I would say it was my heaviest training there.” Garces moved from New York to Philadelphia in 2000. Warm weather has returned and #MemorialDay2021 is finally here with restrictions finally lifting in most places and now the sand and surf is calling our name. So where should we go? No one knows how to entertain at the VisitNJShore - Your Guide to the New Jersey Shore better than the world famous Do Atlantic City Boardwalk. With that being said we will be joined by Ocean Casino Resort SVP of Food and Beverage Warren Richards. With endless dining options at the resort they have something for everyone. From celebrity spots helmed by Mark Wahlberg to Chef Jose Garces to high end groups like LDV Hospitality to the really nice dining hall you can't go wrong and won't go hungry. Ocean Casino Resort has all the entertainment you could want also from Topgolf, HQ2AC with appearances from Cash Cash, Meduza, Fergie DJ, as well as Ovation Hall presenting Jeff Dunham, Melissa Etheridge, Alice Cooper, The Beach Boys, Jay Leno, and more all just steps from beach. We will also chat with Tamar Adler, contributing editor at Vogue and author of cookbooks Something Old, Something New and An Everlasting Meal from Scribner Books. Tamar has teamed up with Jewish Family and Children's Service of Greater Philadelphia's (JFCS) Nourishing Community events, a once-a-month virtual cooking series featuring top-area chefs, home cooks, and cookbook authors sharing recipes, and tips from their kitchens while raising funds to support JFCS food relief programs to battle food insecurity in the region with previous events having appearances from Frank E. Olivieri of The Original Pat's King of Steaks and Sara May of South Hill Cider. “Food insecurity across the region is at an all-time high,” said Pia Eisenberg, Sr. Vice President, Community Engagement, JFCS Greater Philadelphia. “We are grateful to the participating chefs for giving us this opportunity to come together in a fun and engaging way to raise much-needed dollars for JFCS' food relief efforts in support of the most vulnerable in our region.” Tamar will be appearing on Tuesday, June 8th at 6:30 p.m., preparing scones that you don't want to miss. Be sure to contact JFCS as registration is required to attend their virtual events and Zoom links are provided once registration is completed. Then joining us will be Jake Cohen a bright new star in the food world, most recently the editorial and test kitchen director of social media juggernaut the Feedfeed, and debut author of, ‘JEW-ISH: A COOKBOOK: Reinvented Recipes from a Modern Mensch' from Houghton Mifflin Harcourt. When most home cooks think of Jewish food, a few classics come to mind: chicken soup with matzo balls, challah, maybe a babka if you're feeling ambitious. But as food writer and self-described “nice Jewish boy” Jake Cohen demonstrates in his stunning debut cookbook, Jewish food is so much more. In JEW-ISH, Cohen reinvents the food of his Ashkenazi heritage and draws inspiration from his husband's Persian-Iraqi traditions to offer recipes that are modern, fresh, and enticing for a whole new generation of readers. Imagine the components of an everything bagel wrapped into a flaky galette and latkes dyed vibrant yellow with saffron for a Persian spin on the potato pancake, plus best-ever hybrid desserts like Macaroon Brownies and Pumpkin Spice Babka. The hot days of summer are approaching so why not cool off with one of nature's greatest gifts – WATER. Who better to talk to then Angela Cooper the CEO of Soho Waterworks. Soho Waterworks, a water distribution company, has demonstrated that innovation in the bottle water industry can yield a better, higher quality product for consumers. They recently launched a national campaign with the bold goal of providing Clean Water for All™. Its campaign to promote Clear Alaskan Glacial Water is an example of how this plan is paying off for bottlers, consumers and communities. Soho Waterworks is building public awareness about the health benefits of naturally sourced waters, considered to be a game changer in the wellness movement. They also enhance food and drink. Like fine wines, naturally sourced waters have their own unique profile and can be paired with foods to elevate any meal. At the same time, these waters contain naturally occurring minerals that provide superior health benefits to consumers, which are lacking in commercial water. You say you STILL NEED MORE!!! Don't forget we still have our regular weekly segments from author, Courier-Post nightlife correspondent and The New York Times recognized blogger John Howard-Fusco for foodie news of the week, Chef Barbie Marshall who is a Chef Gordon Ramsay Hell's Kitchen Season 10 finalist and has appeared on Season 17 of FOX Hell's Kitchen #AllStars as well named Pennsylvania's most influential chef by Cooking Light will delight us with her observation of the week, highly acclaimed and respected Vegan Chef Christina Martin will delight with her ‘Healthy Bite' of week giving nourishing and wholesome advice, and a joke of the week from legendary joke teller Jackie "The Joke Man" Martling of The Howard Stern Show fame. “Don't be afraid to adapt new ingredients into your own techniques, and traditional ingredients into new recipes.” ― Jose Garces   I am SO EXCITED to share this conversation with the world… not only is “generational narrative” usually overlooked or not discussed at all, today I get to welcome 3 varsity humans to the T&T mic that are very similar AND very different from myself… and two of them are blood related to boot! So, we have multiple viewpoints represented on one not-so-talked-about-topic, my favorite conversations! Myself, Ashley Knight (welcome back, again:), Eric Mitchell (Ashley’s Uncle), and Reggie Adam’s (longtime family friend to both Ashley and Eric), run through the formal definition of generational narrative, our own definitions, and how it correlates in our current worlds. Why do we even need to care about generational narrative?... Tune in, we break it down! We each share our experience with the importance of representation and how it directly coincides with generational narrative. We also discuss how we all work to consciously heighten the awareness and conversation around generational narrative, true self-awareness, and continued self-discovery. Generational narrative can be positive or negative, but the real value is in the awareness of what is authentic to you alongside those narratives, allowing each of us to build our own realities aka updated and progressive generational narratives inviting dialogue, conversation, and unity… cheers world, let’s open our hearts and minds to a little graceful disruption and authentic truths!   Highlights: Generational narrative. Jose Garces – A Competitive Mindset

