Imgur AlbumSpecial IngredientsNoneSpecial EquipmentFood ProcessorBrioche Buns:4 cups all-purpose flour1 stick of butter1/2 cup milk2.5 tsp yeast2tsp honey5 eggs plus one more yolk2tsp vanilla5 tbsp sugar1.5 tsp saltActivate the yeast by mixing it with the milk and honey in a bowl. When the yeast is bubbling, whisk in the eggs and vanilla. To the wet ingredients, add all of the dry ingredients, keeping the butter out for later. Knead this dough with the dough hook attachment for 5-7 minutes until it's smooth. It won't form a ball, yet. Once smooth, divide the butter into 4 segments and add them one at a time, allowing them to be incorporated over the course of 2-3 minutes before adding the next one. When all of the butter is incorporated into the dough, turn the mixer up to 6 and knead it aggressively on this level for 10-15 minutes. The dough will start to form a ball and will pull away from the sides of the bowl. Turn the dough ball out onto a floured surface. Dust with flour and fold in the edges and flip the dough ball, exposing a smooth, floured surface. Return the dough ball to a clean and dry bowl, cover with Saran Wrap, and allow to proof and rise for 3 hours. After 3 hours, divide into 8 equal parts, and fold into smooth balls. Place these on a baking sheet covered in parchment paper. Brush on an egg wash and sprinkle coarse kosher salt on the top. Bake at 325ºF for 38 minutes and then allow to rest on the counter for 20 minutes. Old Bay Seasoning:1 tablespoon salt1 tablespoon celery seed1 tablespoon smoked paprika1 teaspoon dry mustard1 teaspoon ground ginger4 bay leaves1/2 teaspoon black pepper1/2 teaspoon white pepper1/4 teaspoon crushed red pepper1/8 teaspoon nutmeg1/8 teaspoon cardamom1/8 teaspoon allspice1/8 teaspoon cinnamon4-5 clovesJust make sure these are ground together as finely as possible.Butter:1 quart of heavy cream1 flour sack cloth1 hand mixerBeat the heavy cream for approximately 10-15 minutes until the volume collapses and the buttermilk breaks from the butter fat. Strain the butter through a flour sack cloth, twisted tightly, and set in a colander inside a bowl. Transfer the butter ball to the fridge to harden and cool. Burger:Slice your roast against the grain in 1/2 inch slices. Working in small batches, pulse for 10-15 seconds in the food processor and transfer to a bowl. Pick through, by hand, to remove any tough or stringy bits of sinew, gristle, or connective tissue. Add one tablespoon of old bay per pound of meat. Add one egg for binding. Form into 1/2lbs patties and cook in an oiled, hot cast iron pan. Take care to flip them gently and infrequently. Steam the crab legs and remove the meat from the shell. On low to medium-low heat, poach the crab in 2 tablespoons of butter to keep it warm and moist while the rest is being prepared. Hollandaise:Construct a double boiler by placing a metal mixing bowl inside a slightly smaller pan with an inch of water in the bottom. On medium to medium-high heat, whisk 4 egg yolks in the bowl. Add the juice of one strained lemon and continue whisking until the color has changed opaque and the volume has doubled. Melt 4oz butter in a bowl in the microwave and add it a trickle at a time while whisking to incorporate. Add a dash of salt and a pinch of old bay. Roast the asparagus in the oven on 450ºF with olive oil and salt. Assemble the burger and serve.

Greetings Listeners! This (very explicit) podcast just happens to be one of my absolute favorites. It is chock full of wisdom and flavor! Experiences You Should Have Podcast Show Notes Going Crabbing: Interview with Dr. Alan Snyder I had the opportunity to interview Dr. Alan Snyder for this fun episode on crabbing in the Chesapeake Bay. Dr. Snyder was born and raised in Baltimore, MD where both eating and catching crab is part of the culture. Seafood and Old Bay are also in your blood if you're from Baltimore, personally, my 2 favorite things! If you love eating crab, then please read on! Dr. Alan Snyder eating his Crab with a Natty Boh Beer Experience Crabbing When you go crabbing, it's a lot more complicated than fishing; there is a lot more preparation involved. If you have a boat, you're going to set up a massive line with a buoy, and a cinder block and tie bait on your line every 10-15 feet or so. I know it sounds weird, but the best crab bait is chicken necks. If chicken necks aren't your thing, you can use eel and fish guts as bait. You slowly feed the line over a PVC pipe, the crabs then hold onto the chicken necks, and as the line comes up, you pull the crab up with nets. There are other ways to capture crab: fishing poles, traps, professional crates, etc. You need to make sure based on what state you're in that you have the correct permit and proper size before you capture them, cook them, and eat them. When is the Best Time to go Crabbing on the Chesapeake Bay? You can go crabbing year round on the Chesapeake Bay, but the best time for going crabbing is the end of summer or fall months. Preparing and Cooking Crab When you're preparing crab, fill the bucket or cooler with ice, and put them right side up. It dulls their movement and feeling and makes it easier to cook them. It takes about 20-30 minutes to steam crabs. If there is any blue or green coloring left on the crabs, you'll need to