Kentaro is a multimedia artist, creative director, martial artist, and entrepreneur from Los Angeles, CA. After studying Neuroscience at UCSD then entering into the film program at UCLA, Kentaro started his career creating content for global brands such as McDonald's, Lego, Benjamin Moore, and many others before eventually transitioning to be a children's book illustrator and brand director. He created the visual direction for the Coffee Bean & Tea Leaf's children's line with The Magic Tea House, and his children's illustrations have traveled across museums throughout the United States. He has been featured on NBC for his large-scale guerilla pieces, the New York Times for his mural work, and in TIME magazine, Slash Film, Forbes, Huffington Post, Men's Health, GameRant, Vice, and NPR for his films. As a martial artist, Kentaro competed internationally, fighting Muay Thai at Pattaya Stadium in Thailand and training with Judo Olympians at the Kodokan and the Japanese royal guards within the Imperial Palace. Dom is an entrepreneur, food personality, owner of the historic Cheese Store of Beverly Hills and the leading importer of premium Italian foods and specialty products in Los Angeles. Dom is a native New Yorker with a big personality and an even bigger appreciation for great Italian food passed down through generations of family recipes. It's this same love of food that he shares daily with the Los Angeles community - both with his customers at The Cheese Store of Beverly Hills and his vast network of top LA chefs that come to Dom for his pastas, sauces, tapenades, stuffed peppers, pestos and more, all sold under his Domenico's Foods brand (named after his grandfather). But his pathway to his current day success wasn't a totally smooth one. After graduating from USC in the late 90s, Dom took a job as an assistant with a big LA public relations agency (a job he admittedly was not cut out for) while also working in the butcher department of Bristol Farms on weekends for minimum wage. After departing the agency, Dom eventually landed his first real food industry job at The Cheese Store of Beverly Hills, one of the first bona fide cheese stores in the country, where he traveled to and from by bus (lacking the money for a car). Over the next 20 years working at the Cheese Store of Beverly Hills (which he now owns after purchasing it in 2022 from his mentor and the Store's previous owner of 44 years), Dom not only became one of the city's foremost authorities on cheese; it's also where he met and proposed to his wife and launched his successful Domenico's Foods brand, which started with the sale of his sun-dried tomatoes, based on a family recipe handed down for generations, at the Cheese Store. When Tacombi founder and CEO Dario Wolos reflects upon the origins and development of his Mexican-inspired restaurant chain, he gets a bit nostalgic.   Launched out of a retrofitted VW bus parked on the shores of Playa del Carmen, Tacombi was born out of Wolos' passion to share Mexican culture through authentic food, hospitality and experiences.  Sixteen years after selling its first taco, Tacombi is in the midst of a major expansion during which it will open at least 75 new locations across the U.S. over the next five years. The growth plan is supported by a $27.5 million funding round that the company completed in December 2021 and was led by Enlightened Hospitality Investments, the growth equity fund affiliated with restaurateur Danny Meyer's Union Square Hospitality Group. Meanwhile, Tacombi's consumer packaged goods brand, Vista Hermosa, which markets tortilla chips, corn and flour tortillas and a new line of frozen burritos, is rapidly expanding its retail footprint to over 800 stores including Whole Foods and Bristol Farms. Tacombi is Wolos' life's work – he conceived the concept as a teenager – and although the new restaurants and retail expansion will bring his vision closer to reality, the journey and experiences that came with it have come to define who he is as an entrepreneur and a leader. Whatup fam, Today I had on First Light Farms founder, Jason Ross who we call “Jace.” If you're into high-quality top-notch grass-fed beef, I'm sure you're already a fan of First Light. A brand that can be found in Bristol Farms, Lassens, and tons of other natural grocers, and now even at Ralph's in some areas.  With some of the top cuts in the world found in their Steak Club and just a few of some of the highest-end steak restaurants in the world. First Light Farms was founded by Jason and a couple of friends frustrated with the traditional meat value chain.  They had cut their teeth in the industry and were unhappy with the lack of transparency and the commodity mindset.  They also identified a problem they thought they could solve – beef with the consistency, tenderness, and succulence of grain-fed, raised on grass without any nasty and unhealthy inputs.  So Jason and his friends set about inventing 100% grass-fed wagyu beef, and they created a value chain to seamlessly connect consumers who care, with groups of like-minded farmers. Was there a time for you in the past when the ethical raising of animals didn't even cross your mind or has this been a thing for you since you were a young kid? How do you see this situation in an analogous way when it comes to grain-fed animals and the way animals are raised for consumption in the US? Is this a cultural thing? Where did we go wrong in America? At what point does America start mass-producing food? Corn subsidies. Cheap and cheerful production. Re-emergence of grass-fed. Tell us about First Light Farms. What is it and why did you create it? In large cities, farmers are basically people that live in our imaginations, what are your family of farmers actually like? “Most of the rest of the world knows about this fruit and loves it.”Karen Nardozza (16:13-16:17)   On the Florida Avocado Administrative Committee's 2021 Schedule there are 23 major varieties and 38 minor varieties of tropical avocados listed alone.   