Ravioli là món ăn truyền thống nổi tiếng của Ý, làm bằng bột mì cán mỏng có nhân bánh đa dạng như thịt, nấm, phô mai, tôm cá, rau củ thái nhỏ. Về hình dáng và cách làm, Ravioli rất giống bánh tai, bánh gối, hoành thánh hay sủi cảo của châu Á. Cùng với mì sợi, ravioli là món ăn khá phổ biến ở khắp nơi, khác hay chăng là thành phần chế biến và cách dùng tên gọi. Trong vòng nhiều năm, nhà báo người Pháp Emmanuel Guillemain d'Echon đã đến nhiều nước trên thế giới, để sưu tầm và ghi chép công thức của mỗi kiểu ravioli của từng nơi. Kết quả là một quyển sách dạy nấu ăn dày gần 600 trang mang tựa đề « RavioLivre, le tour du monde d'un fou du ravioli » (Chuyến du lịch vòng quanh thế giới của một người ghiền Ravioli) do nhà xuất bản Keribus phát hành. Cuốn sách này không phải là một quyển bách khoa toàn thư về Ravioli, mà lại giống như một sổ tay hành trình kết hợp với khám phá ẩm thực, vì tác giả kể lại những cuộc gặp gỡ với các gia đình người dân bản xứ, nghe họ kể lại những truyền thuyết, phong tục cũng như ghi chép lại bí quyết nấu ăn gia truyền.  Hành trình viết sách đã đưa tác giả Pháp đi đến hơn 20 nước trên thế giới : từ món Plottes của vùng Québec Canada, bánh Pierogi của Ba Lan, Klepe của vùng Balkans dùng với xốt bơ trắng trộn tỏi chứ không dùng xốt cà chua, loại Kasnudeln và Knodel của Áo, Manti ở Thổ Nhĩ Kỳ, Pelmeni của Nga, Mandu của Hàn Quốc, Gyoza Nhật Bản, Boudz của Mông Cổ, Jiaozi và Wonton của Trung Quốc … Ngoài ra, chương cuối quyển sách dành cho những lộ trình khám phá bên lề, có thể là đề tài trong một quyển sách kế tiếp. Trả lời phỏng vấn đài RFI ban tiếng Pháp, Emmanuel Guillemain d'Echon trước hết cho biết ông thích nhất món raviolis của những nước nào : Trên thế giới, có hàng ngàn kiểu bánh hấp có nhân đa dạng, nhưng tôi vẫn thích nhất loại bánh hấp Modak của Ấn Độ, Tiểu Long bao của Trung Quốc và Khinkali của Gruzia. Đây là một cảm nhận rất chủ quan và hẳn chắc là mỗi độc giả sẽ có một cái nhìn khác. Nhìn chung, tôi thích nét tinh tế trong cách làm cũng như trong hương vị của các loại bánh này. Bánh Modak của Ấn Độ được chế biến như một món ngọt để cúng thần đầu voi Ganesh. Trong khi bánh bao hấp Khinkali của Gruzia lại giống như Tiểu Long Bao (Xiao Long Bao) ở Thượng Hải, đó là loại bánh hấp khá công phu, vì ngoài nhân thịt còn có thêm một chút nước dùng ở bên trong lớp vỏ bột thật mỏng. Nước dùng tạo thêm nhiều hương vị và giữ cho nhân bánh được nóng lâu.  Đây là một sự kết hợp khá độc đáo mà người Ý ở vùng Bologna chưa hề nghĩ tới. Lần đầu tiên ăn bánh Khinkali, bạn sẽ khá ngạc nhiên : loại ravioli này nên được ăn nguyên chứ đừng nên cắn từng miếng, vì nếu không khéo, nước dùng sẽ đổ lên áo của bạn. Đây là món ăn quốc hồn quốc túy của Gruzia (dù chưa được công nhận chính thức). Người dân miền núi Khevsur hay Pshav đã nâng cách làm Khinkali lên hàng nghệ thuật. Bánh có vị nhẹ nhàng, cay cay, nhân thịt được trộn với rau thơm và một số thảo mộc đặc biệt của vùng núi Tushetia. Chẳng hạn như hạt thì là của miền núi có hương thơm khác lạ hơn so với loại thì là Ai Cập. Làm thế nào để ghi chép được hết hàng ngàn loại ravioli trên khắp thế giới. Khi bắt tay viết một quyển sách « RavioLivre » với chủ đề phổ quát như vậy, tác giả Emmanuel Guillemain d'Echon cho biết ông đã tự đặt ra một số tiêu chuẩn nhằm hạn chế phạm vi tìm kiếm của mình : Vâng, tôi phải tự giới hạn mình, loại trừ những món bánh chiên hoặc bánh nướng. Bằng không, quyển sách sẽ có đến hàng ngàn trang và cần có thêm nhiều tập. Tại nhiều nước châu Á, các loại bánh bao nhỏ có thể được chiên hay hấp. Thổ Nhĩ Kỳ có loại bánh Manti, người Nhật Bản thường làm bánh Gyoza, bánh được luộc rồi chiên áp chảo. Ở Bắc Phi, cũng có loại bánh brik, bánh pastel ở Senegal, sambosa ở Madagascar, nhưng các loại này gần giống với bánh chiên samossa của Trung Á và Ấn Độ. Vì thế cho nên tôi đưa ra một số tiêu chí rõ ràng : thứ nhất, khổ bánh vừa vặn có thể ăn nguyên miếng, thứ nhì bột bánh và nhân bánh cần được hấp hay luộc chín cùng một lúc. Bánh không được chiên dầu, nướng trong lò hay trên than củi, cũng như bánh không được gói bằng lá hay bằng giấy. Vì vậy, bất cứ món ăn nào gì được gói trong lá đều không được chấp nhận như zongzi của Trung Quốc, bánh lá của Việt Nam, hay bánh gói lá ngô tamales của Mexico, binaki của Philippines...  Tuy nhiên, để tránh làm phật lòng nhiều bạn đọc gắn bó với di sản ẩm thực của nước họ, tôi có dành một chương cuối để nhắc đến các loại bánh quan trọng, nên để dành cho những kỳ tới. Chỉ cần nhắc đến chữ « ravioli », người ta lập tức nghĩ ngay đến nước Ý. Nhưng món ravioli kiểu Ý chỉ xuất hiện vào thời Trung Cổ, trong khi các loại bánh hấp có nhân thịt xuất phát từ châu Á từ thế kỷ thứ II sau Công nguyên, không ai biết rõ nguồn gốc cũng như người đã phát minh ra món này, theo các chuyên gia, đó là sự hình thành của hàng chục nghìn năm tiến hóa ẩm thực. Từ đâu lại xuất phát ý tưởng viết về muôn kiểu ravioli trên thế giới ? Tác giả người Pháp Guillemain d'Echon cho biết hành trình tìm kiếm các công thức chế biến món này xuất phát từ những kỷ niệm thời thơ ấu của ông : Vâng, chiếc ravioli đầu tiên mà tôi từng được ăn hồi còn nhỏ là của bà ngoại tôi. Ông cố tôi là người gốc Pháp từng đến lập nghiệp tại Trung Quốc vào đầu thế kỷ XX và bà ngoại tôi được sinh ra ở Thiên Tân. Do từ thời còn nhỏ, bà ngoại tôi được nuôi nấng bởi một bà vú nuôi người Hoa, cho nên khi lớn lên bà biết nói tiếng Hoa cũng như biết nấu một số món ăn Trung Quốc. Khi trở về Pháp, bà thường nấu cho gia đình các món canh thịt, bắp cải xào và thỉnh thoảng có cả món « jiaozi » (giáo tử) một loại bánh bột hấp nhân thịt, giống như sủi cảo miền bắc Trung Quốc (tiếng Hán là thủy giáo) hay bánh gyoza của Nhật Bản, còn thường được gọi là « bánh tai ». Tôi đã được dịp thưởng thức những chiếc bánh jiaozi này khi đến Trung Quốc lần đầu tiên vào năm 2011, để tìm lại dấu vết của bà ngoại tôi ở Thiên Tân, nơi bà từng sống thời thơ ấu, cũng như tìm lại được hương vị thơm ngon của những chiếc bánh (cả hấp lẫn chiên) trong các quán ăn gia đình nho nhỏ. Còn về công thức món ăn, tôi đã trở lại Trung Quốc sống vài ngày trong một gia đình người Hoa nhân dịp Tết Nguyên đán, vì đó chính là thời điểm các gia đình thường làm bánh « jiaozi ». Các chuyến đi làm cho tôi cảm thấy xúc động bồi hồi mỗi lần nhớ lại những kỷ niệm hay những món ăn của bà ngoại. Trong các cuộc hành trình nhằm thu thập công thức và khám phá hàng trăm biến thể của ravioli trên các châu lục, loại bánh hấp nào đã khiến tác giả cảm thấy thích thú ngạc nhiên nhất sau những chuyến đi xa. Ông Emmanuel Guillemain d'Echon cho biết : Đối với tôi, một trong những loại ravioli đẹp mắt tuyệt vời là loại « bánh hấp thạch tím » được làm từ khoai mỡ ở Trung Quốc. Lúc đầu tôi nghĩ có lẽ sẽ tìm thấy loại bánh hấp màu tím ở Châu Phi, Nam Mỹ, hoặc Philippines, nơi chuyên trồng các loại khoai môn hay khoai mỡ, có màu tím rực rỡ. Trong những chuyến đi xa nhằm mục đích viết sách, tôi ít bao giờ tìm thấy những điều mình đã nghĩ từ lâu ở trong đầu, nhưng lại bắt gặp rất nhiều thứ khác tuyệt vời không kém. Khi đến