Did you know one of the country's most celebrated sommeliers lives and works in San Diego? It's true! This week, we welcomed Coco Randolph of Black Radish and San Francisco's Californios to the Happy Half Hour podcast. Randolph is new-ish to town, having moved here about a year and a half ago from San Francisco, where she helped her family run two Michelin-starred Californios. Her sister is married to its decorated chef, Val Cantu, and the whole Randolph clan (plus Cantu) started the restaurant in 2013. Since then, Californios has been granted many awards and accolades from various organizations (like Michelin), including for its wine program, which is under Randolph's direction. When her Texas-born-and-raised family first embarked upon opening a restaurant, the clan tasked Randolph with being its sommelier as well as the general manager. No idle hands in this crew. The only problem was that Randolph knew little about wine, though she knew she loved Mexican food after having lived there for years following homeschooling and graduating from Texas Tech. No problem. She's an autodidact, sharp as a whip, and incredibly ambitious. She picked up a copy of The Wine Bible, studying obsessively every second she wasn't working Californios' front-of-house. In 2015, just two years after opening, Michelin awarded Californios its first star. By 2017, the restaurant had the distinction of being the world's only two-star Michelin spot focused on Mexican cuisine. And Randolph's wine program, which started as a list with a dozen producers and had expanded to a cellar boasting hundreds of the world's finest vintages and rarest allocations in less than a decade, was awarded the Best of Award of Excellence from Wine Spectator and the Best Wine Restaurants nod from Wine Enthusiast. In 2021, Randolph was awarded Michelin's first-ever Sommelier of the Year designation; she was just one of two somms to receive the nod. While she's still involved with Californios and the family from afar, her heart and body are very much in San Diego. She's growing Black Radish's wine program exponentially by regularly bringing top producers to town for special wine dinners and other events. And there's more good news. “I moved here for my lover boy!” Coco excitedly exclaims any time anyone gives her the chance. She didn't come here for food or wine, but for love, which to me signals she's planting deep roots. “It's true, we are fully staying here, building a life,” Randolph confirms. Expect to hear a lot more from Coco wherever anyone's pouring grape juice in town. Herlinda, Jenny and Bryan. Bryan Donaldson from Lagunitas and Jenny Griffo from Griffo Distillery join Harry Duke and Herlinda Heras on Brew Ha Ha. Bryan Donaldson is the Brewing Innovation Manager at Lagunitas and Jenny Griffo is a co-founder of Griffo Distillery. Lagunitas and Griffo Distillery have collaborated on a single malt whiskey accented with hops. The two companies are located a half a block away from each other. Jenny and Bryan describe the process of distilling the mashed beer with hops and then they barrel age it for three years. They will only release 600 bottles of it. People who attend the party on Thursday the 27th of April will get some. The event will feature food and a selection of beers, at Lagunitas. Then, guests will take busses across the way to visit Griffo, for the continuation, following the creation of this whiskey. Guests will get a bottle of Still Waldos single malt whiskey. There will also be live music and specially made chocolates. Russian River Brewing Co. is open in Santa Rosa on 4th St. and at their big Windsor location. Tickets are going fast to the first eating at 5:30, and there will be a second seating at 7:30. There will only be 25 total tickets to each seating. He has also developed a tea-based beverage for Lagunitas, which is completely alcohol-free. Bryan says he is most proud of Hoppy Refresher, which is a dry-hopped sparkling water. Griffo Distillery is also constantly innovating. Their last new product was a cold-brewed coffee liqueur. Griffo also has pop-ups coming to the distillery. In this episode I talked with Aaron Bobick the host of Appalachian Folklore Podcast and Stories from the Cabin, a storytelling podcast within a podcast and we talked all things food, folklore and story. Aaron is a brewer-turned-distiller by day. His undergraduate and graduate studies were in literature, bibliography, and textual editing where he gained a love for research; for finding the history of any given topic that interests him. His research into UK folklore is what started his fascination with the history of Appalachian folklore: how the folk practices still seen today through various regions of Appalachia can be traced back to much older practices throughout Europe, and the world. The podcast takes a researched-based, academic-adjacent, look at the world of Appalachian folklore while making it approachable to all listeners. Bonchon's mission is to share the joy of Korean comfort food with the world and the vision is to make Bonchon with Korean Fried Chicken by empowering their restaurant partners and team members to deliver world-class dining experiences. Dekker's focus as chief executive officer is to accelerate Bonchon's growth through strategic initiatives in the supply chain, technology, operations and marketing while continuing to push their franchising efforts in the United States. The brand's corporate office, number of locations in the U.S. and internationally are all growing. The U.S. has 120 commitments for future stores and internationally they are opening new locations in Thailand, Myanmar, Vietnam and Australia. Dekker says that their ideal franchise candidate is committed to customer service and product quality, as well as being dedicated to operational excellence and has previous restaurant experience. Bonchon has grown the brand significantly from its South Korea beginning and is celebrating its 20th anniversary this year. Dekker talks about what was still true about Bonchon over the years and he says, “20 years ago, Mr. Seo, who founded this, started this business as a sauce business. So he was really into sort of the laboratory of making great sauces.” Seo decided to cut out the middleman and make the sauces. Dekker adds, “that philosophy in that process really hasn't changed. The cooking process is the same. We make our own sauces and we still baste the chicken the same way. We finally got a gang of four together and enjoyed a night discussing the best parts of our summer on Ryan's back porch. Great night to be outside and sip on some stouts and talk our favorite beers and food over the last couple of months. Ryan, Mark, Kyle, and Evan (with Brad joining us off mic) enjoyed some great beers from Bottle Logic Brewing, Side Project Brewing, Funk Factory Geuzeria and more. Welcome back to the Happy Half Hour! When we taped this episode, the state of California had just announced the re-suspension of indoor dining at restaurants. Over the past few weeks, local restaurants have had to weather reopening, closing, and converting their dining spaces outdoors. We checked in with Tommy Nguyen, who owns Cross Street Chicken and Beer, the Korean fried chicken emporium with locations on Convoy Street and at Windmill Food Hall in Carlsbad. Tommy shared with us how he’s adapted his restaurants to this new environment, and that other small restaurants in the Convoy area—many of which reside in strip malls—have followed suit, turning the neighborhood into what looks like a night market. We then dived into how he started the business, and what inspired him to focus on Korean fried chicken, which isn’t as prominent in San Diego. He and his wife, Grace Chi, spent a couple of years traveling throughout Asia, and Tommy says he fell in love with Korean fried chicken during an extended stay in Seoul. Grace’s family also owns several restaurants on Convoy, including Grandma Tofu and Korean BBQ, DduriBa, and Bing Haus ice cream. In Hot Plates, we shared the news that Hanna’s Gourmet is back and offering family meals to go. Gelati & Peccati opened last week in North Park, with a walk-up window serving Roman-style pizza and gelato. Con Pane, a bakery that had been in Point Loma for 20 years and abruptly closed earlier this year after an audit by federal immigration authorities, was purchased by Cohn Restaurant Group and will reopen in Liberty Station. For Two People for Takeout, Tommy’s picks are Hinotez (which specializes in yakitori) and the pho at Phó Fifth Avenue in Hillcrest. Troy’s favorite this week is another Convoy institution, Wa Dining Okan. David recommended the ice cream at Stella Jean’s, and my pick is the Hawaiian-style ahi poke at Hawaiian Fresh Seafood.
