“I love matzo! I eat matzah year-round as a snack.” —Ashley Albert “The goal is to do something out of the box that people wouldn't normally do to give matzo a rebrand.” —Jeremy Nelson Passover is a joyous springtime holiday that celebrates freedom and renewal. At the heart of the Passover seder meal and ritual is matzo, an unleavened flatbread that represents the hurried departure of the Israelites from ancient Egypt. Made simply of flour and water, matzo takes center stage during the week-long celebration as a symbol of the oppression the Jews endured. However, modern chefs and food entrepreneurs are putting a fresh spin on matzo, rebranding it as a versatile ingredient for light and healthful spring recipes. Companies like The Matzo Project are keeping matzo traditions alive while introducing new ways for people to celebrate Passover with healthful, innovative recipes. The Matzo Project Founder, Ashley Alberts returns to the Essential Ingredients Kitchen along with Floura's Chief Product Officer, Jeremy Nelson to share new recipes and partnerships that are continuing to push the boundaries of what's possible with Matzo. Tune in as Justine, Ashley, and Jeremy share the beginnings of The Matzo Project, Jeremy's journey as a plant-based chef, a recipe for Mexican Matzo Ball soup from Chef Fany Gerson, exciting new potential products from Ashley and Jeremy's collaboration, and more. Meet Ashley: Ashley Albert is an accomplished American voice actress, singer, and entrepreneur, born in 1973 in Miami Shores, Florida. With a multifaceted career spanning various industries, Ashley has left an indelible mark on each endeavor she undertakes. However, Ashley's entrepreneurial journey took an unexpected turn when she revisited a long-dormant idea from her past. In collaboration with her old friend Kevin Rodriguez, Ashley resurrected her concept of artisanal matzo, inspired by a childhood encounter with her neighbor's pizza shop. What began as a nostalgic reminiscence evolved into "The Matzo Project," a thriving enterprise that revolutionized the traditional Jewish cracker. With unwavering determination and a commitment to quality, Ashley and Kevin embarked on a journey to redefine matzo, infusing it with innovation and culinary excellence. Their meticulous attention to detail, coupled with a bold and unconventional approach to branding, propelled The Matzo Project to unprecedented success. From humble beginnings in a small bakery in Coney Island to securing coveted placements in prestigious establishments like Zingerman's and earning recognition from cultural icons like Oprah Winfrey, The Matzo Project has become a testament to Ashley's entrepreneurial vision and Kevin's dedication. While Kevin oversees the day-to-day operations of The Matzo Project, Ashley remains actively involved, infusing her unique perspective and creative flair into every aspect of the business. As she reflects on the remarkable journey they've embarked upon, Ashley's pride in their accomplishments is palpable, serving as a testament to the power of perseverance, creativity, and the enduring bond of friendship. Preaching for Palm Sunday, Elsie Miranda offers a reflection on the cost of discipleship: "It is my hope that as we prepare ours minds for Holy Week, with palms in hand—may we might find new meaning in the passion--- that calls us to renew how we understand our call to discipleship—and thus discover that the cost of discipleship simply requires that we be open to encountering Christ along the way -- open to seeing, feeling, and experiencing the betrayal, abandonment, denial and crucifixion of Jesus in our time-- in the suffering of those in our midst." Dr. Elsie Miranda is Associate Professor of Practical Theology and Director of Ministerial Formation at Barry University in Miami Shores, FL. She served as President of the Association of Catholic Hispanic Theologians of the United States and since then has been committed to promoting theological discourse and dialogue across cultural and disciplinary boundaries. This podcast episode features the story of one of South Florida's prominent municipalities on the northeastern section of Dade County. What was once part of an area referred to generically as ‘Biscayne Country', it became America's Mediterranean when the Shoreland Company purchased and platted the future Village of Miami Shores. The development of Miami Shores began to market property during the peak of the 1920s building boom and set records for lot sales in a single day. However, the Shoreland company took on too much debt and had to file for bankruptcy after the boom abruptly ended in 1926. Miami Shores was completed after new investors took over the project, and the area incorporated as the Village of Miami Shores on January 2, 1932.

