NFL Nutrition!  Jessica Pastuf enters her fifth season with the Buccaneers and her second as the Director of Performance Nutrition. In this role, Pastuf is responsible for educating and guiding players on how to improve their performance and recovery through optimal nutrition and fueling choices. She works with other members of the Performance Team to design strategies and implement measures dedicated to player hydration, nutrition, recovery, body composition and injury prevention. She was a member of the support staff for Tampa Bay's Super Bowl LV championship team. Pastuf works with the club's High-Performance Chef to cultivate menus to achieve players' individual nutrition needs. As the team's Director of Nutrition, she oversees the Performance Nutrition Staff, which includes the Performance Dietitian and two Performance Nutrition interns. Prior to joining the Buccaneers, Pastuf worked as a member of the Utah Jazz's High-Performance Nutrition team from 2019-2020. Before joining the Jazz, she was a Sports Nutrition intern with the University of Utah's athletic department. Pastuf graduated with a Bachelor of Science in Dietetics and Clinical Nutrition Services from the University of North Carolina at Greensboro before receiving a Master of Science in Sports Nutrition from the University of Utah. In addition, Pastuf is a Board Certified Specialist in Sports dietetics (CSSD), as well as a Registered Dietician (RD). More about our guest: Since 2015, Jamie Meeks has served as the Director of Sports Nutrition of the New Orleans Saints, utilizing her experience and expertise as a Registered Dietitian (RD) and a Board Certified Specialist in Sports Dietetics (CSSD). A prominent graduate of Louisiana State University, Meeks obtained her Bachelor's Degree in Nutritional Sciences/Dietetics in 2009 and Master's Degree in Kinesiology/Exercise Physiology in 2011. She completed her Dietetic Internship at the University of Arkansas for Medical Sciences. During her university tenure, Meeks distinguished herself through her leadership role as the captain of the LSU Cheerleading squad for three consecutive years. She represented the university across multiple platforms and supported LSU's major athletic accomplishments, including the 2007 National Championship Football team. Following her academic achievements, Meeks marked a historic milestone at LSU Athletics by becoming the program's first full-time dietitian. In this capacity, she played a crucial role in developing a comprehensive sports nutrition program, primarily aimed at managing athletes' diets and providing education to enhance health and performance. She was a pivotal force behind the inception of Athletic Fueling Stations and played a significant role in planning for a state-of-the-art athletic dining facility. Meeks also launched the Undergraduate Sports Nutrition Internship program at LSU, opening doors for dietetic undergraduates to gain firsthand experience in sports nutrition. In her capacity with the Saints, Meeks is dedicated to assisting the team achieve optimal nutritional health and crafting effective strategies for fueling, hydration, and supplementation to promote peak athletic performance. Her role extends to providing medical nutritional therapy while closely collaborating with the team's athletic trainers, strength coaches, and medical team. We speak with Todd Williams, District Attorney of Buncombe County, and learn more about his work with the Veterans Treatment Court (VTC). Todd Williams is a North Carolina native, the elected District Attorney for Buncombe County, and a Board-Certified Specialist in Criminal Law. He attended UNC-Chapel Hill, where he received a Bachelor's in English. After college, Mr. Williams taught English as a Second Language and adult basic skills to textile workers, immigrants, and the homeless in central North Carolina. That experience led Mr. Williams to pursue his Juris Doctor at Northeastern University Law School. After law school, Mr. Williams worked for nearly 15 years as a public and capital defender. Mr. Williams represented indigent defendants of all ages at every level in our justice system -- from misdemeanors to murder. Palmer Johnson was named Drexel's Head Strength and Conditioning Coach for basketball in September of 2023. Johnson came to Drexel after working with the men's basketball team at the @Illinois1867 . He brings experience in many phases of sport performance, including strength and conditioning, nutrition and education. Prior to arriving in Philadelphia, Johnson was an assistant performance coach for the University of Illinois men's basketball team from 2020-2023. Johnson was responsible for implementing the yearly strength & conditioning program as well as creating and running the nutrition program for the Fighting Illini. During his time in Illinois Johnson was a part of two Big Ten championship teams,including the Big Ten Tournament in 2021 and a regular season championship in the 2021-22 season. Johnson spent two years (2018-20) as the Director of Performance Nutrition for the  @mizzou  Football Program. In that capacity, he was responsible for providing performance nutrition education and resources to the Tiger football team.    