Welcome to this week's episode of Drinks in the Library! Today we're exploring Nettle & Bone by T. Kingfisher, a darkly whimsical tale of a shy princess who undertakes an impossible quest — armed with a dustwitch, a reluctant fairy godmother, and a dog made of bones — to rescue her sister from a cruel prince and a cursed kingdom. My guest this week is my husband, Bill Howard. I asked if he wanted me to read a little bio for him, and he said he'd actually prefer to have even less of himself on the internet — which, frankly, is impossible given all the stuff I've already spilled about him on this podcast. Both Bill and I love Nettle & Bone so much and it was fun to talk with him about it! This book is a dark fairy tale and I wanted to pick a dark drink, I think any will do but I went with an Espresso Martini because that is one of Bill's favorite cocktails. Espresso Martini 1 ounce espresso or cold brew coffee2 ounces vodka1 ounce coffee liqueur, I used Virago, and RVA distillery.5 ounce simple syrup, or to tasteIce Shake with ice and strain into a cocktail glass. Perspective and Commentary: Variation in nutrient composition of feeds and diets and how it can affect formulation of dairy cow diets with St-Pierre & Weiss

Dr. Weiss and Dr. St-Pierre co-authored this episode's journal club paper in Applied Animal Science (ARPAS Journal). Bill and Normand share a career-long interest in how feedstuffs and diet variation impact cows. (6:31)Bill and Normand discuss sources of variation, which they divide into true variation and observer variation. True variation means the feed has changed: a different field, change during storage, etc. Observer variation includes sampling variation and analytical variation. Some feeds may exhibit a lot of true variation and others may exhibit a lot of observer variation. And some feeds are high in both types of variation. Highly variable feeds should be sampled more frequently. Some feeds are so consistent that using book values makes more sense than sending in samples for analysis. Bill and Normand go on to give some examples and share sampling and analysis tips for different types of feedstuffs. (12:41)Bill would often be asked if users should continue to average new samples with older ones or just use the new numbers from the most recent sample. He and Normand debate the pros and cons of the two approaches as well as discuss the use of a weighted average where recent samples would be weighted to contribute more. (26:02)Next, our guests discuss how multiple sources of a nutrient reduce the TMR variation for that specific nutrient. For example, alfalfa NDF is more variable than corn silage NDF on average. Yet if you use a blend of these two ingredients, you end up with less variation in NDF than if you used all corn silage. Normand details the mathematical concepts behind this relationship. Both Bill and Normand emphasize that diets must be made correctly for the best results. (32:26)How do feedstuffs and diet variations impact cows? Both guests describe different experiments with variable protein and NDF concentrations in diets. Some were structured, like alternating 11% CP one day and 19% CP the next for three weeks. Some were random, like randomly alternating the NDF over a range of 20-29% with much higher variation than we'd ever see on-farm. The common thread for all these experiments is that the diet variations had almost no impact on the milk production of the cows. (38:04)Clay asks how variation in dry matter might affect cows. Bill describes an experiment where the dry matter of silage was decreased by 10 units by adding water. Cows were fed the wet silage for three days, twice during a three-week study. To ensure feed was never limited, more as-fed feed was added when the wet silage was fed. It took a day for cows on the wet silage treatment to have the same dry matter intake (DMI) as the control cows and milk production dropped when DMI was lower. However, when switching abruptly back to the dry silage diet, DMI increased the day following the wet silage and stayed high for two days, so the cows made up for the lost milk production. Bill and Normand underline that it is critical for the cows not to run out of feed and described experiments where feed was more limiting, yielding less desirable outcomes. (46:17)In the last part of the paper, our guests outlined seven research questions that they feel need to be answered. Normand shares that his number one question is how long will cows take to respond to a change in the major nutrients? He feels that we spend an inordinate amount of money on feedstuffs analysis, and there are some feeds we should analyze more and some feeds we should quit analyzing. Bill's primary research question revolves around controlled variation. What happens if you change the ratio of corn silage and alfalfa once a week? Will that stimulate intake? Data from humans, pets, and zoo animals indicate that diet variation has a positive impact and Bill finds this area of research intriguing. (50:43)In closing, Clay encourages listeners to read this paper (link below) and emphasizes the take-home messages regarding sampling and research questions. Normand advises that if you are sampling feed, take a minimum of two samples, and try as much as you can to separate observer variation from true variation. He also reminds listeners to concentrate on a few critical nutrients with more repeatability for analyses. Bill encourages nutritionists to sit down and think when they get new data - before they go to their computer to make a diet change. If something changed, why did it change, and is it real? Take time to think it through. For most of the 35-thousand