Raspberry Cream Pie Serves 12 8-inch spring form tin with highish sides. Ingredients Base 70g Almond Flour 30g Unsweetened Cocoa Powder 2 tbsp Truvia For Baking Caster 60g Unsalted Butter melted Filling ▢ 225g Cream Cheese softened ▢ 200ml Heavy Cream ▢ 2tbsp Truvia for Baking Caster ▢ 1 Raspberry jelly sachet sugar free and vegan ▢ 1/4cup Water boiling ▢ 1tsp Vanilla Essence ▢ 100g Sugar Free Chocolate Chips Topping Raspberries and grated dark vegan chocolate How to make the Chocolate Base Preheat your oven to 160C/320F. Line an 8” springform tin In a bowl mix the almond flour, cocoa powder, Truvia, and butter. Press the mixture into the base of the tin Bake for 12-15 minutes until firm around the edges and slightly puffed in the centre. Set aside to cool. How to make the Raspberry Filling: Dissolve the jelly crystals in the boiling water in a small bowl. Add the softened cream cheese, Truvia, vanilla, and heavy cream to a mixing bowl. Beat with a hand mixer until smooth. Add the jelly and beat again until all broken up and combined. Fold the sugar-free chocolate chips through the mixture. Pour the mixture on top of the cooled chocolate base and spread evenly. Set in the fridge for 60 minutes, or until set. Easy Cream Pie Topping: Once the filling has set, decorate with fresh raspberries Finely grate the dark chocolate over the top. Cut into 12 slices and serve! (No)Bacon Brussel Sprouts 1 bag of frozen Brussel sprouts This Isn't Bacon lardons – 1 double pack English mustard Dijon mustard Double Cream 250 ml. Instructions Bring a pan of water to boil Add the frozen spouts, bring back to the boil, and simmer for 5 minutes. Whilst the sprouts are simmering… Add some oil to a frying pan and heat Fry the bacon lardons until slightly crisp Add English mustard (preferable). Due to the heat the mustard will cook really quickly. Add the cream and mix together. Add more mustard to taste. Strain the sprouts and put in a serving dish. Pour the mustard bacon sauce over the sprouts and serve. DREW's PENNE!2 Tbsp extra virgin olive oil1 (28 oz) can crushed tomatoes1/2 cup minced shallot1/2 cup of diced pancetta6 cloves of minced garlicSalt and freshly ground black pepper to taste1/2 cup vodka (the good kind - don't go cheap here)1/4 tsp red pepper flakes, more or less to taste1 cup heavy cream1/2 cup finely shredded parmesan cheese, plus more for serving1/4 cup chopped fresh basil1 box of penne pasta (save some pasta water from boiling to thin out the sauce if needed)InstructionsBoil pasta per the instructions on the box minus a minute or two (keep pasta slightly firm). Season water with salt. Reserve 1/2 cup pasta water and drain pasta.Heat olive oil in a large pot over medium heat. Add shallots and pancetta and saute for 5 minutes, add garlic and red pepper flakes and saute 1 minute longer.Remove pan from heat and add tomatoes, vodka, season with salt and pepper. Return to medium-high heat, bring to a simmer then reduce heat to medium-low and let simmer until strong alcohol scent has cooked off, about 15 min, stirring occasionally.Stir cream in and let just heat through, about 1 minute. Stir in parmesan and basil.Add drained pasta to pot with sauce, toss to coat, while thinning sauce with a little pasta water as needed. Serve with more parmesanKristin's Vodka Sauce½ cup pancetta (medium dice)½ cup chopped onion or shallots (small dice)2 cloves minced fresh garlic1 tsp crushed red pepper (or to your preferred level of spice)½ cup Vodka1 28oz can whole, peeled plum tomato 2/3 cup of Heavy Cream (at room temperature or slightly warmed) Freshly grated parmesan cheeseCooked Pasta of choice (penne, rigatoni, cascatelli)In large pan, heat to medium-high and add the pancetta. Cook until browned but not burned. Add the chopped onion / shallot and cook until translucent. Add chopped garlic and crushed red pepper and cook for 1 minute – do not burn. Add Vodka to the pan and allow to cook briefly. Open plum tomato can and add to the pan. Allow to cook and then break up the whole tomato with the side of a spoon. You want it to be chunky. Bring sauce to a simmer and cook for 15-20 minutes. Add warm cream to the pan and cook until heated through – approx. 5 min. Add Sauce to your cooked pasta and top with Parmesan. Enjoy!

