Guests who use the VeriFLY app can expect the time it takes to complete the health assessment process during embarkation to be cut in half.“VeriFLY helps our guests easily and securely complete pre-embarkation tasks right from their smartphone. The musical artists will either come from or be influenced by the cruise regions. The SPA-ROSA will provide new treatments and massages, while yoga and fitness classes will be added to the onboard programme. What's more, as the industry's only provider of family cruises, A-ROSA will also be extending its offering for children. “As well as running dedicated family cruises during the school holidays, we'll provide a Kids Club with organised activities on almost all our ships if there are more than ten children on board,” explained Eichler.Focusing on sustainability“When we were working on our realignment plan, it quickly became clear that sustainability would play a central role,” said Eichler. “A-ROSA has always been involved in environmental and social actions, but taking responsibility will be a special area of focus for us in the future.” With this in mind, A-ROSA opened its own sustainability department on 1 February 2022. Department head Sandra Wendland introduced herself at the press conference. “We've brought a high-level partner on board – the Fraunhofer Institute for Systems and Innovation Research – and we'll be working together to develop an integrated, long-term sustainability strategy for A-ROSA,” explained Wendland. The plan for the next twelve months is to determine A-ROSA's current sustainability footprint and, on the basis of field analyses and stakeholder surveys, create a clear roadmap to 2030, which will set out indicators, actions to take and targets. “We'll be presenting the entire development and implementation process in a transparent way, and the roadmap will be unveiled at the start of the 2023 season,” concluded Wendland.Viking Mississippi Floats Viking® celebrated the new 386-guest Viking Mississippi® was “floated out” in Louisiana, marking a major construction milestone and the first time the ship has touched water. Set to debut in June 2022, the Viking Mississippi will sail Viking's highly-anticipated voyages on the Lower and Upper Mississippi River, between New Orleans and St. Paul.The traditional float out took place at Edison Chouest Offshore's LaShip shipyard in Houma, Louisiana and is significant because it denotes a ship moving into its final stage of construction. Olsen companies will be jointly funding the cost of the fuel for one of Ruslan's lorries to travel to Ukraine.Endurance is FoundThe Falklands Maritime Heritage Trust is pleased to confirm that the Endurance22 Expedition has located the wreck of Endurance, Sir Ernest Shackleton's ship which has not been seen since it was crushed by the ice and sank in the Weddell Sea in 1915.One hundred years after Shackleton's death, Endurance was found at a depth of 3008 metres in the Weddell Sea, within the search area defined by the expedition team before its departure from Cape Town, and approximately four miles south of the position originally recorded by Captain Worsley.The team worked from the South African polar research and logistics vessel, S.A. Agulhas II, owned by the Department of Forestry, Fisheries and Environment and under Master, Capt. Knowledge Bengu, using Saab's Sabertooth hybrid underwater search vehicles. Matthew's culinary career began in 1998 when he opened his first restaurant in Oklahoma. Since then, Matthew has traveled and studied Culinary Arts overseas and throughout the United States. In addition to pursuing his culinary passions, he has also been catering since 2000. Matthew has had the honor of catering for government officials, city officials, and many other high-end individuals. It's no surprise then that Matthew has also spent time being a