keep cooking them. Alan recommends using beer, rock salt, and plenty of Old Bay Seasoning when steaming! While this post is about east coast crab, here's a video on how to break down a Dungeness Crab (west coast crab). https://www.youtube.com/watch?v=48WTCnF2rSQ Alan's Favorite Way to Eat Crab Crab Cakes are Alan's favorite way to eat crab. It's 90% crab meat (jumbo lump back fin meat), broiled with an egg, parsley, squirt of yellow mustard, mayo, few ritz crackers with lemon juice and of course Old Bay. Alan is a purist and doesn't like tartar sauce on his crab. If you're a beer drinker and on the East coast, then pop open a Natural Bohemian Beer--Natty Boh beer, is the best drink to have with your crab when in Maryland. When eating crab, make sure you're eating just the meat from the legs and back. Maryland Crab Cakes This crab cake recipe is 90% crab meat and is best eaten wtih a Natural Bohemian Beer and provided by Dr. Alan Snyder 1 lb backfin crab meat1 egg1 tbsp mustard1 tbsp mayo1 tbsp old bay1 tbsp parsley8 Ritz crackers crushed1 tbsp lemon juice Mix together all of the above ingredientsBroil at 375 degrees for 15-20 minutes

If you think about it, lobster rolls are a strange concept! A hot dog bun stuffed with lobster salad is pretty weird, but oh my gosh, it is exceptionally delicious. Some suggest that you use a split-top potato bread roll, but even that tastes like a hot dog bun. The lobster salad should be chilled and covered in velvety mayonnaise. When the lobster meat is sweet and in big chunks and the roll is warm and dripping with butter, the combo of flavors and textures is orgasmic. I’ve come up with a simple recipe that will produce a very satisfying lobster roll. If you don’t vibe with lobster, you can always substitute chilled cooked shrimp or lump crab meat. For this recipe, you will need the following ingredients: 3 or 4 lobster tails ½ cup of Vegan Mayonnaise 1 Celery Stalk 1 tablespoon of Lemon Zest Juice of ½ lemon or two tablespoons 2 tablespoons minced flat-leaf parsley, chives or a combination (Completely optional) Kosher Salt and Freshly ground black pepper 3 Brioche Hot Dog Buns or potato rolls 3 to 4 tablespoons of unsalted butter Iceberg or romaine lettuce for garnish. The beauty of using a slow cooker or a Crock-Pot is that it's pretty darn simple. Prep your ingredients, add them to the slow cooker and press a button or two. But there is a difference between a good slow-cooker meal and a great slow-cooker meal. Good ones get dinner on the table. Great ones, however, are remembered, talked about and requested. Here are some tips that can help you turn basic slow-cooker dinners into standout supper stars everyone will enjoy. These tips will also help you know when a slow-cooker recipe is destined to be great. Tips Coating the inside of the slow cooker with a non-stick spray can prevent the need for scrubbing later. Liner bags made for slow cookers make cleanup quick, effortless cleanup. For most slow cookers, the high setting is approximately 280 F and the low setting is approximately 170 F. Cooking on high for one hour is about equal to cooking on the low setting for two hours. Add fresh herbs at the end to keep their flavors bright and fresh. Place hard vegetables, like potatoes, carrots, and other root vegetables at the bottom of the slow cooker where they will have more moisture and cook swiftly. Crockpot BBQ Chicken This is going to be the easiest BBQ chicken you have ever made. I'm not joking! Nothing beats the flavor. This is The Best Crockpot BBQ Chicken recipe ever! Ingredients 2 lbs boneless skinless chicken breasts 1 cup BBQ sauce 1/4 cup Italian dressing 1/4 cup brown sugar 1 tbsp Worcestershire sauce salt to taste Instructions Season chicken breast lightly ( a small pinch per breast) with some sea salt and place in your crockpot. In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined. Pour over chicken, cover and cook on HIGH for 3-4 hours Once the time is up, you can serve the breast whole, or shred with 2 forks. If shredding, recover and let cook in the sauce for about 10-15 more minutes to soak up all that delish flavor. Serve on buns, over rice, in wraps, on a salad or eat a plateful as is! Our favorite way is on fresh rolls, topped with coleslaw. We couldn't post episode 3 so here's episode 3.5. Enjoy. Chicken Sausage Jambalaya Serves 6 Ingredients: 3 cups chicken stock or broth (organic preferred) 1 (28-ounce) can diced tomatoes with juice 1 (4-ounce) can diced green chile 1 (15-ounce) can white beans, drained & rinsed 4 chicken sausages, sliced (I used the spicy Italian ones from Trader Joe’s and removed the pork casing) 1 cup brown rice (I used the frozen, already cooked version from Trader Joe’s) 1 bell pepper, chopped (I used yellow but have used orange in the past too) 1 cup celery, chopped (approximately 4 large celery stalks) 1 small red onion, chopped 1-2 teaspoons Old Bay Seasoning (for a lower sodium version, use Cajun seasoning just omit the salt) Directions: Toss all ingredients in the Crock Pot (or Dutch oven or stock pot) and cook on HIGH for a MINIMUM of two hours. Soups always taste better the longer they simmer but since the chicken sausages I used were pre-cooked, I was really just waiting for the veggies to soften and the flavors to mingle.