Karen Nardozza, President and CEO at Moxxy Marketing, helps brands grow and evolve in the agriculture and fresh food industry. She helped The Produce Moms become the successful, community-based business it is today and is now working with WP Produce to expand the United States' avocado category by sharing with consumers the delicious, wonderful flavors of Desbry® Tropical Avocados.   “[Our goal is to] help consumers understand that there's a difference between these avocados and the Hass avocado they're so used to.” - Karen Nardozza (6:33-6:44)   Tropical Avocados were known as green-skin avocados until Moxxy conducted consumer research about the fruit, prompting Desbry Tropical Avocados to rebrand to a name that would appeal to consumers and differentiate these avocados from the Hass most people are used to. Karen tried her first Tropical Avocado two years ago, and all she could think was, “Oh my gosh! Why can't we get these? In California I had never seen or heard of a green-skin avocado or Tropical Avocado.”    Tropical Avocados are often 2-4 times larger than most avocados and don't oxidize as quickly when sliced. That means when you prepare meals or save some for later, it won't brown within hours of slicing. They have a great buttery flavor appealing to families and are less rich than Hass avocados because their water content is higher.    Isn't it interesting that the average produce department has around 200 different varieties of fruits and vegetables, and most produce categories, such as apples, have multiple options. Yet, when it comes to avocados, the only option we tend to see is Hass.   Karen Nardozza and the team at WP Produce are changing that, helping the US get on board with a love for tropical avocados that most of the world already has. These avocados are great for moms who don't have to slice into as many avocados to serve a snack, and for at-home or professional chefs who will enjoy how slowly this fruit oxidizes (compared to Hass) and the opportunity to create meals that looks great and has a different flavor.    Surely Americans will fall in love with Tropical Avocados the same way the rest of the world has, but educating retailers and consumers takes time. As the Tropical Avocado is introduced to more and more retailers, some are very interested and willing to put it on shelves, while others want to see how it does in other markets before committing. This, coupled with the incessant infiltration of plastic packaging got Ryne thinking that it was time to address the gap in the market for glass bottled living beverages which was how Sol-ti was created in 2014. Ryne is also the Founder of Permaculture Planet, a Costa Rica-based corporation specializing in permaculture design land development and design properties. He invested in a farm in Costa Rica as a backup plan in case his business failed and later moved there. Even for a major consumer brand, launching a new product in the food industry is a challenge. So how did Gail Becker get  Caulipower frozen pizzas in grocery stores like Whole Foods and Bristol Farms in little over a year? Gail shares with Linda the incredible story of how she created Caulipower line, now available in more than 10,000 grocery stores.    Like so many SheSez guests, it was a circuitous route. For years, as a president at the PR powerhouse agency Edelman, the executive used her savvy marketing skills to help people and companies promote their brands. After years of climbing the corporate ladder, Gail was at the top. Then her father died, and something changed. Suddenly Gail longed to do something more meaningful. Gail shares with Linda the story of how her search for a tasty, healthy, gluten-free frozen pizza for her two sons, both of whom have Celiac disease led her to begin experimenting with a cauliflower-based pizza crust (the veggie is considered a superfood which ultimately sparked the idea for her company—and a new zest for life.)

You know Rob as the founder of Open Sky Fitness and the Open Sky Fitness Podcast, but did you know he also has an obsession with cooking fantastic meals? In this weeks Episode, Rob and his wife Devon will discuss the importance of “batch cooking” in creating a healthy lifestyle. They also give you a step by step way to begin as well as a few of their favorite recipes and healthy dinner ideas. Below we will take you through these steps. What is Batch Cooking? Batch Cooking is when you prepare many portions of meals at once and then save the remaining portions for a future meal. In other words, when you are cooking dinner, cook 4-5 times more than you would normally eat and save the rest for lunch for the week, or dinner the next few nights. It’s just a simple way of saying that you are preparing your meals and snacks ahead of time. For health this, is key. Rob says, “If you are not planning to succeed, you are planning to fail.” Why is it Important for Fat Loss? Rob and Devon have found that their clients learn quickly about what foods to eat, but often their lack of preparation holds them back from actually being able to accomplish their desired goals. Batch cooking is an easy way to help you make better choices of what foods you eat.  