Private Chef for celebrities and athletes.In 2010, while still attending culinary school, he opened a BBQ restaurant in Long Beach with great reviews that he eventually sold later on. He became an American Culinary Federation member in 2010, and has completed several volunteer events with the ACF. Matthew has won numerous cooking events during his time as a Chef. There were a couple of exceptions , Neapolitan ice-cream was considered a giddy high . Richard was scolded as a child for his manner of eating it .Fair enough say Andrew ,who then describes his rather fastidious method .Cooked rhubarb was another desert exception , which Richard miraculously links back to Japanese food .Andrew has had troubles with technology . First he's installed ceiling fans in his low ceilinged apartment . They are the natural enemy of the tall person .Plus his laptop has issues but when he took it to be fixed he discovered he also had issues .Richard makes two jokes in this episode , enjoy them . Được mệnh danh là « linh hồn » của nghệ thuật ẩm thực Pháp, là món ăn Pháp được nữ hoàng Anh Elizabeth yêu thích nhất, gan ngỗng -gan vịt béo - foie gras thực sự đang bị siêu vi corona chủng mới đe dọa. « Đây là một món ăn tiêu biểu cho nghệ thuật ẩm thực của Pháp, cho nét văn hóa của Pháp. Nữ hoàng Anh rất thích Foie Gras, người dân Anh có lẽ là không và thái tử Charles thậm chí còn chống đối. Nhưng quả thực là mỗi lần công du nước Pháp Elizabeth II thích được thưởng thức lại món gan ngỗng béo. Năm 2014 tôi đề nghị đưa vào thực đơn Foie Gras trong bữa đại tiệc. Bà là nguyên thủ quốc gia đến Pháp nhiều lần nhất mà lần nào cũng hào hứng khi được thưởng thức món này. Do vậy tôi nghĩ là nên đưa Foie Gras vào thực đơn trong bữa đại tiệc chiêu đãi nữ hoàng Anh. Và thế là tổng thống Pháp đã có sáng kiến mời nữ hoàng chọn thực đơn. Đây là điều chưa từng có trong lịch sử ngoại giao và lễ tân. Đương nhiên nữ hoàng Elizabeth đã chọn thực đơn có món Foie Gras ». Trên đây là đánh giá của đầu bếp số 1 phục vụ trong phủ tổng thống Pháp, Guillaume Gomez. Từ 23 năm qua ông liên tục giữ chân vua bếp tại điện Elysée và vừa cho ra mắt công chúng cuốn sách mang tên A la table des Présidents – Bàn tiệc qua các đời tổng thống, nhà xuất bản Cherche Midi. Trong cuốn sách này, đầu bếp Gomez kể lại rằng từ hơn 60 năm qua, mỗi lần nữ hoàng Anh có dịp sang Pháp, trên bàn tiệc không thể thiếu gan ngỗng béo. Trong số các nguyên thủ quốc tế, Elizabeth II thực sự là « sứ giả » của món ăn rất Pháp này. Nhưng trong bối cảnh rất đặc biệt năm nay, sự chiếu cố tận tình đó chắc chắn không đủ để trấn an các nhà sản xuất. Hơn một nửa doanh thu bốc hơi Không vòng vo, trả lời RFI Tiếng Việt, giám đốc Hiệp hội liên ngành các nhà sản xuất gan ngỗng béo CIFOG, bà Marie Pierre Pé cho biết về thực tế phũ phàng này : « Đối với giới trong ngành, tình hình năm nay quả thực rất phức tạp. Do dịch Covid-19 các hiệu ăn phải đóng cửa nhiều tuần lễ. Đây là một nguồn tiêu thụ chính chiếm 40 % doanh thu của các nhà sản xuất foie gras ». Còn giới chăn nuôi và các dây chuyền phân phối mất thêm 15 % nữa vì xuất khẩu bị đóng băng. Chỉ còn lại những bữa tiệc trong gia đình vào dịp lễ cuối năm. Nhưng ngay cả niềm an ủi nhỏ bé này cũng bị giới hạn khi mà bạn bè không được phép tụ tập quá 6 người trong đêm Giao thừa đón năm 2021. Với bữa tiệc quan trọng nhất của mùa Giáng Sinh thì số thực khách cũng bị « hạn chế tối đa ». Họa vô đơn chí : bên cạnh siêu vi corona, các nhà sản xuất còn bị cúm gia cầm đe dọa. Hơn 40 tỉnh được đặt trong tình trạng báo động virus cúm H5N8 do các đàn chim di trú đem lại. Thêm một ổ dịch thứ tư tại vùng Tây Nam (Sud Ouest) nước Pháp vốn được xem là « cơ xưởng sản xuất foie gras ». Tìm những con đường mới đề tồn tại Trong đợt phong tỏa tám tuần lễ hồi mùa xuân vừa qua, ngành sản xuất foie gras đã chịu nhiều thiệt hại. Nhưng hai tháng 11 và 12 mới là đỉnh điểm