Fast forward to mid-way through 2021, and we had a colorful and honest discussion about the challenges of running a city through a pandemic while also being a mom, the historic #GeorgeFloyd movement in the Shores, new projects and #economicdevelopment in her city, white allies to combat racism, and much more! Equally humble as she is hilarious, Crystal, who hails from Des Moines, Iowa, is a devoted mother of 2 beautiful girls, wife to the former U.S. Ambassador to Singapore, Kirk Wagar, a most hospitable friend, attorney, public servant, and has a Rolodex more impressive than Simone Biles’ triple double. In the private sector, Crystal worked at two prominent South Florida law firms prior to opening her own boutique advocacy firm, the Connor Group Miami. Incredibly intelligent, accomplished, poised, and hella fun, what’s most admirable about Crystal (in my opinion), is her spirit of authenticity and staying true to who she is in.

The Florida land boom of the 1920's was Florida's first real estate bubble, which burst in 1925. The land boom left behind entire new cities, such as Coral Gables, Hialeah, Miami Springs, Opa-locka, Miami Shores, and Hollywood. The boom eventually fizzled out as disaster followed in the shape of the September 1926 Miami Hurricane, which drove many developers into bankruptcy. In 1925, some 7,000 people seeking a new life and perhaps a new fortune entered Florida each day. In Massachusetts alone, owners of more than 100,000 bank accounts used their savings to invest in Florida land. Deposits in Florida banks increased 400 percent in three years. Ohio politicians were so shocked by the size of the wave of cash flowing southward that they banned Florida real estate firms from doing business in their state. The 1928 Okeechobee Hurricane and the Wall Street Crash of 1929 continued the catastrophic downward economic trend, and the Florida land boom was officially over as the Great Depression began. The depression and the devastating arrival of the Mediterranean fruit fly a year later destroyed both the tourist and citrus industries upon which Florida depended. In a few years, an idyllic tropical paradise had been transformed into a bleak humid remote area with few economic prospects. Florida's economy would not recover until World War II. Mayor Crystal Wagar is the first black woman to be elected as the Mayor of Miami Shores in the eighty-seven-year history of the city and she not only got elected but elected by a historical margin and turnout! No one runs for elected office thinking "what do I do in the event of a global pandemic", but that is exactly what America's mayors are doing now. Without a national protocol and in many cases a state protocol the decisions on policy and guidance has fallen on the desks of those in many cases without the financial resources to execute effective plans for their constituents. Mayor Wagar has faced this challenge along with many other mayors around the country and is effectively guiding her city and its constituents through this global pandemic. Covid-19, the coronavirus, is wreaking havoc on our nation’s municipalities, creating financial instability and forcing local officials to make very unfavorable decisions, but Mayor Wagar is leading boldly, leading with compassion and empathy, and leading for the future. Insightful and gracious join me for my conversation with Miami Shores Mayor Crystal Wagar.
Coach Agumagu shares his journey from leaving Nigeria at the age of three to move to Miami. FL and then becoming a NCAA DI Assistant Coach. He grew up in Miami and enjoyed it so much that he accepted a Preferred Walk-On spot at Barry University in nearby Miami Shores. The team had unprecedented success under Head Coach George “Butch” Estes. He helped the Buccaneers win a school record 26 games, a Sunshine State Conference regular season championship, the program’s first Regional Championship, as well as an Elite Eight berth for the first time in program history. In his three years with the Buccaneers, Agumagu had a hand in 70 wins and a plethora of AP Top 25 rankings. After graduating he stayed in South Beach accepting an Assistant Coaching position at St. Thomas University, an NAIA school in Miami Gardens, Florida. In his first year of coaching, Agumagu was the lead assistant for Head Coach Patrick Gayle. Agumagu assisted the Bobcats men’s basketball program to a 20-9 overall record, as well as multiple Top 25 ranks, including a ranking as high as fourth in 2016-17 with wins against NCAA DII Nova Southeastern (2) and eventual NAIA National Champions, Union College. His hard work and genuine relationships led to him being offered a DOBO position at NCAA DI Coppin State University under Juan Dixon. After just one season he was promoted to a full time Assistant Coach and has been a part of increased win totals in each of his four seasons on staff as well as tying a school record for most non-conference wins with four (Loyola Chicago, James Madison, East Carolina, and Cornell). Coach also talks about having their season cut short due to COVID19 and what it's like to work for a former NBA player who was drafted by - and played alongside Michael Jordan!