years or so that humans have roamed the Earth, we were able to represent what we see and hear through art and music. But we were not able to capture images and sounds and replicate them until - in the grand scheme of things - relatively recently when the inventions of the industrial revolution brought us rudimentary photography and phonographic recordings. Imagine how that changed the world. Not only the way we see and hear ourselves and others, but the way we think about reality. In the nearly two centuries since, technology has created unlimited creative opportunities for people in the audio and visual fields and given rise to some exciting new possibilities. On the forefront of changes in the audio world for the past couple of momentous decades, Bill Kelley has been a Recording Engineer at the LSU school of Music and Dramatic Arts, a century old school on the LSU campus with more than 400 students and two dozen majors. Bill produces 300 or so recitals a year for students and faculty, and supports them with their various creative projects. Bill also has several creative projects of his own: he's a musician and has also created an audio production tool, The Rhythm Tickler, that makes it easier to build digital loops that musicians can use to create new compositions.   On the visual side of the ledger, Kristen Soileau Freeman is a Baton Rouge-based wedding and lifestyle photographer with an approach that is at once spontaneous and organic on one hand and artful, and studied and beautiful on the other. Kristen hung out her shingle, Kristen Soileau Photography, in 2010, while she was still a student at LSU, where she majored in fine arts. In the years since, she has grown her business into one of the city's most in-demand wedding photographers, which is no small thing in an era when brides must have the Insta-perfect photo from the moment of the proposal til end of the wedding reception – and everything in between. Kristen is a native of Lake Charles, who came to Baton Rouge in 2009 to attend LSU. Both Bill and Kristen are great examples of the wisdom of the piece of advice often directed at people looking for career guidance: "Do what you love and you'll never work a day in your life." In Part 1 of a 4 part series on workforce we're focusing on a domestic scan conducted by the National Cooperative Highway Research Program (NCHRP) recently conducted titled Leading Practices in Strategic Workforce Management by Transportation Agencies.  During the Committee on Maintenance annual meeting Bill Lambert of the New Hampshire DOT presented some of the findings and we're revisiting his conversation with Lee Wilkinson of the Iowa DOT.  Both Bill and Lee were members of the scan team and would welcome any discussion or comments. Hosts Bill Condon and Matt McGregor are joined by ‘SOAR Selling' author and sales coach David “Dave” Hibbard. The three discuss the crucial role mindset plays, the beliefs-actions-results connection, and how having a specific approach is going to make your prospecting more successful. Bill met Dave Hibbard twenty years ago, when he was six months into the business, when he participated in a live dial in one of Dave's breakout sessions. Both Bill and Matt have successfully used some of Dave's techniques to get in the door and close deals. For Matt, mindset is what sets Dave apart from other trainers. Dave defines mindset as the reflection of your beliefs. And mindset is something that helps top performers consistently win. Dave said it: “Beliefs drive your actions, and your actions drive results.” The mistake many people make when it comes to not achieving what they want is to focus on their actions. They're wrong – they should focus on their beliefs, instead. Dave explains that beliefs come from an experience you have had. An experience is neutral per se, but it's how you interpret it that shapes it. According to Dave, mindset can be taught if he can get in someone's mindset. The problem, though, is the fact that lots of people stay stuck in their beliefs because they get a payoff. Dave discusses two choices people can make to understand where their beliefs come from. When it comes to prospecting, it isn't just about the techniques you may use. It's about believing that you are going to get a meeting. And, after that, it's about believing that you can add value to that company. Today's guest is Bill Perkins, a hedge fund manager, film producer, high-stakes poker player, and author of Die with Zero. If he wasn't in those lines of work, Bill tells Ryan he'd be a farmer. More importantly for our purposes, Bill is the founder of SkyFi. The startup doesn't fly its own satellites, and is instead tackling what it sees as a software problem. SkyFi is developing a clean, consumerized experience for buying satellite imagery through a web browser or smartphone app. Behind the scenes, SkyFi's platform pulls from 70+ satellites and leverages partnerships with more than a dozen EO partners. The app is in beta, with a global launch slated for next year. The marketplace supports (or will support) high-res satellite imagery, night, hyperspectral, satellite video, SAR, and stereo. Episode Eleven features Bill and Esther VanGorder talking about their business centered around Nordic Walking and their Retirement Fails! My Key Takeaways: Bill and Esther were a great couple to talk to and they had a lot of great insight regarding business.  I still cant believe that they have created a business centered around teaching people how to walk!  