When you are hungry and tired you tend to go towards foods that will give you instant energy. These would be your carbohydrate heavy foods like sugars and breads. If you already have a great meal in a Tupperware in the fridge, you will be less likely to stuff your face with the donuts at the office. Also, when you are tired from a long day at work and you don’t really feel like cooking, you will be less likely to stop for a Big Mac if you know you are on your way home to a delicious steak and roasted vegetables. Why is it Important for Building Muscle Mass? When you want to build muscle mass the first ingredient is adding a ton of healthy foods into your daily diet. For some people that might be simply eating larger portions; for others that might be adding an entire extra meal. Who has time to cook four meals a day everyday? That’s why you can take a few hours to prepare a few different recipes that last for multiple meals and you’ll always have food at your fingertips. You won’t have to think about your next meal, it’s already there in your cooler. You won’t have to grab the chips from the vending machine because you have a homemade trail mix in your man purse. Batch Cooking for Beginners... Are you a newby in the kitchen? It’s ok, just don’t go overboard.   At the beginning look for recipes that have a simple and short ingredient list like a chili or frittata. Don’t get overwhelmed with the recipes with 20 or more ingredients. The important thing is that you get started in your new goal of a healthier lifestyle. Food Prep with the Experienced Chef... Rob says his time in the kitchen is like conducting an orchestra.   He looks at his different sections and tools in workspace as the different instruments. He has meatballs on the stove, spinach stuffed mushrooms in his oven, carne asada on the grill, a vegetable crudite on the cutting board, and bone broth in the crockpot. When he goes shopping he plans accordingly. If you love to cook test your skills and create a symphony in the kitchen! Don’t want to cook?:Healthy Dinner Ideas on the Go. Like the idea of preparing meals but hate to cook at home? Rob and Devon truly believe that home cooking is the key to really being healthy. At restaurants and supermarkets, you don’t have control over what kind of oils or how much salt they use; nor do you know of the quality of their ingredients. However, if you really don’t have an hour a week more of time or if you just despise cooking with a passion, Devon recommended the following healthy dinner ideas: Go to your local Whole Foods, Bristol Farms or Ralph's to the deli section where they have their prepared foods. Pick out a few different meats, some green vegetables, and an additional side dish that look delicious and healthful. Make sure to get the large size of each so you will have plenty of left overs for a few lunches and/or dinners. It's "batch shopping" instead of "batch cooking"! Steps for Batch Cooking Choose one or multiple recipes that you know you will enjoy eating for a few meals Write out a shopping list of the ingredients. Put both the shopping date and cooking date in your schedule. When cooking remember to clean as you go! After your meals are prepared,  separate them into tupperware for later. If there is way too much, put some in a freezer bag and freeze (remember to write the item and date on the bag) Make sure to bring your meals or snacks to work. R & D’s Favorite Batch Cooking Recipes BUTTERNUT SQUASH SOUP Prep Time: 15 minutes Cook Time: 35 minutes Total Time: 50 minutes Ingredients: 2 large butternut squash (about 4 1/2 lbs..) or 4 lbs. peeled and cubed butternut squash 2 medium onions chopped 3 cloves garlic minced 3 Tbsp. butter 1/2 tsp. salt plus more to taste 8 cups chicken or vegetable broth Preparation: Halve, seed, peel, and cube the butternut squash. Heat a large pot over medium-high heat. Add the butter and the chopped onion. Sprinkle with salt. Cook, stirring occasionally, until the onion is soft, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute.  Add the squash and the broth. Bring to a boil. Cover, reduce heat to a simmer, and cook until the squash is very tender, about 20 minutes. Transfer small batches to a blender. Hold a kitchen towel over the top (to prevent burns) and blend until smooth, 2 to 3 minutes per batch. Return the soup to the pot and add more salt to taste. Tip: If possible reheat on stove top: Makes 4 to 6 servings Roasted Broccoli Makes: 8 servings Prep: 15 mins Stand: 5 mins to 10 mins Roast: 20 mins to 25 mins 425°F Ingredients 2 pounds broccoli washed and cut into bite size pieces 2 tbsp Olive Oil (or to coat) 1/4 cup olive oil Salt Pepper Pinch of Red Pepper flakes (optional) Preparation In a bowl, mix broccoli with olive oil.  Salt and peppers to taste.  Place on a sheet pan or cookie sheet.  Bake in 425 degree oven, stirring occasionally, for 20-25 minutes or until tender. Tip: Best if reheated in toaster oven or oven.   Hearty Grass Fed Beef Chili Prep Time: 20 Cook Time: 1.5 Hours Ingredients: 2 pounds Grassfed Ground Beef 85/15 1 Medium Yellow Onion, Chopped 1 Red or Green Bell Pepper, Chopped 3 Garlic Cloves, Coarsely Chopped 1/4 Cup Chili Powder 1 tsp Ground Cumin 1 tsp Dried Oregano 1/4 tsp Ground Cayenne Pepper 1 Tsp Salt 1 tsp Fresh Ground Pepper 1 28oz Can Diced Organic Tomatoes 2 Tbsp Olive Oil 1 Cup Chicken or Beef Broth (Homemade if possible) 4 Green Onion Stalks, chopped(reserved for topping) 1 15oz Can Red Kidney Beans (Optional) Preparation: Heat large pot to med-high heat. Add olive oil to the pan, followed by onions, peppers and garlic. Once onions start to become translucent add meat. Break meat up and keep stirring until it's all brown and no red. Add chili powder, cumin, oregano, cayenne, salt and pepper. Cook for 2 to 3 minutes to release aromas. Add diced tomatoes and broth. (Now would be the time to add the kidney beans if you're using them) Bring to a boil and then turn down heat to a simmer and cover. Let cook, stirring occasionally for an one to one and a half hours. Feel free to go longer if you like, up to 2 to 3 hours.