Peter Schorsch hunkers down with Kelly Mallette, Director of Government Affairs at Ronald L. Book, P.A. Mallette, a native of Biscayne Park neighborhood between North Miami and Miami Shores, lives just three blocks from her childhood home today. She shares a recap of her Mother's Day and tells listeners about her family, including her two children ages 12 and 9. Mallette gets into the nitty gritty of why lobbyists were so busy at the beginning of the pandemic, reading and intepretating state, county and city orders for industry closures and the requirements for essential businesses, and then communicating those orders to clients. She also reminds listeners that the government is essential, and never stopped working during this crisis. She says lobbyists continue at a break neck pace as reopening orders roll in and clients begin to get back to work. Mallette talks about the economic consequences of the pandemic, and explains why her firm continues to work with clients who are feeling the brunt of closures and the economic downturn. It's not about the next eight weeks, she says, but the next eight years. Peter asks Mallette what it's like to work for the legendary Ron Book - and the answer might surprise you. Peter finishes off the podcast asking his typical Hunkering Down questions, including, "What are you reading, listening to and watching?" And, "When did the pandemic get real for you?" Mallette says the seriousness of COVID-19 got real when Disney World closed its doors. Special Guest: Kelly Mallette.

Homeless is the latest project from artist and past Radio Juxtapoz guest, Axel Void and his ongoing residency, Void Projects. In association with Fifth Wall TV's and Radio Juxtapoz co-host Doug Gillen, Homeless offers an intimate insight to life inside Axel Void's Miami residency. Over a period of two weeks, Miami based artist Alejandro Dorda invites roughly 15 artists from around the world to stay in his house to eat, sleep and create together. Throughout the experience the artists are asked to explore their relationship to concept of "home" through their work. The residency culminates with the house transformed into a very special kind of exhibition. The aim is to create quality shows outside of the conventional art scene, cutting the middlemen, galleries or institutions. Favoring the direct dialogue from the artist to the public. For this second edition of Homeless, Void Projects proposes a show and residency formed by local, national and international, classical painters. As well as live music, gastronomy and installations. The works will be presented with in a quotidian home environment. It is a old house built in the 1920's situated in North Miami just outside of the wall that divides Miami Shores, a upper class neighborhood from a working class area of unincorporated Miami-Dade. The concept of this collective show is to talk about the idea of a home from a political, social or personal viewpoint. Addressing this idea based on cultural heritage, identity and patriotism. This is a special Radio Juxtapoz, and for episode 036, Doug Gillen finds out what home means to an artist, but physically and metaphorically.

How fitting that in the wake of Montgomery, Alabama electing its first ever African-American Mayor, Britt Happens was blessed to have our first female guest, who also just happens to be another history maker as the first Black woman to serve as the Mayor of Miami Shores, earning the most votes ever -- in history! Equally humble as she is hilarious, Crystal, who hails from Des Moines, Iowa, is a devoted mother of 2 beautiful girls, wife to the former U.S. Ambassador to Singapore, Kirk Wagar, a most hospitable friend, attorney, public servant, and has a Rolodex more impressive than Simone Biles' triple double. Incredibly intelligent, accomplished, poised, and hella fun, what's most admirable about Crystal (in my opinion), is her spirit of authenticity and staying true to who she is in. In this episode of BrittHappens, we touch upon local, national, and international politics, her interesting career path, civic involvement, family, fostering an environment that supports women being mothers while maintaining a fulfilling career, Mulattoes in the Post Antebellum South, and taking responsibility for architecting your very best life. Tienen una capacidad infinita para inventarse su propio mundo de fantasía. ¿Dónde dejaste a tu niño interior? ¿Por qué te empeñas en dejarlo encerrado en el baúl de los recuerdos? ¡Deja de pensar que en ti no existe una gota de creatividad, dale rienda suelta a tu imaginación y libera a ese niño que aún vive en ti! Love you guys and Keto Talk! I have a question that’s bugging me because I haven’t found an adequate answer to it yet. What exactly is the science behind WHY carbohydrates, even the so-called