"I'm competitive and I always have. And I think that's why I really enjoyed Iron Chef because it was the time when I knew I was going into battle or going in the Kitchen Stadium. Butterflies in my stomach floating and all of my culinary and cooking senses were alive and so I think that competitiveness that just stay within me. I grew up in Chicago, born and raised, where I played football and I wrestled in grammar school and in high school. It was both kind of combative sports both a little aggressive and so how do you translate over to cooking? Somehow I found it in competitive cooking." What we covered in this episode We start the interview by addressing the 2018 situation with several restaurants closing and lawsuits. Chef Jose Garces talks about the merge between Ballard Hospitality Group and Garces Group. His passion for food and the fact that cooking is still a humble craft kept him grounded throughout the success. The new company will take Buena Onda brand to a fast casual brand to St Louis and later to other part of the country. His competitiveness in business and cooking competition comes from him playing football and wrestling through high school in Chicago. He started working when he was height years old and started his first  While he was in culinary school he discovered that he has a creative edge while playing with the ingredients. Chef Jose Garces talks about the creation of his first restaurant Amada (his grandmother’s name), first real Spanish restaurant in Philadelphia at that time. His fine dining restaurant Volver serves as well as their Culinary Innovation Lab for ideation and menu conceptions for all the restaurants of the group. Stella in New Hope , PA is the brand new addition to the group with American small plates. Chef Jose Garces shares how his Latino background influenced his food and his career. One of the Latino preparation that is critical is : Sofrito The main misconception that American have about Latin cuisine is that it is spicy. "I understood early on that I should travel and really learn about traditional cuisines". He traveled to Spain, Argentina, Uruguay, Mexico, Ecuador, Peru, The Caribbean, Cuba, and Japan. “Inspiration via culinary curation travels is a big part of how we can create . Bring those traditions back and translate them into ways that works for our markets.” Chef Jose Garces explains the role of the Culinary innovation Lab and the use of the menu contribution analysis to reformulate or change specific dishes. Inspiration comes from memories, travels, cookbooks, or from a local produce from a farmer. It is a collaborative process. Chef Jose Garces talks about the Garces Foundation.  5 rapid-fire questions! Chef Jose Garces and Latino flavors "My parents both immigrated from Ecuador to Chicago in the late 1960s. So I grew up in an Ecuadorian American household. Mom cooked Ecuadorian meals and I mentioned my grandma earlier. She would come most summers and cook regularly. So growing up in that environment where there are Latin flavors going all the time made a huge impact on me, and I gravitated towards the kitchen. I loved helping my mom with her mashed potatoes making cake batters, breading things, whatever she wanted me to do. It was a special time and left a lasting impact and I again I think that the use of cilantro and sofrito and you know cooking of beans, tamale, empanadas, arepas,  all this. These are all foods I grew up with. So even to this day I still make all those things for my children and you know we're seeing market trends where they're becoming more accessible and more widely recognized. So that's exciting as well of cours. #gallery-3 { margin: auto; } #gallery-3 .gallery-item { float: left; margin-top: 10px; text-align: center; width: 25%; } #gallery-3 img { border: 2px solid #cfcfcf; } #gallery-3 .gallery-caption { margin-left: 0; }

Also on the list are Manhattan’s Becco by the great Lidia Bastianich, and Amada by Jose Garces (well, sort-of kind-of, we didn’t get past the drink). Rick subjects Kate to another quiz, this time on celebrity-owned restaurants (get ready to play along), and they include a bonus review Chicago’s RPM Steak, whose partners include celebrity couple Bill and Giuliana Rancic (he was the first Apprentice winner and she was co-host of E! News). They also introduce their very complicated and scientific rating system (please don’t hate us too much Anne Burrell, WE STILL LOVE YOU!).

You're either 80 years old or trying to impress someone with how much you can spend on a steak. And Carmine's? It's pasta, garlic bread, and Chianti. You can do better. They hit up Jose Garces'.... Jose Garces's.... the newest restaurants in AC from Jose Garces (nailed it!). From the Tokyo underground to an Ecuadorian village (Andrea describes it as Cuban because she's a dolt), they implore others to check out these gems in the Tropicana.

We ask Iron Chef Jose Garces about who makes the best pork on today's episode of THE FOOD SEEN. In his most recent cookbook, The Latin Road Home, Jose takes us on a trip through his culinary lineage. An Ecuadorian who grew up in Chicago, Garces was constantly exposed to the flavors of his heritage: crispy pork, mote (hominy), ceviche, and Llapingacho (potato patties with cheese), which made him hunger for more. Now with over 15 restaurants in Philadelphia ranging from Andalusian tapas (Amada), Basque region wine bar (Tinto), Mexico City fare (Distrito), European-style cafe and gourmet market (Garces Trading Co.), as well as Classic American (Whiskey Village), Jose reflects on his past inspirations, sharing the recipes discovered through family and travel. This program has been brought to you by Fairway Market. “Latin to me means, more or less, the language. It's not necessarily the place, but the feeling or the dynamic of having Latin heritage.” [17:20] “If you mess up tortilla soup – you shouldn't be cooking!” [27:30] — Jose Garces on THE FOOD SEEN