Clam Chowder Ingredients, by order of recipe: 1/2 cup Butter, 2 diced onions, 1 Celery bunch, 5 diced carrots, little less then 1/2 cup flour, 2 tbsp Dill, 1 tbsp Oregano, 1 tbsp Thyme, Salt, Pepper, 1 can Clam Juice, Chicken Stock, 4 medium Potatoes, 1 can Clams, 3 tbsp Heavy Cream. Sautée veggies with butter in soup pot. Once translucent add four. Cook until tan in color then add clam and chicken stock. Once brought to a boil add in seasoning and potatoes and bring to a simmer. "They" get to know everything about us, but we don't get to know anything about "Them". "The Great Reset" would eliminate every debt you have but, leaving us with nothing we own... Pour in heavy cream and extract and scrape the bottom of the processor with a rubber spatula to properly mix in everything. Process until it becomes very thick and creamy. Scrape and process again to get any stray pieces. Ensure everything is homogeneous. Serve.

Hey Jimmy and Will, I made the ketogenic lifestyle change over a year ago and my A1c has dropped down from 6.2 to 5.4. I listen to Keto Talk every week and you guys have trained me to look closely at ingredient labels. I eat a lot more heavy cream and my question for you today has to do with the mono and diglycerides as well as the carrageenan that are added to heavy whipping cream. Some people claim these are harmless and others say they are horrible. What I want to know is, do they mess with ketosis? Are they dangerous to your health in any way? Hi Jimmy and Dr. Cole, I've just read Dr. Cate Shanahan's book Deep Nutrition and now I'm baffled as what to eat on a ketogenic diet (from a safe and healthy perspective). I simply can't afford grass-fed beef. I can only get it at a health food store and it's way too expensive for me. I normally shop at Costco and Sobey’s grocery store. I buy pork only from humanely-raised brands. That’s really the only feasible healthy meat choice for me to consume. I buy organic whenever I can. I like beef liver, beef heart, and chicken liver, but they don't ever come from grass fed or even organic sources. What would you advise to NOT eat at all amongst these non-grass-fed/organic choices for meat? What should I be eating on my keto plan that is very healthy that maybe I’m not thinking about? How do I stay on budget in my finances while pursuing optimal health through nutritional ketosis? Why did I experience reactive hypoglycemia after eating a ketogenic meal? Hey Jimmy and Dr. Cole, I’m a big fan of you guys and four days into eating keto. I feel like I’m starting to get the hang of this and wanted to run something by you. I ate the following food a couple of days ago: one medium avocado, two eggs over easy, two Italian sausages, 3 tablespoons of sour cream, and 3 tablespoons of Kerrygold grass-fed butter. After consuming this food, I almost immediately felt flush, dizzy, and off. I started researching Dr. Google and it looks like I had reactive hypoglycemia. Is this normal on a ketogenic diet or what did I do wrong? Interestingly, I had a fatty coffee and pastrami with cream cheese today and didn’t have any of those same symptoms from he other day. Could it be the extra fat in my meal today compared to the other day? Thanks for the advice on this one. Matthew 5. Are there concerns that medicinal herbs and adaptogens can play a negative role in a patient’s health much in the same way as a pharmaceutical drug? Hey Jimmy and Will, I listen to you guys all the time and Will I hear you talk about various herbs and adaptogens that you’ve found useful in your clinical practice for your patients basically every week. You also talk about the side effects that come from prescription medications. As a fellow medical practitioner, I see both herbs and pharmaceutical drugs as basically extra chemicals substances that you are adding to a patient’s body in the hopes of eliciting a helpful or healing response. All these extra chemicals and compounds, whether food/plant based OR pharmaceutical based, potentially can interact with each other in very bad ways. In the hospital where I work, I’ve seen examples of herbs causing liver and bleeding problems and interacting with other medications. The word “natural” does not particularly reassure me; cocaine, toxic mushrooms, poison ivy, and castor beans are all natural and they are also all noxious. A lot of the pharmaceuticals we use (penicillin, digitalis, the list goes on and on) are basically purified natural products. Pharmaceuticals, at least in theory, have to go through a rigorous testing process including ruling out the very powerful placebo effect. My problem is that herbs and such don’t have to go through that same scrutiny before being made available to the general public. We really have no idea what the dosage of the active ingredient(s) might be from bottle to bottle, brand to brand, of all these herbs, do we? I’ve been low-carb, high-fat, ketogenic for the past five years, was a featured success story in Keto Clarity, have been on Jimmy’s podcast, and teach at an Osteopathic medical school now. I certainly have