LINKS MENTIONED IN EPISODE 32 - Support our sponsor: (get 10% off your order of $50 or more with coupon code "jimmy") - - - - - - - - Recipes: SPINACH LASAGNA 1 pound ground beef 2 tablespoons onion, chopped 1/8 teaspoon garlic powder 1/2 cup spaghetti sauce 8 ounces cream cheese 1 egg 1/8 teaspoon pepper 10 ounces frozen chopped spinach, thawed & drained 4 ounces mozzarella cheese, shredded 2 tablespoons parmesan cheese (I used the kind in a can) Brown the hamburger with the onion; drain off the fat. Mix in the garlic powder and spaghetti sauce; season to taste and heat until bubbly. Meanwhile, soften the cream cheese in a medium-size microwaveable bowl for about 40-60 seconds. Stir until creamy; beat in the egg and pepper with a spoon until well mixed. Blend in the spinach. Spread half of the meat mixture evenly in the bottom of a greased, 8 x 8″ glass baking pan. Spread the spinach mixture over the meat; top with the mozzarella, then the rest of the meat. It may not completely cover the top, but that’s ok. Sprinkle with the parmesan cheese. Bake at 350º about 30 minutes until hot and bubbly. Or, cover with plastic wrap and vent one corner then microwave on HIGH for 3 minutes; then reduce to MEDIUM and cook for another 7-10 minutes until hot and bubbly. Let stand 3 minutes before serving. Makes 6-9 servings Can be frozen Per 1/6 Recipe: 368 Calories; 28g Fat; 23g Protein; 5.5g Carbohydrate; 2g Dietary Fiber; 3.5g Net Carbs Per 1/8 Recipe: 276 Calories; 21g Fat; 17g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs Per 1/9 Recipe: 245 Calories; 19g Fat; 15g Protein; 3.5g Carbohydrate; 1g Dietary Fiber; 2.5g Net Carbs NOW you CAN cut some of the carbs and calories by using Walden’s Farms tomato & basil Pasta Sauce which is a zero carb, zero calorie sauce! Broiled Tilapia Parmesan Ingredients: • 1/2 cup Parmesan cheese • 1/4 cup butter, softened • 3 tablespoons mayonnaise • 1-2 tablespoons fresh lemon juice • 1/4 teaspoon dried basil • 1/4 teaspoon ground black pepper • 1/8 teaspoon onion powder • 1/8 teaspoon celery salt • 1/2 teaspoon paprika • 1/4 teaspoon garlic powder • Old Bay Seasoning to taste • 2 pounds tilapia fillets Directions: 1. Raise oven rack. Preheat broiler. 2. Line bottom of broiler pan with foil. Spray top lightly with Pam olive oil spray. 3. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise, and all seasonings EXCEPT Old Bay Seasoning. Add lemon juice to achieve desired consistency. Mix well and set aside. 4. Arrange fillets top-side up on the prepared pan. Sprinkle top side with Old Bay. 5. Broil a few inches from the heat for 2 1/2 minutes. 6. Flip the fillets over, sprinkle with Old Bay, and broil for 3 more minutes. 7. Remove the fillets from the oven, flip them, and cover them with the Parmesan cheese mixture on the top side. 8. Broil for 2 1/2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to overcook. Cinnamon Pork Rinds Ingredients: • Pork rinds • Olive oil • Cinnamon • Artificial sweetener (granule or powder form) • 2 Ziploc sandwich bags Directions:  1.     Pour a little olive oil into a Ziploc sandwich bag. Press out all the air from the bag to ensure that the oil coats the inside of the bag. 2.     Open bag and drop in several pieces of pork rinds. Seal the bag and shake until pork rinds are coated. Remove the pork rinds and set aside. 3.     Using a clean Ziploc bag, dust the inside of the bag lightly with cinnamon and your artificial sweetener of choice. 4.     Drop the oil-coated pork rinds into the bag. Seal and shake bag until the pork rinds coated with cinnamon and artificial sweetener. Low-Carb Chilli Ground Beef (2 lbs) minced onion (1/2 cup) beef broth (1 box) I used a low sodium version Rotel diced tomatos (1 can) Salsa (1 jar medium and 1/2 jar hot Mama Lupe’s) Chili Seasoning (1/2 teaspoon) Cumin (1/2 tablespoon) Oregeno (1 tablespoon) Garlic Powder (1/2 tablespoon) Black Soy Beans (2 cans) When I serve it up for myself, I like to add a few jalapenos and grated cheddar cheese on top.  Hope you like it!
