Thomas Keller on Cooking as a Pathway to Happiness

With one small, clever—and now-trademark—idea in 1990, the chef Thomas Keller turned not only the notion of the ice-cream cone on its head, but the fine-dining world, too. Now, 35 years later, his hospitality group comprises 10 restaurants, including The French Laundry in Yountville, California, and Per Se in New York City—both of them three-Michelin-starred—as well as Bouchon Bistro and Bouchon Bakery in Las Vegas and The Surf Club Restaurant in Miami. Across his entire hospitality operation, a highly refined, expertly tuned set of standards feeds his “one-guest-at-a-time” philosophy and culture. In many respects, Keller was at the forefront of a local-focused cooking movement. He was also a pioneer in making fine dining more relaxed and approachable—and decidedly less fussy. The food world today would not be the same were it not for his wide-spanning influence. On the episode, Keller reflects on how it took two decades of failing and learning from mistakes before at last, in 1994, he opened The French Laundry, which instantly received rave reviews and remains one of the most celebrated restaurants in the world. He also discusses his recent Chef's Table episode on Netflix and his cameo on the FX show The Bear, memory-making as a key part of his operation, and why persistence is the greatest form of pleasure.Special thanks to our Season 11 presenting sponsor, Van Cleef & Arpels.Show notes:Thomas Keller[4:57] “Chef's Table: Legends” (2025)[4:57] The French Laundry[4:57] Per Se[7:24] Grant Achatz[7:24] Bobby Flay[7:24] Tom Colicchio[7:24] Emeril Lagasse[7:24] Le Pavillon[10:13] “The Bear”: Season 3, Episode 10 (2024)[10:13] Christopher Storer[10:13] “Sense of Urgency” (2013)[10:13] Hans Zimmer[10:13] Bouchon Bistro[10:13] “Thomas Keller's Roasted Chicken” (2020)[17:26] “Chef Thomas Keller on Finding Professional Success After 40” (2022)[23:55] “The French Laundry Cookbook” (1999)[25:57] Daniel Boulud[28:24] Graham Kerr[28:24] “The Galloping Gourmet” (1968)[32:27] Roland Henin[33:47] Florence Fabricant[33:47] “Food; Flights of Fancy” (1988)[33:47] “Checkers Has Lost Its Chef” (1992)[38:08] “Sally Schmitt, Trend-Setting Restaurateur, Is Dead at 90”[40:12] The French Laundry Kitchen[40:12] Snøhetta[40:12] “Thomas Keller, an Exacting Chef at a Crossroads”[48:47] “The Reach of a Restaurant” TED Talk[48:47] “The French Laundry, Per Se” (2020)

Show Notes Episode 313: I Would Smoke 500 Miles, And I Would Smoke 500 More (Redux This week Host Dave Bledsoe wakes up coughing from what he is sure is just cat dander and allergies, and proceeds to light the first smoke of the day!  (We're sure everything is fine!) On the show this week, we open up that one drawer in the kitchen with all the menus and a phone book from 2001 to see how many Marlboro Miles we can find in there!  (25 miles, only 400 packs of Marlboro Reds to go to get that awesome windbreaker!) Along the way we learn of Dave's formative years using an addictive chemical to give him the illusion of being cool.  (Cigarettes, not alcohol. That came slightly later.) From there we dive into the history of cigarette advertising in the 80's and 90's after Nixon kicked them off the television.  (Someone must have failed to contribute to Dick's campaign!) We learn how the Brands needed something new and exciting to capture that youth market, and cowboys were NOT cool in 1992!  (Except for you Garth Brooks!)  We go on to talk about Marlboro Miles, the Marlboro Old Country Store and how you could spend $500 bucks on a ten dollar igloo cooler!  Then we spend some time with the Camel that Kills, Joe Camel.  (Joe didn't kill kids, but he DID help kill big tobacco!) Finally, we explain that advertising isn't what made kids smoke, it was the stress of life lived with Baby Boomers.  Our Sponsor this week is Cancer Cash, the smoking loyalty program that earns money for your future cancer treatment!  We open the show with the Merchants of Death and close with Brian Schmidty explaining the distance he and his friends will travel to pass out on your doorstep! On the heels of another dynamic eclipse season — marked by a Full Moon Lunar Eclipse in Aries on September 17 and a New Moon Solar Eclipse in Libra on October 2 — we're pausing to reflect on how these cosmic influences are showing up in both real-world events and our everyday lives. This was the final eclipse season of the Aries/Libra cycle, which kicked off in July 2023 and will wind down by January 11, 2025.  At that point, the North Node will transition from Aries to Pisces and the South Node will shift from Libra to Virgo. Once the new eclipse cycle begins, fate will take us in a different direction until July 2026. But that's a conversation for another day (and another episode). For now, let's commemorate the tail end of the Aries/Libra cycle. Some of the topics we explore in today's episode include:The simultaneous decline in both divorce and marriage ratesGen Z's surprising commitment to monogamy, more so than Millennials and Gen XWhy more people admit to having friends, but not spending much time with themThe joy of reconnecting with old friends — and the strange reasons we avoid it, despite wanting toThe importance of discernment when we're touch-starved, and why hugs may not be as simple as they seem (hint: other people's moods can be contagious)How masculine and feminine energies express themselves, and how gender does — and doesn't — come into playEclipses are often a time of downfall or death for public figures, and this season was no different, as exemplified by Sean ‘Diddy' Combs' recent charges of sex trafficking and racketeeringThe looming question of whether an “October Surprise” will disrupt the U.S. presidential election… or if we've reached a point where it's simply impossible to be surprised by politics anymoreResources Mentioned in this Episode:Article: What's Behind the Plunge in Divorce Rates?Study: Gen Z is Transforming Sexuality and RelationshipsArticle: Does Anyone Have Time to Be a Good Friend Anymore?Study: People are Surprisingly Hesitant to Reach Out to Old FriendsArticle: Large Scientific Review Confirms the Benefits of Physical TouchArticle: Depression is ContagiousArticle: Norah Vincent, Who Chronicled Passing as a Man, Is Dead at 53Book: “Self-Made Man” by Norah VincentBook: “The Queen's Code” by Alison A. Unfortunately, Marie was better known for her wild private life that included seven marriages, high profile romances, tabloid escapades, and one of the most bizarre kidnappings to ever happen in Hollywood. This week, we tell the colorful story of this long-forgotten leading lady.  SHOW NOTES:  Sources: Tragic Hollywood: Beautiful, Glamorous, and Dead (2013), by Jackie Ganiy; “Marie McDonald ‘Gets Sick' With Former Husband,” January 6, 1955, Toledo Blade; “Millionaire Asks Divorce From Marie McDonald,” May 22, 1956, Daytona Beach Morning Journal; “Marie McDonald Reported Held By Kidnappers,” January 4, 1957, Ellensburg Daily Record; “Marie McDonald Tells Police How She Was Seized By Two Men,” January 5, 1957, Reading Eagle; “Marie McDonald Stars In Police Film of Kidnapping,” January 8, 1957, The Telegraph; “Grand Jury Probes Marie's Kidnap,” January 16, 1957, The Deseret News; “Marie McDonald Leaves Hospital” June 15, 1958, Reading Eagle; “Actress Marie McDonald Weds Again,” May 25, 1959, St. Petersburg Times; “Marie McDonald's Fourth Husband Seeking Divorce,” September 18, 1962, Daily News; “New Ruling Calls Marie McDonald Death Accidental,” December 30, 1965, The Toledo Blade; “Marie McDonald, Actress, Is Dead; Autopsy Was Inconclusive, Glamour Girl Was 42,” October 21, 1965, The New York Times; “Movie Producer Donald Taylor Apparent Suicide,” January 3, 1966, Rome News Tribune; “Phantom Intruders Abducted A Pin-Up Star,” July 2, 2022, Medium.com; IMDBPro.com; Wikipedia.com; Movies Mentioned:  Pardon My Sarong (1942), staring Lou Abbott and Lou Costello; Lucky Jordan (1942), starring Alan Ladd and Marie McDonald; I Love a Soldier (1944), starring Paulette Goddard, Sonny Tufts, and Beulah Bondi; Guest In The House (1944), starring Anne Baxter and Ralph Bellamy; Getting Gertie's Garter (1945), starring Marie McDonald and Dennis O'Keefe; Living In A Big Way (1946), starring Gene Kelly and Marie McDonald; The Geisha Boy (1958), starring Jerry Lewis and Marie McDonald; Promises! Maybe the production values aren't the best, and maybe the story is grittier than most, but these little gems have provided hours of viewing pleasure to so many. These films also had great leading men in them. Studly, sturdy, reliable actors who might not be GARY COOPER or CARY GRANT or CLARK GABLE, but were handsome and talented and knew how to beat up the bad guys and win over the lovely leading lady. Today, Ali and Asif discuss the career of the late Norman Lear (0:54) They discuss his early life (and how he based some of his characters on his parents), his military service and how he later began writing for television shows. They discuss his big breakthrough with ‘All in the Family' and the various shows that sprung from it, including ‘Maude', ‘Good times', ‘The Jeffersons', ‘One Day at a Time' and many others. The guys then discuss Lear's legacy and whether shows like ‘All in the Family' could be made now.    