With one small, clever—and now-trademark—idea in 1990, the chef Thomas Keller turned not only the notion of the ice-cream cone on its head, but the fine-dining world, too. Now, 35 years later, his hospitality group comprises 10 restaurants, including The French Laundry in Yountville, California, and Per Se in New York City—both of them three-Michelin-starred—as well as Bouchon Bistro and Bouchon Bakery in Las Vegas and The Surf Club Restaurant in Miami. Across his entire hospitality operation, a highly refined, expertly tuned set of standards feeds his “one-guest-at-a-time” philosophy and culture. In many respects, Keller was at the forefront of a local-focused cooking movement. He was also a pioneer in making fine dining more relaxed and approachable—and decidedly less fussy. Après avoir hérité du restaurant familial "The Beef", Carmy a pris la décision audacieuse de transformer ce modeste établissement en un temple de la haute gastronomie dans la saison 2. Une décision qui n'est pas sans risques et qui va entraîner son lot de tensions et de drames. Le dernier épisode le voyait enfermé dans sa chambre froide puis sujet à une dépression nerveuse, tandis que tout le monde servait le premier dîner du nouveau restaurant The Bear. L'équipe, que l'on a appris à connaître et à aimer, doit désormais s'adapter à ce changement radical. Sydney (Ayo Edebiri qu'on ne présente plus et qui est certainement la favorite de beaucoup), sa sous-cheffe talentueuse mais souvent stressée, doit apprendre à gérer une brigade sous une pression accrue. Richie, le cousin un peu bourru mais au grand cœur, doit trouver sa place dans cette nouvelle dynamique. Et les autres membres de l'équipe, chacun avec leurs particularités et leurs histoires, contribuent à rendre cette saison riche en émotions et en rebondissements. Cette saison, on accorde un peu moins de temps à l'équipe, même s'ils ont tous leurs temps forts, au profit des tourments internes de Carmy. De ses mentors à sa famille, à son (ex) petite-amie, les images montrent qu'un nuage noir plane dans sa tête. La recherche culinaire continue dans ces nouveaux épisodes, avec comme objectif de décrocher une étoile Michelin. Toute la saison se déroule sur quelques jours et cela ne laisse pas forcément le temps d'avoir une véritable évolution, contrairement à la saison précédente où chaque personnage était au centre d'un épisode. Pourtant, ils ont bien leurs défis personnels à relever. C'est un parti pris par Storer qui pourra en surprendre plus d'un. Visuellement, The Bear reste fidèle à son style unique. Les plans rapprochés sur les plats, les gestes des chefs et l'agitation de la cuisine créent une atmosphère immersive. La réalisation, toujours aussi soignée, joue habilement avec les lumières et les angles pour mettre en valeur à la fois la beauté et la dureté du milieu culinaire. Les moments de calme, souvent marqués par des échanges intimes entre les personnages, contrastent avec les disputes fréquentent et les voix qui s'élèvent. Oui, ça braille, ça crie, dans des lieux assez fermés en plus donc parfois il y a une surcharge d'émotions. Mais The Bear se démarque toujours autant du reste du paysage télévisuel dans ce qu'elle propose. Do research to understand their wants and needs. Then aim for continuous improvement. In The Bear, JP says that the main character, Carmi, knows that he can't keep making Michelin star-level food when he takes over his brother's sandwich shop. The customers just want the sandwich they know and love from The Beef. JP says, “For us as marketers and for Carmi and the staff at The Beef, it's so important that in those first few episodes, it wasn't about changing anything. It was just about really focusing and listening and understanding the audience. What do they want? What do they come back for? How do I continue to serve them that?” This is especially true for marketers joining a new company where you see room for improvement. Don't try to change everything at once. But make small changes along the way that will raise the quality of your output without alienating customers.Use familiar story recipes. We know the rags to riches, or in this case, riches to rags storytelling recipe. Because it works. Using these known recipes reels in your audience more easily because it feels familiar. It's something they can immediately relate to. Yet it doesn't mean the rest of the story is formulaic or that the ending is obvious. It's just a place to start and hook your audience. Plus twists and turns in the storyline later will be even more of a surprise. When it comes to The Bear, Ian says, “Everybody and their brother has been to Chicago. And everyone has been to a sandwich shop in Chicago. So this idea that is so familiar, which is like, ‘Person moves back home to Chicago and takes over a sandwich shop, even though they're Michelin star.' We just all immediately are like, ‘Okay, I've been to a sandwich shop in Chicago and I totally know how that feels.'” Make it feel real by showing the good, the bad and the meh. Pour rappel, on plonge dans les coulisses d'une sandwicherie chicagolaise : du bruit, de la viande qui grille, des pains en pagaille, encore du bruit, quelques sauces qui trainent, des factures qui s'empilent, toujours du bruit, de la vaisselle, des clients qui passent, une borne d'arcade collector. Michael, son propriétaire vient de se suicider et il a laissé l'affaire à son jeune frère, Carmy, qui débarque de ses établissements étoilés pour revenir dans cette petite cuisine de quartier. Si la saison 1 portait sur le conflit avec ses employés, cette suite va se concentrer sur le renouveau de l'établissement. Michael, son propriétaire vient de se suicider et il a laissé l'affaire à son jeune frère, Carmy, qui débarque de ses établissements étoilés pour revenir dans cette petite cuisine. À partir de là, l'ambiance est au conflit. Que ce soit avec le reste des employés qu'avec les fournisseurs, ou même un conflit intérieur avec lui-même. De la confiance, de la réputation, de soi. Carmy avait tout pour réussir ailleurs, mais il a préféré revenir aux sources pour comprendre son frère. Mais ça veut dire que toutes les responsabilités de tenir la cuisine lui incombent, les dettes, les plats médiocres, tout. Chaque décision est contrée par des protestations, avec son mauvais caractère il ne va pas charmer tout le monde. C'est que Jeremy Allen White nous avait manqué depuis la fin de Shameless. Il revient dans un rôle sur mesure où sa mine renfrognée et sa colère contenue correspondent parfaitement à son personnage. Et son charisme inexpliqué fonctionne toujours. On ne voit que très peu son frère, campé par Jon Berthal dans un flashback, mais il y a clairement une ressemblance entre eux, l'école de la débrouillardise. The Bear, c'est avant tout une série d'ambiance où tout est sous tension. La majorité des scènes se déroulent dans la cuisine, alors quand un moment se passe dehors, on en profite pour souffler. Les personnages ont chacun leur petit tempérament qui peut parfois taper sur les nerfs. Certes, c'est une série sur le monde culinaire, mais ce n'est pas un programme de cuisine. Et d'ailleurs, s'il y avait un peu plus de cuisine, ce serait le bienvenu. La dernière série en date sur ce sujet remonte à Feed the Beast qui avait reçu un accueil assez froid. Et la sauce prend bien entre ses personnages qui tentent de s'en sortir et qui veulent mieux faire, aussi bien sur le plan professionnel comme apprendre des nouvelles recettes et techniques que sur le plan personnel comme se lier aux autres. If Courtney Storer's life sounds like an episode of The Bear, it's no surprise. She's the culinary producer of the hit show, which was created by her brother, Christopher Storer. The restaurant world has reacted strongly to The Bear and its portrayal of kitchen culture. Courtney, for her part, was drawn to the restaurant industry as a teenager but had to lie about her age to snag her first job. She later wound up working in HR, but was encouraged to attend culinary school because of her passion for cooking.
