In dieser Episode begrüßt Foodtalker Boris Rogosch die in Deutschland geborene Koreanerin Sung-Hee Kim, Gründerin des Food Startups Arang, das sich auf authentische koreanische Marinaden und Suppen spezialisiert hat. Sung-Hee gibt spannende Einblicke in die kulinarischen Traditionen Koreas, die stark durch ihre Familiengeschichte geprägt sind. Ihre Eltern gehörten zu den Pionieren der koreanischen Gastronomie in Deutschland und betrieben in den 1970er Jahren eines der ersten koreanischen Restaurants in Norddeutschland. Sung-Hee erklärt, wie sehr die koreanische Küche von traditionellen Rezepten und Methoden lebt, und wie diese sich im Laufe der Zeit entwickelt haben. Eines der Hauptthemen der Episode ist das berühmte Kimchi, das wohl bekannteste koreanische Gericht. Boris darf zahlreiche selbstgemachte Gerichte probieren, die Sung-Hee zubereitet hat – darunter verschiedene Kimchi-Varianten, die für ihre Familie typisch sind. Zum Abschluss spricht Sung-Hee über ihr Startup Arang, das sie gegründet hat, um die Aromen Koreas nach Deutschland zu bringen. Unter anderem bietet sie dort ihre traditionelle Seetang- oder Algensuppe an, die in Korea eine tiefe kulturelle Bedeutung hat. Diese Suppe wird traditionell nach der Geburt zur Stärkung der Mütter sowie als Geburtstagsgericht serviert. Sung-Hee berichtet, wie wichtig ihr die Verbindung zur koreanischen Esskultur ist und wie sie versucht, diese in einem neuen Markt zu etablieren. Imgur AlbumSpecial Ingredients: Lapsang Souchong TeaKimchiSpecial Equipment:NoneRecipe:For the marinade-1/4 cup rice vinegar1/3 cup soy sauce2 tablespoons sesame oil4 scallions2 tablespoons fresh ginger5 cloves garlic1 pear, skinned and chopped2 duck breastsSesame seeds and an extra scallion for garnishChop the scallions, peel and chop the ginger, peel the garlic, and peel and chop the pear. Combine all of those ingredients, plus the vinegar and soy sauce in a blender and pulse until combined. Place the duck breasts in a non-reactive dish and cover with the marinade. Refrigerate for 1-24 hours. Once out of the marinade, rinse the duck breasts and pat them dry. Score a crosshatch patter in the skin. Lay the breasts skin side down in a cold, dry pan, and turn the heat on to medium-high. The slow heating of the pan will render duck fat from the skin. Cook the duck breasts to medium-medium rare doneness. Let them rest for 5-10 minutes before slicing on a bias. Heat a sauce pan off of soy sauce, rice vinegar, and honey, and toss the duck medallions in that sauce. Serve with kimchi and rice, garnishing with sliced scallion and sesame seeds.For the rolls-2 tablespoons dry-active yeast1 cup of room temperature lapsang souchong tea1/3 cup olive oil1/4 cup maple syrup1 egg1 teaspoon salt3.5 cups all purpose flourCombine all ingredients and knead for 5 minutes. This will produce a soft, sticky dough. Divide into 6-8 portions, roll into a smooth ball, and lay them on a baking sheet lined with parchment paper. Allow to rise at room temperature for 15 minutes. Put these into a 425ºF oven for 12-15 minutes. After 7 minutes, brush the tops with an egg wash and sprinkle with sesame seeds and salt.

Barbagiuan is a specialty flaky fritter of the Mediterranean. Chef Darryl Bell of Press Restaurant in St. Helena, CA, shows us how to make this barbagiuan stuffed with turkey bulgogi. Chef Darryl infuses turkey breast in a flavor-packed Korean marinade with soy sauce, ginger, garlic and more. The turkey is then seared and stuffed inside the barbagiuan pastry before getting fried. Blend all marinade ingredients using a food processor or blender and pour over the meat. Gently work the marinade into the meat with your hands. Cover and refrigerate for at least four hours. Cook the marinated meat and vegetables together over medium-high 4-5 minutes, until meat is cooked through. Serve in a bowl over rice. Add an egg, over-easy on the top if desired. * A great alternative to using a bowl to marinate is to put the meat and marinade in a large plastic bag, seal it and work it into the meat that way. Remember you can buy beef bones at your deli, Whole Foods etc. Just ask the butcher if they have Beef bones for bone broth and they will get you squared away. The Broth: 10Lbs Beef bones, rinsed and soaked in cold water for 2 hours. Then drained. 2 onions, unpeeled, halved 1 bunch scallions 2 big stalks fresh ginger, unpeeled 2 cups garlic cloves, peeled 1 cup Star Anise *find in the store where the spices are. 1/2 cup coriander seeds 1/2 cup black peppercorns 1 cup beef base 1 big heavy handful of cilantro stems, leaves reserved for garnish Salt and freshly ground black pepper The rest/ Amounts up to you. Rice Noodles, prepared according to package directions Onion thinly sliced Scallion, minced Fresh Thai Basil leaves (I used regular basil) Limes, cut in half Bean Sprouts washed Hoisin sauce Fresh Cilantro leaves Rare Filet mignon, sliced thin. (My whole foods has a Bulgogi meat section with all kinds of thinly sliced ribeye, filet etc.) Put the beef bones in a big pot and add enough water to cover the bones. There should be at least 3 gallons of liquid in the pot. On a grill or in a sauté pan over medium heat, char the onions, scallions, and ginger using little to no oil, until they’re blackened but not burned. Heat the pot with bones over medium high heat, then add the charred vegetables, garlic, star anise, coriander seeds, black peppercorns, beef base, cilantro stems, and some salt and pepper. Bring to a full boil, then lower the heat to simmer. Let simmer for 3 hours, constantly skimming foam off the surface. Check for flavor, adjust the seasonings and drain the broth through a large sieve, discarding the solids. You can keep this broth in your refrigerator for 2 days or freeze it for the future. To assemble the pho, place the rice noodles in a bowl. The noodles should be soft and at a tepid temp. Pour the hot broth over the noodles and garnish as you please. Id you want to do like me then add everything to the bowl. *I add the bean sprouts, thin onion, some thinly sliced jalapeños, basil, cilantro leaves, siraccha & hoisin sauce to my pho. Beef bulgogi is an incredibly popular dish in Korea and is one of the most successful culinary exports of the region. While the term "bulgogi," which literally translates to “fire meat,” is relatively new, these thin marinated strips of grilled meat have been a staple in the diet of those who live on the Korean peninsula since 37 BC. Back then, strips of beef or pork were marinated and then threaded on a small skewer and cooked, and then served in broth over rice. This was quite different from the bulgogi we know today. The reasons bulgogi has changed so much over the last half-century are various, but the two major factors that impacted the dish’s history are these: First, the introduction of Buddhism to Korea. While those who practice Buddhism are not forced to be vegetarian, many decide to do so on their own. This caused meat-based dishes to lose popularity.