If they are retirement fails, we all should be so lucky. One thing I learned from Bill and Esther is that it is never too late to follow your passion whether it is starting a new business or getting in shape. Speaking of getting in shape, Nordic walking seems like the way to go with benefits like burning up to 30% more calories than regular walking. It increases heart and cardiovascular training up to 25%, helps with posture and the perception of exertion is 50% of what it would be normally because of the poles.  Bill shared that he is in better total shape now than when he was in his 40s. Bill said the three criteria for choosing a business to run in retirement were that t should be something you can do, something you enjoy, and something that you are personally interested in.  He said that is the secret to any job really, especially one you do when you are older.  Nordic Walking just happened to cross off all three for Bill and Esther. Because the VanGorders already had invested in their digital presence they were prepared when the pandemic hit and actually thrived.  They were not trying to play catch up and setup their website, start using social media, or learn how to do Online sales and Marketing.  None of this came naturally to them but they just buckled down and figured it out.  Ultimately everything is figure-out-able. Both Bill and Esther got a lot of satisfaction from the knowledge that their business was helping to make people healthier and give their customers a better quality of life. The VanGorders even have managed to get Nordic Walking into schools!  Bill did point out that one of his good friends, fellow instructor and most importantly, a school principal helped them navigate the 'unique' educational landscape.  When attempting to sell to schools or really any governmental entity it is good to have a guide that can help you to navigate the pitfalls. Bill pointed out that they don't always charge for classes but that people are more likely to become 'invested in to the process' so to speak if they pay a little towards the class.  Its a paradox that people don't respect free even if it is of the same quality. As Bill and Esther had pointed out, the Pandemic has really played havoc with the supply chains.  To combat that issue they have taken to carrying more stock than they normally would.  Because their business is subject to a customer's desire they had better have the poles in stock so as not to miss out on a sale just because the customer lost their motivation while waiting for their poles to come in. The VanGorders don't feel like the market is saturated yet in North America, particularly the US.  People like to deal locally, no matter where they are.  Both of them said that they would be more than happy too discuss the business opportunities as they saw it for someone interested in bringing Nordic Walking to their area.  This sounds like an excellent opportunity and I encourage anyone that might be interested to reach out to take that next step and reach out to Bill and Esther. Their number one piece of advice was figure out what you love and go do it!!!  It doesnt have to be running a business; it could be volunteering. They have found real satisfaction in running their own business.  It is good to know that they have another source of income coming in! The upcoming election offers some comfort, but also comes with the knowledge that even if the election results in a new president, there is so much work to do to create a society that acknowledges and attempts to correct the moral wrongs that have led to our present calamity. It is exhausting! It is in times like this that we need to truly summon our resilience and ask our elders how they have managed to make it this far and perhaps give us a bit of perspective and context for what's to come. To do that we talked to two incredible people who have seen and experienced so much of the best and worst of America and lived to tell the tale. The first is Bill Borden, host Tre Borden's father, who is a 77 year old Vietnam vet, former Air Force pilot who has a lot to say about this country, why what is happening now is necessary, and why America is still the greatest country on earth; the second is Dr. Marsha Hirano-Nakanishi, the child of Japanese parents who went through internment, who went on to go to Stanford and Harvard on her way to becoming a long-time education administrator as Vice-Chancellor of the CSU system. This episode contains a conversation between Paul and Bill in which you’ll learn new things about their experience in particular fields—geology and journalism, respectively—and where their zeal to harvest and connect information bumps up against troublesome uncertainty. You’re accustomed to hearing us as podcast co-hosts, sharing our  opinions and our interviews with experts to explore insights at the intersection of science, everyday human experience, and the values of theology and philosophy. We welcome an audience that, like us, hungers to understand the details that well-informed research provides—in light of the wonder, mystery, and uncertainty that we complex human creatures provide. We embrace deeper and broader consideration and communication, and these values feed into our “day jobs,” which involve writing, teaching, consulting, and more. Paul’s efforts to dig more deeply into the methods of purposeful scientific learning recently prompted him to enroll in a data-science “boot camp”—an intense, 12-week course offered by an organization called Metis. He wants to extract every bit of value from the oceans of data generated in this world. Or at least he wants the value that will serve his own colleagues and clients as he tackles projects and secondarily adds content to “Dr. G’s Blog,” named for him—Dr. Giesting. One of his guiding maxims is mentioned here: “No Data Left