Trung Quốc, trong lúc tôi đang tìm kiếm một loại há cảo kiểu Quảng Đông, có lớp vỏ thật mỏng trong suốt như pha lê, tôi lại tìm thấy nhiều loại bánh hấp khác với nhiều màu, nhưng màu sắc đập mắt nhất chính là loại bánh hấp được làm từ bột khoai mỡ. Tuy đi xa với mục đích sưu tầm công thức nấu ăn để viết sách, tác giả không gặp đầu bếp hay chủ quán ăn mà lại tìm đến những gia đình dân thường, vì ông tin rằng các món ngon được phổ biến trong dân gian thường là những món ăn gia đình từ đời này sang đời nọ. Chính các bà nội trợ nắm trong tay bí quyết gia truyền. Họ nấu ravioli trong nhà hoặc cùng với các nhóm nhỏ, theo truyền thống và công thức riêng của mỗi gia đình. Theo tác giả, có thể nói là dự án viết sách chính là chiếc chìa khóa mở ra cánh cửa của nhiều gia đình mà lẽ ra thường hay bị khép kín. Điều này hoàn toàn đúng, nhất là trong một số trường hợp, tôi thực sự đã đến gõ cửa tận nhà, để xin phép ghi chép lại các công thức gia truyền làm ravioli tại những vùng nông thôn ở Áo hay ở Đức. Mỗi lần tôi đến những vùng sâu vùng xa này, tôi đề nghị trao đổi, phụ giúp một số công việc như quét dọn hay sửa nhà. Đổi lại, các bà nội trợ chỉ cho tôi cách làm ravioli của họ. Đây thực sự là một món quà bởi vì công thức chế biến món ăn đòi hỏi thời gian, tay nghề và lòng hiếu khách. Thông qua cuốn sách này, tôi muốn kể lại những câu chuyện gia đình, có nhiều điều quan trọng mà chúng ta có thể truyền đạt chia sẻ qua thức ăn. Có nhiều món ăn ta có thể tự làm một mình, nhưng khi làm ravioli, để cho nhanh hơn thì các bà nội trợ thường cần đến sự phụ giúp của gia đình, hoặc là tụ họp thành những nhóm nhỏ với bạn bè, hàng xóm, để nấu ăn theo tinh thần cộng đồng. Tôi đã từng quan sát điều này tại Thổ Nhĩ Kỳ, tại Bosnia trong cộng đồng người tỵ nạn sau chiến tranh vùng Balkans, tại vùng núi Tusheti ở Gruzia hay ở miền bắc nước Ý. Các phụ nữ vùng nông thôn thường hẹn gặp nhau để làm ravioli, họ dành thời gian để trò chuyện, hỏi thăm nhau về cuộc sống gia đình, những đứa cháu mới sinh. Điều này lại càng hiển nhiên tại Ý, nơi có nhiều tên gọi khác nhau cho ravioli tùy theo kích thước và hình dạng. Đồng thời, cách làm món ravioli ở nhà cũng được xem như một sinh hoạt cộng đồng, gắn kết nhiều gia đình lại với nhau. Điều này không chỉ hiển nhiên ở vùng phương bắc Emila Romagna, với thủ phủ là Bologna (nơi khai sinh loại mì nhồi thịt tortellini) mà còn khá phổ biến ở các vùng miền nam nước Ý như Sicily hay Sardinia. Cách chế biến mang tính cộng đồng vì nó thực sự gắn liền với những lễ hội tôn giáo như mùa Giáng Sinh hoặc mùa lễ Phục Sinh, khi các gia đình thường quây quần bên nhau. Điều đáng ngạc nhiên hơn nữa, theo ông Guillemain d'Echon, là từ Đông sang Tây, từ Bắc xuống Nam, ta có thể nhìn thấy những động tác cử chỉ làm bánh được lưu truyền từ đời này sang đời nọ. Cách làm giống nhau có thể là do làn sóng di dân. Nhiều gia đình ở Achentina có cách chế biến món ravioli gần giống với người Ý, một điều khá dễ hiểu vì cộng đồng người Ý nhập cư đã đem công thức này vào Achentina. Nhưng cũng có trường hợp nhiều gia đình ở vùng Bắc Á, ở dãy núi Ural, ở vùng Balkans hay ở miền nam nước Ý có cách làm như nhau, cho dù chẳng có liên hệ gì với chuyện di dân. Ở những phương trời xa xôi, cách biệt đến vạn dặm, các bà mẹ tuy không cần vấn ý nhau, nhưng vẫn có thể thắt cho con mình những bím tóc giống nhau, vì có lẽ đó là cách làm hiển nhiên, thuận tay nhất. Điều đó giải thích phần nào vì sao cách nhồi bột cán mỏng, để rồi cho thêm nhân bắt bánh, lại trở nên phổ biến trên khắp thế giới.