cho phép đem về đến 75 % doanh thu cho cả năm. Thị trường gan ngỗng béo của Pháp ước tính lên tới hai tỷ euro. Pháp là nhà sản xuất (20.000 tấn một năm), xuất khẩu và cũng là nguồn tiêu thụ số 1 của thế giới . Tuy nhiên, theo bà Marie Pierre Pé, trước những khó khăn do tình hình dịch bệnh, mỗi mắt xích trong chuỗi sản xuất đều cố gắng tìm giải pháp, "tương kế tựu kế" : « Để vớt vát mùa lễ Tết cuối năm, mà giờ đây chúng tôi biết là dân tình chỉ được phép tổ chức các cuộc hội họp và ăn uống trong khuôn khổ gia đình, tức là với chỉ một vài người thân, trong điều kiện đó chúng tôi đã nắm bắt tình hình và thích nghi. Cụ thể là chỉ sản xuất những gói gan nhỏ chỉ độ chừng 6 phần ăn là tối đa. Ngoài ra giới trong ngành đã phải rà soát lại khâu phân phối. Thí dụ bán hàng qua mạng, đặt những điểm để tập trung các đơn đặt hàng hay giao hàng tập thể. Các nhà cung cấp cũng tìm cách đến gần nhất với khách hàng, hay là chúng tôi có hẳn những ứng dụng cho phép người mua tìm được những cửa hàng gần họ nhất để mua được gan ngỗng béo. Chúng tôi đã phải nghĩ ra đủ mọi thứ tìm đủ mọi cách để foie gras đến được mỗi bàn tiệc vào dịp lễ cuối năm ». Sự uyển chuyển và khả năng thích nghi với tình huống là chìa khóa giúp một số nhà cung cấp đứng vững trên thị trường, nhất là khi mà cả tiêu thụ trong nước và nước ngoài đều bị chựng lại. Giám đốc hiệp hội CIFOG Marie Pierre Pé phân tích : « Tương tự như với thị trường Pháp, ở ngoại quốc cũng vậy. Covid-19 buộc nhiều quốc gia khác trên thế giới phải ban hành các biện pháp phong tỏa. Hàng quán cũng bị đóng cửa. Những quốc gia là khách hàng quan trọng của chúng tôi như Nhật hay nhiều nước ở châu Âu chẳng hạn không mua gan nữa vì không có chỗ tiêu thụ. Như vậy ngoài việc đã mất hẳn 40 % doanh thu trên thị trường nội địa như vừa nói do nhà hàng ở Pháp bị cấm hoạt động, chúng tôi thất thu thêm 15 % nữa do không thể xuất khẩu gan ngỗng béo ra ngoại quốc ». 30.000 hộ gia đình điêu đứng Jean Baptiste Rotureaux, chủ tịch hiệp hội các nhà chăn nuôi trong vùng Val de Sève, miền trung nước Pháp, cho biết, tương tự như khoảng 30.000 hộ gia đình trong ngành, năm nay trang trại của ông đã làm việc cật lực mà không biết lời hay lỗ thế nào. Sau 90 ngày chăn nuôi, đàn gia cầm 1.200 con của trang trại được hóa kiếp để cho ra đời những thỏi hay hộp foie gras, để biến thành lườn và đùi vịt trên các bàn tiệc. Nhưng các nhà sản xuất có thể làm được những gì khi thị trường đang bị đóng băng ? Bà Marie Pierre Pé trả lời : « Ngành sản xuất và phân phối trực tiếp hoặc gián tiếp, bảo đảm việc làm cho 100.000 lao động, tập trung tại 5 vùng trên toàn lãnh thổ Pháp, trong số này có ba vùng quan trọng nhất là Nouvelle Aquitaine, Occitanie và Grand Sud Ouest. Chỉ nội con số này cũng đủ cho thấy tác động về kinh tế lần này tai hại tới mức độ nào ». Một chút thi vị với gan ngỗng béo Với những người sành điệu, hai vùng Sud Ouest (Tây Nam) và Alsace (Đông Bắc) được coi là những « xứ sở » của gan ngỗng béo và trong cái rủi bao giờ cũng có một chút cái may : Theo giám đốc hiệp hội liên ngành các nhà sản xuất CIFOG, nhờ có internet và các mạng xã hội, các nhà phân phối gần như có thể đến gõ cửa từng nhà. Gan ngỗng béo của Pháp với đến tận đến các thị trường châu Á xa xôi : « Chúng tôi đã nghĩ nát óc để tìm ra những món ăn mới chế biến với gan ngỗng béo, hoặc là lườn vịt hoặc là đùi vịt hầm. Thực sự ra, cả ba món này đều rất dễ chế biến và thích hợp với các món ăn trong gia đình, thích hợp với những bữa tiệc thân mật. Chúng cũng cho phép chúng ta sáng chế ra nhiều món mới lắm và có thể dễ dàng kết hợp với những nguyên liệu chế biến khác. Đó là chưa kể nhờ có các mạng xã hội mà ở bất cứ nơi nào ta cũng có thể có được đĩa gan ngỗng béo trên bàn tiệc. Cũng phải nói trong thời điểm khó khăn này và nhất là nhiều thú tiêu khiển bị hạn chế chúng ta chỉ còn có mỗi cái thú thưởng thức những món ngon mà thôi. Chế biến đồ ăn ở trong nhà là một chút mật ngọt làm dịu bớt những ưu phiền trong hoàn cảnh này. Hơn nữa ta vừa có thể giúp đỡ các nhà chăn nuôi, giúp đỡ các hãng tư nhân làm gan ngỗng béo vừa tự do chiều khẩu vị của mỗi thành viên trong gia đình. Trong các món ăn mới, chúng tôi đã nghĩ nhiều đến những thực khách Á châu. Thí dụ như là gan ngỗng có thể được chiên sơ trên cái chảo Teppanyaki rất đặc trưng của Đài Loan. Ta cũng có thể ướp thịt vịt với sốt chua ngọt của Thái Lan, hay đút lò hoặc xào, hoặc rô-ti lườn vịt với quả xoài, quả dứa » …. Trên trang web của CIFOG ta có thể thấy một khoanh gan ngỗng béo màu nâu nhạt ngả sang hồng được đặt trên một khoanh dứa vàng tươi, cả hai lại được đặt trên một khoanh quải thanh long ruột trắng với những hạt li ti màu đen và nhất là lớp vỏ màu đỏ rực rỡ. Những màu sắc đó cộng lại, đĩa khai vị của bạn đẹp như một bức tranh. Trên trang nhà của hiệp hội CIFOG, độc giả không khỏi ngạc nhiên khi thấy một số đề xuất như là ăn kèm gan ngỗng béo với gỏi chế biến từ quả xu xu rất quen thuộc với người Việt chúng ta hay thậm chí có món mang tên « foie gras và nước dùng phở ». Đương nhiên trong số 24 trang các món ăn CIFOG đề nghị chế biến từ gan ngỗng béo hay lườn vịt, món dễ làm nhất là thăn vịt rô ti với nước sốt chanh dây hay thịt vịt cắt miếng vuông và ướp sốt « Thai -Landais », kết hợp một chút vị chua ngọt đặc trưng của Thái Lan với thịt vịt của tỉnh Landes trong vùng Sud Ouest ! In this episode of the podcast, as part of the Kitchen Design Essentials Season, Frances outlines considerations for an outdoor kitchen. She emphasises the need to plan it upfront as it may impact internal kitchen decisions. She runs through suitable materials, and those that are not suitable for outdoors, and options with regards to necessities for the outdoor kitchen space. When completing a renovation or new build, we should consider the natural flow between indoors and outdoors, and how those spaces need to work together. Which is where thinking about outdoor cooking requirements as part of your outdoor entertaining space needs to be factored in. Requirements and Design for an Outdoor kitchen Think about your needs How do you entertain outside? What are the things that you would like to have in your outdoor kitchen? What do you need access to outside? Amenities that are going to make your life easier when entertaining outside. Space perspective vs Budget perspective What do you need outside? Start with what is critical for the space (must have Vs nice to have) Smoker, BBQ Teppanyaki grill Spit roast Running water Fridge Drawers and cabinetry for cutlery and crockery Hotplate Pizza oven Sink for running water & cleaning up as you go You may not need everything! Every component will add to the cost. Think about the space, as it is premium. What is going to add the most value to the space (not capitalisation value but lifestyle value)? It is best to purchase items that you are going to have in your outdoor kitchen prior to it being designed so it’s designed around your appliances Also consider that things will get dirty easily outside – even if under cover - rain, dust and wind . Location - It can either be a continuation of your indoor kitchen or a separate area in the garden. Consider flow of materials to create flow and continuity is continuation of indoor kitchen Located separately from the home can create more flexibility with material choices If under cover may need an exhaust fan or have more open where cooking is. Think about smoke, marking ceiling etc. You may need to consider having a separate firewall to meet safety regulations Get someone to help with the design so it’s maximising the space for what you need. Materials Check with your local state regulations about materials Benchtops – not all materials are equal Reconstituted stone is not suitable for outdoors. The warranty will be