Normal Lear's official cause of death was due to “natural causes”. In the second half of the episode (23:41), the guys discuss exactly what this term means. Asif starts out by discussing how this is often used by coroners and pathologists, and distinguishes it from ‘non-natural causes'. Asif goes over the common causes of death in various parts of the world.  The opinions expressed are those of the hosts, and do not reflect those of any other organizations. Does it matter only for elites, or do the downstream effects impact more of America? Does it matter that the people who uncovered her plagiarism had their own political motivations? Did race play any role in this story, with Gay having been the first black woman president of Harvard? Next, the panel reflects on the passing of Supreme Court justice Sandra Day O'Connor in early December. Beyond being the first woman on the Court, what will she be remembered for? Taylor Swift: The Eras Tour is the highest-grossing concert film ever made, and it's only been in theaters for five days. It took in more than $100 million in global presales alone. The 169-minute, 41-song-long movie is nothing short of a phenomenon. Speaking of a phenomenon, you may have heard that Swift and Kansas City Chiefs tight end Travis Kelce are a couple. Swift and Kelce haven't publicly commented on or even confirmed their romantic relationship (though they have been photographed holding hands), but the NFL and its broadcast partners have certainly capitalized on it anyway. Oh, and TSwift and TKelce were both on SNL last weekend, too. Some other stuff that happened this week, give or take: Piper Laurie, Actress in ‘The Hustler,' ‘Carrie' and ‘Twin Peaks,' Dies at 91 The three-time Oscar nominee and Emmy winner also starred in the original ‘Days of Wine and Roses' and in ‘Children of a Lesser God.' Suzanne Somers, Star of ‘Three's Company,' Is Dead at 76 She became famous for playing, as she put it, “one of the best dumb blondes that's ever been done,” then became a sex-positive health and diet mogul. Louise Glück, 80, Nobel-Winning Poet Who Explored Trauma and Loss, Dies Acclaimed as one of America's greatest living writers, she blended deeply personal material with themes of mythology and nature. Burt Young, Decorated Character Actor Of Rocky Fame, Has Died At 83 Michael Caine Officially Announces Retirement From Acting: ‘You Don't Have Leading Men at 90' Michael Jordan Is the First Pro Athlete to Rank Among the 400 Wealthiest Americans The former NBA star has an estimated net worth of $3 billion. This week, Eric, Dylan, and Emily parse former vice president Mike Pence's speech in New Hampshire, which was aimed at drawing distinctions between his definition of conservatism and the populism of the New Right and Donald Trump. Does Pence's definition of the two in opposition to each other make sense? Or has populism always existed in American conservatism and on the left? Next, the panel looks at the implications for the Church of Scientology of the conviction and sentencing of former THAT '70s SHOW co-star Danny Masterson to 30 years to life for rape. There are many people who would like to see Scientology lose its tax-exempt status and other constitutional protections, but what concerns should we have about the implications of those kinds of calls for other religions? And finally, the group reflects on the 22nd anniversary of September 11 and the passing of Jimmy Buffett. Editor and literary critic Oscar Villalon joins V.V. Ganeshananthan and Whitney Terrell to celebrate the life and legacy of the novelist Cormac McCarthy, who died last month. The hosts and Villalon reflect on McCarthy's vast vocabulary and cinematic descriptions, in which he juxtaposed lyrical prose with graphic violence. Villalon considers McCarthy's use of regionally accurate Spanish in the Border Trilogy as evidence of the author's broad understanding of the U.S.'s multilingual diversity. Villalon also reads and discusses a passage from McCarthy's 1994 novel The Crossing, the second book in the trilogy.