Ihr Schlachtruf ist dem Knattern des DKW F8 nachempfunden. Tengtereng Peng Peng heißt es, wenn einer Geburtstag hat, wenn eine Ausfahrt ansteht, oder sich die Männer einfach in ihrer Garage treffen. Vor Jahren haben sie Tessin berühmt gemacht: Beim Oldtimertreffen wurde als Attraktion ein Trabant umgestoßen, der Rekord liegt bei rund 11 Sekunden. Heute gibt es das nicht mehr, aber die Freundschaft, die hält. Als Interessengemeinschaft Zweirad-Oldtimer Tessin sind sie auch immer noch unterwegs. Streng in Formation gehts raus zur Ausfahrt, Himmelfahrt wollen sie wieder los. Heike Mayer hat die Oldtimerfreunde besucht und sich davon überzeugt, dass in Tessin die Freundschaften mindestens so lange halten, wie die Motoren von MZ, TS, ES und Ural.

**Discussion begins at 3:40**In January 1959, nine experienced Soviet hikers from the Ural Polytechnic Institute set off on a ski trek in the northern Ural Mountains, aiming to reach Mount Otorten. The group, led by Igor Dyatlov, consisted of eight men and two women, almost all in their early to mid-20s.  These experienced hikers were supposed to send a telegram at each checkpoint they reached.  The first telegram came, the second did not.  A search party went looking for them and on February 26, 1959, their abandoned campsite was discovered.  Inside the tents were neatly folded clothing, with gear left behind (ie., there may be one shoe in the tent but the other was. Missing).  The tent was slashed open from the inside.  Bodies were found in various locations, in various states of dress. The bodies had swapped clothing (for example, male clothing on the females and vice versa).  Six of the hikers cause of death was hypothermia, and the other 3 were killed d/t chest and head trauma.  What makes this even odder, is that he clothing revealed hgh levels of radiation.  Locals and soldiers reported strange orange lights in the night sky around this time.  And the decomposing bodies had orange tinted skin and grey hair.  The Soviet authorities initially ruled that the hikers died due to an "unknown compelling force".   The investigation was quickly closed, and the files were classified.  But what really happened?  Was it an avalanche, recent investigtions by the Russian government would have you believe?  Was the military somehow involved?  Could it have been a Yeti?  Or was there something more paranormal at play? Send us a textSupport the showTheme song by INDA

Bordered by Kazakhstan, Russia, Iran, Turkmenistan and Azerbaijan it spans 371,000 square kilometres and bridges Europe and Central Asia. It's fed mainly by Russia's Volga and Ural rivers and the sea is not only rich in oil and gas but is also home to numerous rare and endemic species, including the Caspian seal and 90% of the world's remaining wild sturgeon. But the Caspian Sea is in crisis. Climate change and the damming of Russia's rivers are causing the coastline to recede at an alarming rate. The sea's levels have fallen by a metre in the last 4 years, a trend likely to increase. Recent studies have shown that the levels could drop between 9 and 18 metres by 2100. Last June Kazakh government officials declared a state of emergency over the Caspian. Iran has also raised the alarm with the UN. Antonia Bolingbroke-Kent travels to Kazakhstan for Assignment to report from the shores of the Caspian Sea on what can be done to prevent an environmental disaster.

In his second Exopolitics Today interview, Anton Anfalov, Ph.D., explains critical military research facilities used by the Soviet Union in studying retrieved alien spacecraft and extraterrestrial entities. Thanks to Dave over at the PMM podcast I am also a member of IPMS/USA but it's only because I feel an obligation to support the hobby in general. There is honestly not much for me in IPMS currently, and I'm not very engaged in the organization. However, thanks to Anthony's interview with Rob, I decided to vote on the new amendments to the constitution and by-laws, in the interest of inclusivity. I imagine there are a lot of people out there like me who would love for IPMS to promote and support their niche of this fantastic hobby but who are apathetic to the current iteration of the organization.One issue I would have loved to hear addressed in that interview is the chicken and egg problem of new contest categories. Rob said that they track the level of participation in each of their categories and try to respond with new categories and modifications to existing ones where necessary. My question then is: why would modelers enter sci-fi / gundam / other "niche" models into IPMS contests if there are no categories that properly value their contest entries? And if IPMS is waiting until they see significant levels of participation in those niches to create sensible contest categories... well, you see the problem.If IPMS wants to truly be seen as inclusive it needs to proactively court modelers in areas of the hobby that it has traditionally overlooked by reaching out to those communities and working directly with them to establish new contest categories and other opportunities within IPMS. If you want something, you have to go after it.
