Pham was born in a Malaysian refugee camp in 1979. His parents are Vietnamese and fled the country during the Vietnam War. The family moved to the United States when he was five months old and has lived in the U.S. ever since. Pham was teased often as a young child, and has said that he began to "resent being Asian" because of this bullying. He often avoided traditional Asian food while growing up, opting for McDonald's hamburgers, because he thought "if I could eat American food, it would make me feel more American. Pham attended culinary school in San Francisco but began his career in software. His first chef job was at Casey's Irish Pub Downtown where he was hired in 2006 upon graduating from Le Cordon Bleu. After working in San Francisco, owner Blake Ballard convinced Chef Pham to join Spark Restaurant and Lounge in Provo, Utah. In 2009, Pham opened his own restaurant, Forage, in Utah with co-Chef Bowman Brown. In 2011 Pham received the Best New Chef Award from Food & Wine Magazine. In 2012, Pham was an Iron Chef America winner by beating Chef Bobby Flay. He also appeared on the second season of Extreme Chef. In 2018, he faced off against Chef Bobby Flay again on Beat Bobby Flay, securing a second victory against him. In 2016 Forage closed, with Pham and Brown parting ways. Pham's next project was the fast-casual fried chicken restaurant, Pretty Bird Hot Chicken. Starting in downtown Salt Lake City, the Pretty Bird brand has expanded to four locations as of the end of 2022. notes on a recording: All the way back in episode 0045, titled "Music to my Ears" I talked with Derek Richmond from the band DROPOUTS for the first time. Well, he's back and top of that DROPOUTS have a new album, Off the Leash (2022), that is now available on Spotify. What's really cool about this album is that they used a different lead guitarist for each of their songs. How cool is that! Derek also shares his inspiration behind their album cover. In this week's bonus episode we get into a ton of stuff. Not only does Derek come by to talk about his three favorite films of the year (All Quiet on the Western Front, The Batman, and Banshees of Inisherin) but he shares a story about his time at Pretty Bird and DANIELS (Daniel Kwan, Daniel Scheinert). We begin our episode talking about the director duo, hot off 11 Academy Award nominations for their film "Everything Everywhere All At Once." This leads us to Derek's top 3, and in no particular ranking. I haven't talked about Edward Burger's All Quiet on the Western Front on the show yet. I watched it recently and was deeply moved and disturbed about the content of human callousness. It is a beautifully shot, gruesome and de-moralizing World War 1 epic that reminds me of a cross between "1917" and "Saving Private Ryan." This is a German film that can be found on Netflix. Next up, we talk another film that I haven't talked much about on the show, "The Batman." A film just as dark and gritty as the aforementioned WWI film, this was one of the best adaptations of the character I have ever seen. It reminded me a lot of the golden age of Batman comics in the late 80s, early 90s. I find out in this episode, that Derek collects comic books, so I see how he comes to appreciate the Matt Reeves film from a comics perspective and with an understanding of Batman as a detective. This film really captures the feel of some of the darker stories like Jeph Loeb's "The Long Halloween" and Frank Miller's Batman Year One. This one is also on HBO MAX. His last film in the top 3, "Banshees of Inisherin," which has made most of my guests top films of the year lists. If you haven't seen this film about the end of a friendship, hop on over to HBO MAX, because this film is seriously good despite it's deceptively simple premise. Of course, we shoutout the great performances from Colin Farrell, Brendan Gleason, Barry Keoghan, and Kerry Condon-- these performances alone is reason enough to watch Martin McDonagh's well-written tale. And lastly, before the show's wrap up Derek gets into some honorable mentions (and one dishonorable mention) that include: Dio: Dreamers Never Die, Everything Everywhere All At Once, The Northman, Hustle, and Emily the Criminal. Episode 74: Kathy Mattea's new album Pretty Bird is her first release in six years. In the time between, she's struggled through some problems with her voice and in so doing reached outside of her musical comfort zones. After a couple of albums dedicated to exploring her Appalachian heritage, this one's more eclectic. She calls it a journey back to singing for the sheer joy of it. Mattea has always been a gifted interpreter from her younger days as a Music Row demo singer through her years as CMA Female Vocalist of the Year in 1989 and 90. Here she sings "Ode To Billie Joe," Bobbie Gentry's mesmerizing hit from 1967, and an old traditional Irish ballad and Mary Gauthier's new gospel Americana anthem "Mercy Now." But the title track, which closes the album, declares her continued allegiance to the old music of West Virginia. It's by Hazel Dickens, herself a WV Music Hall of Famer and one of the most influential and powerful women to ever work in folk and bluegrass music. She's a hero to Mattea and many others for her undiluted mountain sound and her down to earth feminism. Later in the show we're going to hear the late great Hazel Dickens on tape from a biographical interview.