no objection to herbs, adaptogens, and other natural health supplementation and would never support banning them. But just how well tested are they? Thanks again for a great show! Thanksgiving Chapulines Spoon Bread con Spiced Cricket Ice Cream Spiced Cricket Ice Cream 1 cup Candied Yams Puree (can or fresh) 2 cups Heavy Cream 1 cup Half & Half ⅔ cup Honey 1 tsp Ginger (minced) 1 tsp Ginger (ground) 1 cup 2 TBSP Mealworm or Cricket TIP (from C-fu FOODS) 1 tsp Nutmeg (ground) 1 TBSP Vanilla Extract If you are using Candied Yams from a can, go ahead and strain syrup from the yams, process them in a blender or food processor until smooth, then set the yams aside in a bowl. Add Cream, Half & Half and Honey to a medium saucepan and place over medium heat until honey is completely dissolved. Remove from heat and whisk in Yam Puree, minced Ginger and ground Ginger. Put TIP, Nutmeg and Vanilla in a food processor or blender with a small amount of the ice cream mix and blend. Slowly add more until all ingredients are mixed together and smooth. You may need to blend in batches depending on the size of your processing container. Pour mix into a freezer-safe container and place in the freezer to set overnight. Remove from freezer when ready to serve with Spoon Bread. Candied Yams Spoon Bread con Chapulines 1 cup Candied Yams Puree (can or fresh) 2½ cups Nut Milk ½ cup (1 stick) Unsalted Butter 2 tsp Smoked Salt 1 cup Stone-Ground Yellow Cornmeal 3 large Eggs (separated) 1 TBSP Chives (chopped) ½ tsp Thyme (stemmed) ½ tsp ground Cinnamon ¼ tsp Cayenne Pepper 1 tsp Ginger (minced) ¼ tsp ground Nutmeg 1 cup Merci Mercado Chapulines (any flavor) If you are using Candied Yams from a can, go ahead and strain syrup from the yams, process them in a blender or food processor until smooth, then set the yams aside in a bowl. Preheat oven to 350°F. Add Nut Milk, Butter and Salt to a large saucepan over medium heat and bring to a simmer. Gradually whisk in Cornmeal and stir about 2 minutes until thickened. Remove from heat then whisk in Yam Puree. Whisk in Egg Yolks, Chives, Thyme, Cinnamon, Cayenne, Ginger and Nutmeg. In a medium mixing bowl, beat Egg Whites until soft peaks form. Add whipped egg whites to cornmeal mixture and whisk together until evenly combined. Fold-in Chapulines to cornmeal mixture. Pour cornmeal batter into a pie pan or loaf pan. Take a small handful of chapulines and sprinkle over top of batter then place in oven for 30 - 40 minutes until spoon bread is set. Remove from oven, plate a serving of Spoon Bread and add a scoop of Spiced Cricket Ice Cream. Serve. We ve got it all on this week s Louisiana Eats Brick Chicken a la KeeneDelmonico s Restaurant 1 4 cup julienne Piquillo Peppers 1 4 Sweet Peas 2 oz Chanterelles sliced 2 tablespoons Butter 3 tablespoons Sherry Wine 1 cup Roasted Chicken Stock 1 tablespoon chopped Flat Italian Parsley Himalayan Salt Brick 2 tablespoons Heavy Cream 1 4 teaspoon chopped Thyme 3 1 2 lb boned chicken skin on wing bone attached 4 tablespoons Olive Oil 4 oz Cooked Farro Pizzichi Pasta Pierre Poivre and Kosher salt to taste Preheat oven to 400 degrees. Heat large skillet over medium high heat.Season chicken with some of Pierre Poivre on both sides.Add 2 tablespoons olive oil to skillet.Place chicken in hot skillet skin side down.Top with Himalyan Salt Brick and press.Cook on stove top until edges brown, then place in preheated oven for 10 12 minutes.About 1 2 way through cooking process, flip chicken and place brick on other side.Once cooked, remove chicken from oven and remove from pan.Let rest.Discard any remaining oil from pan.Add remaining two tablespoons of olive oil to pan.Let oil get hot.Add mushrooms and season with Pierre Poivre and salt.Add thyme.Add peppers.Cook for two minutes and scrape pan.Deglaze pan with sherry.Reduce until sec.Add Chicken stock, reduce until it come to a sauce like consistency.Add heavy cream.Add pasta, green peas and finish with butter.Place chicken back in oven until hot.Place sauce on bottom of place and place chicken on top.For extra indulgence, sear a piece of 2 oz foie gras and place on top. Poppy s Chicken la KingServes 4 6 1 1 2 cups leftover roasted chicken 6 tablespoons butter 4 tablespoons flour 1 cup milk 1 2 cup sliced mushrooms 1 bunch of thinly sliced green onions 1 2 cup shredded cheddar cheese 1 2 cup green peas 4 tablespoons sherry salt, pepper and hot sauce to taste Melt 2 tablespoons of butter in a skillet and saut the mushrooms until just tender. Add the green onions and stir together for a minute, then reserve. In a saucepan, melt the remaining 4 tablespoons of butter and whisk in the flour, cooking together till the raw flour scent disappears about 3 minutes . Whisk in the milk and cook until the sauce thickens. Add the cheese, stirring until the sauce is smooth. Add the mushrooms, green onions, peas and chicken to the sauce. Stir till heated through then add the sherry. Do not allow the dish to return to a boil or the sauce will break. Season with salt, pepper and hot sauce and serve over biscuits, toast or rice.
