generally works to your advantage, you don't want to be taken advantage of because you also may have to do your own job. But I think being generous with our relationships and our network with other people can be a useful thing, too. What advice would you offer the business professional who's really looking to grow their network? So the first thing about me, which is kind of maybe a bit odd, is I never offer advice. I'm not a person that offers advice, because that presumes that I know more than the other person. And nine out of 10 times, I probably don't, even though I read sometimes up to a book a week. But what I do is offer suggestions, but only when asked. So my suggestion, you know, if you're going to try to grow your business, whatever it is, whether it's a B2B business, or direct consumer business is figuring out like, if especially if it's gonna be focusing on sales or, you know, looking at ways of network effects, which Reid Hoffman talks about in his book, "Blitzscaling", is ultimately look for the two or three or four contact contracts or relationships that could potentially lead to large revenues, versus taking in, so be more of a rifle shooter or a sniper versus using a machine gun approach. And just try to keep the approach, very targeted, very focused, versus being too broad-based. When you launch a business even for us. There's a lot of things we could not have done to launch our business. We, you know, initially started off our business, you know, meals for four, and that was portions for four, then we started with meals for two. And ultimately, we settled on meals for one because individuals are probably easier to market to than families at the end of the day. If you could go back to your 20-year-old self, what would you tell yourself to do more or less of, or differently with regard to your professional career? Well, it's a really good question. I really haven't thought much about that. But I would say to anyone, especially when you can look in the rearview mirror, is always work with people that have, you know, good values and good behaviors, because ultimately, being around good leaders has the right influence long term. And I think some of the jobs I've taken in the people I've worked with, some of them have had exceptional ethics, and others haven't. So I think the 20-year-old self would be, you know, focused on working with really high-quality people and high-quality organizations, because that will lead to further opportunities with similar people in businesses. In this episode we’re joined by Deborah Stone, who has been friends with Deanna for over 25 years who went from the spa to the farm. When they met, Deborah owned the first day spa in Birmingham. She would eventually move on and reinvent herself by selling her business and buying her farm, Stone Hollow Farmstead. Deborah discusses community-supported agriculture (CSA) during the episode, including what it is and how it supports the local community. Deborah explains that CSA supports farmers during their down time. Essentially, shareholders financially support the farm in advance to grow fresh produce for them in the upcoming season. What this also provides is food security, which is more important to people now than before the pandemic. What shows up in your CSA box is a surprise each time, which can be really inspiring. Typically, CSAs are following organic practices too. If you’re not sure, know it’s always okay to ask a farm about their particular practices. Deborah describes her CSA as a hybrid because they also include and support other farmers as well. Being part of a CSA not only supports local farmers, but it also helps you eat healthy and eat in season. Eating fresh produce that’s in season is very nutrition supportive. When you go to the grocery store, you aren’t always aware of where your produce is coming from - but this is not the case when you join a CSA. On this episode of Growing with Letty & Lucy, we explore the topic of what to do when. you get your Farmstand! Where do you set it up for the best results? What do you need to have access to, if you want to actually have a lush, picture-worthy tower of abundant bounty. How much room does it take? Can I grow indoors (the answer is yes, but we are still looking for an expert indoor grower to be a guest on the show!)? All of the natural questions you may have are answered here... and we even give you all the details you'll need for Tara's delicious "Chimichurrrrr-ish" recipe (it's below too, but we talk at length about it on the show!). XO, Letty & Lucy RECIPE: Chimichurr-ish *This adaptation of the herbaceous South American sauce. Chimichurri is a delicious way to use up lots of herbs. Use this as a guide, but have fun switching it up to your tastes and what you have on hand. 1 Cup rough chopped Herbs (make sure you are measuring the chopped herbs, not unchopped). This can be a mix of almost anything on your stand. Traditionally this is made heavily of parsley, a small amount oregano, maybe cilantro. You can do basil, garlic chives, thyme, mint is delicious. 