whole food ones, make my joints hurt? And why does eating keto cure my joint pain? I love that I have a natural cure for this annoying issue, but I still want to know why! Thanks for doing what you do! Michelle – STUDY: Cinnamon may help attack fat, fight obesity, study finds 1. Why did my white blood cell count drop to “very low” levels since I went keto? What can I do to raise it back up again? Hi guys, I love the show and especially love your passion for this topic. I have a question for you to address that is a bit concerning. My wife and I are both 55 years old and in very good health. We went Paleo a couple of years ago and became fully keto last year. My wife had blood work done recently that showed her white blood cell count was very low at 2.9. See below. In looking back at one of her pre-keto labs from 2015, her WBC was low at that time as well at 4.1. But now it has dropped into the "very low" range of 2.9 since going fully keto. Is there any relationship between being in a state of nutritional ketosis and low white blood cell count? Do you have any recommendations on how to boost her WBC? Should I increase my protein? Thank you for all you do! Jeff "I think the side benefits other than weight loss are what make people really embrace the keto lifestyle." – Jimmy Moore NOTICE OF DISCLOSURE: Paid sponsorship 2. Why did I lose my period when I started eating keto? Why is my skin still so dry despite eating a ketogenic diet? Dear Jimmy and Will, I thoroughly enjoy listening to Keto Talk. I’ve been eating this way for a few months and really feel great. I have always been sporty and active living at a healthy weight with a good diet. But I have suffered from multiple illnesses over the years, including orthostatic hypotension, hypermobility spectrum disorder, psoriasis, and very dry skin especially on my forearms and shins. Much to my amazement, since adopting a keto lifestyle, my balance has completely resolved after two decades of problems with this! Additionally, the psoriasis appears to be settling down. After listening to so many of your podcasts, I realize my multiple illnesses, 10 years of PTSD, and 8 concussions have caused some major inflammation in my body. So with all this context about me, here are my two concerns: Why have my periods stopped since going keto when I’ve always been regular before? Is this normal hormonal reaction and when should I expect it to restart? And why is my skin still very dry? Will it eventually clear up? Thank you very much for taking the time to answer my questions. Heather Join The Keto Clarity Club For $1 Blood Ketone Test Strips! 3. Can you explain the relationship between insulin resistance and high calcium levels in easy-to-understand language? Hi Jimmy and Dr. Cole! I recently figured out that I have hyperparathyroidism (hypothyroid, but hyperPARAthyroid) because I kept having high calcium levels and ending up in the hospital with AFIB. I started searching everything I could about this condition and what could be contributing to it. Now I’m wondering if my continued insulin resistance and need for insulin despite being keto for several years might somehow be related. To my surprise, a search on hyperparathyroidism and insulin resistance brought up some interesting information on this very subject! Can you explain in everyday language what the connection might be between this condition and IR and if there is reason to have hope that this might play a part in my insulin resistance improving more now that I've had the bad gland removed? I'm only a couple of weeks out of surgery but other symptoms I was experiencing have already gotten much better! I'm just really hoping this will be yet another benefit and want to better understand how high calcium levels impact insulin resistance. Thanks for your help! Hey Jimmy and Dr. Cole, You guys can count me as another person who has experienced vocal issues that have popped up since starting on the ketogenic diet. I started eating keto in July and by September I noticed my voice started sounding fuzzy like a very old man. You’ve briefly addressed this issue before stating that a common culprit is coffee consumption, but I don’t drink very much coffee and in fact a lot less of it since I switched to keto. I also don’t eat chocolate or peppermint. Any clue why I sound like the old guy in the Up movie? Thanks for your help. Blaine JIMMY AND DR. Thus far, we have released 10 episodes of our podcast. We’d like to say thank you to our listeners, supporters, authors and editorial board! First up is Jen Karetnick, who submitted the poem “The Physics of Falling Mangoes” for the Locals issue. When we asked her if we could discuss the poem she said, “I love the idea of the podcast editorial meeting, although it might prove to be a little nerve-wracking. But I'm sure