Johnson earned his bachelor's degree in nutrition and dietetics from  @westchesteruniversityathle7789  in 2014. He completed a Master's of Science degree in exercise physiology with an emphasis in sports nutrition at  @FloridaState  2015. For example, should you eat right before workout or does consuming carbohydrates and/or protein after workout improve strength and recovery. What if you are running a marathon as should you consume something during a 3-5-hour event? In this podcast, we speak with Gatorade Scientist and Sports Dietitian Lisa Heaton on the timing of macronutrients and how they impact performance, recovery, and endurance. Lisa explains the role of carbohydrates and protein, pre, during, and post exercise as well as how much we need to maximize performance. We also discuss the role of carbohydrate and protein type and how they influence the outcome.  Lisa has worked in the sports nutrition realm since 2007 and is a Board Certified Specialist in Sports Dietetics (CSSD) with interests in sports nutrition, recovery, hydration and performance. As a sports dietitian at the Gatorade Sports Science Institute (GSSI), Lisa works with nutrition related education and translation of research, as well as supports the athlete testing program. She also served as the Sports Dietitian for the Chicago Bulls for the 2015-2016 and 2016-2017 seasons. Lisa joined GSSI in February 2011 after working as the sports dietitian for the National Institute for Athletic Health & Performance in Sioux Falls, SD (Now Sanford Sports Science Institute). Lisa completed her undergraduate work at Bradley University where she earned a Bachelor's Degree in Foods, Nutrition and Dietetics. She completed her dietetic internship with the University of Houston and continued within the University to earn her Master's Degree in Exercise Science. Martin Gibala Ph.D. is Professor and Chair of the Kinesiology Department at McMaster University in Ontario, Canada. As an undergrad, she completed a dual degree in Dietetics and Nutrition, Fitness and Health, and later completed her Masters from Purdue in Health and Kinesiology. Lauren began her professional career as a clinical dietitian with St. Vincent's Hospital before returning to her alma mater in 2014 as the program's first full-time sports dietitian. As the director of sports nutrition at Purdue she oversees all sports nutrition operations and staff, and works directly with football, men's basketball, soccer and volleyball. Outside of her work at Purdue, she also sits on the Board of Directors for the Collegiate and Professional Sports Dietitians Association and is currently the Vice President. Veteran Sports RD! Jennifer Gibson has incredible advice for early professionals in the field! Jenn shares a day in the life of an NFL dietitian, the characteristics and qualities of a dietitian at the pro level, and her unique role as a consultant in her career path. Jennifer Gibson is an internationally recognized sport dietitian with 16 years of experience in elite sport. Most recently, Jennifer spent 7 seasons as the lead sport dietitian and sport science coordinator for the Chicago Bears Football Club. Between 2006-2015 she was a senior sport dietitian and applied physiologist with the United States Olympic Committee and within the Canadian Olympic sport system. Her consulting work has included the New Orleans Saints (2013-15), Vancouver Whitecaps MLS (2006-2011), Women's Tennis Association Pro Tour (2006-2013) and within the NBA (2013-2014). She has traveled to over 20 countries to service her athletes including 2 Olympic Games (2010, 2012), 2 Pan American Games (2007, 2011), 1 Canada Winter Games (2007), 6 world championships, and hundreds of professional tournaments/games. Gibson served as an adjunct sport nutrition lecturer for the University of Colorado – Colorado Springs (2011-2015), and was active in research, having published 9 peer reviewed scientific papers and 7 book contributions. Gibson completed her bachelors of science degree in Nutrition at Ryerson University and her dietetic education at the University Health Network in Toronto, Canada. Her masters in Exercise Science was completed at the University of Victoria in Victoria, Canada. She is a distinguished graduate of the International Olympic Committee Diploma in Sport Nutrition and a Level III certified anthropometrist with the International Society for the Advancement of Anthropometry.
