Qui dit Pâques, dit chocolat ! Laurent Mariotte et sa bande reçoivent Déborah Dupont-Daguet pour son ouvrage Le chocolat de nos rêves, paru aux éditions First en mars dernier. A travers 60 recettes, l'autrice fait le tour des desserts au chocolat les plus connus tel que la mousse, le brownie ou la ganache, des textures les plus fondantes et coulantes aux plus moelleuses. C'est aussi l'occasion de retrouver des gâteaux qu'on avait oubliés comme le Pleyel, inventé par Robert Linxe en 1977 et devenu depuis le classique de la Maison du Chocolat et de sa boutique historique située en face de la salle de concert parisienne. Derrière cette recette se cache un moelleux des plus équilibrés. Spécialiste du chocolat à pâtisser, Déborah Dupont-Daguet nous livre sa recette ultime du fondant au chocolat, inspirée par le fondant baulois. C'est aussi l'occasion de faire le point sur la tablette la plus judicieuse à acheter lorsqu'on veut pâtisser : quel chocolat dois-je prendre pour une mousse ? Pour un fondant ? Est-ce que l'intensité du chocolat joue vraiment un rôle dans mon moelleux ? La Table des Bons Vivants fait le tour de la plaquette !   RECETTES Moelleux aux chocolat “comme un Pleyel” de Déborah Dupont-Daguet Recette issue de son livre Le chocolat de nos rêves, textures et techniques ultimes, paru aux éditions First Pour 6 personnes Préparation : 20 minutes Cuisson : 30 minutes 170 g de chocolat noir 150 g de beurre salé 4 œufs (120 g de blancs et 80 g de jaunes) 1 pincée de sel 20 g de sucre 150 g de sucre glace 65 g de poudre d'amandes 80 g de farine Pour le moule 20 g de beurre doux 2 c. à soupe de farine Préchauffer le four à 200 °C en chaleur statique. Beurrer et fariner le moule. Faire fondre le chocolat cassé en morceaux et le beurre coupé en cubes au bain-marie dans un grand cul-de-poule (toute la préparation devra pouvoir y tenir). Remuer le mélange avec un fouet jusqu'à ce qu'il soit fondu. Séparer les blancs et les jaunes d'œufs. Monter les blancs d'œufs en neige avec la pincée de sel, et lorsqu'ils sont bien mousseux, ajouter le sucre et continuer de fouetter encore 1 minute. Réserver. Ajouter les jaunes dans le mélange de beurre et chocolat, toujours au bain-marie, en continuant de remuer au fouet, puis ajouter le sucre glace et enfin la poudre d'amandes. Retirer le cul-de-poule du bain-marie et incorporer la farine tamisée à l'aide d'une spatule. Ajouter les blancs en neige, en 3 fois. Verser la pâte dans le moule et enfourner pour 10 minutes. Baisser la température à 180 °C et poursuivre la cuisson 20 minutes. Tester la cuisson à l'aide d'une lame qui doit ressortir sèche. Démouler immédiatement le gâteau et l'emballer dans du film alimentaire.  -- Fondant au chocolat “comme un fondant baulois” de Déborah Dupont-Daguet recette issue de son livre Le chocolat de nos rêves, textures et techniques ultimes, paru aux éditions First Pour 6 à 8 personnes Préparation : 10 minutes Cuisson : 25 minutes Repos : 1 nuit 115 g de chocolat noir (pas trop puissant) 140 g de beurre salé 3 œufs (150 g) 145 g de sucre 20 g de farine Pour le moule Beurre doux   Faire fondre le chocolat et le beurre au bain-marie ou au micro-ondes. Pendant ce temps, fouetter les œufs et le sucre au fouet jusqu'à ce que le mélange blanchisse, mousse et forme le fameux « ruban ». Ajouter la farine et mélanger. Incorporer le mélange chocolat-beurre. Préchauffer le four à 150 °C en chaleur statique. Beurrer généreusement un moule de 18 à 20 cm de diamètre. Verser l'appareil dans le moule. Enfourner 25 minutes. Le gâteau doit être encore légèrement tremblotant en sortant du four. Le laisser refroidir à température ambiante, puis le placer 1 nuit au frais avant de déguster.