Behind.” (Testifying to the diversity of the “That’s So Second Millennium” duo, Bill likes to focus on story-telling for clients to describe various accomplishments of science and values, sometimes faith and reason. And he’s writing in his  OnWord.net blog these days about crucial times in our world today that will require rich knowledge and deliberation alongside problem-solving strategies marked by prudent, civil, inclusive dialogues and inquiries. This is an example of the approach he’s formulating. But today’s podcast draws its energy mostly from the Paul’s recent ruminations.) Those thoughts include a look back at something called the “p-value.” Their discussion of p-values in the world of scientific statistics led Paul and Bill into consideration of the co-existence of intellectual rigors necessary to the practice of research and unavoidable uncertainties inherent in the real-world application of data-driven knowledge. That co-existence of firm principles and subjective interpretation turns out to be a phenomenon that both co-hosts have experienced in their respective fields. They agreed that the pursuit of more and more data, nurtured by practicality and idealistic values, is a beautiful thing, but it’s not always possible. In many cases where a specific project is choosing and using a finite set of data, the consumers of scientific or journalistic information have reason to quote the skeptic’s famous aphorism that “there are lies, damned lies, and statistics.” Bill cited examples from the past reporting of political polls, which too easily can neglect important  nuances that should influence an audience’s interpretation. Both Bill and Paul noted that, during the Covid-19 crisis, the public is seeing science and its generation of statistics play out in real time, with massive policy implications, and the practice of “objective” science now seems to many people as iffy and subjective as theology-based interpretations of the world. That’s ironic since observers have said the availability of scientific certainty and experiential knowledge has driven them away from religion as a poor, mythological substitute for reality. Neither co-host called for a dismissal of the knowledge gained through religion, philosophy, or  statistics; after all, in many policy matters surrounded by uncertainty, statistics are a huge part of the guidance empowering human reason. But there is much going on behind the scenes at every point in a statistics-driven exercise, with some of that context warranting caution in our binary decisions about importance and implementation. Paul acknowledged that he encountered this in preparing his capstone report for the Metis data-science program. Scientists have grappled with ways to assess the validity of some data, the replicability of some experiments, and the dominance of some assumptions about statistical analysis. Indeed, the “p-value” suggests good examples of doubts that have arisen. This podcast discussion did not unearth any solutions for doubts about statistical findings, but it did prompt a meeting of the minds. Both the scientist and the journalist determined that all of us seeking to optimize understanding for reasonable policies and practices must continue our zealous pursuit and values-informed stewardship of data. Jeff and I co-interview our wonderful guests Bill and Brenda Bogart! Bill primarily works with the marriage ministry at Park Cities Presbyterian Church here in Dallas and Brenda is an artist. Both Bill and Brenda were married previously and have a big and beautiful blended family today. One of the biggest issues that arises in marriage is communication. With Bill and Brenda meeting with married couples, they try to emphasize that good communication is really about a mutual understanding and mutual respect for one another in a marriage. This sweet couple shares different tools on this episode that can help with better communication and listening. Some topics we discuss include validating feelings in your spouse, weekly dates with your spouse, and what healthy disagreements are. This episode really explores the freedom of truly working things out in your marriage in a healthy way. Bill and Brenda go into what it looks like to be intentional everyday with your husband or wife. When we work through loving our spouse well and what all that entails, it will naturally lead to greater intimacy in all areas of the marriage. When we realize that our spouse is not the enemy, but rather our teammate that we are wanting to cross the finish line of life with, the whole outlook of what your marriage is changes. Bill and Brenda speak wisely on the subject of forgiveness, the balance of discussion between internal and external processors, and how to make your spouse feel known. The world often tells us what a husband should be and what a wife should be. We are often overcoming those lies of the world to lean into what Christ calls us to be as husbands and wives. When listening to this podcast, you can’t help but see the beautiful intention the Lord had for marriage and what He intends it to be- it is a representation of our walks with the Lord. We walk along with Jesus through life and learn how to better communicate with Him as we go, learning to grow in grace, humility, and how to truly listen. 073 - Bill Smith, Crooks Corner