voided if you’re using materials that are not allowed outside. Other options; Dekton Natural Stone Concrete Porcelain Marine grade Stainless steel Terrazzo Cabinetry – standard cabinetry materials is not suitable for outside. You cannot use standard laminate or melamine Look at Marine grade ply, other natural timbers – be mindful they will weather Solid timber cabinetry Compact laminate- block colours or timber look Stainless steel If you can’t have a complete custom-made outdoor kitchen, you can buy complete ‘outdoor kitchens’ from BBQ suppliers. These may not fit the space perfectly, and there may be compromises, but may end up more cost effective. I, you know, as I'm revealing myself as somebody who has not noticed the absence of your show, and it's just because in the same way that I forget why I muted somebody on Twitter, I also sometimes forget why I kept the podcast, but turned off new episodes. So the lack of episodes to me can be, could be written down to the fact that I just can't [00:01:00] remember why I turned it off. At on. I just didn't notice. Brett: [00:01:03] I had quietly just decided to take a hiatus. At first it was going to be a couple months, and then it was going to be six months. Then it was going to be a year. And then I stopped worrying about it and just decided if it comes back and then some turns of events and all of a sudden, I just found myself excited about it. Again, I built a whole new website where we're network free Merlin: [00:01:27] that's so awesome. Well, I have this thing that, I mean, I'm not certainly not the first person in middle age to realize this, but something I have learned to accept and leverage is that. Every time. Well, for example, every time I'm leaving the house , I either have the feeling that I have everything that I need or they don't have everything I need that I've done everything I need to do, or I haven't done it. Yeah. Everything I need to do. And if I have even the slightest feeling that there's something I've forgotten [00:02:00] and I don't know what it is. If I take a minute, it always turns out to be something that I have indeed. Forgotten. And so while I'm trying to become less of a who quote unquote trust there, gut, I believe in that in your case, I think when your brain tells you, your brain is trying to tell you yeah. Something it's time for a break. This is not fun. if you're not looking forward to a thing that you do, this is very privileged, but I believe it. If you're not leaning forward to the thing that you're doing, it's worth interrogating that. Like what, why is that? And if you don't know why. You know, why push a rope? A brakes are good. Founded in 2009, the Aguayo brothers were ready to step out in the $12.8 billion market size of sushi restaurants. Growing up in restaurants and frequently dining at Benihana, Angel felt the industry was struck in the ‘traditional setting,’ and wanted to bring fusion offerings to the table. Another industry void they are alleviating is many good sushi restaurants aren’t able to provide that same quality on their hibachi side. Sushi Saki is known for offering the best of both worlds and creates an interactive dining experience. It is today’s Japanese Sushi restaurant with the perfect blend of a Teppanyaki house and an original Sushi spot. Additionally, Sushi Sake locations offer late-night hours compared to other venues (open until midnight - 5am depending on location) to serve a crowd that can’t find a quality restaurant open after a night out. Here is Teppanyaki done correctly, well at least this is how Teppanyaki is cooked in Japan. In Nihon, Teppanyaki is more of a luxurious meal instead of the family type of event we have at Benihana. I like both styles but both experiences completely different from each other, It's interesting to see how Teppanyaki evolved in the states.