1 Cup good extra virgin olive oil 1/2 Cup Vinegar. Traditionally, this would be red or white wine vinegar, but any lighter vinegar you have will work. Sherry, champagne, even rice wine. 3-4 garlic cloves Salt & fresh pepper to taste Extra credit: Jalapeño or red pepper flakes for spice. Dried oregano (2 tsp) if you didn't have fresh to add. A little citrus, lemon or lime, either some zest or a small squeeze. If you love citrus, you can add more, just pull back a bit on the vinegar. Throw everything in a blender or food processor & pulse to desired consistency. Traditionally chimichurri is on the chunky side. This can be accomplished by finely chopping everything by hand or by being careful to not over mix in a blender. I like it a little smoother, so I just use a blender. This can be stored in the fridge for at least a week. I like to live on the wild side and will keep it a few weeks. Episode 77 Gluten Free London Traveling to London? You’re in luck! Episode 77 is targeted toward gluten-free food in London! Listen in to find out how you can find gluten-free food in London, what restaurants I loved to eat at and the European Allergen Codex and how you can use this allergen codex while you are traveling in Europe. Find fabulous places to eat and a new trick I learned on how to find gluten-free places to eat when you’re traveling abroad. If you’re interested in fun gluten-free food, London, England is the place you want to visit! You’re bound to find gluten-free in many food ethnicities when perusing London restaurants. Like fried food? No worries! London is teeming with food establishments that have dedicated fryers. I’ve eaten more than my fair share of fried food while in London, and I believe you will too! Want to eat a delicious gluten-free dessert from a dedicated gluten-free bakery? You’ll find many dedicated bakeries, so eat pastries, doughnuts, and croissants to your heart’s content - and remember to leave space in your luggage to bring home goodies you’ve acquired from London! European Allergen Codex European Allergen Codex is a system in which you can easily see what allergens are in different foods in restaurants. When you use this system, remember that they list the opposite of the US - where we show what foods you CAN eat, the European Allergen Codex shows which allergens are in the food. For example, if you see the letter “G” next to a food, that food contains gluten and is NOT gluten-free. This Codex is the same system across the countries in Europe which I have traveled, which is nice to worry about one less thing when you are eating while traveling. If the restaurant doesn’t have the Codex Allergen list on their menu, as the maitre’d if they have an allergen menu as they may have a few copies of a special menu which labels allergens. Many restaurants I ate at in Europe were very accomodating and went out of their way to serve safe food.i Better Quality Food in London and Europe With the exception of the plane ride, I’m always excited about traveling to and in Europe, especially when I think about the amazing food I’m going to eat. The quality of food is much better, as many foods are locally sourced and fresh. Europe does not use GMO and modified foods on the scale as we do in the US and factory farming isn’t their mainstay for raising food. Because of these factors, the food in Europe tastes better, and has less of the chemicals and hormones which we have in our food. I’ve heard from other Celiacs that they can eat the dairy in Europe, but not the US. I have experienced the same. While I can eat imported dairy without issue, American dairy poses many digestive issues for my system. Vegetarian and Vegan Options in London My daughter Aliyah is Celiac and vegetarian, which offers yet another level or two of complexity when we eat out. In London, however, there are quite a few options for those who are both gluten-free and vegetarian or vegan. I’ve even come across vegetarian restaurants who offer many gluten-free options on their menu! There are many vegetarian and vegan options in general in London. Additionally, many restaurants also offer dairy-free! Gluten-Free Friendly Restaurants in London My favorite restaurant in London, by far, was Honest Burgers. Located at 9 festival terrace, South Bank, London. They have dedicated gluten-free fryers, onion rings, burgers, can eat all fried foods. They also have gluten-free brews, incredible to eat burger, onion rings and brew together Gourmet Burger Kitchen is a chain restaurant with about half a dozen locations in London. GF bread, buns, dessert and gf menu. Lunch, vegetarian-friendly and takeout are offered. Wagamama which Jenny from GFYGF and I talked about in episode 72 is a chain that is safe for celiacs. They have a gluten-free menu, dedicated kitchen space, and amazing smoothies! Cotto Italian Restaurant Pizzeria at 89 Westminster Bridge has a dedicated kitchen space, features Italian food has gf bread, beer, appetizers, pasta, pizza, dessert and is dairy-free friendly. Leadbelly’s Bar and Kitchen at Montreal House market Square has a dedicated fryer and waffles, bread, fish and chips, spicy meatballs tons of gf df options. Mango Tree, 76 Grosvenor Place, Belgravia, London amazing Thai food and many gf options. Vegetarian, late night, lunch. Look for pics on IG! Great atmosphere, excellent service. People rated this pricey, but for the food you get, I didn’t think this was a pricey option. Dishoom is Indian fair, vegetarian and celiac-friendly. Dairy-free, vegan and Late-night Indian restaurant. Three locations in London and is great for burgers. Tower Tandoori Indian, vegetarian and celiac-friendly. Best Indian food I’ve ever eaten. 74-76 Bridge Rd., Bermondsey is the perfect place for gluten-free and vegan or vegetarian. Mattarello Restaurant, 3 Middlesex London. Italian, celiac friendly, gluten-free pasta and dessert. Duck and Waffle, Heron Tower, Bishopgate, London. Allergen list, waffles, late night, definitely go there for a late-night, gluten-free waffle! Cote Brasserie, 26 Ludgate Hill, London. Has a dedicated fryer, dessert, fries, dairy-free friendly, late-night and local chain. Dedicated Gluten-Free Restaurants in London Dedicated gluten-free try Niche restaurant and bar at 199 Rosebery Ave., Clerkenwell, London. Like Honest Burgers, they have gluten-free brews, and of course, their entire menu is gf. Cheesecake, dessert, onion rings, and soup and quiche. Offer brunch, lunch, vegetarian and vegan-friendly. Indigo Restaurant One Aldwych hotel is dedicated to gluten-free. Besides gf, they