Many Restaurants With Kobe Beef on Their Menus Are Not Actually Serving Kobe Beef…. Japanese Kobe beef is considered the tastiest beef money can buy: a single steak can cost as much as $600. But an INSIDE EDITION investigation found that while some menus advertise Kobe beef, they are actually serving up meat of lesser value. Kobe beef, which has a marbled appearance, comes from pure-bred cattle raised on a special diet in Japan. The meat can cost $55 dollars an ounce, and only 400 pounds get shipped to in the U.S. each month, according to Kobe beef distributor Brent Nakama. Today, there are only 8 US retailers authorized to sell this rare, premium product, and only 37 to 43 US restaurants have the certification to serve it. January is thyroid awareness month. In this episode, Caroline dives into all things thyroid in her conversation with holistic nutritionist Katie Braswell of Wild + Well, based in Boulder, CO. Katie explains that a lot of practitioners will often say your hormones are out of whack. They're not wrong – but what's the deeper cause? In Katie's experience, it could be due to food sensitivity or even something like mold exposure and parasites in your history that need to be cleared from the system so your hormones can work appropriately. And one of the biggest things she sees is liver stagnation. Our livers are responsible for detoxing the system and clearing things. And so, when we see that the liver is not functioning appropriately, that's where we need to take a deeper look as it relates to hormone changes. Because, oftentimes with hormones, there's a little more going on that we really need to look into. Katie's end goal is to try to get the clients off of the medication and get to the point that the thyroid is functioning on its own. Because once you start doing thyroid medications, you can sometimes get to a point that the thyroid stops firing. It stops working on its own, and that's a dangerous place to get into because you will then be subjecting yourself to a lifelong situation of thyroid medication to manage your health. Therefore, there has to be this delicate balance. This conversation is important because there might be things discussed here that could be indicative of some thyroid issues that you're probably just letting off the hook. Knowledge is power. Therefore, it's always better to err on the side of knowledge and get the test and help you need before things could fall off the wayside. So you have to advocate for yourself and get the care and support that you deserve. Katie's Bio: Katie Braswell, of Wild + Well, is a Holistic Nutritionist based in Boulder, CO. Crowd Cow works with farmers who care about their animals to raise them with love and happiness before ending their lives with as much compassion and gratitude as possible. Joe explains what problems industrial farming has had on the local agriculture and environment. He also tells us how a few alternative views of the legislation can allow farmers to claim their animals as organic, free-range, and grass-fed when in reality they’re anything but. By choosing to support sustainable farming practices with our money and purchases, consumers can send a message that they don’t support factory farming that contributes to environmental endangerment and poor animal welfare. I too, had a goal and did it, but then I didn’t do it. So I talk a bit to Andrea about how it felt to achieve your dream, and to try and find something new. In the week or so preceding this episode, Polyface announced it was slaughtering one of its sacred cows. They were going to ship product. Social media was a angry throng of pastured poultry injustice warriors. If you're looking for commentary on Daniel and Joel's decision, you're in the wrong spot. My commentary is for the people commenting, and I'll place that commentary in the context of pastured poultry. Episode 89 of the podcast featured Garoleen Wilson and Jhawk Farm in Kansas. That chat Garoleen brought into focus the context from which we should be evaluating whether or not shipping is a viable option for your farm. It won't be for everybody, but that doesn't mean it's wrong for the community at-large. A critical distinction, from my perch, is to ask yourself, what are the principles that can't be compromised and what are the limiting beliefs (for you Ravenscraft listeners)? Shipping is a limiting belief, an obstacle that could prevent you from growth. It could keep you and the community from relevance. Or it could fizzle from the consumer demand. I implore you to go beyond the copy cat-style of production. Don't adopt another farms business vision, mission, and beliefs just because you idolize what they're doing. Learn your craft. Learn the principles to stand on and then innovate around those principles. In pasture-raised poultry, two principles to stand on are rotational grazing and seasonally appropriate outdoor production. Should you ship pasture-raised poultry? Not all of us live on the coast or have easy access to population centers that can sustain a direct-to-consumer model. Garoleen lives in a county that is 30 miles x 30 miles and has a population of 3,600 people. It's over two hours to a town that's big enough to support a Wal-Mart. She's producing as many chickens as there are people in her county. And we know not everyone in the county is eating pastured poultry. Garoleen has the foundation for her pastured poultry business - she can articulate a why, a how, and a what. To make it a business, she has to work through coops and distributors. The coop takes the chicken to the Denver and Golden, Colorado markets and stretches local to about 200 miles. She also works with Crowd Cow who consigns the chicken and then ships it through the mail to customers. These two sales channels enable Jhawk Farm to grow a business that wouldn't have been feasible 10 years ago. The coop would have been possible, but the expanded regional or national distribution would not. And it's that additional option that builds scale within the community or at least provides potential. The fight for relevance is real. Pastured poultry gets an upsized exposure due to social media and the ease of information delivery. But if we want to impact the health of the environment, the health of the chickens, the health of our rural economies, and the health of our eaters, we need to slaughter some sacred cows. We dive into the beef industry as a whole and pull the curtain back on the commercialization of the process. CrowdCow is a mission driven company that provides a connection between farmers and customers to get craft beef. The focus of CrowCow is to be able to shine a spotlight on the Producer and how the Producer raises the beef. Beef in a grocery store is treated as a commodity. Wine, chocolate, and coffee are allowed to be savored with the complexities and varieties, why not the same with beef? Wagyu as a literal word means “Japanese cow.” But there’s one called distinct variety that layers the fat distinctly marbleizing it on the inside. The A5 Wagyu means that it is the highest quality of beef on the Japanese beef scale. Japanese culture is much more aware of the distinctive change of beef based on location, breed, and feed.