Welcome to Episode 73! In this fabulous conversation, I speak with Chef Bill Smith of Crook's Corner in Chapel Hill, North Carolina. Both Bill and the restaurant are beloved fixtures in this great town of advocates, artists, musicians, and other creative types. Sound familiar? Yes, Chapel Hill is very similar in size and energy to Charlottesville and is going through some of the same growing pains. So this talk hit close to home for me and was a great chance to catch up with someone I consider a dear friend. I first met Bill, in an extremely "meet cute" way while sitting on a bus during the Southern Foodways Alliance Summer Symposium. He was so friendly and put this podcaster at ease during her first solo foray into the world of professional food conferences where small talk is king and networking important. We had talked for a good half hour before I realized he was a chef and a noteworthy one at that! Chef Bill took over Crook's from founding owner Bill Neal back in the 1990's. Bill was a beloved chef who passed way too young and is credited with bringing shrimp and grits to the masses for better or worse. Needless to say, Neal's version is still the best in my opinion and a must-order. Chapel Hill's music subculture is well known, and Bill has been a part of that for decades as part owner of The Cat's Cradle which opened way back in 1973. In fact, Bill's collection of concert tee shirts which he has worn in the kitchen since he began, is part of a museum collection profiled in an episode of the Southern Foodways Alliance Gravy podcast. Musicians were a huge part of Bill's kitchen for many years because they have what he calls, "...a loose point of view," an enthusiasm, as well as a need for flexible hours. These days, his kitchen looks very different, comprised mostly of immigrants, some of whom have worked for Bill 15 years or more. He considers them family. How are they coping in this new political climate? How has Bill attempted to ease their way forward? His efforts are beyond admirable and make me so glad to know him. A true Southern gentleman, scholar, and outspoken advocate. "I trust them completely...they are family...I'm a Godfather...honorary grandfather. I've been to weddings, you name it...I love them to death...I'm almost 70 years old...having them in the kitchen helps a lot." Having such a dedicated kitchen staff from elsewhere has not only influenced the restaurant's recipes but has made a sometimes reluctant Southern clientele able to embrace more complex spicier dishes. In fact, he travels to Mexico City quite a bit on the regular. "When I first came to work here people would complain about things being too spicy. Now that never ever happens. Ever...so the public has come along...they've learned...I don't know if they're just more adventurous...or been exposed to different stuff...but they've become much more receptive." Bill grew up in New Bern, North Carolina surrounded by grandmothers and other relatives who were great cooks. His great-grandmother cooked lunch every single day until she was in her 90's. Folks would leave school and work to eat and enjoy a full mid-day dinner for an hour. With china, silverware, veggies, meats, the whole shebang. This kind of leisurely eating and fellowship is definitely present at Crook's today where the minute you walk in the door, you feel at home. Bill has appeared on Vivian Howard's A Chef's Life several times, has written many books, and is hard at work on a new one, a second volume of Seasoned in the South. The recipe tester is Sheri Castle of Rhubarb fame, so you can trust every recipe to come out the way it's supposed to. Can't wait until it's published! And yes it will have the recipe for "That Stupid Pie." What's that a reference to? The Atlantic Beach Pie, of course, a creation of Bill's grandmother and a beloved dessert at Crook's. A variation on lemon meringue pie with a saltine crust. In fact, if you don't order it, you're an idiot. Although I'm partial to his banana pudding, I never leave without taking a slice home. It's that good. This was recorded back in February, so it was interesting to hear how the frantic nature of our political sphere was just as anxious back then. Back then meaning 3 months ago! A time capsule for what was to come. Little did we know it would only get worse! What's the solution? We brainstorm some ideas. "I think it's our duty just to keep raising hell. I used to be a polite Southern boy but nuh-uh, not anymore...I get in somebody's face...lord help if somebody evangelical gets all over me...it's easy to make them cry...just challenging what they just told you...it's sort of funny, but it's sort of sad...I don't listen to crap anymore...I'm one of the troublemakers...but I come from a family of them...I'm spoiling for a fight." His definition of success? Rent and beer money. Awards and recognitions? Not that important. Despite numerous James Beard nominations and other awards, just having a nice cold can of PBR at the ready is reward enough. Sounds damn good to me. As does this episode. Enjoy.

Co-hosts Bill Giancoli and Myron Rumsey are back with episode 99 of The Podcast of Oa with conversation about February's Green Lantern books.  With DC Comics' recent announcement about their Rebirth initiative and all the Green Lantern books being replaced with two twice-monthly series both Myron and Bill have opinions on what these books might be like and how it impacts the current series. Both Bill and Myron felt that the conclusion to the Sonar arc in the main Green Lantern title didn't provide the satisfaction it could have, with neither Sonar nor Hal Jordan ever coming face to face.  Both hosts found themselves routing for the Sinestro Corps as they took down the Paling and wondering how it will effect the way Earth's hero community will view the yellow lanterns.  There were some surprising moments in this month's Edge of Oblivion issue along with the announcement that Ethan Van Sciver would be leaving the series with issue three to focus on DC: Rebirth.