are dairy-free friendly and open late. Station 26 Gluten Free Restaurant on Coldharbour Lane, has crab cakes, with English and Irish fare, dairy-free friendly and kid-friendly, vegan and outdoor seating. With days to go before the election, we put New England’s changing political DNA under the microscope with pollster and University of New Hampshire political scientist Andrew Smith. We also have an update on the roadside outhouse turned voting booth from Episode 11. Plus, renewable energy is best for the planet, but reality here is a little…gassier. And we take a detour from the campaign trail and head for the hills, and mountains. One of These Things is Not Like the Others Should New Hampshire’s outsize roll in presidential politics be reconsidered? (Credit: NHPR) New England is seen as reliably Democratic. Along with New York, it's part of a big blue blob in the upper right hand corner of those election maps we've seen all too much of. But it wasn't always like this. And, as we know, there's one state, with a famous independent streak, that has always been a little different. A poll by WBUR in Boston – taken less than a week before election day – shows Republican Donald Trump pulling slightly ahead of Democrat Hillary Clinton in New Hampshire. While the Granite State seems like an outlier, political scientist Andrew Smith says it's really the last state in a regional shift from Republican to Democratic that's been happening across decades. We invited him into the studio to learn about how and why New England's political DNA is changing. Smith teaches political science at the University of New Hampshire, and directs the UNH Survey Center. He's co-author of the book The First Primary: New Hampshire's Outsize Role in Presidential Politics. New Hampshire voters may take elections seriously, but a few weeks back we met one Granite Stater who definitely doesn't take them too seriously. Chris Owens hung a sign reading “Official NH Voting Booth” on an outhouse at his farm stand, and invited visitors to “cast their ballots” for Trump or Clinton in one of two toilets inside. Gas Pains For months, clean energy advocates have been anxiously awaiting the results of a contest of sorts. It was a request for proposals by the three Southern New England states, Connecticut, Massachusetts and Rhode Island, to build new project that would help the region meet both its greenhouse gas emissions goals – and overall energy needs. When the winners were unveiled, there were some big surprises. First, the mix of wind and solar projects, totaling 460 megawatts, are largely located in southern New England. That means large wind farms proposed in northern Maine, and a transmission project for Canadian Hydro-Power lost out. (Credit: Nati Harnik/AP) The other big surprise was that the state of Connecticut pulled the plug on another plan, to construct more natural gas pipelines in the state. It was prompted by previous decisions in Massachusetts and New Hampshire that said it was unconstitutional to pass along the cost of building pipelines to electric customers. That would have left Connecticut ratepayers on the hook – without help from their regional neighbors. (Credit: Adam Frenier/ NEPR) This might mean the end of big pipeline projects like “Access Northeast.” And, it raises questions about the need for more gas-fired power plants, including those that have met with local opposition in Connecticut and Rhode Island. But Connecticut officials are saying, “not so fast.” Right now, New England gets more than 50 percent of it's power from gas, and state regulatory commissioner Katie Dykes says the fuel is necessary for the region to provide reliable, year-round power – even as it invests more in renewable energy. Dykes been part of this process in her previous role as Connecticut's Deputy Commissioner for Energy. She told us that the decision to halt the pipelines was done to protect ratepayers in her state. Take a Hike If you’re thinking, that tree couldn’t have grown that way naturally, your instincts are correct. (Credit: John Voci/NEPR) If you spend any time walking in the woods, you see a lot of strange looking trees — trees shaped by the wind, or split by lightning. And — occasionally — some twists and turns are man-made. When walking in the woods near his Putney, Vermont, home, Dan Kubick discovered a most unusual tree. (Courtesy of Peter Thomson) You might know someone who’s gone out looking for his or herself along the Appalachian Trail. Next year will mark the 80th birthday of the 2100- mile footpath. A third of the trail runs through New England, including its most rugged parts, ending at the summit of Mount Katahdin in Maine. Emma “Grandma” Gatewood made headlines when she became the first woman to hike the entirety of the Appalachian Trail, back in 1955. She was 67 years old, and wore Keds. Sound Food began in 2007 with a Sustainable Bainbridge farm-mapping project designed to answer the question: “How do I find local food in this community?” An updated version of the resulting interactive online map can still be found on the Sound Food website at http://SoundFood.org In this podcast episode, two co-founders of Sound Food - Sallie Maron and Carolyn Goodwin - discuss the various past and current activities of Sound Food -- connecting local residents to local food. In this podcast episode, Sallie and Carolyn describe the innovative ideas that have been introduced by Sound Food over the years -- such as the ferry terminal farm stand, which was a big hit. Over the years, Sound Food organizers found their vision expanding to include the whole food system including production, processing, distribution, consumption and waste/compost. In late July, the first session of the group attracted about 20 people, who had fun making spring rolls from local ingredients.