my students, who get put through the workshop wringer all year long, will consider it more than just! So for their sake alone, I am delighted to say yes.” Side note: It’s mango season, so we thought what better time to discuss this poem than now! Perplexed at first by a few “scientific” words, we grew to appreciate the intimacy of the vocabulary. Karetnick beautifully and authentically captured the atmosphere where mango trees grow; it’s as if she lives among the trees that she describes. In fact, Jen Karetnick lives in Miami Shores on the last acre of a historic plantation with her husband, two teenagers, three dogs, three cats and fourteen mango trees. This poem will make you want a mango, and to read more of her Jen Karetnick’s work: she released the poetry collection American Sentencing (Winter Goose Publications, May 2016). You can also see more @ TheAtlantic.com, Guernica and her website. The next poem was submitted to our Monsters issue, but you probably would have guessed that. When we first asked Tria Wood she said she was “excited and intrigued” also a “little nervous.”Keep up the bravery poets! Immediately, we noticed the contrast between Godzilla’s graceful swan-like nature and his belly collapsing like a flat tire. The imagery in the third and fourth stanzas also had us close to speechless—which loyal listeners know takes a lot! Every detail had us captivated (even Godzilla's cocktail)! A pleasant surprise for all, we quickly fell in love with this re-imagined Godzilla. Make sure to watch Tria read “Godzilla Walks Into a Bar” herself! Tria Wood’s poetry, fiction, and essays have appeared in Rattle, Literary Mama and other publications. Check out one of the public art projects in Houston that features her work. In this podcast, we also clarify some things that have been happening in our podcasts. Even after our tenth episode, we can still be surprised by the outcomes. We’re sorry to learn that “Brazillian” was accepted elsewhere, but we are glad we still got to discuss it in Episode 8. We also discuss a few questions that arose due to Episode 9: Do you consider the work posted here as published? Is there a difference between posting and publishing work? Listen and then chime in! Present at the Editorial Table: Kathleen Volk Miller Marion Wrenn Jason Schneiderman Miriam Haier Tim Fitts Isabella Fidanza Production Engineer: Joe Zang PBQ Box Score: 2=0 ------------------------- Jen Karetnick The Physics of Falling Mangoes If a Haden mango, full with sun, and an ovoid Irwin, that ornament of dawn, drop at the same time from panicles equivalent in height, will they accelerate identically despite degrees of heft, of maturity, the knowledge of their own ripeness? Physics says yes, despite mass, even if it’s a late-season Beverly, still green, set upon too early by a squirrel sitting on its stem, or an Indian mango five pounds large, swaying all summer, too big for the basket of the tool I wield like lightning to strike a singular fruit. The damage, then: That should be equal, too. But all things considered, there is no free fall. Air, on a humid whim, can change its resistance, and there is no formula to adjust for the destructive means of a mango during descent, helicoptering sap through the day’s work of spiderwebs, a season of boat-shaped leaves that bear those burns until they themselves release, and the twigs it breaks without discrimination, whether they are ready to reach like hands or be struck down to ground. And the ground, which could be oolite or limestone, grass or a brother mango, the driveway or the chemical buffer of pool water, my shoulder or arm or skull, willing to take the aromatic knock. I know the parts of the equation: limb, fruit, gravity. But not the sum, upon landing. Wholly bruised? Flesh protected by deflection? Or a split that, turned every possible way, simply, dumbly smiles? Tria Wood Godzilla Walks into a Bar Godzilla walks into a bar. He’s much smaller than you’d expect, really. Scaly, dark, and haggard. He’s been sleeping it off for centuries, all that rage, dust and ashes washed out of the cracks in his suit by the surging Pacific. He’s graceful, surprisingly so. Swanlike, even. He will not look at you. When he sits, his forearms pool on the bar like crayons in the sun. His belly is a flat tire collapsing into his crotch and whatever may be there is hidden. He’ll order something tropical, all rum and fruit and fire, incinerate the paper umbrella with a tiny burst that could have been a laugh. He swivels his head to watch it burn, left, right, then pokes its charred skeleton down into the tumbler and gives it a feeble stir with stubbed fingers. One dark claw etches delicate architecture into the condensation on the glass. And when he turns, half-smiles at you, at last you understand love at first sight.
